Abstract
Consumption of pork and pig products as an important and good source of protein
diets has been increasing in Thailand. As a result, swine farming becomes an important industry and
has emerged in many provinces of Thailand. Therefore, prevention and controlling of diseases in
intensive swine farming and safety of meat product along the processes in swine farms become
important research topics.
This research aims at studying the relationship between levels of E. coli and
Salmonella spp., which are very important bacterial contaminants in food safety, and level of heavy
metal contamination in the environment from the swine farming; and studying whether there are any
adverse effects on swiners health from the bacterial and heavy-metal contamination in swine
farming. To be a case study, 4 farms (> 1,000 sows/farm) in Ratchaburi Province were selected.
The study found high level of E. coli contamination in both dry swine manure and final sewage
sludge; but low level of the contamination in raw water and water used in farms. In case of feeds,
the level of E. coli contamination was found in all mixed feeds especially fattening feed, sow feed
and nursery feed from high to low, respectively. As for Salmonella contamination, it was also found
in raw water, drinking & clean water and sewage sludge. Specifically, Sal. group E was detected in
raw water and group E and A-I detected in final sewage sludge. In the case of swine feeds, the
contamination of Salmonella in nursery and fattening feeds was not observable, except Salmonella
groups A and B which were found in sow feeds. On the other hand, Salmonella groups B, C and E
were detectable in swine manure.
This study shows that the level of E. coli was positively correlated with the levels
6
of total count, Coliform, copper, lead and zinc when all parameters in water and feeds were
combined. In addition, there was high correlation between the levels of the E. coli and lead. In
contrast, there was no correlation between Sal. and the 4 kinds of heavy metals in this study.
Interestingly, there were high positive correlations among copper, zinc and lead.
For others chemical parameter of water, most of the parameters were not greater
than the standard limits, except for sulfate, manganese, fluoride, conductivity and salinity which
were highly detected especially in clean water and final sewage sludge. The levels of biological
oxygen demand (BOD) and chemical oxygen demand (COD) levels exceeded the standard limit in
some months when determining these parameters in final sewage sludge.
Even though the level of heavy metals dissolved in the water used in these farms was safe
and still under standard limits, we found quite high levels of copper, cadmium, lead and zinc in
swine manure throughout the study period. Moreover, cadmium and lead were highly contaminated
over the standard limitation (p < 0.05) in swine dry manure by selection of the highest
contamination from samples taken in the study. For swine feed, zinc and copper levels in both
nursery and fattening feeds the contamination levels were above the standard limits. However, the
over standard limit of zinc was found only in sow feeds, (p < 0.05).
The findings suggest that the quality of animal feeds mixed for each formula as well as
water used in various units in the farm should be carefully obtained from reliable sources. In order
to assure the reliability of the sources, determination of both bacterial contaminants and other
chemical properties in water becomes subjects to be regularly checked in the swine farming.
