VARIETY 85% Garnacha, 15% Cariñena and 10% Merlot vineyards of more than 40 years old planted in slopes and “costers” of a 15° incline, oriented from north to south with prevailing winds from Mistral and Levante. VINTAGE Vintage Classification: Good. After two years of drought the rainy spring has allowed the plant to develop with balance. A predominance of wet winds and some rain during the end of summer and the beginning of autumn made it complicated for a few days, but the north winds appeared and allowed us to reach a mature balance. The vintage began on September 15. The Garnacha and Cariñena are dancing partners of our ancestral varieties, our Mediterranean climate, its warmth and breeze are expressed in each glass. COLOR Clean, bright red cherry color. AROMA It is to enter a forest that appears all botanical, wild berries, cherries, pomegranates, blueberries, then the balsamic embrace of laurel, thyme, juniper and finishes with notes of resins and mastic liquorice. TASTE It is a fruit salad of red and black fruits, blackberries, wild cherries and plums accompanied with an intense balsamic of medicinal herbs, thyme, bay leaves, liquorice and a final note of saline. Alcohol Content 15 %vol. Total acidity 4,6g TAR/L. Volatile acidity 0,63g /L. VITICULTURE Certified organic with the CCPAE and in Conversion. ELABORATION Enters in the chamber at a low temperature for 24 hours, skidding and starting the alcoholic fermentation that we complete with maceration. 50% are aged in oak barrels for six months and the rest are in stainless steel tanks to preserve varietal aromas and spontaneous alcoholic fermentation with wild yeasts. Twelve months in old French oak barrels.
