Tomato FEVERIf the chilly weather has you longing for the
juicy goodness of homegrown Jersey toma-
toes, you’re in luck! Bergenfi eld-based TWO GUYS FOOD GROUP (201-954-6051, www.

tion: canned tomato sauces made with only
Garden State tomatoes.
The idea for the year-old company—
run by longtime friends and Bergen natives
Scott Stark and David Stoff, who met while
studying hotel and restaurant management
at the University of Massachusetts—came
from Stark’s experience selling local farmers’
products through his wholesale produce busi-
ness. “I thought, ‘Why not extend the Jersey
tomato season a bit by making a sauce that
can be enjoyed year-round?’” says Stark.
Sold locally at Fairway Market in Para-
mus, Foodtown in North Arlington and Whole
Foods in Ridgewood, Paramus and Edgewa-
ter, and online through the company’s web-
site, sauce varieties include marinara, tomato-
basil, garden vegetable and “spicy”—a zesty
blend of crushed or whole Jersey tomatoes,
California garlic, oregano, Israeli basil and
crushed red-pepper fl akes.
The sauces retail for between $3.99
and $5.99 per 25-ounce can, and they’re low in
sodium and gluten-free with no added sugars.
A ticket on the Polar Express may be a bit out of reach, but you can give your
little ones the next best thing this holiday season with the Hawthorne-based
Volunteer Railroaders Association’s SANTA CLAUS TRAIN RIDES (973-238-
0555, www.santatrain.net)—fun-fi lled train rides in holiday-decorated pas-
senger coaches. The best part: Old Saint Nick, Mrs. Claus and several cartoon
characters will be on board to greet children and pose for pictures.
Embarking from the Glen Rock Boro Hall station on December 4 at
9:30 a.m., noon and 2:30 p.m., the hour-and-a-half rides run to Suffern
and back on the New Jersey Transit Main/Bergen County Line. Passengers
can enjoy views of the Ramapo River in Rockland County, and each child
is given a candy cane, a stuffed animal and a coloring book.
Paramus resident Judy O’Reilly has taken the ride for the past
two years with her two grandsons, now ages 2 and 5. “The experience
is just magical for the children, and the staff does a marvelous job,”
she says. “It really sets the tone for the holidays.”
Tickets cost $13 for adults and $9 for children under 12; proceeds
help restore the Hawthorne train station. (Infants under age 1 ride free.)
You can purchase tickets by phone, by mail or via the event’s website.
(There’s a 50-cent discount for tickets purchased online, and another
50 cents off each ticket for groups of 25 or more.)
“We usually sell out, so it’s best to buy your tickets in advance,” re-
ports K.C. Smith, president of the Volunteer Railroaders Association.

Say, CHEESE!What’s a holiday gathering without an irresistible platter of fi ne fromage? Happily, you’ll fi nd an abundance of delicious cheeses from around the world at CHEZ CHEESE (201-568-2050, www.chezcheeze.com), a 1,200-square-foot gourmet cheese shop and eatery in Tenafl y.
“About 75 percent of our cheeses are imported, mostly from Europe, though we do offer cheeses from different regions of this country,” says co-owner Pat Lamson, who runs the shop with her brother, Peter Quinn. “We cut the cheeses fresh and offer samples of anything you’d like to try.”
Among the shop’s offerings are Camembert from France, Montagnolo from Bavaria, aged Prima Donna Gouda from Holland and Vermont cheddar. The shop also makes about seven cheeses in-house, including a black caviar and scallion log and a sun-dried tomato and basil torte, which consists of goat cheese, Swiss cheese, sun-dried tomatoes and pesto. For a delicious sampling, you can purchase cheese platters for $45 to $85 each.
The shop also offers a lunch and catering menu of freshly made soups, sandwiches (not necessarily cheese) and other prepared foods.

crunch, Figaro truffl es, vanilla and chocolate fudge and hand-dipped, dark chocolate-covered strawberries—the shop’s best seller. Watching your diet? Critchley’s also offers 25 variet-ies of sugar-free candies. (Fudge and pure chocolate con-
fections cost $14.98 per pound; specialty chocolates, such as those fi lled with fruit or nuts, cost $21.98 per pound.)

It may share a facility with the YMCA, but the YWCA of Bergen CountY
in Ridgewood (201-444-5600, www.ywcabergencounty.org) has had the special
mission of supporting working women and their families since 1920. As the group
marks its 90th anniversary this year, it’s celebrating its rich history—and looking to
the future.
“The organization was established to help young women who were
moving east to enter the workforce,” explains Donna Gould, director of public
relations, marketing and membership. “Many of them came without their families
and didn’t have any kind of support system. The YWCA provided hot meals,
helped them find safe places to live and offered opportunities to socialize.”
Today the organization has 5,000 members and provides childcare ser-
vices, day camps and several health and fitness programs. It also operates the
Rape Crisis Center (hotline: 201-487-2227)—the only one of its kind in the county.
This year’s many special events have included the first annual “Knowledge
is Power” conference in March, which was co-sponsored by Bergen
Community College and featured 30 panelists and speakers who
provided advice on such topics as financial management, man-
aging stress and making decisions on healthcare options. The
conference will be held again in April 2011.

You can tell from the nip in the air and the car-ols on the airwaves: Most of us will soon be celebrating with
family, friends—and fattening food. From Thanksgiving pump-
kin pie through eggnog on New Year’s Eve, this sumptuous season is the calendar’s biggest threat
to your trim waistline. And while a New England Journal of Medicine study a few years ago had some
good news (we don’t pack on as many pounds as we fear), it brought a warning, too: The weight we do add during this season tends to stay on.
So must you be a stay-at-home sourpuss, munching on celery? No, insists Janet R. Laubgross, a Fairfax, Vir-ginia, clinical psychologist who specializes in weight man-agement. You can be socially active and still face the scales happily, she says, if you heed fi ve tips:
1. PLAN.“It’s essential to mentally prepare for events you know will be stressful, such as Christmas dinner with the in-laws,” says Laubgross. “If you gear up beforehand, you’ll feel less need to soothe yourself with food.”

Restaurant meals are easy, because most eateries now post their menus online. Decide what to order in advance, so you won’t be tempted while sitting at thetable—keeping in mind that fried foods and butter gen-erally should be avoided.
Also, never leave home very hungry—or very full. “If you’ve starved yourself beforehand hoping to save calories, you’re likely to gobble every bite in sight!” warns Laubgross. On the other hand, she adds, you should also avoid the otherextreme—a pre-dinner binge: “No matter how stuffed you are, you’ll still be tempted to indulge in tasty morsels.” Your best bet: Prep for an evening fête by eating a sensible lunch, followed by a light snack two hours before you leave home for the social event.
Finally, when you see a party spread, ask yourself, “Which of these foods do I really like?” Permit yourself small portions of these and enjoy them to the hilt—then pass on the other fattening items.
2. DE-STRESS.“I know this is easier said than done,” says Laubgross, “but when we’re stressed we tend to overeat and overdrink.” Work on keeping pressure levels down by sticking to your regular routine as much as possible.
It’s also perfectly acceptable to avoid high-strain sit-uations. “We all have notions about what we’re supposed to do, yet in reality life presents us with only a few real obliga-tions,” says Laubgross. This means it’s OK to skip certain parties or leave others early, especially if the temptation to overindulge is high.
Does shopping in a teeming mall make you want to tear your hair out? Try buying presents online or from a catalog. “And remember: It’s not necessary to get theabsolute perfect gift for every single person you know,” says Laubgross.
When all else fails, just take a break. “Excuse your-self from cocktail hour at your family’s house, and step outside for a breath of air,” says Laubgross. Then you can rejoin the group feeling refreshed.
3. SWEAT.Yes, we know—during this busy time it’s easier than ever to let your exercise routine slip. Don’t! Even if it means break-ing up workout sessions, with 15 minutes on the treadmill in the morning and a 20-minute walk after work, keeping active will help you burn excess calories and thus stay trim.
But it goes beyond the digital “calories burned”display. “Exercise also boosts confi dence and helps lower anxiety,” says Laubgross. “Because many of us deal with feelings of social uncertainty by medicating with food, regu-lar physical activity may just help you avoid bingeing at the New Year’s Eve buffet table.”
4. BE FIRM.“If a hostess offers you a second helping of her famous—and fattening—chocolate caramel cream pie, all you have to do is say, ‘No thank you,’” says Laubgross.
A small voice inside may whisper that it’s rude to say no. After all, food is a symbol of love and a currency of hospitality. So have a smile and ready answer: You need to take care of you. Of course, it’s the job of a host or hostess to make sure you’re offered everything you might wish to consume. But you’d be surprised how few parties will stand or fall based on the amount you personally eat.
“In most cases, I don’t think it’s good to get into a litany of excuses about why you’re passing on that sugary cocktail because you end up apologizing for yourself,” says Laubgross. And you can always compliment a spread without partaking.
5. KEEP MOVING.Remember: If you’re truly tempted by a favorite treat, enjoy it and then move on. “Otherwise you’re likely to overeat the rest of the week, unconsciously trying to get a taste of that delicacy you really wanted,” says Laubgross.
Don’t park yourself in front of the chow cart or dessert table. Circulate, and think of why you decided to attend this social event in the fi rst place. Enjoy your loved ones, friends—and possible friends-to-be. Isn’t that what truly makes the holi-day season special? ■

lisa edelstein isn’t a doctor; she only plays one on tV. But the medical milieu of the Fox drama House is familiar turf for the 44-year-old actress, who grew up in Wayne. “i’ve always loved medicine, and i was around it as a child in new Jersey,” she says, noting that her dad, alvin edelstein, M.d., served for years as chairman of chil-ton Memorial hospital’s Pediatrics department.
edelstein portrays dr. lisa cuddy, girlfriend of the show’s scruffy, cranky title character. “i know the producers are taking this relationship seriously and exploring it,” she says. “i think a lot of viewers wanted it to happen and feel it’s a great way of telling a new story.”
the actress concedes that her character “is certainly not making choices that will simplify her life.” and she has-tens to explain that she herself is way different from her fel-low lisa: “i’m much more relaxed than cuddy.”
still, there’s a feisty independence in the tV medic that wasn’t much of a stretch. edelstein grew up in a tradi-tional Jewish family, but began to make her own distinctive choices early. at 15 she embraced vegetarianism—never to look back—and at 16 she was recruited to fill a cheerleader opening for donald trump’s new Jersey Generals team in the old U.s. Football league.
“they lost one of their cheerleaders, so they called my dance school in new Jersey and i was recommended to fill in,” edelstein explains. she worked six home games—then organized a protest against the team for making cheerleaders
stand in their uniforms in bars—in effect, a cheerleaders’ strike. after graduating from Wayne Valley high school in
1984, she moved across the hudson to study theatre at new york University, then became a fixture in the city’s club scene.
edelstein wrote, composed and starred in the musical Positive Me about the aids crisis. that project showed her independent streak, and so did her early tV gigs—as Jason alexander’s risotto-loving conquest on Seinfeld, rob lowe’s call-girl date on The West Wing and a transsexual on Ally McBeal.
today she maintains a new york residence but lives mostly in l.a., with her two dogs, shazam and Kapow. she’s devoted to daily ashtanga yoga, swimming and taking walks with her dogs. edelstein recently went sugar- and gluten-free and says, “i feel less bloated, and my digestion has improved.” she cites pad thai noodles as a go-to pasta substitute and lemon- grass soup as a favorite snack.
the actress loves traveling, with Japan, thailand and india among recent destinations. “it helps put things in perspec-tive,” she says. “los angeles can be very isolating, so it’s im-portant to get out. new Jersey didn’t have that isolating feel.”
edelstein says she doesn’t know what lies ahead for the house-cuddy amour “beyond what we’re shooting right now.” But it’s a safe bet that this ex-Garden stater will con-tinue to show tart-tongued independence, onscreen and off.
“i’m a work in progress,” she declares. n

Add garlic, brown lightly, then add carrots and leeks.• Sweat vegetables for 2 minutes, deglaze with white wine and reduce. • Add tomatoes, water and salt and pepper to taste. • Cook on low flame for about one-and-a-half hours. • Let cool and puree in a blender.

• Cut zucchini, squash and eggplant lengthwise and coat with eggs, flour and bread crumbs. Coat a sauté pan with about ¼” olive oil and sauté vegetables. After sautéing, place vegetables on the side. • Using a baking dish about 4” deep and 16” long, first coat with a layer of tomato coulis, then add layers of vegetables (roasted red peppers and sautéed vegetables), cooked pasta and crumbled goat cheese, in that order. Repeat layers until all ingredients are used, alternating between the goat cheese and Pecorino Romano cheese. • Cook for 45 minutes at 325 degrees. Garnish with basil oil.

For the banana cake:3¼ cups cake flour2 teaspoons baking soda1 cup butter4½ cups 10x confectioner’s sugar• Preheat oven to 350 degrees. Grease and paper a half-sheet (13” x 18”) pan. • Mix flour and baking soda together and set aside. • Puree bananas with rum. Cream butter and sugar until fluffy. • Slowly add eggs and vanilla into flour mixture until combined, then fold in sour cream, creamed butter and sugar and banana/rum puree. • Spread evenly into sheet pan and bake for 35 minutes or until golden brown and a toothpick comes out clean. The cake should be baked one day before use to assemble the dessert. • On the following day, use individual ring molds to cut disks out and leave one disk in each mold; 8 rings required for this recipe.
For the caramel mousse and sauce:¾ cups water, plus 4 tablespoons1½ envelopes of unflavored gelatin 2¾ cups heavy cream• Pour 4 tablespoons of water into a bowl and sprinkle gelatin over the top to bloom. Set aside until later.• Combine sugar and corn syrup and ¾ cup water in a heavy-bottom saucepan. Stir over medium heat until dissolved, often brushing down the sides of the pot with water.• Increase heat, boil without stirring until syrup turns deep golden brown. Remove from heat and add 1½ cups heavy cream and butter—this will bubble up vigorously. Return to heat and cook until any sugar bits are dissolved.• Pour 2 cups of the caramel sauce you have made into a bowl and set aside.• Heat up gelatin mixture from step 1 until dis-solved and clear. Add 1½ cups of caramel sauce.• In another bowl, combine 1¼ cups heavy cream with vanilla and beat to medium peaks, then fold into caramel mixture to form mousse. Pour mousse mixture into banana cake-lined ring molds.• Keep leftover caramel sauce for plating dessert.
For the vanilla sauce: 1 pint heavy cream6 egg yolks½ cup sugar• Heat cream until it comes to a boil. In a separate mixing bowl, combine egg yolks, sugar and vanilla until golden and thick. • Add hot cream a little at a time to the egg mixture,return the egg mixture to the pot and cook until it has thickened and covers the back of a spoon (do not bring to a boil). Add pinch of salt if desired.
• Strain and put into an ice bath to cool. When cold it’s ready to serve.
For the eggnog mousse:3 egg yolks1½ package unflavored gelatin3 tablespoon dark rum2 tablespoon brandy• Soften the gelatin with rum and brandy.• In a separate bowl, beat egg yolks with vanilla, nutmeg and half of sugar over a hot-water bath until lightly golden and fluffy. • Warm gelatin mixture over hot-water bath until clear and smooth and add to egg yolk mixture. • In separate bowls, whip cream until medium peaks form and keep cold. Whip whites until soft peaks form, adding the remaining sugar a little at a time. • Fold whipped cream into egg yolk mixture, then fold egg whites gradually into yolk and cream mixture. Spoon into ring molds with caramel mousse and banana cake on the bottom and place into refrigerator until set. Garnish plates with vanilla sauce and drizzles of caramel syrup. Place a piece of cake on each plate.

The Fountain Spa’s spot in the ballroom where the complimentary chair massages and
paraffin hand dips were hits, but so was its raffle for the Spa Harmony Package, complete
with a deluxe full body massage, Hydramemory facial and private jacuzzi. The Fountain
Spa has a lot to celebrate and they got the word out at BergenFest. The big news is
the grand reopening in January of its well established Ramsey location where a new
medical spa will debut. The MedSpa at the Fountain Spa will feature Botox, fillers, and
hair transplants for men and women by Dr. Herbert Feinberg, MD, and a board certified
dermatologist. In addition, cosmetic, plastic, and reconstructive services will be run by
Dr. David L. Abramson, MD, and a board certified plastic surgeon. Topping off services
at the MedSpa will be podiatric procedures by Dr. Jill Hagen, MD, and a board certified
podiatrist. The second phase of the Ramsey remodel will include new, larger ladies’

WERE THIS A GAME OF FREE ASSOCIATION AND the word were “Aldo’s” the automatic reply would have to be “abbondanza!”—Italian for “abundance.” That Aldo Cascio is a generous soul comes across on the plate. From the bread basket (don’t miss the signature cheesy bruschetta—its sharp-ness and saltiness make for a unique ap-petite opener), to the pastas, to the entrees, everything is supersized. And that’s just one reason families, friends and casual ac-quaintances fl ock to this inviting BYO. (No bottle handy? No problem! Pane e Vino, a wine and spirits store also owned by Cascio, is just two doors down. You can even sip a cocktail at its handsome wooden bar before your meal; you’ll be called when your table is ready.)
The other reason? The food delivers what folks come here looking for: red and white–checked tablecloth staples like spie-dini, spaghetti, pizzaiola, primavera and parmigiana this and that. Indeed, the hot antipasto platter is straight from the red-

sauce classics cookbook. Piled high with shrimp, mussels, artichokes, eggplant, pep-pers and stuffed mushrooms and clams, all swimming in pomodoro, it may not be cutting-edge cuisine but it’s certainly all-out comfort—the kind that leads to sauce-soaked pieces of bread and crackling conversation.
Hankering for just a taste of starch, we ordered a half-portion of the gnocchi al pomodoro. So much for getting just a taste—each of our bowls was fi lled to the brim. And wouldn’t you know, the dump-lings were good. Really good. Their robust potato fl avor and fi rm texture, beautifully played
up by the mild tomato sauce, made it tough to leave a single gnocchi behind.
Entrees follow suit, with not one, but three big slices of veal in the Milanese. They’re lightly breaded and fried to a nice crisp. And the dish comes with a giant heap of tender
steamed escarole, a delicious bittersweet foil for the buttery veal.
If you’re thinking of ordering shrimp francese to be virtuous, here’s fair warning: Each of the mighty jumbo shrimp (six in all) is coated with an egg-and-fl our batter that enhances its bulk. And the substantial wine, lemon and but-ter sauce makes it a heavy dish overall. Make the mistake of eating as much as we did beforehand, and you too will likely take most of it home.
Desserts are not Aldo’s tour de force; most of them are not made on the premises. The carrot cake and the German chocolate cake (more coconut, please!) were passable … and easy to pass up. My advice: When such abundance can be had at such a rea-sonable price (our bill was just about $90), skip the sweets and go for the savory. ■
