step by step punjabi bhindi fry recipe:

1. rinse 250 grams b hindi/okra in water. then wipe dry t hem with a kitchen towelor just allow to dry t hem naturally i n a plate.

2. slice off the crown and base tip of each bhindi. then vertically s lice them like in

the below pic. the slices ca n range between 0.25 to 0.5 cm in thickness.3. also slice 1 medium onion. chop 1 large tomato and slit 2 green chilies.

4. heat 3 tbsp oil in a thick bottomed shallow frying pan. add the sliced onions.

5. saute them till they start turning light brown.

6. now add 1 tsp ginger-garlic p aste and the green chilies.

7. saute till the raw aroma of ginger-garlic g oes a way.

8. now add the chopped tomatoes.

9. stir w ell.

10. add ¼ tsp turmeric p owder, ¼ tsp red chili powder, ½ tsp corianderpowder and ½ tsp cum in powder.

11. mix t he spices w ith the rest of the onion-tomato masala. saute this m ixture till

the tomatoes b ecome pulpy a nd you see o il releasing from the sides.12. now add the chopped bhindi/okra.

13. season with salt.

14. stir very well.

15. cover the pan with a tight tting lid and cook t he sabji on sim or low ame.

16. do check after 4 to 5 minutes f or a couple of times. cook t he bhindi fry o n alow ame till the bhindi is d one. you will have to check after every 4 to 5 minutesso that the bhindi does n ot get too browned or burnt. do stir every t ime when youcheck the sabzi. if the bhindi starts t urning too get too browned, then sprinkleabout 1 to 1.5 tbsp water all over. stir, cover and continue to cook o n a low ame.

17. here after the rst 5 minutes i added ½ tsp dry m ango p owder/amchur. notany s pecial reason. simply b ecause i forgot to add it before. stir very w ell.

18. once the bhindi is d one, add ¼ tsp garam masala powder a nd ½ tsp kasurimethi/dry fenugreek leaves, crushed. stir very w ell.

19. lastly add 2 tbsp chopped coriander leaves. stir.

20. serve bhindi fry hot or warm with chapatis o r as a side dish with dal –rice .

1, Boil ater in a pan till it #u##les up rigorously,S itch off and add the soya chunks and let it

aside for fe mins for it to gro in si e,

3, n a pan heat oil - add items listed under to temper then add ginger garlic paste onion

tomato and saute till tomatoes turn mushy and ra smell lea%es,Then add the coconut

mi0ture along ith red chilli po der and garam masala po der and re4uired salt,
