When summer finally says so long, it’stime to embrace warmer foods that help usmake it through harsh winter weather.Perhaps no food is better suited for coldweather than chili. Chili is a hearty, fillingfood, ensuring you can make it througheven the coldest days. When looking towarm up this winter, consider the followingrecipe for “Chicken and Black Bean Chili”from Leslie Jonath and Frankie Frankeny’s“Soup’s On!” (Chronicle Books).

Chicken and Black Bean ChiliServes 6 to 8

1/2 cup olive oil or vegetable oil, divided1 1/2 pounds boneless, skinless chicken

thighs, cut into 1-inch cubes2 to 3 tablespoons chili powder1 tablespoon cumin seeds2 cups diced yellow onions1 cup seeded, diced poblano chiles1 red bell pepper, diced3 canned chipotle chiles in adobo

sauce, minced1/4 cup minced garlic1 14.5-ounce can black beans1 15-ounce can diced tomatoes2 ears corn, kernels cut from the cobs

SaltFreshly ground black pepper

1 ripe avocado, halved, pitted, anddiced

1 cup cherry tomatoes, quartered1/2 red onion, diced1/2 bunch fresh cilantro, minced1/2 cup freshly squeezed lime juice2 jalapeno chiles, seeded and minced1 1/2 teaspoons kosher salt1/2 cup crumbled Mexican cotija cheese1/2 cup grated mixed cheddar and

Monterey Jack cheeses

Heat 1/4 cup of the oil in a heavy-bot-tomed, 8-quart pot over medium heat. Addthe chicken, chili powder and cumin seedsand saute until the chicken is cookedthrough, 4 to 6 minutes. Transfer the meatto a bowl and set aside.

Return the pot to the heat, add theremaining 1/4 cup of oil, and cook the yel-low onions, poblanos, bell pepper, chipo-tles, and garlic, stirring frequently, until theonions start to brown. Stir in the beans withtheir liquid, tomatoes and corn and returnthe cooked chicken with all its juices. Turnthe heat down to low and simmer, stirringevery 5 minutes, until the chicken is cookedthrough and tender, about 25 minutes.Season with salt and pepper to taste.

In a large bowl, combine the avocado,tomatoes, onion, cilantro, lime juice,jalapenos, and salt. Set aside.To serve, ladle the chili into bowls and topwith the salsa and the cheeses.
