Though many people are quick to referto Memorial Day as the unofficial begin-ning of summer, the day is much morethan that. Initially known as DecorationDay, Memorial Day is a day to rememberthose military members who died in serv-ice of the country.

The origins of Memorial Day remain atopic of debate. In 1966, PresidentLyndon Johnson declared Waterloo, N.Y.as the official birthplace of MemorialDay. However, the roots of MemorialDay likely run much deeper, asresearchers at Duke University note thatduring the Civil War, organized women'sgroups in the south had begun to decoratethe graves of fallen soldiers.

Memorial Day as we know it todaycan likely be traced to Charleston, S.C.,where teachers, missionaries and somemembers of the press gathered on May 1,1865 to honor fallen soldiers. During theCivil War, captured Union soldiers wereheld at the Charleston Race Course andhundreds died during captivity. Upontheir deaths, soldiers were buried inunmarked graves. When the Civil Warended, the May Day gathering was organ-ized as a memorial to all the men whohad died during captivity. The burialground was landscaped, and those freedas a result of the Civil War played anintegral role in the event at the CharlestonRace Course.

While the event in Charleston mighthave been the first Memorial Day-typecelebration in the southern United States,General John A. Logan is often cited asinspiring similar events in the north. Ascommander-in-chief of the Grand Armyof the Republic, a veterans' organizationfor men who served in the Civil War,General Logan issued a proclamation justfive days after the Charleston event thatcalled for Decoration Day to be observedannually across the country. Logan pre-ferred the event not be held on the

anniversary of any particular battle, andthus the day was observed for the firsttime on May 30. Celebrating the day inMay also was significant to event organ-izers because May is a month when flow-ers are in bloom, making it easier forobservers of the holiday to place flowerson the graves of fallen soldiers.

In 1868, events were held at more than180 cemeteries in 27 states, and those fig-ures nearly doubled in 1869. By 1890,every northern state officially recognizedDecoration Day as a state holiday. Butsouthern states honored their dead on adifferent day until after World War I,when the holiday was changed to recog-nize Americans who died in any war andnot just the Civil War. Nearly every statenow celebrates Memorial Day, a name forthe holiday first used in 1882, on the lastMonday in May.

These alerts let youknow if your password security has beencompromised so that you can take fastaction.

Simple ways to find more time Workdays have a way of flying by, and

many men and women find themselveswondering where the time went at the endof a typical day. A workday filled withmeetings and the obligations of a career isonly half the story for working parents,who upon leaving the office must managethe obligations of their families.

With such hectic schedules, it's no won-der so many working parents find them-selves wishing there was more time in theday. While there may be no way to make aday 25 hours long, the following time-sav-ing measures can increase the time youhave to unwind and relax at the end of thenight.

•Save those leftovers. At the end of agood meal, leftover food will either find itsway to the garbage can or be wrapped upand stored in the refrigerator. Men andwomen looking to save time shouldembrace the latter approach to leftovers,turning them into an extra meal for later inthe week. •Exercise in the morning. Strawberries are so lovely. Is it anywonder that the strawberry plant is a mem-ber of the rose family, and that the heart-shaped baubles we gobble up are not reallyberries, but the enlarged receptacle of theplant's flower?

Strawberries are very much a productof their environment: finicky, with the lus-cious fruit either providing an incompara-ble pop of flavor or the most disappointinglet down of blandness. I don't know any-one who hasn't had more than their shareof tasteless strawberries.

Strawberries like their soil and weatherjust so. It also appears they have sufferedfrom our loving them too much. Thisonce-delicate fruit is now commonlygrown on Ponderosa-sized farms. Whatwere once tiny jewels are now bright redgolf balls (all the easier for field hands topick). It's widely believed that this attemptto bring mass quantities to a demandingpublic has compromised the strawberry'sirresistible sweet-tart flavor. While it's notimpossible to find a ripe, honeyed berry inyour grocery, when late spring comes, Isuggest you hit the road and head either toa farmer's market or small farm stand.

Beside the color, the smell and thebeguiling taste of seasonal strawberries,the great news is that they're good for you!They are on almost everyone's best-foodlist, mainly because of the high amount ofvitamin C they deliver, more than orangesper serving, and with less sugar. They'realso packed with fiber and antioxidants.Strawberries are considered a superfood.

When choosing strawberries there isone important checkpoint: smell. If yourprospective package of berries doesn't giveyou that familiar waft of sweetness, thenset it back down. The other aspect to checkfor is mold. Strawberries are highly perish-able, don't travel well and are known tostart spoiling even as they sit there looking

attractive. When you get home, refrigeratethem, and then wash as needed.

In addition to strawberry ice cream,shakes, pies and jams, or a bowl of freshstrawberries and cream, there are otherways to accentuate these treasures.

Strawberries pair well with many herband citrus flavors, such as mint, lemonverbena, the juice and rind of lemons andoranges. You also can experiment withherbs such as tarragon, basil and lemonthyme. A little sugar or a great honey alsowill enhance the flavor of even the mostperfectly ripe berry. Whipped cream,creme fraiche or a good quality Greekyogurt pair perfectly strawberries.

Strawberries also go well in savorydishes, and can be used in salads andsauces to add a bright dimension of flavor.Like so many foods, the essence of straw-berries will intensify when roasted, eitherfor desserts or as a surprising and attrac-tive addition to side vegetables, such ascarrots or beets. Try my recipe for RoastedStrawberry Jam, and be adventurous withstrawberries!

Roasted Strawberry JamWhen cleaning strawberries, be sure to

avoid soaking them in water. Strawberriesare very porous and will become water-logged and lose some of their flavor.

1. Preheat oven to 350 degrees F.2. Rinse the strawberries thoroughly.

Cut off tops and carve away any discol-ored or mushy parts. Quarter or dice eachberry.

3. Place berries on foil or a parchmentpaper-lined roasting pan. Mix the berrieswith the sugar, juice, vanilla extract, saltand pepper. Spread berries evenly acrossthe surface of the pan.

4. Roast for approximately 2 hours, 15minutes, stirring every 20 to 30 minutes toprevent burning and sticking, making sureto scrape the sides of the pan.

5. Remove strawberries from the pan.Allow to cool slightly before using. Pourinto an airtight container and refrigerateovernight to firm. Makes 1 1/2 cups.

A Sandwich Classic forKids and Adults

1/4 cup chocolate hazelnut spread(Nutella)

2 tablespoons salted almonds, roast-ed and chopped

1 large ripe banana, sliced 4 slices (1 inch thick each) challah or

egg bread 1. Prepare grill or heat grill pan for

direct grilling on medium.2. Spread 1 tablespoon chocolate spread

on one side of each slice of bread. Sprinklewith almonds, pressing gently to adhere.Arrange banana on 2 bread slices. Topwith remaining 2 bread slices, spread sidedown.

3. Place sandwiches on hot grill grate.Place heavy 12-inch skillet on top of sand-wiches, pressing down gently. Grill 5 to 6minutes or until grill marks appear, turningover once. Cut into halves; serve immedi-ately. Makes 4 servings.

TIP: This sandwich can be made in apanini press. Check for doneness after 3

minutes. If you can't find challah or eggbread, white bread also will work.

Sausage Scramble8 ounces sausage1 red pepper, chopped 1 small onion, chopped 1/8 teaspoon pepper 2 cups leftover mashed potatoes Poached eggs Parsley, chopped 1. In 12-inch skillet, cook sausage on

medium-high 5 minutes, stirring to breakup with spoon; transfer to small bowl. Toskillet, add chopped red pepper, onion andpepper.

2. Cover; cook 5 minutes or until crisp-tender. Add potatoes. Cook 5 to 7 minutesor until potatoes are hot, stirring often. Stirin sausage. Serve with poached eggs.Sprinkle with chopped parsley. Serves 4.

1 1/2 cups all-purpose flourSugar substitute to equal 3/4 cup

sugar, suitable for baking1/4 cup unsweetened cocoa powder3 tablespoons chopped pecans1 teaspoon baking soda1/2 teaspoon table salt1 cup unsweetened applesauce1/2 cup water1 teaspoon canola oil1 tablespoon white distilled vinegar1 teaspoon vanilla extract1. Preheat oven to 350 F. Spray a 9-by-

9-inch cake pan with butter-flavored cook-ing spray.

2. In a large bowl, combine flour, sugarsubstitute, cocoa, pecans, baking soda andsalt. Add applesauce, water, oil, vinegarand vanilla extract. Mix gently just tocombine. Evenly spread batter into pre-pared cake pan.

3. Bake for 30 to 35 minutes or untilcake tests done in center. Place cake panon a wire rack and let cool for at least 15minutes. Makes 8 servings. Good warm orcold.

Food is a real and delicious way forpeople to share themselves and engagewith each other and a greater cause, as myneighbor, Emily Torgrimson, has found.

She is co-founder and executive direc-tor of Eat for Equity, a nonprofit thatbuilds a culture of generosity through sus-tainable community feasts(eatforequity.org). By inviting people togather to eat and give what they can, theorganization raises thousands of dollars forlocal and international nonprofit causes.

Emily's creative approach to cookingfeatures flavorful and simple recipes forbusy families and her own household,developed by cooking for hundreds of peo-ple in home kitchens.

No wonder I was eager to join her on arecent Sunday afternoon to prepare aweek's worth of "salad-in-a-jar."Improvising with the resources at hand,she scanned the refrigerator for the forgot-ten carrot, leftover black beans and otherfresh odds and ends of inspiration. Shelined up a row of sparkling pint and quartsize canning jars and together, we packedthem to the brim. The carrot went into anAsian salad with sesame dressing, tofu,oranges, spring onions and spinach. Thebeans became a Southwestern salad withroasted poblano dressing, corn, tomatoes,cilantro and greens. The result was a rain-bow shelf of grab-and-go meals.

Make salad-in-jar with your kids forhealthy portable lunches, or use a largequart-size jar for a last-minute complementto an evening meal.

Gather the ingredients and get layering.You'll have salads for the week, with onlya meal's worth of clean-up and dishes.

SALAD-IN-A-JAR BASICSFor one salad, use a wide-mouth pint-

size jar such as a canning jar with tight-fit-ting lid.

Here's the hands-on fun:1. Pour 1-2 tablespoons of salad dress-

ing into the bottom of the jar. 2. Layer small handfuls of your favorite

raw vegetables such as grated carrots,chopped celery, sweet peppers, scallionsand cucumbers on top of the dressing.

3. Add softer ingredients such as cubedtofu, pasta, grains, grated cheese, beans,cooked vegetables, tomatoes, citrus,berries and dried fruit.

4. Pack the remaining space with saladgreens or spinach. Screw the lid on andrefrigerate upright for up to 5 days.

5. To serve, shake the salad into a bowl.Add croutons and nuts, if you wish.

NOTE: If you desire a salad with meat,fish or hardboiled eggs, add it to the jar thesame day you eat the salad.

Cleaning and stain removal tipsWhether it's carpeting, clothing or

upholstery, a new fabric can be ruined atthe arrival of that first stain. Spills andspots can quickly mar the surface of anyitem, transforming a prized possession intoan eyesore in a matter of seconds. Butknowing how to treat a stain can save suchitems from the scrap heap and save theirowners a substantial amount of moneyalong the way.

Mildew: Rare is the homeowner whohasn't battled mildew at one point oranother. Bleach and baking soda are thematerials most often used to tame amildew outbreak. Depending on the sever-ity of the mildew, begin with one partbleach to one part water in a spray bottle.Allow this solution to sit on the mildewand then rinse. If this does not work, mixone part bleach to three parts baking sodato form a paste. Use an old toothbrush orscrub brush to scour the mildew, allowingthe concoction to set for roughly 30 min-utes before rinsing it off. If the mildew isstill stubborn, increase the amount ofbleach in the cleaning solution. Rememberto always clean in a well-ventilated room.Diluted bleach also can remove mildewfrom siding or plastic patio furniture.Never mix bleach with an acid, such asammonia or cleaning products that containammonia.

Red wine: Anyone who has hosted aparty where adults are drinking wineknows the potential for a spill is signifi-cant. Red wine can stain quickly, so fastaction is necessary to prevent wine spillsfrom causing permanent damage. Use coldwater to flush out the stain as much aspossible. When cleaning spills on clothing,flush the red wine from the back of stainor the underside of the fabric. This is notoften possible when cleaning spills on car-pets and upholstery, so in such instancesblot the stain with a clean cloth, such as awhite rag, that will not transfer any addi-tional coloring to the stain. Sprinkle table

salt on the wine stain and allow it to sit fortwo to three minutes. Rinse thoroughlywith cold water while blotting up theexcess. Continue to rinse until the stain hasdissipated.

Oily stains: Oil and water do not mix,so using water to try to treat an oil-basedstain will only exacerbate the problem.The first step to cleaning oil-based stains isto use something absorbent, such as cornstarch or talcum powder, on the stain andblot with a cloth. This will help draw someof the oil out of the fabric. Lay paper tow-els down on a table and place the stainedclothing face-down on the towels. Use adry cleaning solvent on the back of thestain and push down to blot out the oilyresidue onto the paper towels. Repeat theprocess until the oil is removed. Apply alaundry pretreatment product or even plainlaundry detergent to the stain. Wash in thehottest water that is safe for the fabric andallow the item to air dry.

Pet stains: As young puppies learn tohouse train, they can leave messes indoors,while cats may soil areas of the home ifthey are scared or finicky. Pet stainsshould be treated thoroughly because notonly do they look unsightly, but they canbegin to smell as well. Leaving odorbehind may encourage the pet to urinate inthe same area over and over. Plain, whitevinegar is a good tool for pet stains. Blotup as much of the urine as possible. Use a50/50 solution of white vinegar and wateron the stain. Spray it onto the soiled spot.Blot up the remainder with a dry, cleancloth. Repeat as necessary. To remove anyresidual odor, sprinkle baking soda on thespot after it has dried. Let the baking sodasit for up to a day. Then vacuum up thepowder.

When stains occur, avoid rubbing orpushing the stain further into the fabric.Work from the outside in when blotting tocontain the stain as much as possible.

How to reduce junk mailEmail correspondence has completely

changed the way people communicate on adaily basis. Handwritten letters havebecome a relic of the past, as most peoplenow take to their keyboards or touch-screens to tap out messages and send theminstantaneously. In addition to general cor-respondence, email has become a methodfor businesses to contact prospective con-sumers. Once a store or service providerhas customers' email addresses, that busi-ness now has a direct avenue by which toreach potential customers.

While providing businesses with youremail address has its benefits, mostnotably making it easier for consumers tolearn about upcoming sales or even specialdiscounts offered only to email sub-scribers, offering such information alsomakes men and women susceptible to junkemail. Few things can be more annoyingthan an inbox overrun with junk mail.Some retailers sell subscribers' emailaddresses to other businesses, so con-sumers who initially only provide theiremail address to a specific retailer maysoon find themselves inundated withemails from a bevy of retailers.

In addition to being a nuisance, junkmail also can make a person who isn'tcareful more susceptible to identity theft.

Eliminating junk mail may be impossi-ble, but there are ways to cut back on allof that unwanted content in your inbox.

•Filter your messages. Run a search inyour inbox for the word "unsubscribe."Doing so should narrow down all of themessages that have instructions to unsub-scribe from notifications. Go message bymessage, and follow the links provided toremove your email address from mailinglists. Although this can be a time-consum-ing process, it can substantially cut backon the amount of junk mail in your inbox.

•Create a designated junk mail account.Who says you have to have just one emailaccount? Establish one account that youwill use for correspondence between

friends, family members and other impor-tant people while reserving anotheraccount to use when stores and businessesrequest contact information. This way allof the spam will funnel into one accountand won't interfere with the account youuse to correspond with friends and family.

•Avoid publicizing your email address.Junk mailers have robot programs that cangrab email addresses from a websites andenter them into their systems. If you man-age a website, do not list your emailaddress among the contact information.Use a secure "contact us" form or replacethe email address with a QR code.

•Don't conduct business with a junkmailer. Despite how annoying they can be,unsolicited emails are effective. A certainnumber of people will follow a link withina junk mail advertisement and ultimatelyconduct business with that company. Makeit a point not to purchase a product orservice from a company that sent you anunsolicited email.

•Utilize email filters. Many email pro-grams enable users to filter their messagesand automatically redirect them to specificfolders so they never reach a user's pri-mary inbox. Use these filters and tags tokeep unwanted junk mail out of yourinbox and in a folder where all unwantedmessages can be deleted in a single click.

•Beware of unsolicited messages onmobile phones. The Better BusinessBureau advises consumers to ignoreunwanted marketing text messages. Notonly does this alert a junk mailer that anumber is a working number, but also itopens the door for more messages. Ifunwanted texts are getting out of hand, filea complaint with the FederalCommunications Commission or theCanadian Anti-Fraud Centre.

Junk mail can be a nuisance that inter-feres with business and personal communi-cations. But there are several ways menand women can make themselves less sus-ceptible to these unwanted daily emails.

Psychological Association has commis-sioned an annual nationwide survey toexamine the state of stress across theUnited States and understand its impact.The 2013 survey found that people con-tinue to experience what they feel areunhealthy stress levels, with 42 percentof adult respondents reporting that theirstress levels have increased over the pastfive years. The picture is none the rosier inCanada, where data from the 2012Canadian Community Health Surveyrevealed that nearly 23 percent ofCanadians aged 15 and older reportedthat most days were "quite a bit orextremely stressful." While those figuresmarked a slight improvement from theprevious year's survey, it's apparent thatstress is still a considerable concern forpeople throughout both the United Statesand Canada.

Though many people unfortunatelyregard stress as an inevitable side effectof adulthood, it's important that men,women and even children avoid charac-terizing stress as simply a byproduct of adifficult and/or successful life and career.Even momentary stress, often referred toas "acute stress," like the kind thatappears when stuck in a traffic jam, canhave a potentially devastating impact onoverall health. According to theAmerican Institute of Stress, acute stresscauses an increase in heart rate andstronger contractions of the heart muscle,and some medical professionals havesuggested there is a link between repeat-ed episodes of acute stress and heartattack.

Regular use of relaxation techniquesto reduce stress can help to counteractthe effects of long-term stress, which the
