Prevent strokeswith fish oil?By Sam Erickson

Strokes are one of the most terrifyingmedical conditions you can encounter.Because of their sudden onset and the lackof ability to walk, talk or otherwise com-municate, they can be very scary for any-one around when they occur. There aresome reasonable methods to reduce theoverall risks of stroke, including regularexercise, quitting smoking, not drinking inexcess and reducing high blood pressure.Some people believe that ingesting fish oilcan be added to a regular regimen of strokeprevention techniques.

The use of fish oil as a therapy for pre-venting strokes has been shown to have aneffect primarily on thrombotic strokes.There are two main types of strokes: thosecaused by blockage of arteries to the brainand those caused by bleeding in the brain.A thrombotic stroke occurs when a bloodclot breaks loose from somewhere in thebody and races to the brain, stopping bloodand oxygen from getting to it.

The key to the benefits come from theOmega-3s in fatty fish. These are longchains of unsaturated fats with numerouseffects. Fish oils can reduce inflammationthroughout the body. They can reduce thenumber of triglycerides and the amount ofcholesterol circulating in the bloodstream.

Substances that contain alpha-linolenicacid (LNA) like flaxseed, soybeans, andwalnuts can provide similar effects, as thehuman body can transform LNA intoOmega-3s. Fatty fish include salmon, tunaand cod. It is generally recommended thattwo servings of fatty fish be eaten per weekfor healthy individuals and that fish beeaten daily for those with proven cardio-vascular problems.

If fatty fish aren't available in your area,you don't like fish or you are concerned forother reasons, many supplements now con-tain Omega-3 fatty acids. Fish oils are alsogenerally available in the health food sec-tion of many stores. As with mostprocessed foods, the procedure to isolatethe nutrient can reduce its effectiveness.These can be a great way to get the nutri-ents without eating fish every day.

Enjoy taste of summer with Tomato Pie By Donna Erickson

It tastes like summer when it's not.Looks like pizza, but it's not. So, what isit? Tomato pie! It's our new familyfavorite for a winter supper when we longfor something with a fresh and zestyItalian flavor. I serve it with a healthygreen salad and crunchy French bread.Hungry yet?

Just pick up fresh tomatoes, garliccloves and rub some fresh basil leavesbetween your fingers, and be transportedto a warmer season as you prepare a tastymeal with your kids.

Tomato Pie1 9-inch refrigerated ready-made pie

crust, or prepare an easy homemadecrust (see below)

1 1/3 cups shredded Italian-blendcheese or mozzarella

2-4 cloves fresh garlic, minced 2 tablespoons fine dry Italian-season

breadcrumbs 2 pounds fresh ripe tomatoes, cut

into slices or wedges (about 6 cups)1/2 teaspoon salt1/2 cup chopped fresh basil

1. Unfold pie crust. On a lightlyfloured surface, roll crust to a 12-inch cir-cle. Place in a 9-inch pie plate or quichedish. Flute edges with fingers. Bakeaccording to product instructions until setand dry.

2. Remove from oven and sprinkle 1/3cup cheese evenly over shell. Sprinklegarlic and 2 teaspoons of crumbs overcheese. Top with one third of the tomatowedges or slices. Let kids repeat sequenceto form three layers topped with theremaining 1/3 cup of cheese. It will befull!

3. Sprinkle with salt and bake in a 375F oven for 20 to 25 minutes or until toma-toes are just starting to brown. Removefrom oven and place on a wire rack.

4. Sprinkle with basil leaves. Let stand10 minutes before serving.

Alternate Homemade Crust

4 ounces cream cheese, softened1/2 cup butter, softened1 cup all-purpose flourPinch of salt

Place the cream cheese and butter in alarge bowl. Add flour and salt. Worktogether with a pastry blender. Gather thesoft dough into a ball with your hands andpress into a 9-inch pie pan. This is a per-fect job for your child to do. Simply setthe ball in the middle of the pan, and pressthe dough out in all directions to extendslightly over the rim. Flute the edges withfingers. Prick holes with fork. Bake at 425F for 8 minutes before step 2.

Petty gets touch of Marcus AmbroseBy Monte Dutton

Marcos Ambrose, the NASCAR driverfrom the Australian island of Tasmania, ishoping a change will put his Sprint Cupcareer back on track.

In his first full season, Ambrose fin-ished a creditable 18th in the 2009 pointstandings while competing forJTG/Daugherty Racing, a Toyota teamaffiliated with Michael Waltrip Racing.He finished second at Watkins Glen, N.Y.,and had three other top-five finishes.

But he fell to 26th in the Cup stand-ings last season and moved to RichardPetty Motorsports this year. This putsAmbrose back in the Ford camp.

Ambrose, 34, has won the NationwideSeries race at Watkins Glen in each of thepast three seasons. He found his first suc-cess racing in Australia's V8 SuperCar

Series, winning the 2003-04 champi-onships.

Asked about driving for a team namedfor NASCAR's most successful driver, thegood-natured Ambrose said, "Well, it is alittle intimidating. Not only now will hesay 'Good-day, how is it going?' but hewill also want to know why I didn't winthe race. There is a lot of prestige beingassociated with Richard PettyMotorsports, and it is a real honor for meto drive for The King. I never thought Iwould get that chance.

"I'm looking forward to the opportuni-ty, and hopefully, he is going to be proudof me, just like I am of his company."

Ambrose joked about teammate A.J.Allmendinger's laughable attempts at anAustralian accent, but added, "He and Iget on great. We have known each other

for a few years now, and it's going to befun to have him as a teammate."

While learning the ropes of oval-trackracing, Ambrose has enjoyed the bulk ofsuccess in road races. Allmendinger alsohas a road-racing background.

"I think that both of us really want tojust be known as NASCAR contenders,"said Ambrose. "I know A.J. had a reallygood second half last year and hasmomentum. I'm trying to catch up to himas quickly as I can. We just want to beknown as contenders every week. Wewant to be known not just as road-racespecialists, but NASCAR drivers in gen-eral."

2 teaspoons vegetable oil

12 ounces skinless, boneless chick-

en breasts or tenders, thinly sliced

2 garlic cloves, crushed with garlic

1 medium orange

3 tablespoons seasoned rice vinegar

3 tablespoons soy sauce

1 teaspoon sugar

2 teaspoons Asian sesame oil

1 teaspoon grated, peeled fresh gin-

ger

1/8 teaspoon ground red pepper

(cayenne)

4 large radishes, each cut in half and

thinly sliced

2 green onions, thinly sliced diago-

nally

2 tablespoons toasted sesame seeds

1. In large saucepot, prepare pasta inboiling water as label directs but do notadd salt. Place shredded carrots in colan-der; drain pasta over carrots to softenthem slightly. Transfer mixture to largebowl and set aside.

2. In nonstick 12-inch skillet, heat veg-etable oil over medium-high heat untilhot. Add sliced chicken and garlic; cook 4to 5 minutes, stirring constantly, untilchicken loses its pink color throughout.Transfer chicken to bowl with pasta.

3. To prepare vinaigrette, from orange,grate 1 teaspoon peel and squeeze 1/4 cupjuice. In small bowl, with wire whisk orfork, mix orange peel, orange juice, vine-gar, soy sauce, sugar, sesame oil, gingerand ground red pepper until combined.

4. Toss pasta mixture in bowl withvinaigrette, radish slices and green onions;sprinkle with sesame seeds. Serve warmor refrigerate until ready to serve. Serves4.

Preparing meals at home is a great wayto save on money and stretch the familyfood budget. With a little planning andsome savvy shopping, preparing meals canbe economical and even fun! If you're notused to preparing meals at home, the verythought may be daunting. But, as with allnew habits, start slowly with achievablegoals.

Here are some tips to get you started:•Start using the term "planned overs"

instead of "leftovers." When making ameal, make extra amounts of the starch,protein source (meat/dry beans) or veggieand freeze for later use. For example,while cooking rice for tonight's stir fry,cook up extra rice to be frozen for a souplater in the week. Are you slicing up chick-en pieces for that stir fry tonight? Slice andfreeze extra for a stew or soup for theweekend. In other words, make extra ofwhatever you're cooking and freeze it forlater use. Label everything!

•Start thinking of meat as a condimentor a side dish. Instead of having a mealrevolve around meat, let the starches, veg-gies and fruits take on more of a centralrole. Use meat in soups, stews andcasseroles, and bulk up these dishes withrice, pasta or veggies. Don't forget the drybeans! They're a great source of protein,carbohydrate and fiber.

•Set aside time during the week for a"cook-athon." Get the kids involved andstart a family tradition. Choose some fami-ly meal favorites, gather the needed cook-ing equipment, foods and storage contain-ers, assign fun tasks to the kids and startmaking batches of food for the week.Lasagna, spaghetti, soups, casseroles andstews all freeze well. Make up several dif-ferent meals for variety throughout theweek.

•Remember those dry beans I men-tioned? Have you ever thought of using

them, but hadn't soaked them and knewthey'd take too long to cook? Why notkeep some canned beans in the cupboardto use in a quick meal? To use those drybeans, which are cheaper, leave a note onthe fridge to remind yourself to soak themfor later in the week.

•Know your herbs and spices. Youdon't need a shelf full of fancy spices toadd a little variety to your dishes. Here aresome basic spices that can be used in vari-ous cuisines:

Latin American/Southwest - use cumin,chili pepper, oregano

Chinese/Asian - use cumin, black pep-per, red chili pepper

Italian - use basil, parsley, oreganoAgain, start slowly, adding a couple of

new spices at a time to your cupboard.Many of these herbs and spices can begrown in windowsill containers to savemoney.

This recipe for Blackened Tilapia onToast uses the flavors of Latin America,the Southwest and New Orleans to changethe flavor profile of tilapia, an inexpensivebut delicious variety of fish. Turn on theexhaust fan over your stove when you pre-pare this fiery fish recipe, as it creates asmall cloud of smoke! This recipe alsoworks well with boneless, skinless chickenbreasts or thighs, or thin cuts of pork.

Blackened Tilapia on Toast1/4 cup Creole or Cajun Seasoning

(any mixture listing cumin, chili pepper,oregano and black pepper as ingredi-ents)

1 tablespoon of vegetable oil1 pound of tilapia fillets1 lemon4 slices of thick country-style white

bread1 tablespoon butter

1. Coat the tilapia fillets with CajunSeasoning, and let them sit for 30-minutesat room temperature.

2. Heat up frying pan over high heat.Pour the oil into the pan and place thetilapia fillets in the pan when the oil is sohot it is nearly smoking.

3. Fry tilapia until the fillets lookopaque and are firm and cooked through.

This usually takes about 3 to 4 minutes perside.

4. Remove tilapia fillets. Slice lemoninto wedges. Butter and toast the bread.Place each fillet on a slice of bread. Pourthe remaining contents of the frying panover the tilapia fillets and the bread, andsqueeze lemon juice over the BlackenedTilapia from the lemon wedges. Serves 4.

cherry gelatin1 (4-serving) package sugar-free

vanilla cook-and-serve pudding mix1 (16-ounce) can tart red cherries,

packed in water, drained and 1/2 cupliquid reserved

1 1/4 cups water3/4 cup biscuit reduced-fat baking

mix3 tablespoons unsweetened cocoaSugar substitute, suitable for baking,

to equal 1/2 cup sugar3 tablespoons chopped pecans1/3 cup plain fat-free yogurt1/4 cup fat-free mayonnaise1 teaspoon vanilla extract

1. Preheat oven to 350 F. Spray an 8-by-8-inch baking dish with butter-flavoredcooking spray.

2. In a medium saucepan, combine drygelatin, dry pudding mix, reserved cherryliquid and 1 cup water. Stir in cherries.Cook over medium heat until mixturethickens and starts to boil, stirring oftenand being careful not to crush cherries.Spoon hot mixture into prepared bakingdish.

3. In a large bowl, combine baking mix,cocoa, sugar substitute and pecans. Addyogurt, mayonnaise, remaining 1/4 cupwater and vanilla extract. Mix gently justto combine. Drop by spoonfuls onto cherrymixture to form 6 mounds.

4. Bake for 25 to 30 minutes. Placebaking dish on a wire rack and let set for 5minutes. Divide into 6 servings.

By David UffingtonIt's bad enough that we can walk through a

mall or airport, pass someone carrying a tinyscanner and have our credit-card informationstolen. Now we learn that our laptops aren'talways secure either.

First, two definitions:Sidejacking - snagging data out of the air as it

travels from one point to another on a wirelessconnection.

Firesheep - the program developed to grabdata out of thin air in sidejacking. Hackers canfollow you around the Internet and see what yousee, see what you type in, and in the worstinsult, can imitate you.

The easiest place for this to happen is at anunsecured Wireless Internet (WiFi) location,such as a cafe that asks users to sign in with thesame password. Your data flows across the air,and with the click of the mouse, a hacker cangrab your user credentials and impersonate you

online. If you tend to open your social network-ing sites and leave them open, you're invitingtrouble. It doesn't take much for a hacker tostroll through your friends' pages and pretend tobe you.

FoxBusiness.com recommends a few ways tostay safe:

•Don't e-mail personal data, period. YourSocial Security number, if typed in on a form,can be grabbed. Your credit-card information, iftyped into e-mail, can be grabbed.

•Use an e-mail website that encrypts data,such as Gmail. Look for a padlock icon on thebrowser's address bar.

•Keep the security updates current on all yourgear.

•Beware the websites you visit. The usualvirus protection warnings apply, of course, butespecially in a Wi-Fi environment. Take oneTrojan horse, add in a sidejack and before youfinish your latte, someone's got your bank

account number in his greedy hands.• Invest in a wireless card for some, but not

complete, safety.Oddly enough, your biggest danger might be

from hackers around the world rather than some-one near you.

Idea: Keep a netbook computer to use whenyou're out. Use it for casual e-mails and check-ing websites other than your social networkingsites. Don't go anywhere you need to put in apassword or enter any personal data.

Investigate a program called BlackSheep,which can expose uses of Firesheep around you.Or look for HTTPS Everywhere to block a hack-er from monitoring your web use.
