Green Beans with MixedMushrooms

This simple side borrows the casse-role's basic flavors, but gives themgrabbed-from-the-garden goodness withfield-picked beans, thin-sliced onions andearthy cremini and shiitakes.

2 tablespoons olive oil4 sprig fresh thyme2 large (10 to 12 ounces each)

onions, thinly sliced1 clove garlic, crushed with press 8 ounces cremini mushrooms, thin-

ly sliced4 ounces shiitake mushrooms,

stems discarded, thinly slicedSaltPepper3 pounds green beans, trimmed 1. Heat covered 7- to 8-quart saucepot

of water to boiling on high.2. Meanwhile, in 12-inch skillet, heat

oil on medium-high. Add thyme andonions; cook 10 to 12 minutes or untilbrowned and very tender, stirring occa-

sionally. Stir in garlic and cook 1 minute.Add mushrooms and cook 5 minutes oruntil tender, stirring occasionally. Stir in1/2 teaspoon salt and 1/2 teaspoon fresh-ly ground black pepper. Remove and dis-card thyme.

3. Add green beans and 2 teaspoonssalt to boiling water. Cook, uncovered, 8to 9 minutes or until tender, stirring occa-sionally. Drain and rinse with cold water.(If making ahead, transfer mushroommixture to medium bowl. Cover; refrig-erate up to overnight. Transfer beans toresealable plastic bag; refrigerate up toovernight.)

4. When ready to serve, return greenbeans to saucepot and add mushroommixture, stirring to combine. Cook onmedium until beans are heated through,stirring occasionally. Makes 12 side-dishservings.

Couscous-Crusted Salmon1 cup water 3/4 cup couscous 1/4 cup refrigerated pesto 1/4 teaspoon cider vinegar 1/8 teaspoon pepper 4 (6 ounces each) salmon fillets 1/4 teaspoon salt 1. Preheat oven to 450 F.2. In 1-quart saucepan, bring 1 cup water to

boiling on high. Remove from heat; stir incouscous, refrigerated pesto, cider vinegar andpepper. Cover; let stand 5 minutes.

3. Place salmon fillets, skin side down, onfoil-lined cookie sheet. Season with 1/4 tea-spoon salt.

4. Mound 1/2 cup couscous mixture on topof each salmon fillet, pressing into even layer.

5. Bake in upper third of oven 12 to 15 min-utes or until salmon is just opaque throughout.Serves 4.

deep-dish 9-inch pie plate and flute edges.2. In large skillet sprayed with olive oil-fla-

vored cooking spray, saute zucchini and onionfor 5 minutes or just until tender. Stir in Italianseasoning and parsley flakes. Place skillet onwire rack to cool.

3. Meanwhile, in large bowl, beat eggsusing wire whisk. Stir in half-and-half. Addmozzarella and Cheddar cheeses. Mix well tocombine. Fold in slightly cooled zucchini mix-ture. Pour mixture into prepared piecrust.

4. Bake 30 minutes or until filling testsdone. Place pie plate on wire rack and let set 5minutes. Cut into 8 servings.

It's that time of the year when cer-tain foods take the stage in a grandfashion. Fall ushers in a long seasonof iconic ingredients and homey,familiar dishes. Much has been saidand written about and created withpumpkin. Maybe it's because thisfamous gourd is the very color of thechanging landscape. It makes youwonder: Is there anything new underthe brilliant orange skin of the pump-kin?

When it comes to our taste buds,fads seem to come and go. Oneminute we are gushing and gorgingon a new sensation, and the nextwe're discarding it like an old pair ofleg warmers. But pumpkins are likediamonds; they will forever be lovedand treasured. Maybe it's because wedon't feast on them all year long, sowhen their season returns, they bringto the table that wonderful combina-tion of something new, yet remem-bered.

The pumpkin plant originated in

Central America, but it has becometied to the history of our UnitedStates. We have a reverence forpumpkins that almost no other fruitor vegetable can claim. Most of uslearned in school that pumpkins wereintroduced to early pilgrims byNative American Indians. Theyroasted long strips of pumpkin fleshover an open fire. Pumpkin, preparedas we know it now, came aboutmuch later.

The very first incarnation of thepie loved by a whole nation was ahollowed-out pumpkin filled withmilk, honey and spices, then roasted.From there the pumpkin went viral,and the myriad ways we've found toslip it into a dish boggles the imagi-nation.

Pumpkin does seem to makeeverything better. It's good for you,and so versatile that it can be used inboth savory and sweet dishes, includ-ing soups, pastas, breads anddesserts. Pumpkins provide a heftysource of vitamin A, as well as beingone of the tastiest forms of fiber. Thebeauty of the golden orange pumpkinis not only skin deep. That gorgeouscolor is an indicator of significantamounts of beta carotene, compara-

ble to carrots, beets and sweet pota-toes. Pumpkin seeds are rich in pro-tein, minerals and fiber.

The seeds possess a rich butterytaste that lends itself well to pestosor salads, as a delicious candy brittleor as a crunchy snack when toastedand spiced.

So, ready, set, go -- get yourpumpkin and start cooking!

Pumpkin Bread Puddingwith Vanilla Sauce

My Pumpkin Bread Pudding isthe perfect way to celebrate fall!

8 ounces day-old or driedFrench bread*, cut into smallpieces, about 5 cups

2 cups half-and-half, or halfmilk and half cream

3 large eggs2/3 cup granulated sugar or

agave syrup2/3 cup brown sugar plus more

for sprinkling2 cups of fresh, pumpkin puree

or 1 can (15-ounces) pumpkinpuree

1 cup dried fruit or choppedwalnuts or pecans, or a combina-tion of the two

3 tablespoons melted butter

plus more to butter pan1 teaspoon ground cinnamon

plus more for sprinkling1/2 teaspoon ground nutmeg1/2 teaspoon ground ginger1 teaspoon vanilla1. Butter an 11-by-7-inch baking

dish. Heat oven to 350 F.2. In a large bowl, cover the

French bread with the half-and-half.Press the bread into the milk with theback of a large spoon to make sure itsoaks evenly. Set aside.

3. In another bowl, combine eggs,sugar or agave syrup, and brownsugar, pumpkin, dried fruit and/ornuts, melted butter, cinnamon, nut-meg, ginger and vanilla; blend well.Pour pumpkin mixture over soakedbread and stir to blend.

4. Pour mixture into preparedbaking dish. Sprinkle top with 2heaping tablespoons of cinnamonand brown sugar mixed together, ifdesired. Bake for 45 to 60 minutes,or until set. Serve with whippedcream or an ice cream sauce, ifdesired. Serves 8.
