Breakfast Lamb Gozleme with TzatzikiFebruary 26 2014, 7:00pm
Ingredients
Salt and pepper, to season
1 tbs olive oil
500g lamb mince
2 tsp cinnamon
½ tsp nutmeg
1 tsp paprika
100g baby spinach leaves
2 spring onions, thinly sliced
¼ cup finely chopped parsley
200g feta, crumbled
Tomato Chutney (makes ¾ cup)
1 brown onion, thinly sliced
250g vine-ripened tomatoes, roughly chopped
40ml white wine vinegar
75g (1/3 cup) brown sugar
Tzatziki (makes 1¼ cups)
250g Greek-style yoghurt
1 Lebanese cucumber, coarsely grated, drained
1 tbs extra virgin olive oil
½ lemon, juiced
Dough
300g (2 cups) plain flour
60ml (¼ cup) extra virgin olive oil, plus extra, to cook
Notes
These gozleme would be great for a party cooked on the barbecue
hotplate.
Traditionally, lamb mince is used in this recipe, but you could also
use beef, pork or chicken, if you like.
Serve with a Greek salad on the side for a great midweek dinner.

Preparation time: 40 mins
Cooking time: 55 mins
Serves: 4
1. To make chutney, place all the ingredients in a medium saucepan. Bring to the boil, then reduce heat to low and simmer, stirring often, for
30 minutes or until mixture is thickened.
2. To make tzatziki, combine all ingredients in a bowl. Season with salt and pepper.
3. To make dough, sift flour with a pinch of salt in a large bowl. Make a well in the centre. Combine extra oil and 185ml (¾ cup) water in a small
jug and pour into well. Using a wooden spoon, gently mix to combine. Turn out onto a lightly floured work surface and knead for 10
minutes or until dough is smooth and elastic. Place dough in a greased bowl and cover with plastic wrap. Set aside for 20 minutes to rest.
4. Meanwhile, heat oil in a large frying pan over medium-high heat. Add lamb mince and cook, breaking up with a wooden spoon, for 5
minutes or until browned. Add spices and cook, stirring, for 2 minutes or until fragrant. Add spinach and cook, tossing, for 1 minute or until
wilted. Remove from heat and toss through onions and parsley. Cool s lightly, then stir through feta.
5. Divide dough into four portions. Roll out each portion on a lightly floured surface into a 5mm-thick circle.
6. Place 1 cup of the filling on one half of each dough circle and fold to enclose.
7. Heat 1 tbs of oil in a frying pan over medium heat. Add 2 gozleme and cook for 4 minutes on each side or until golden. Repeat with oil and
