what experience do you have servicing prestige vehicles?

In 1988 I began working on an entire range of prestige vehicles over in the United Kingdom. I came out to Australia in 2005 and was trained on Renault vehicles. Within this industry technology is ever-changing therefore it is important for

you to continually update your skills and receive further training no matter how old you are!

Keeping your European vehicle in top shape?

Regular servicing can be overrated in the consumer mind however it is very important to change brake liquid every two years and coolant every four years. The weather conditions experienced in Australia puts a lot of stress on the vehicle – timing belt should also be changed every four years.

How long have you been a mechanic?

I started playing around and working with cars at the age of 14 and everything went from there.

An apprenticeship is the best way to get your foot in the door.

Completion of a four year apprenticeship including both attending TAFe and workshop experience is necessary within this industry.

australia’s Biggest Morning teaIt’s that time of the year again, Australia’s Biggest Morning Tea! A fantastic fundraising event bringing colleagues together for a bit of fun and yummy food, to assist in raising funds towards the Cancer Council’s work in research, prevention and support.

Give Me 5 For KidsBrian Hilton proudly supported Give Me 5 for Kids in June; a fundraiser established by local radio host Sarah King on 2GO.

The nation-wide charity supports and raises money for local children’s services including Gosford and Wyong Hospital, Central Coast Kids in Need and Breakaway.

It was a wonderful, fun filled night with guests getting into the spirit and dressing to the theme of ‘Viva Las Vegas’. Held on

Saturday 22nd June with lots of glitz and glamour many happy guests left the Ball winning holidays and concert tickets all in the name of charity!

Little LegendsThis month Brian Hilton are taking on 2GO’s Little Legends. Listeners are encouraged to nominate their team with one entry being selected each week.

IN JaNuary thIS year I participated in walking the Kokoda track to raise funds for Lifeline’s new Online Chat Initiative. It was an experience that I will never forget – 9 days on a 96km track through Papua New Guinea’s thick jungle, walking in the footsteps of our aussie Diggers.

The aim of the trek was to not only finish but to be at Brigade hill on day 5 to commemorate anzac Day.

This was one of ‘life’s moments’ I will remember for many years, as 220 people quietly reflected on the sacrifice, courage, endurance and mateship the Diggers went through

on the Kokoda track.

One of my first sponsor’s was Brian hilton Motor Group who generously donated $1,000; this was a huge boost to my fund-raising initiative. at the completion of my journey, the entire team managed to raise $53,781.80 for Lifeline.

I would like to thank the team who joined the trek to raise money for Lifeline and take this opportunity to thank everyone, especially Brian hilton Motor Group and other businesses and individuals from the Central Coast who supported and sponsored me in raising this final amount.

Mashed Potato Doggy GoodnessIngredients:300g chicken breast500g potatoes100g cottage cheese

Preparation:Cook the chicken breast for 20 minutes in a quart of water. Remove from the stock and allow to cool. Cut into small pieces.Boil the potatoes in their skins in unsalted water until soft. drain, peel and make a soft mash with some of the chicken

stock. Mix in the chicken and cottage cheese. Serve at room temperature in several small portions throughout the day.

An exclusive recipe from the Chefs at Lizotte’s

oh so slowly Braised Lamb shanksComfort food is all about slowing down. This dish would really hit home for a touring crew.

Serves 4instruments

• 2 cups plain flour • Salt and pepper, to taste • 2 teaspoons dried oregano powder

• 8 small lamb shanks • 300ml olive oil • 2 carrots, finely diced

• 3 sticks celery, finely diced • 6 cloved garlic, thinly sliced • 2 fresh bay leaves

• 1 bunch fresh thyme, finely chopped • 1 large brown onion, finely diced

• 2 litres Napolitana sauce • 200ml beef stock • 200ml red wine

Rhythm

Pre-heat oven to moderately low, 160°C.

season flour with salt, pepper and oregano powder and toss shanks in flour.

heat half of the oil in heavy skillet over moderate heat and cook shanks until brown on all sides, approximately 10-15 minutes.

remove shanks from skillet and place in a deep baking tray.

heat remaining oil in saucepan and fry off carrot, celery, garlic, bay leaves, thyme and onion for approximately 3 minutes over moderate heat.

Add to lamb shanks, evenly distributing in baking tray.

Add napolitana sauce, beef stock and red wine and cover with foil.

Cook in oven for approximately 2 hours until meat is tender and begins to fall off the bone. Turn the meat approximately every 30 minutes to ensure that it cooks evenly.

remove from oven and serve.

The Snowy Mountains

Travel

Begin a road trip this winter and head down to the Snowy Mountains

for either an action packed, fun filled time or a relaxing getaway.

The Australian Alps experience heavy snow falls annually which makes for wonderful skiing for you and your mates or the whole family. The Snowy Mountains is worth the drive, head south-west of New South Wales via the Australian Capital Territory or continue on through to Victoria. The journey takes you on easy to drive sealed roads, a fantastic way to explore the mountains and an opportunity to see the diverse and stunning scenery.

There are many different routes to choose from to get to the Snowy Region. The alpine Way, the Snowy Mountains highway, the Monaro highway and the Elliot Way, all of which take you through scenic towns and villages and showcasing the natural beauty of the region.

Perisher is Australia’s biggest ski resort with Bullocks Flat, Guthega, Blue Cow, Smiggin holes and Charlotte Pass offering fantastic recreational skiing in NSW. Other ski resorts

include Thredbo and Selwyn. In Victoria, Falls Creek, Mt Buller, Mt hotham are a few of the most popular destinations. These resorts offer night skiing, downhill or cross-country skiing, snowboarding and tobogganing. They cater for family groups including experience and inexperience skiers.

If skiing or snowboarding isn’t you’re thing but you still seek adventure, the Snowy Mountains has an endless list of activities to offer you. discover a diverse region of mountains, rivers and lakes, explore the incredible Kosciuszko National Park, go fishing, bushwalking, horse riding or mountain biking. Visit some of Australia’s heritage listed towns and soak up the history, walk the pretty streets or try the local food and wine.

At the end of the day find comfort and warmth around an inviting fire or slip out into the nightlife amongst the pubs and bars. It will be one trip to remember!
