Goodwill toward men

As we enter the Christmas season of 2009, the message Goodwill Toward Men holds a special meaning to me. Although many around us are divided on too many issues, this message is relevant now and self evident in the whole scheme of things. It’s a message we should remember all year long. How could we wish for anything otherwise?

Our cover of Rudolph by Doris Cain may hold a message too. The others laughed at him and called him names and wouldn’t let him join in any of their games. But he rose to the occa-sion, and used his distinctive attributes for the benefi t of others. He let his light shine. Good for him!

Our Canyon Lake Community Profi le this month is Tish Sutton. Although she no longer has the Christmas Store, she still offers Tish’s Decor. When she’s not out on a jobsite, Tish spends her extra time during the holidays add-ing lights, decoration, and beauty wherever she can. She also takes the time to serve others in need. It takes a group effort but it works.

There are many holiday events happening all around the lake. Check out our community calendar for summaries with more details in-side. And during this season of giving and shar-ing, remember the important message of good-will toward men and let’s hope for peace in the future, amongst us and worldwide.

portunities to “decorate and create beauty – or to just sit and watch the beautiful lights.”

Tish and Tony, her husband of 23 years, designed the trademark stars that decorate many businesses around the lake during the holidays. When she and Tony saw a neighborhood in North Carolina with all the trees fi lled with lit stars, they brought the idea back home. Tish likes the instant gratifi cation of creating rather than just observing. “Even when producing a musical, the immediate enjoyment is fulfi lling,” she continues.

“Holiday decorating is my favorite,” Tish said. “Every year I rework �60 feet of custom garland at a large ranch nearby using feathers and deer antlers that are perfect for Hill Country homes. I get to decorate custom trees, some 20 feet tall!” Some are traditional decora-tions, some rustic, and some high end gloss.

Tish “approaches life from the ser-vice side,” she explains. “I like helping people. I do well with children and like making them smile.” Teaching music theory is structured but she can still make it fun.

Tish considers her talents as “God given” and in turn gives back to those in need. Over the past ten years, she traveled with St. Francis’s Christian Mission team, Manos de Dios, to Hondu-ras six times. They also raised money to buy land for a church, then returned to build it – hands on. They have awarded 26 scholarships to Honduran students so they can continue their education after 6th grade.

Serving others is part of Tish’s makeup. Giving back is what makes her who she is. And at Christmastime, she is a good re-minder of the true meaning of Christmas.

As you walk into Tish Sutton’s charming new home, her talents are evident. The formal living area is beautifully deco-rated to accent the baby grand piano she uses for lessons. Before opening Tish’s Decor & More and Christmas Store fi ve years ago, Tish retired from her fulltime position as Music Director at St. John’s Episcopal Church in New Braunfels. But she continued to volun-teer – because she couldn’t stay away.

With her design services in great demand, Tish closed her retail store last month to better serve her remod-elling clients and continues her busy schedule from her workshop at home.

Raised in Dallas by her mom, a teacher, and her dad, a pianist and art-ist, Tish was infl uenced by both. Al-though she likes the structure found in teaching, she has always pursued her creative side artistically and musically. She gives piano lessons to children – about 25 now – and continues to direct music part-time at Church. Tish also builds large metal wall hangings that are an eclectic mixture of copper and metals, stylishly wired together on a wagon wheel. She whips fl oral arrangements into tasteful works of art.

“All my art has a story,” Tish said. “I gather pieces from all over the country and wire them together.” She sometimes creates them with a theme, but veers creatively with items she fi nds along the way that fi t. “Each piece evolves every time I move it.” Each time she dismantles the main pieces, she has fun putting it “back together a little differently.”

“I always wanted to create beauty, no matter what I was doing: music, interior design, fl oral arranging, catering,” she added – and the Christmas Store was an extension of that di-rection. Tish always loved Christmastime – with so many op-

is to take sugar to alcohol. Red wines go through a second malolactic fermentation which takes malic acid to lactic acid. Red grapes are pressed to remove the skins. Later the wine is racked multiple times to take the juice off of the lees, which is the sedi-ment at the bottom of the barrel or tank. It is then fi ned so that more of the sediment is pushed to the bottom – they use egg whites as the fi ning agent for their red wines. After more racking, they fi lter prior to bottling

the wine. Fawncrest is open on Saturdays from noon to 7pm for winetasting

or by appointment. The tasting is complimentary and customers can buy wine at the vineyard and winery. The venue is casual, and you can choose to sit inside or on the deck overlooking the vineyard and Canyon Lake.

Bring wine to a BBQ or a sit down din-ner. Give wine as a hostess gift or wrap it up as a present for the holidays. It is a perfect gift and many people are choosing wine as their cocktail of choice. For a special event, receiving a locally produced wine adds a personal touch.

Fawncrest is a family owned boutique vineyard and winery in Canyon Lake producing 350 cases per year. They have recently completed their grape crush and also bottled their 200� vintage chardonnay. They grow grapes at Fawncrest and import grapes from preferred regions in the US.

As the winemaker and a certifi ed Six Sigma quality program Blackbelt, Patty McNeil focuses on the critical and controllable variables of making wine. Raw material (grapes), temperature, and cleanliness are all critical variables when making wine. To keep the process simple and traditional, she does not add water, sugar, fl avors, etc. and keeps the metabisulfi te, a preservative that can cause a headache, to the absolute minimum. Of course alcohol intake and dehydration can also cause a headache, and as a producer and consumer of wine, Patty recommends that you enjoy the fl avor of your wine of choice and not drink in excess.

Wine enhances the taste of food, and wine and food pairings should be considered when serving a nice dinner – light and dry whites with fi sh for example, and robust reds with a good steak. At Fawncrest, they produce dry and fruity wines, primarily because that is their preference in wine. They make a chardonnay and Bordeaux style of red wine including Cabernet Sauvignon, Merlot, Cabernet Franc, and Meritage which is a Bordeaux blend. .

The typical wine making process includes crushing the grapes and fermenting the reds on their skins for about four weeks. The white grapes are immediately pressed and the fi rst fermentation

Insurance and your vision

Can I use my insurance at my eye doctor’s offi ce?

It’s no surprise that insurance is con-fusing to most people, especially when it comes to eye care. Although most eye care practices are very knowledgeable about insurance plans, remember that

it is the individual patient’s responsibility to understand her own insurance plan details. As the year 2009 is coming to an end, perhaps it is more important to understand your own insurance plans in order to maximize your dollars. Here are a few facts about insurance benefi ts.

Vision plans: Often supplemental to regular health insurance, vision plans usually covers for annual wellness eye exams, includ-ing prescription for the glasses, and part of the material cost. If you have vision plan and do not get annual eye exams, you are actually losing your money. Realize that your doctor cannot treat a medical problems of the eyes under vision plan agreement (needing glasses is not considered a medical problem). Your medical insurance may also include routine vision benefi ts, so check with your insurance company for detail.

Medical insurance: Yes, you can use your medical insurance for your eye exams. Too many patients think that they cannot use their medical insurance at an eye doctor’s offi ce. Your medical insurance WILL pay for examinations if you have health concerns or problems with your eyes. So what happens if you have concerns

about your eye health but you also need new glasses? Can you have your vision checked even though you have a medical eye problem? The answer, of course, is yes. However, your eye doctor will charge you a refraction fee ($25 currently in our offi ce).

Flexible spending account (FSA): Toward the end of each year, many people fi nd themselves in the same predicament. Their fl ex-ible spending account (often referred to as “FSAs”) contains an excess of funds that if not spent by December 3�st, it will be lost. The overage is usually the result of underestimating medical and dental expenses for the year. If you or your family members haven’t had an eye exam this year, get one. Even if you don’t have vision plan and have to pay out of pocket, those expenses are reimbursable through your FSA. You can also buy extra glasses or contacts, or you may even consider getting prescription sunglasses.

Starting with function, there are bikes built for every purpose you could imagine, and then some. The basic cat-egories are road bikes which are light and fast on the road, mountain bikes, which are built tough with fat tires for rough terrain and may even have a suspension system, BMX bikes have smaller wheels and are designed for dirt jumping and urban free-style riding,

and then there are the comfort type bikes including beach cruisers and commuter bikes with big seats and upright riding position. Within these major categories there are several choices and styles to consider as well. Size will be the next thing to take into con-sideration. A bike that fits properly will be a lot more enjoyable to ride, thus being a bike you will ride more. In general, your bike should have about one inch of clearance between you and the top bar when standing over it in front of the seat. Once you’re on the bike, it shouldn’t feel like it is either stretching or crunching your natural reach to the handle bars. Once you’ve selected a bike that roughly fits you, it may be dialed in to your specific needs through adjustments to the seat, and handle bars.

Quality and value will really go together. There are a lot of bikes on the market that are “value priced”, but before you buy, consider the true meaning of value. Most bicycles carried by “Big Box” stores are generally regarded as disposable, their parts are hard if not impossible to properly service, and the ones that are serviceable need it often. When you buy a bike from a bicycle specialty shop, the bikes are built to last for a long time, and usu-ally come with a good warranty as well as a free tune up or even free tune ups for a year at some shops. Some shops have youth exchange programs that help kids stay on a bike that is the correct size as they grow. Your local bike shop will help you fit your bike to you, know you by name, and remember what kind of rider you are and help make your ride enjoyable for years to come. These things are truly valuable.

Wood is a great ‘green’ product. Most lumber in use today is from planted trees and the logs, siding and posts used by Anthony Forest Prod-ucts come only from cut trees they have planted. With �00 years of tree farming experience, they are still farming.

You have to keep your wood dry, as we do. If you do, it will last indefi nitely. Take two 2 x 4 scraps, put one in the dirt and one on top of your fence post, and in about two months, you’ll see the difference. Elevate your home or wood project at least 24” above ground. I am concerned when I see the new rental homes like those being built on the north side of the lake. If log siding goes right down into the dirt, it won’t be very long until the tenants are exposed to mold.

Did you ever notice the brownish two-foot stripe on the bot-tom of white stone homes? That’s caused by the splash carrying dirt back up on the wall when it rains. When the wall is wood, the dirt holds the moisture, then the mold starts, then the bugs call it “Home Sweet Home.” It is important to remember to build your outdoor wood projects 24” inches up.

The stain or sealant you use is also very important. I like to think of the tires on my FJ Cruiser – 40,000 miles and they’re gone. If we bought tires that last a little longer, we would put the tire companies out of business. Well, it’s the same with the prod-ucts we use on our wood, homes, fences, etc. Don’t save some money and use your typical big box store chain stain. There are only a few products out there that will last. They may cost more but you can pay a little more now or pay a lot more later to do the repair. It won’t take long to need if it’s not done properly.

Log home construction can be large or small and is particu-larly well suited for Hill Country vacation homes and perfect for a country setting – from the inside out. Many plans are available to choose from. Just make sure you contact a professional when you’re ready to start your project. Your home is likely the biggest investment you will ever make. Make sure it’s a good one.

be good to do a column on legal care and advice. Many people think that legal advice and representation is only for the wealthy. Although attorneys obviously must be paid, there are many avenues for anyone to get legal advice. Lawyers in Texas are required to perform a certain of amount of pro bono (free) work. Court ap-pointed attorneys are available to those who cannot afford to hire an attorney to defend them in a criminal case.

Another resource is the Texas Access to Justice Foundation. It is a 501(c)(3) nonprofi t corporation that is funded by interest from all Texas attorneys trust accounts. “The mission of the Texas Access to Justice Commission is to develop and implement policy initiatives designed to expand access to, and enhance the quality of, justice in civil legal matters for low-income Texans, also known as Legal Aid.”

Some attorneys, including our fi rm, work on a contingency fee basis. The client pays nothing and essentially enters a partnership with the attorney who is representing them. Typically this is for a percentage of recovery in a civil lawsuit. This is common in per-sonal injury, Deceptive Trade Practice, and business litigation to name just a few. Many lawsuits are covered by statutes that provide for recovery of attorney’s fees for the prevailing party. The Texas Deceptive Trade Practices Act provides for recovery of attorney’s fees and in certain situations where the bad conduct was intentional, or in reckless disregard of the truth, damages may be tripled.

Most lawyers will provide an initial free consultation. Basically, the client has a chance to fi nd out about fee arrangements and the

various legal avenues available to them. Even if they cannot take your case, most lawyers can steer you to a practitioner who is familiar or even a specialist in a given fi eld. Universal legal care may not be perfect, but in most instances if you have a valid civil claim, you have the ability to obtain proper representation. In criminal cases you may qualify for a court appointed attorney. Whenever faced with legal problems or questions, it is recommended to seek professional advice. An attorney will help you best ascertain how to protect your rights.

Winter? What’s that? Of course you need pest control during the winter. For us here in God’s Country we consider anything below 60° winter. Why do you think our friends to the north – which is anybody on the other side of the Red River – come here for the ‘winter’ season? They come here to laugh at the way we dress during this time while they wander around in shorts and fl ip-fl ops. I think they actually donned a light jacket when we were encapsulated in ice for three days in January 2007.

Let’s move on to the bug and pest side of the equation. During the cooler months some creatures such as scorpions and centipedes go into hibernation. Carpenter ants – re-member the ones wearing tool belts? – as well as Argentine, acrobat and fi re ants also go into a lesser state of hibernation. I say ‘lesser state’ because if there’s one warm day or more, which happens often around here, they can resume normal activity in a big way. Buggies which remain active include roaches, spiders, silverfi sh, weevils, bed bugs, termites and oh, yes, let’s not forget the fl eas.

Yes, there are things that actually become more prevalent during the cooler months. What’s your guess? If you said rodents, congratulations! You get to move to the front of the class. Mice and rats send us screaming and hollering to the top of furniture calling for our mates to do something. Funny because they can climb stuff way better than us. Good thing they don’t know what fear they bring to us, otherwise they would just chase us out and they could have the whole place to themselves. What about squirrels, raccoons, opossums and skunks? Well, they’re locals too and they also feel any-thing below 60° is freezing and you have that big old warm spot you call a house with plenty of room. Guess what? You don’t live in the attic or crawl space, SOOoooo!

Do you still want to skip your winter pest control service? I’d advise you to stay current. You’ll sleep better.

The holidays are just around the corner and we will soon be planning our holiday meals. Oftentimes, we over eat and get a very full, uncomfortable, bloated feeling. To get relief from the bloat we must have proper digestion through enzymatic function. Enzymes are proteins taken from food and made by our bodies, which help digest our food and give us relief from the bloat. They function as catalysts and must be present before any chemical reaction can take place in our bodies. Hormones, vitamins and minerals cannot function optimally without enzymes.

For optimal digestion we need the enzyme amylase to digest carbohydrates and starches. Protease digests proteins and lipase breaks down fats and assists in balancing fatty acids. Lactase is a commonly known enzyme that breaks down milk sugars. Raw foods are high in their own enzymes and many supplemental en-zyme products are derived from foods. Bromelain is derived from pineapples and papain is derived from papaya. Some enzymes are made from animal products like pancreatin and pepsin.

Trusts explained

In inquiries from my readers, I often get the question “should I have a trust?” As the discussion develops it becomes clear that there is a need for a simple, clear explanation of what a trust is and what it does. In reality, there are many kinds of trusts, each designed to address a certain

situation. Broadly speaking, however, all trusts should be looked upon as Asset Protection tools. Therefore, in order to determine the appropriate type of trust to consider, one must defi ne the threat(s) that need to be addressed. Here are some examples:

• Excessive and avoidable taxation;• Costly, lengthy and complicated probate;• Unintended heirs;• Mismanagement of assets;• Lawsuits and creditor claims;• Loss by elderly and incapacitated benefi ciaries.This list is by no means complete, but it emphasizes the im-

portance of consulting with a specialized estate planning attorney. Some of the humorous ways of describing the purpose of a trust are “control from the grave”; “disinheriting my widow’s next husband” and “keeping my money out of the hands of my bum son-in-law”.

Components of a Trust: The basic trust is simply a legal docu-ment that contains detailed instructions. Typically, the instructions involve how money is to be managed, by whom, who receives benefi ts and when. Once created, the trust assumes its own legal identity with a “date of birth” and a tax ID number. The creator of the trust is the Grantor. Te grantor is the person who has the need to protect his/her assets against one or more of the above-mentioned threats. The Grantor appoints a Trustee, who is the person(s) or

entity responsible for carrying out the instructions in the trust docu-ment. The Benefi ciaries are the persons (such as spouse, signifi cant other, children and grandchildren) or entities (charities for example) that receive income or assets from the trust.

Classifi cation: Trusts may be classifi ed in two basic ways. A trust can be Revocable or Irrevocable. A revocable trust is one which can be changed, amended or cancelled by the grantor. An irrevocable trust is basically set in stone, once created. Therefore great care must be taken in making a decision to create an irrevocable trust. The other way to classify trusts is either Living (created during the Grantor’s lifetime) or Testamentary (created after the death of the Grantor, through his/her last will). Clearly, a testamentary trust is always irrevocable, since the grantor is dead and can’t change anything. A living trust can be either revocable or irrevocable. Of course, a revocable trust automatically becomes irrevocable as soon as the grantor dies.

In future columns, the use of trusts in meeting specifi c asset protection goals will be discussed. But ultimately, only you and your attorney are the ones to decide on the most appropriate course of action for your estate planning needs.

Is exercise supposed to be fun? You bet! When exercise routines are not fun, they be-come monotonous and people get bored, so when the next training session rolls around, they try to fi nd one excuse or another to skip their workout. What’s the solution to this problem? On a practical scale, it is virtually impossible to devise new routines to placate

the taste of every gym-goer. You can, however, put some zing into your workout experiences, as well as making a point to occasion-ally get outside the gym to fi nd fun-fi lled and entertaining ways of maintaining your fi tness. Try any or all of the following ideas:

Man is basically a social animal. So, make it a point to so-cialize with your co-workout crowd as much as possible. It is also advisable to invite some of your friends to join you for your workout schedule. This way, having somebody you know in your company, will make working out less of a chore and more of a social occasion. Further, to make those long drawn out walks, hikes, and bike trips entertaining, include picnics in the schedule appropriately. The theory is simple – boredom sets in when the workout regimes get monotonous. Once you can do this in a fun fi lled manner, you won’t realize the extent of physical exhaustion while working out.

Constantly challenge yourself. Certain basic workouts such as bench press, triceps extensions, and arm curls simply cannot be interesting over a period of time. In order to add some juice to such routines, increasing the target and constantly challenging yourself to meet it. In that way, you will fi nd some minimal moti-vation for working out routinely.

When you get free time, test yourself and your fi tness levels by joining a marathon or some local competition involving physical activities. To add fun and variety to your holidays, it is also advis-able to go backpacking once in a while or try horseback riding. Mind you, it is not that easy to ride a horse!

Finally, take a few minutes daily or on the weekends to play with your children – assuming you have any. If you don’t have any of your own, borrow nieces and nephews or your friend’s children. A few hours with them will provide more physical ac-tivity than any local gym can provide. Not to mention it’s a ton of fun.

In fact, there are umpteen ways to make exercise fun fi lled, but one has to be creative in his/her thoughts. Involve your whole family in the process if possible. That will double as some quality time together as well as good fun.

Tail piece: Always begin any exercise program after a medi-cal checkup. Also, make it a point to only go to a certifi ed fi tness expert. It is very important that one exercises safely and only in the correct manner.

During a typical yoga class, I often recite readings from various sources. These readings could be from poets,

teachers, authors, ancient textsw, yogic teachingts – whatever seems to fi t the theme of the class. My students have often told me that the readings are one of their favorite parts of class. With that in mind, I would like to share with you one of my favorites.

Admidst the many gatherings of friends and family around the holidays, it can be easy to forget to keep an eye on your pets. However, the holiday season is also a very busy time for vet clinics due to pancreatitis and accidental ingestion of toxic substances. Here are some sub-stances to avoid:

Heartburn is the term generally used when talking about any pain or dis-comfort in your gastrointestinal tract, although it is not entirely accurate to blame all your upset stomach problems on heartburn. There are other conditions that may be to blame.

Heartburn or indigestion are terms often used to describe that bloated, heavy feeling you get after eating too much food in a short period of time. It’s simply your stomach’s way of trying to tell you to slow down, stop eating and give it a chance to digest all that food. Gastroesophageal refl ux is a different condition. This is when the food and digestive juices in your stomach accidently fl ow backward into your esophagus, the tube which connects your throat to your stomach.

Your stomach may be used to acidic digestive juices, your esophagus is not. So when these acidic juices reach your esopha-gus, you could experience some discomfort and pain. And if this happens on a regular basis, you may be suffering from a condition known as gastroesophageal refl ux disease. This is when the small valve-like opening to your stomach allows the stomach’s contents to back up into your esophagus. This condition can become serious and you should address this with your physician.

If the pain is lower and stays with you for a few days, however, you may be suffering from a peptic ulcer, a sore inside your stom-ach that keeps fl aring up and causing pain over and over again. If this is the case, you need to see your doctor immediately.

If the pain you are experiencing is simply heartburn or indiges-tion, these tips may help:

• When lying down, support your entire upper body with a foam wedge or pillows. This keeps juices fl owing downward instead of upward as you sleep.

• Use moderation when you eat, and you will be thankful later. • Being overweight and wearing tight clothing can actually

forceyour stomach’s contents up into your esophagus.• Limit the amount of acid-rich foods you eat, such as citrusfruits, fruit drinks and spicy foods. • Take small bites. Chew your food thoroughly.

Heartburn is the term generally used when talking about any pain or dis-comfort in your gastrointestinal tract, although it is not entirely accurate to blame all your upset stomach problems on heartburn. There are other conditions that may be to blame.

Heartburn or indigestion are terms often used to describe that bloated, heavy feeling you get after eating too much food in a short period of time. It’s simply your stomach’s way of trying to tell you to slow down, stop eating and give it a chance to digest all that food. Gastroesophageal refl ux is a different condition. This is when the food and digestive juices in your stomach accidently fl ow backward into your esophagus, the tube which connects your throat to your stomach.

Your stomach may be used to acidic digestive juices, your esophagus is not. So when these acidic juices reach your esopha-gus, you could experience some discomfort and pain. And if this happens on a regular basis, you may be suffering from a condition known as gastroesophageal refl ux disease. This is when the small valve-like opening to your stomach allows the stomach’s contents to back up into your esophagus. This condition can become serious and you should address this with your physician.

If the pain is lower and stays with you for a few days, however, you may be suffering from a peptic ulcer, a sore inside your stom-ach that keeps fl aring up and causing pain over and over again. If this is the case, you need to see your doctor immediately.

If the pain you are experiencing is simply heartburn or indiges-tion, these tips may help:

• When lying down, support your entire upper body with a foam wedge or pillows. This keeps juices fl owing downward instead of upward as you sleep.

• Use moderation when you eat, and you will be thankful later. • Being overweight and wearing tight clothing can actually

forceyour stomach’s contents up into your esophagus.• Limit the amount of acid-rich foods you eat, such as citrusfruits, fruit drinks and spicy foods. • Take small bites. Chew your food thoroughly.

Now that December is arriving, there are plenty of things to do around your house. Sure the yard doesn’t need mowing any more, but I’ll bet you can still fi nd plenty to do.

For starters, if you want your lawn mower to start again in the spring, drain all the gas out of the tank back into a can or run the tank empty. Be sure to add a light coat of oil or WD 40 to all your tools, pruning shears, rakes, shovels, and other garden tools, when putting them away for the winter. This will help ensure they work smoothly when you need them again.

Secondly, after the fi rst freeze, your perennials start look-ing a little sad. Go ahead and trim them back to two to three inches above the ground. Don’t worry; they will come back in the spring. Isn’t Mother Nature wonderful? Make sure to put some new mulch around the beds to help protect against the cold winter. A good layer of mulch three to four inches thick will help protect your plants’ roots from freezing and also give you added weed prevention in the spring. Putting a pre-emergent on top of the mulch is a good idea also, but be sure to water it in.

Next, when you’re putting up your Christmas lights, you might want to clean out the gutters since you will already have the ladder out anyway. Cleaning out your gutters now can save you some costly repairs later. When you have the gutters clean and all the leaves out, go ahead and get the leaves from the yard so the whole place looks good. Don’t bag your leaves, run them over and over with the mower mulching them into small pieces that will decompose and add needed nutrients back into the lawn. If that option doesn’t sound appealing, put them in your compost pile to be used at a later date.

During the holiday season the most popular drink, hands down, is eggnog. Very tasty, it is rich, spicy and alcoholic. It is a holiday tradition that traces its roots back to England. There, only the upper class consumed it. Without refrigeration, the alcohol slowed the spoiling of milk and eggs. In America, Captain John Smith reported that Jamestown settlers made eggnog in 1607. It is said that George Washington served eggnog to his guests at the White House. His concoction included rye whiskey, rum and sherry; it was said to be a stiff drink that only the most courageous were willing to try. American colonists replaced ale with rum, which was less expensive because it was imported from the Carribean and was not subject to the taxes im-posed by the King.

Over the years, many customers have asked how to make it. There are many ways to make eggnog with different spirits, com-plicated combinations and aging processes too lengthy to include. Some would take a chef to prepare. There are pre-mixed eggnogs that are good, however they have a short shelf life and quantities from the supplier run short on supply year after year. Therefore, I am including an easy recipe, unlike President Washington’s, that guests can enjoy in moderation.

Eggnog literally means eggs inside a small cup. It is used to toast to one’s health. Traditionally, eggnog was nearly always made in large quantities and nearly always used as a social drink. Today, it is hard to imagine a Christmas without a cup of “nog” to spice up the joyous atmosphere with family and friends. If you have any leftover, you can add it into your pancakes or waffl e batter instead of milk. I understand it is a tasty twist. Eggnog is a tradition but please enjoy responsibly. Happy Holidays!

Eggnog ingredients: 6 eggs, � cup plus � tablespoon of sugar, �/2 teaspoon vanilla extract, �/4 teaspoon ground nutmeg, 3/4 cup brandy, �/3 cup dark rum, 2 cups whipping cream, and 2 cups milk. Beat the eggs for 2 or 3 minutes with an electric mixer at medium speed until very frothy. Gradually beat in the sugar, vanilla and nutmeg. Turn the mixer off and stir in the cold brandy, rum, whip-ping cream and milk. Chill before serving. Sprinkle individual servings with more nutmeg. Makes about 2-�/2 quarts.

Do you have some old records, �-track, reel-to-reel, or cassette tapes you would like to save and put on your computer? Briefl y, here is how you can accomplish this task. Once on your com-puter, you can burn them to CD or put them on your iPod or MP3 player.

First, you’ll need a turntable and preamplifi er setup or an appropriate �-track, reel-to-reel, or cassette tape player. Then you’ll need a matching line-out cable (from the turntable setup or tape decks) to the line input audio connector on your computer. This cable will connect matching phono line outputs (left and right channels) to a �/�” miniplug stereo line input audio connector on your computer.

A retro turntable from the �970s can be used with a match-ing preamplifi er or stereo receiver that has phono inputs and line outputs. You can’t connect a retro turntable directly to the computer line input audio connector. The low level signal from the needle cartridge on the turn table must be matched and amplifi ed with a preamplifi er or stereo receiver, contain-ing phono inputs. Costco.com and DAK.com carry new USB turntables ($90-$220) and use the USB connection for the audio connection and come with adequate software that work with a PC or MAC. Retro tape decks have line outputs and may be connected directly to your computer line input audio connector.

To utilize retro components, one then needs appropriate audio editing software. I use Spin-It Again ($35, PC only) from Acoustica.com. It is easy to use and works very well with vinyl and tape. I also utilize Audacity (PC and MAC) from audacity.sourceforge.net. It is free (or donate) and a little more diffi cult to use.

Once your setup is connected, running, and you have ap-propriate software, it is time to start recording. Learn to use the click, pop, scratch, hum, and hiss fi lters in the software. Clean all records before playing. Also, wind and rewind (once) tapes before playing. Make new folders on your computer for the recordings and set the “save to” path, so you can fi nd them. Now sit down and start “saving those oldies”.

All custom builders know that a happy job has all parties – cli-ent, architect or designer, and builder headed for the same goal – the estimated price to build the house. But sometimes clients can get led in the wrong direction when an outside “expert” misin-forms them about what their house should cost.

Estimating a cost per square foot can prove to be a handy tool while you are determining the scope of your project. You can get pretty close using a fi xed price multiplied by the size of your house. But the question needs to be asked – What does that include? Your concept of an interior fi nish out may not be shared by your builder. Estimates can be made better by sharing your concepts and expec-tations early in the process. Of course, bidding the job, once plans are drawn and fi nalized, supplies you with a fi rm fi gure.

The question is how do I get from an estimated price per square foot to fi nished plans and still remain within my allowed budget? The process is simple really – communication.

Communicate to your builder if you expect to have a metal roof – granite countertops – 10 foot ceilings – or a masonry fi replace. That price per square foot would obviously be higher than a house with composition roof, laminate countertops, � foot ceilings, and a prefab fi replace insert.

Both homes when fi nished would make a beautiful and com-fortable dwelling for your family, one is just more expensive than the other.

Your builder can direct you with regard to how to stay in bud-get – in fact I consider it a part of my job.

seems appropriate to take a moment to refl ect on the past year.

Like most folks here at the lake, we’ve had our ups and downs.

We’ve had a few scary days where we wondered if any cus-tomers were going to come see us. Then we would follow those days with an abundance of customers. We, as a com-munity – as a nation – are not out of the woods yet, but things are looking better!

Some of you have met with disappointment in business and some of you have persevered and shown great resil-iency. Folks here at the lake have a great sense of rebound. When life hands us lemons, we are bound to make not just lemonade, but we’ll throw in lemon pie, lemon cookies and lemon cake, too.

Retailers and other businesses here have worked hard to help maintain the feel and fl avor of the lake. You should be proud of your efforts to survive “the economy.” I feel hon-ored to be a part of this community and proud to count so many of you as my friends.

A while back, I wrote a piece about shopping locally and supporting the local trades. I would like to thank everyone for pitching in and doing just that. Without your support, many of us would not be here now. I mentioned, too, that businesses depend on customers to tell us what we are doing right and what we are doing wrong. Most businesses would like to hear from their customers regarding what services they are in need of. This can give a business the opportunity to branch out, provide additional services and please the cus-tomer. I’ve noticed a number of local businesses diversify-ing and staying afl oat because of customers’ input.

Let’s continue to make an effort to shop, dine and recre-ate locally. Your local businesses will appeciate your patron-age. Your patronage will help us through any tough times that may come our way. Appreciation? You bet! A world of thanks? Oh yeah! It’s available at your local hardware store.

These volunteers offer themselves, not as mothers but as role models for these girls who have a chance to turn their troubled lives into a new life. They spend about $50 for each of nearly 60 girls housed at the Center. They also homecook a traditional Christmas dinner for the girls and need your donations to help their efforts. My mother always remarked that Moth-er’s Day was ridiculous. Every day should be mother’s day, not just some Sunday in May. But I never heard her complain about Thanksgiving.

Surely, she also believed that every day should be one of thanks giving, and she created many reasons for giving thanks, but on that fourth Thursday of November, she pulled out the traditions, the china, the silver and crystal, the linen tablecloth. Cousins descended from somewhere north of us. Sometimes neigh-bors joined us or friends whose families were far away. One year there was the young man who slept under our camellia bushes.

We started with a relish platter, out of which I ate most of the black olives. Always, there was the turkey and the sweet potatoes and the brussel sprouts. My father carved the turkey, which was cooked upside down and never, ever stuffed. We fi nished with my mother’s famous persimmon pudding made from the fruit grown in our back yard, while our German shepherd bumped innocuously against our legs under the magnifi cent table.

Later, raising my own family, I continued the traditions and added a few of my own. Let it be known that I kept the turkey and the sweet potatoes and the brussel sprouts. But sometimes I smoked the turkey on the hulking dark pit we call Black Despair. I can remember padding out to the pit, wearing slippers and a fl annel nightgown to check on the pecan embers in the cool of the early Wimberley morn-ing and waving to my neighbors as they strolled by on their way to watch the mist lift from the river. If they disapproved of my fl annel, they never let on.

The sweet potatoes took on a Southwestern fl air as I mixed them with cilantro and lime juice, and I roasted the brussel sprouts, mixing them with cranberries, sweet potatoes and walnuts, instead of boiling them. I kept the relish platter, and I try hard to turn out a persimmon pudding every year.

My boys have grown up foraging for bright leaves and berries to strew down the linen tablecloth, and the black lab bumps innocuously against the backs of our chairs. Family pours in and friends who have become family. The dishes pile up, and sometimes we sing.

I’d like to say something strikingly original about the fourth Thurs-day in November, but the giving of thanks is deeply embedded in tradition, and the food is nothing if it is not a prayer. May you gather your loved ones close this year. May your traditions bless you. And may your feasting be a glowing moment of thanks for family, for community, for rain, for us all. Happy Thanksgiving.

People who have bad breath often do not know it, nor are they aware of the social stigma it is causing. This can be particularly troublesome during the holi-days. To check your own breath, do not try to breathe into your cupped hand. Instead, smell your fl oss after fl ossing. If it smells bad, then so does your breath.

Bad breath does not originate in your digestive tract as some assume. The muscles that line your esophagus prevent odors from escaping into your mouth. Instead, bad breath is caused almost exclusively by sul-fur-producing bacteria which breed below the surface of your tongue, in your throat, and sometimes in your tonsils. The con-ditions which can give rise to these bacteria are dry mouth, thick saliva, smoking, alcohol, hormonal changes, some medications, and post nasal drip.

A white or yellow coat on your tongue means that bacteria are producing sulfur compounds that can lead to bad breath. A tongue that has a naturally rough surface or deep grooves will trap more bacteria. Ideally, the tongue should be smooth and pink and covered in oxygen-rich saliva.

You are encouraged to use a tongue scraper since it can re-move some of these bacteria. However, a scraper cannot remove bacteria deep below the surface of the tongue. The key to killing these bacteria is to avoid a dry mouth by drinking plenty of wa-ter to maintain free-fl owing saliva. It is the oxygen in the saliva

that kills the germs, and, unfortunately, after the age of twenty-fi ve we all produce less saliva.

There are many causes of dry mouth. For example, snoring forces air over the tongue making the mouth dry. Commercial toothpastes and mouthwashes con-tain a harsh detergent known as sodium lauryl sulfate which both dries and irritates the mouth. Mouthwash-es like Scope or Listerine contain 20% or more of al-cohol which dries the mouth instantly.
