S Festive Christmas Rolls• 500 grams ground chicken• Handful of frozen cranberries• Bunch of fresh sage (chopped fi ne)• 3 medium size shallots (chopped fi ne)• 1/3 cup bread crumbs• 1 egg beaten lightly• I package puff pastry• I tbsp vegetable oil

Mix ground chicken, frozen cranberries, sage, shallots, bread crumbs and ½ of the beaten egg. Form into golf ball-size balls and roll them into a log shape roughly the length of a small sausage roll.

Brown the chicken lightly in a sauté pan in the vegetable oil turning so all sides are coloured.

Roll the puff pastry on a fl oured surface and cut to the length and width that will wrap around the chicken pieces.

Wrap the chicken pieces leaving the ends of the rolls open and seal the pastry with a light brush of the remaining beaten egg.

Spread the chicken rolls on a parchment paper-lined baking sheet and cook at 375º F until the pastry is browned.

Serve hot or cold.

Asparagus in Prosciutto• 20 fresh asparagus spears, cleaned and

trimmed• 20 thin slices of prosciutto (120 g.)• 5 tablespoons mayonnaise (75 ml)• 5 cloves garlic, minced

In a shallow pan fi lled with salted water and over medium heat, cook asparagus until just tender. Take them off heat and drain water. Plunge in ice cold water to stop cooking process. Set them on paper towels to dry.

Take each asparagus spear and wrap a slice of prosciutto around it. Set aside until needed.

In a medium bowl, combine mayonnaise and garlic. Spoon into sauce dish for dipping, and place in the center of a large platter. Arrange asparagus around it. Serve.

Sausage with Apple and Sage• 2 pork sausages, cooked• 2 tablespoons olive oil, more as needed• 1 Granny Smith apple, peeled• 2 tablespoons butter• pinch sugar• 24 small sage leaves

Slice the pork sausage into 1/4-inch (1/2-cm) slices on the bias. Cut the apple into 24 cubes. Heat the oil in a sauté pan and fry the sau-sage slices on both sides until golden brown, remove to a platter. Wash the pan before melting the butter in the pan for the apples. Add the sugar, and fry the apple cubes, toss-ing occasionally, until golden on all sides. Add a little more oil to the pan, if needed, and fry the sage until slightly crisp, 30 seconds to 1 minute. Lay a sage leaf on each sausage slice. Top with a cube of sautéed apple. Pierce with a pick. Serve.

CarolsBroccoli Cheddar Spread• 4 cups fresh broccoli, chopped• 1 tablespoon water• 2 cups light sour cream• 1/2 cup reduced-fat cheddar cheese, shredded• 1 (11/2 ounce) envelope dry vegetable soup mix (onion soup mix

may be used in a pinch but it changes the fl avour)• 1 tablespoon reduced-fat cheddar cheese, shredded• pita chips, for serving

Preheat oven to 350º F.

Place broccoli and water in a 1.5 qt microwave safe dish. Cover and microwave on high for 4 minutes or until crisp tender; drain. In a large bowl, combine the sour cream, 1/2 c cheese and soup mix. Gently stir in broccoli, transfer to an ungreased shallow 1-qt baking dish. Sprinkle with remaining cheese. Bake, uncovered, for 20-25 minutes or until heated through and cheese on top is melted. Serve with pita chips.

Garlic Cheese Roll• 1 lb sharp cheddar cheese• 1 lb medium cheddar• 16 ounces cream cheese• 1 cup grated pecans (chopped fi ne)• 3 garlic cloves, chopped fi ne• paprika

Grate sharp cheddar and medium cheddar cheese. Add cream cheese. Let it set at room temperature for 4 hours. Mix all remaining ingredients. Shape into rolls (logs) about 6 or 8 inches long and about as wide as an egg. This recipe will make about 6 logs. Roll them into the paprika until they are well dusted. Wrap them in foil and place in fridge overnight. They will keep for 4 weeks in fridge. After chilling, slice and serve them with crackers.

Appetizer Meatballs• 2 pounds lean ground pork• 1 cup ice water• 1/4 cup soy sauce• 1/4 teaspoon freshly ground black pepperHeat oven to 375°F (190°C). With hands or wooden spoon mix pork, water, soy sauce and pepper thoroughly in large bowl. Shape into 3/4 -inch balls (mixture will be fairly soft and balls will not be perfect). Arrange closely together in single layer on ungreased shallow baking pan, like a jelly-roll pan. Bake for 20 to 30 minutes. Remove from pan, and serve immediately with a dipping sauce, like your favorite salad dressings (Russian, Thousand Island, Ranch) or choose from the suggestions below. Use toothpicks to skewer meatballs to dip. Or remove from pan, cool, cover and freeze or refrigerate. Serve cold or reheated. Makes about 7 dozen meatballs.

Ginger-Orange Dip• 3 ounces thawed orange juice concentrate• 3 tablespoons olive oil• 1 tablespoon grated fresh ginger• 1 garlic cloved, crushed

In medium bowl stir together orange juice concentrate, olive oil, ginger and garlic. Mix well.

Makes about 1/2 cup dip.

Barbecue-Cranberry Dip• 1/2 cup cranberry sauce• 1/2 cup barbecue sauce

In medium bowl stir together cranberry sauce and barbecue sauce; cover loosely and heat in microwave on 50% power for 2 minutes.

Makes 1 cup.

Toasted Onion Dip• 1/2 cup plain yogurt• 1/2 cup low-fat sour cream• 2 tablespoons dried onion soup mix• 1 tablespoon Dijon-style mustard

In medium bowl stir together yogurt, sour cream, onion soup mix, Dijon-style mustard. Mix well.

Makes 1 cup.

Apricot Glazed DrummettesSauce:• 1 tablespoon butter or margarine• 1 large onion, fi nely chopped• 2 teaspoons fi nely chopped fresh garlic• 1/3 cup soy sauce or teriyaki sauce• 1/4 cup fi rmly packed brown sugar• 1/4 cup dark molasses• 1/4 cup honey• 11/2 cups ketchup• 1/4 teaspoon crushed red pepper (optional)• 1 teaspoon Worcestershire sauce• few drops hot pepper sauce (optional)• 1 (12-ounce) jar apricot preserves

Drummettes:• 3 to 3 1/2 pounds chicken drummettes• Salt to taste• Freshly ground black pepper to taste

In a large saucepan, saute onion and garlic in butter over medium heat, stirring occasionally, until onion is softened. Add remaining sauce ingredients, except apricot preserves and bring to a boil, reduce heat and simmer, uncovered, on low for 20 minutes. Set aside and cool to room temperature. Stir in apricot preserves. Heat oven to 400°F (200°C).Place drummettes in a greased 13x9-inch baking pan and season with salt and black pepper to taste. Pour sauce over all, mixing well to coat. Bake, uncovered, for 50 to 60 minutes, basting occasionally, or until drummettes test done. Makes about 3 dozen appetizers.

Cranberry Feta Pinwheels• 1 (170 g) package dried sweetened cranberries• 1 (250 g) container cream cheese spread• 1 cup crumbled feta cheese• 1/4 cup chopped green onion• 4 large fl our, wheat, or spinach tortillas

Combine all ingredients except tortillas, mix well. Divide and spread mixture evenly among tortillas. Roll up tightly, wrap in plastic and refrigerate at least one hour. To serve, cut into 12 slices. A nice variation is to add thin slices of ham on top of the spread before rolling.

TS Peanut Butter Fudge• 1 cup granulated sugar• 1 cup brown sugar, fi rmly packed• 2 tablespoons butter• 1/2 cup evaporated milk• pinch of salt• 1 cup marshmallows• 1/4 pound peanut butter• 1 teaspoon vanilla

Cook sugar, butter, milk and salt to soft ball stage (235° F–240° F on a candy thermometer). Add marshmallows and peanut butter just before removing from heat. Do not stir. Cool to room temperature. Add vanilla. Beat until creamy, thick and holds shape. Pour into well buttered shallow pan. Cool and cut into squares.

Berry Hot Chocolate• 1/4 cup cocoa powder, sifted• 3 tablespoons sugar• 3 cups 2% milk• 1 cup half and half cream• 6 ounces semisweet chocolate, chopped• 1/4 cup raspberry jam• 2 teaspoons vanilla extract• dash fi ne salt

Whisk cocoa and sugar in the bottom of a saucepot while pouring in milk. Bring to just below a simmer, stirring often. Add chopped chocolate and raspberry jam, stirring until melted and hot. Stir in vanilla and salt and serve.

Frosty’s Vanilla-Nutmeg Shake• 10 ounces premium vanilla ice cream

(about 3/4 cup, packed)• 1/3 cup milk• 1/8 tsp freshly ground nutmeg

Combine all ingredients (reserve some nutmeg for garnish) in blender and whir until well blended. Serve immediately.

Chocolate Snowfl ake Macaroons• 22/3 cups (7 ounces) fl aked coconut• 2/3 cup granulated sugar• 6 tablespoons all-purpose fl our• 1/4 teaspoon salt• 4 large egg whites• 1 teaspoon almond extract• 1/3 cup melted semi-sweet chocolate

chips or squares

Preheat oven to 325º F. Mix coconut, sugar, fl our and salt in bowl. Stir in egg whites and almond extract until well blended. Stir in melted chocolate and blend well. Drop by teaspoon onto greased and fl oured cookie sheets. Bake about 20 minutes or until edges are golden brown. Immediately remove from cookie sheets and place on wire racks to cool.

Note: You can drizzle melted milk chocolate, but-terscotch or peanut butter chips on the top.

Swirled Peppermint Bark• 8 ounces semi-sweet baking chocolate squares, chopped• 6 ounces white baking chocolate squares, chopped• Optional: 1/2 teaspoon peppermint extract• 1/2 cup peppermint candy canes, crushed

Place chocolates in 2 separate microwave-safe bowls. Working with one bowl at a time, microwave on high setting for one minute; stir until smooth. Microwave an additional 10 to 15 seconds, if needed. Pour semi-sweet chocolate onto a wax paper-lined baking sheet; set aside. Stir extract into white chocolate, if using. Slowly pour white chocolate over semi-sweet chocolate on baking sheet. Swirl chocolates together with a knife; sprinkle with crushed candy. Chill until fi rm, about one hour. Use wax paper to lift bark from baking sheet; break into pieces. Store tightly covered at room temperature. Makes about one pound.

Chocolate Unbaked Cookies• 1/2 cup butter• 1/2 cup milk• 3/4 cup white sugar• 3/4 cup brown sugar• 1 tsp. vanilla

Melt the above ingredients slowly in a medium sized pot. When it is melted, turn the heat up to med-high and boil for 4 minutes. Remove from heat and add quickly:

• 3 cups quick cooking rolled oats (can add extra 1/2 cup if you don’t like them so sticky)

• 1/2 cup cocoa• 1 cup coconut

Stir quickly and spread fl at on a cookie sheet. Can slice with a pizza cutter when cool. You can also sprinkle some icing sugar on top.John van Dongen | MLA Abbotsford South

Chocolate Ribbon Shortbread• 1 cup soft butter (real stuff)• 1/2 cup sugar• 11/2 cups all purpose fl our• 1/2 cup cornstarch• 3 semi-sweet chocolate squares

In a large bowl with electric mixer beat butter & sugar until fl uffy. Sift fl our and starch together; beat into butter mixture until combined and crumbly. In a 9” square buttered pan press 1/2 dough into bottom of the pan. Melt chocolate in microwave until melted and smooth (1-2 minutes). Drizzle chocolate over dough in pan. Press remaining dough over chocolate to fl atten. Bake at 300º F oven for 25 minutes or fi rm to touch in centre. Cool to room temperature, cut into squares and hope it makes it through until dessert!

Rudolph’s Prize Shortbread• 1 cup butter, softened• 3 tbsp. cornstarch• 1/4 cup sugar• 13/4 cups all purpose fl our

In a large bowl, beat butter until fl uffy, gradually beat in cornstarch, then sugar. With wooden spoon, beat in fl our, about 1/4 cup at a time. Roll dough to 1/4” thickness on a lightly fl oured surface. Cut out cookies using 2 inch round fl oured cookie cutter. Press candied maraschino cherry half in centre of each. Place on waxed paper-lined trays; prick each cookie with a fork; freeze until fi rm.

Preheat oven to 275º F (140º C). Place frozen cookies on baking sheet Bake in oven 45 min. or until fi rm. Remove to wire rack to cool.

Store in airtight container to retain freshness.

Santa’s Favourite Chocolate Cookies

In a large bowl, add the butter and sugar; cream together with a hand mixer. Add eggs and vanilla extract; mix until combined. In a medium bowl, sift cocoa powder, fl our, baking soda, and salt. Slowly add the dry ingredients and continue mixing until incorporated. Roll the dough into 2 logs that are about 2-inches high and 1-foot long. Wrap them in waxed paper refrigerate for at least 2 hours.

Preheat oven to 350º F. Once thoroughly chilled, slice the cookies into 1/2-inch thick rounds and dust with icing sugar. Place on a parchment paper-lined cookie sheet and bake for 10 minutes. Remove to a wire rack to cool.

families / seniors• Last year the Christmas Bureau helped 732 families including 1,295 children

and 58 seniors• The Food Bank provides $7,000.00 worth of school supplies every year and

coordinates the Extreme Weather Shelters for the homeless in Abbotsford
