750g of sweet red peppers100g chillies50g fresh root ginger350ml cider vinegarI kg jam sugar50ml lime juice (1-2limes)I level tsp salt

Method Slice all the peppers and chillies lengthwise and remove the fibrous tissue and the seeds. Finely chop all the chillies, peppers & root ginger (or blitz in a food processor). Place in a large pan, add the vinegar and slowly bring to simmering point. Then add the sugar, lime juice & salt, stirring until the sugar has dissolved and mixture begins to boil.Boil for 4-6 minutes. Remove from heat and allow to cool for 5 minutes. Pour into clean sterilized jars and seal with vinegar proof lids.NB If you find the pepper pieces rise to the top of the jar, leave until jars are at room temperature, then give them a quick twist- the pieces will redistribute and remain suspended in the cooling jelly.

Use this punchy relish with cream cheese, smoked makerel, rice dishes and crispy stir fried veg. A spoonful added to casseroles etc is great and it can be brushed on chicken or salmon before grilling.
