Born Robert Velline in Fargo, N.D., Vee began his career at age 15 when he and his schoolboy group filled in for Buddy Holly after the singer died in a 1959 plane crash. Nowadays he performs about 60 concerts a year, singing “Rubber Ball,” “Take Good Care of My Baby,” “The Night Has a Thousand Eyes,” “Devil or Angel” and other hits from his heyday. “It’s a joy to play for the fans,” says Vee, 67, who lives in Minnesota with his wife of 47 years.

If you have extra wild rice and cranberry sauce, your meal planning strategy just became simpler. Sweet and savory Turkey Apricot Salad combines leftover wild rice and turkey with dried fruit and is perfect for a light entrée salad. For a hearty dinner, combine leftover turkey with jarred pasta sauce, frozen spinach and no-boil noodles for a new take on lasagna. For a make-ahead, overnight egg casserole, create Turkey Bread Pudding Florentine with leftover turkey and vegetables. Make it the night before, refrigerate, and pop in the oven the next morning.

Quick Turkey Lasagna For the person who doesn’t have time to cook but wants to impress, combine jarred pasta sauce, leftover turkey and no-boil noodles for a perfect lasagna. If you’re using regular lasagna noodles instead of no-boil noodles, do not bake before freezing.

3 cups cooked, skinless turkey, cut into strips 2 (26-ounce) jars red pasta sauce 1 (8-ounce) package no-boil lasagna noodles

2 cups shredded part-skim mozzarella cheese 2 (10-ounce) packages chopped frozen

spinach, thawed and squeezed dry 1 (4-ounce) package crumbled goat cheese

1. Preheat oven to 350F. 2. Combine turkey and pasta sauce. 3. Spread thin layer of turkey sauce in a 13 x 9-inch baking dish. Top with one-third of the noodles, one-third of the remaining turkey sauce, one-third of the mozzarella, half the spinach and one-third of goat cheese. Repeat layers, using remaining spinach. Place remaining noodles, turkey sauce, mozzarella and goat cheese on top. 4. Bake, covered, 50 minutes. Uncover and bake 5 minutes longer, or until bubbly. Serve immediately.

To Prepare and Eat Now: Serve when ready.To Freeze: Cool to room temperature. Wrap, label and freeze. Recommended freezing time: up to 3 months.To Serve: Remove from freezer and thaw several hours in refrigerator. Preheat oven to 350F, bake, covered, 25 to 30 minutes, until bubbly. Uncover and bake 5 minutes longer. Alternately, you can reheat in microwave if cut into pieces.Serves 10.

Leftover turkey, Southwestern seasonings and canned broth quickly turn into a mouth-watering one-pot dish. This chunky soup is filled with beans and corn. 1 cup chopped onion 1 teaspoon minced garlic 4 cups cooked, skinless turkey,

cut into strips 1 (28-ounce) can chopped tomatoes, undrained 6 cups fat-free chicken broth 1 (4-ounce) can chopped green chiles, drained 1 (16-ounce) package frozen corn 1 (15-ounce) can Great Northern or navy white

beans, drained and rinsed 2 tablespoons lime juice 1 1/2 teaspoons ground cumin 1 tablespoon chili powder 4 (6- to 8-inch) flour tortillas,

cut into 1/4-inch strips 1/2 cup chopped green onions 1 cup shredded reduced-fat Mexican-blend or

Cheddar cheese 1 small avocado, peeled and chopped (optional)

1. Coat a Dutch oven with cooking spray. Add onion and garlic and sauté over medium heat until tender, about 7 minutes. 2. Add turkey, tomatoes, chicken broth, green chiles, corn, beans, lime juice, cumin and chili powder. Bring to a boil, reduce heat and simmer 10 to 15 minutes. 3. Turkey Bread Pudding FlorentineAn outstanding brunch recipe that is one of my personal favorites, this can be made the night before and popped into the oven to cook in the morning. It’s great for a group. 5 eggs 4 egg whites 3 cups skim milk 1/4 cup Dijon mustard 1/2 teaspoon salt Freshly ground black pepper 1 (16-ounce) loaf day-old French bread, cut into 16 slices, divided 1/2 pound mushrooms, sliced 1 teaspoon minced garlic 1 onion, chopped 2 (10-ounce) boxes frozen chopped spinach, thawed and squeezed dry 1 tablespoon all-purpose flour 1 1/2 cups shredded, reduced-fat Swiss cheese, divided 1 cup cooked, chopped turkey

1. Coat a 13 x 9-inch pan with cooking spray. 2. Beat eggs, egg whites, milk, mustard, salt and pepper together in a large bowl; set aside. Place half the bread slices in pan.3. Coat a skillet with nonstick cooking spray. Add mushrooms, garlic and onions; sauté over medium-high heat until tender. Add spinach and flour, stirring to mix well. 4. Spread mixture over bread layer. Sprinkle with 1 cup of cheese and turkey. Top with remaining bread. Sprinkle with remaining

1/2 cup of cheese. Pour egg mixture over top, cover with plastic wrap and refrigerate 2 hours or overnight. 5. Preheat oven to 350F. Bake 40 to 50 minutes, until puffed and golden. Serve immediately. Serves 10.

ALABAMA—In 1908, in one of baseball’s most publicized stunts, Washingon Senators catcher Charles Evard “Gabby” Street, also called “Old Sarge,” caught a baseball dropped from the top of the Washington Monument, a distance of 555 feet. Street was born in 1882 in Huntsville.

ARKANSAS—Wake-up calls aren’t just for hotel guests. The University of Central Arkan-sas in Conway (pop. 43,167) offers students wake-up calls through a contract with the Maryland-based Snoozester company. The calls are especially helpful for freshmen away from home for the first time. The service includes other reminders to students, such as test times and doctors’ appointments.

FLORIDA—Members of Lynyrd Skynyrd named their rock band after Leonard Skinner, a no-nonsense coach and gym teacher at Robert E. Lee High School in Jacksonville, who enforced the school’s rule against boys having long hair. Skinner died in September at age 77.

GEORGIA—A Delta Boeing 757 jet is sporting a Salvador Dali moustache painted under its big nose through Jan. 9 to promote an exhibit of the Span-ish artist’s works at the High Museum of Art in Atlanta. Delta Airlines is headquartered in Atlanta.

KENTUCKY—The oldest bank in the state is the Bank of Maysville (pop. 8,993), chartered in 1835.

MISSISSIPPI—In 1959, Hattiesburg (pop. 44,779) native Edythe Evelyn Gandy was elected state treasurer, becoming the first woman in the state elected to a statewide constitutional office. In 1971, the trailblazer was elected the state’s first female insurance commissioner and in 1975 the first woman lieutenant governor. She died in 2007.

SOUTH CAROLINA—The state’s highest water-fall is Raven Cliff Falls, which tumbles about 400 feet on Matthews Creek in Caesars Head State Park in Greenville County.

NORTH CAROLINA—Dan Neil, who grew up in New Bern (pop. 23,128), became the first automobile columnist to win a Pulitzer Prize when his weekly column, “Rumble Seat” in the Los Angeles Times, won the 2004 Pulitzer Prize for Criticism.

Fudgy Mint BrowniesChocolate mints scattered over the brownies when they come out of the oven make an easy chocolate glaze.

1/2 cup (1 stick) butter 2 ounces unsweetened chocolate 1 ounce semisweet chocolate 2 eggs 1 cup sugar 1 1/2 tablespoons unsweetened cocoa 1 teaspoon vanilla extract 1/2 cup all-purpose flour 14 thin mint candies (such as Crème de Menthe flavor Andes Mints)

1. Preheat oven to 350F. Coat an 8-inch square baking pan with cooking spray. Line bot-tom and two sides with foil, letting foil extend over sides. Coat foil with spray. 2. Place butter and unsweetened and semisweet chocolates in the top of a double boiler; cook over simmering water until melted. Cool slightly. 3. Beat eggs, sugar, cocoa, vanilla and butter-chocolate mixture with a mixer until blend-ed. Turn to low speed, add flour and beat just until blended. Pour into prepared pan. 4. Bake 20 to 22 minutes, until a tester comes out barely clean. Immediately place thin mint candies over top and let stand 1 minute or until mints melt; lightly swirl with a spatula to spread. Cool, remove from pan by lifting foil, and cut into squares. Makes 16 brownies.

THIRD-GENERATION candy maker Mike Ratliff, 35, coils a long rope of warm peppermint candy, then shapes the circular confection against the base of an empty one-gallon pickle jar until he creates a three-dimensional basket that looks too pretty to eat.

“Every one of these is a little different because we make them all by hand,” he says about the unique baskets that have become the signature product of Ratliff Candy Co. in Bristol, Tenn. (pop. 24,821).

“Each basket has its own personality,” chimes in Ken Ratliff, 65, who hand-spins the malleable candy into a uniform roll as fast as his son can shape it.

Timing is everything for the father-son duo,

who have about a minute to sculpt an edible basket before the candy cools and solidifies.

“If I work too fast, the candy will be too hot and the basket will fall,” says Mike, who stretches the peppermint at 95 degrees.

Adds Ken: “But if you get it too cool, the candy will have hairline cracks when you try to shape it.”

After more than half a century, the Ratliffs have mastered the creation of candy cane baskets. They had to. Beginning each September, they have less than four months to produce 7,000 large baskets and 5,000 smaller ones—in both peppermint and wintergreen—for shipment to customers across the United States in time for Christmas.

“These baskets are really our business now,” says Ken, who also makes stick candy in other flavors. “There’s just not many hand spinners left in America because machines make most stick candy now.”

Hand-spinned stick candy was the family’s primary product when Ken’s parents, Lewis and Hattie Ratliff, started the business in 1952 in the foothills of the Appalachian Mountains. Theirs was one of nine candy manufacturers in the Bristol area throughout most of the 20th century.

“The climate and barometric pressure here are perfect for making sugar candy,” Ken says. “Candy making is a chemical process, and we have just the right altitude and humidity.”

Today, only Ratliff and Helm’s candy companies remain in Bristol due to buyouts and automation. Ratliff has

survived, Ken says, because of the uniqueness of its candy cane baskets, which his father initially made in the late 1950s as Christmas gifts for the schoolteachers of Ken and his two sisters.

“The teachers just loved them, and people started asking who made these,” Ken recalls. “Then, by word of mouth, we began to get orders and started wholesaling them.”

Though Lewis Ratliff continued to focus on stick candy, Ken saw the baskets as the future when he joined the family business in 1970. “He began selling them to church groups and schools for fundraisers,” Mike says. “It took off because it was something different.”

Berenice Denton, 74, was one of Ken’s first retail customers, ordering 100 baskets to peddle at the Christmas Village craft show in Nashville, Tenn.

“When I first saw these beautiful edible baskets, I said, ‘Oh my gosh, I’ve got to have these.’ I knew they would be a winner, and they were,” says Denton, who estimates she’s sold 10,000 Ratliff baskets over the years.

The baskets adorned the White House during Jimmy Carter’s presidency and, from 1988 to 2001, were included in Bloomingdale’s mail-order catalog. Some customers have placed orders with Ratliff for decades.

“This is not just another box of candy,” Ken says. “And we don’t consider ourselves just candy makers. We’re artists.”

To make the basket handles, Mike hand-braids three foot-long candy strands and stretches the sweet swath over a circular mold in the shape of an arch. “We don’t tell how we attach the handles to the basket. It’s a family secret,” Mike says. “We’ve seen other companies that try to copy us, but we’ve never seen a basket like ours yet.”

Ken credits his son for the artistry behind the baskets. “Mike does form a mighty pretty basket,” Ken says with a gleam in his eye. “I always tell him that his grandfather would be proud of him.” ★
