    Harvest time threw a few curveballs this

    year. An unusual heat spell, a rare autumn

    rainstorm and a couple of early frosts kept

    winery owners on their toes.

    But Niels Udsen, who started Castoro

    Cellars more than 25 years ago, took it instride. Udsen, along with his wife, Bimmer,

    are among the pioneers of the Paso Robles

    wine region.

    We did make a mad dash for some

    Zinfandel, said Niels of this years tricky

    harvest weather.

    The harvest, he noted, was better than

    average and the Udsens and longtime wine-

    maker Tom Myers are looking forward to

    another vintage that meets the standard set

    when Niels and Bimmer began Castoro in

    1983 to make quality wines that are afford-

    able enough to be part of everyday life.

    Its a philosophy traced back to the couples

    meeting as children in Bimmers native

    Denmark. Niels father was born in Denmark,

    but he had immigrated to California and

    became a successful farmer and businessman

    in Ventura. On a trip to his homeland, Niels

    and Bimmer first met Niels was 8, Bimmer 6.

    Ultimately, Niels again visited Denmark

    when he was 14 and was taught to make wine

    by the man who would later become his

    father-in-law. During their childhoods, Niels

    and Bimmer both came to regard wine as an

    integral part of a meal, enjoyed without

    pretense.

    Niels, who spent a year in Italy upon grad-

    uating from high school, returned to Cali-fornia and enrolled in Cal Polys agricultural

    business management program. Those

    studies further piqued his interest in wine-

    making and ultimately led to his landing a job

    at Estrella River Winery in Paso Robles.

    In 1981, Niels and Bimmer were married

    and Castoro was launched in 1983.

    Organic farming has always been a part of

    the Castoro mission.

    Growing up in Denmark, there was a

    strong environmental focus, said Bimmer. I

    have always enjoyed nature and when we

    planted our organic vineyards, it was for no

    reason other than it was the right thing to do.

    We continue this focus in all of our vineyards.

    Not only is it beneficial for the environment,

    it is better for our vineyards and for our vine-

    yard neighbors.

    Its not enough that their vineyards are

    farmed organically, theyve recently become

    one of about a dozen wineries on the Central

    Coast to be certified by the Sustainabilit

    Practice (SIP) program. The program, o

    seen by the Central Coast Vineyard Te

    requires wineries to meet comprehen

    standards before earning the SIP certificat

    Niels said most people understand wh

    means to farm a vineyard organically, but

    SIP program encompasses much more tfarming methods. It includes such thing

    human resources, energy efficiency and w

    conservation.

    Organic also describes the evolution

    Castoro Cellars itself.

    Niels was working for Estrella R

    Winery where he met Tom Myers whe

    began making wine in his spare time un

    the Castoro brand. That was 1983. By 19

    he left Estrella to concentrate full-time

    Castoro.

    The Udsens owned no vineyards or win

    building, sourcing fruit from about 40 v

    yards and leasing the equipment and sp

    needed to make the wine. As the wine bec

    more popular, Castoro grew along w

    production. Niels and Bimmer also sta

    acquiring their own vineyards, while con

    uing to buy quality grapes.

    Today, a winery that began producing

    about 2,000 cases annually now tops 60,0

    Castoro is adding to the seven

    vineyards encompassing about

    550 acres on both the east and

    west sides of Paso Robles, where

    it grows about 20 different vari-

    etals. And Niels and Bimmer

    own a winery in San Miguel, a

    few miles north of Paso Robles,

    which is also leased by a couple

    of larger wineries for custom

    crush services.

    We took the backwards

    approach to owning a winery,

    Niels says. We started with the

    product, slowly bought equip-

    ment, opened a tasting room,

    and eventually bought the

    winery site, planted grapes and

    purchased existing vineyards.The approach has proved

    successful and, yes, sustainable.

    Castoro has also developed a

    niche as one of the premier year-

    round music venues on the

    Central Coast, with both indoor

    and outdoor concert facilities.

    Just as the winery itself boasts a

    diverse lineup of varietals that

    include unusual blends and

    obscure grapes, the roster ofmusicians booked at Castoro

    offers an array of styles and

    genres.

    In January and February

    alone, for example, guests can

    hear performers ranging from

    traditional folk to a world music

    ensemble.

    The Castoro Cellars tasting

    room is located just off Highway

    46 West at 1315 North Bethel

    Road. Visitors get three compli-

    mentary tastes, or can sample

    seven wines for $3. The fee is

    waived with the purchase of a

    bottle. The tasting room is open

    daily from 10 a.m. to 5:30 p.m.

    The 19th Annual Zinfandel Advocates &

    Producers Festival takes place January 28-30, 2010,

    in San Francisco. The festival will headline Chef

    Beverly Gannon, one of the founders of Hawaii

    regional cuisine. Chef Gannon is the proprietor of

    Mauis world famous Haliimaile General Store and

    possibly the most well-known chef in Hawaii. She

    will develop the Hawaii regional cuisine menu for Dinner With The

    Winemakers as well as prepare a signature Hawaiian dish for Good

    Eats & Zinfandel Pairing; she will also be visible throughout the three

    days of the festival and her new cookbook, Home Style Meals at The

    Haliimaile General Store, will be for sale. To order tickets by phone,

    The ZAP Festival will include more than 200 Zinfandel-specialist

    wineries from all across California pouring their barrel samples andnew releases for over 10,000 enthusiasts during three days at four

    Good Eats & Zinfandel Pairing, The Grand Zinfandel Tasting, and

    Evening with the Winemakers; proceeds support ZAPs Heritage Vine-

    yard projects.

    Good Eats & Zinfandel Pairing takes place on January 28, 6

    to 9 p.m. at Fort Mason Center (Marina Blvd. at Buchanan, San

    Francisco 94123). Approximately 50 restaurants will pair with

    focus on its exceptional portfolio of wines, its

    acclaimed winemaker and estate vineyards, or its

    inviting tasting room. And while any one of these

    Champagne, and all wines with bubbles, falls under a broad category

    known as sparkling wine, but Champagne specifically comes from the

    famous wine region in France of the same name. It is made by the tradi-

    tional labor- and time-intensive method known as mthode champ-

    enoise. In addition, the grapes that make genuine Champagne are

    limited by French law to Chardonnay, Pinot Noir and Pinot Meunier

    grapes.

    Through international trademark law, it is no longer legal to identify

    a sparkling wine that is made outside the Champagne region of France

    as Champagne. A few American producers, grandfathered in, are

    permitted to label their sparkling wine as Champagne if they chooseto. Some, out of respect to the French, will opt to use the more generic

    term sparkling wine. There are few restrictions in the US as to the

    types of grapes that must be used in these wines.

    For winemakers around the world, their sparkling wines are identi-

    fied with the countrys own term for sparkling wine. For example, in

    Spain it is labeled cava and in Germany its known as sekt. Italy calls it

    spumante and in France, outside of its Champagne region, a spark

    wine is identified as crmant.

    When reading any sparkling wine label, it is helpful to see whe

    it includes the words fermented in this bottle. This is an indication

    the wine was made using the traditional Champagne-making meth

    widely acknowledged to produce a superior style of sparkling wine

    Using mthode champenoise, California produces some wo

    class sparkling wines that are bright and crisp with a delightful lev

    acidity. Most offer subtle flavors of apple, pear and sometimes a m

    toastiness that originates from the yeast of the second fermenta

    that occurs inside the bottle and thus creates the bubbles. If the trtional method is not used, the label will usually indicate that either

    Charmat method or Transfer method was used. These are

    expensive ways of producing sparkling wine, usually in larger volu

    One last thing to remember when shopping for Champagn

    sparkling wines. Terminology used to describe the level of dryness

    be confusing. Particularly unusual is the use of the term Extra-D

    which, in the lingo of the Champagne world, actually means a s

    amount of sweetness is detectable on the palate. The following gu

    translates some common Champagne lingo:

    Extremely Dry: Brut Nature or Extra Brut

    Normal Dryness: Brut

    Just a tinge of sweetness: Extra-Dry

    Normal Sweetness: Sec

    Sweeter than normal: Demi-Sec

    Extremely Sweet: Doux

    Jada Vineyard 2006 MirrorPaired with Goulash Soup

    Serves 8, yield 16 oz. per serving Chef Ryan Mes

    1 hours cooking time

    1/3 cup of vegetable oil

    2 yellow onions (medium size)

    3 lbs of London broil* cubed

    2 tablespoons garlic powder

    4 cups chicken broth

    6 cups beef broth

    9 tablespoons ground paprika

    1 teaspoon caraway seed

    5 russet potatoes

    3 tablespoons corn starch

    Salt & pepper for seasoning

    Heat 1/3 cup of vegetable oil and saut with 2 yellow oni

    Cook for 20 minutes. Next add 3 pounds London broil,

    cubed. Cook for 5 minutes. Add 2 tablespoons of garlic

    powder and 4 cups of chicken broth. Stir together. Then a

    6 cups of beef broth, 9 tablespoons ground paprika and 1

    teaspoon of caraway seeds. Simmer for 1 hour.

    Meanwhile

    Peel and cube 5 russet potatoes place in bowl of water

    and set aside.

    After one hour of simmering has elapsed drain the pota

    and add to mixture. Next add 1 tablespoon salt and 1

    teaspoon of ground black pepper to pot.

    In a bowl, mix cup water with 3 tablespoons of corn

    starch mix until smooth. Turn heat up on simmered so

    to medium and add water and corn starch mixture. Turn

    heat down to low and allow to cook for 10 minutes, stirr

    occasionally in order to avoid burning.

    Put in bowl for an entre or in small cup for an appetizer

    portion. Salt to taste. Serve with a dollop of sour cream

    more of a twist!

    *For a special dinner substitute Filet Mignon time

    change- cook for 10 minutes, simmer for 15 minutes th

    add potatoes. Bon Apptit!

    Next to salads, soup might be the most difficult food to pair with

    wine. Its not so much a flavor issue as it is texture. A good wine and

    food pairing benefits from the synergy of that solid-liquid merger. But

    when soup is also a dish with enough substance to sink your teeth

    into literally the right wine can melt in your mouth along with the

    flavors, spices and textures of the soup. In the case of Goulash Soup

    paired with Jada Vineyard 2006 Mirror, wine and soup pairing sets a

    new standard of sorts.

    It could be the round tannins of the 37% Cabernet Sauvignon inthe Jada Mirror blend that balance the proteins in the cubed London

    broil in the recipe, or possibly the ripe, mouthwatering fruit of the

    53% Syrah that stands up to the flavorful ingredients in this new-age

    version of classic Hungarian fare. Together, with a 10% addition of

    Petit Verdot, these estate-grown components provide a perfect

    aromatic and tasty partner for this delicious dish that will warm the

    body and soul on any winter day.

    Situated on a hillside, the property was originally planned for olive

    trees and olive oil production. But plans soon changed and an old

    barn was converted into a gravity-fed winemaking facility and a horse

    stable into a barrel storage room. With vines that were first planted in

    1999, Jada Vineyard and Winery of Paso Robles issued their first winein 2005 under the skillful winemaking of Scott Hawley. Jada is now

    firmly established on its picturesque setting, within what is locally

    known as the Templeton Gap region. Concentrating primarily on

    Bordeaux and Rhne varieties, owners Jack and Robyn Messina

    decided to get into the winemaking arena after years of selling their

    grapes to some premium area wineries. The calcareous and limestone

    deposits in the soil of the area help produce wines of elegance and

    balance when handled with care, as successfully done at Jada. Grapes

    are hand-picked, hand-sorted, gently crushed, always transferred by

    gravity instead of pumps, and aged in barrel for up to 36 months.

    Small batches are the norm at Jada, as is quality, handcrafted wine-making.

    Jada Vineyards and Winery features an open air tasting room that

    serves wines paired with local cheeses. The owners did not completely

    abandon their plans for making olive oil they also offer tastings of

    oil made from olives grown on the estate. The tasting room is at 5620

    Vineyard Drive, off Highway 46 west. Open Thursday noon to 5 p.m.,

    Friday through Sunday 10 a.m. to 5 p.m., some Mondays, and by

    appointment. $10 per person for wine and gourmet cheese pairing. $5

    fee refunded with each bottle purchased. For parties of seven or more

    The name Talley has been associated with

    farming in San Luis Obispo County since1948. Today, Brian Talley, third generation

    farmer at Talley Vineyards is making more of

    a name for his wines than for fruits and

    vegetables. Known for top scoring Pinot Noir

    and Chardonnay, Talley Vineyards produces

    35,000 cases of wine each year which

    includes Talley Vineyards, Bishops Peak, and

    Mano Tinta wines. All three brands are hand-

    crafted at the Talley familys Arroyo Grande

    My father, Don Talley, was a pioneer whenhe began growing grapes in the Arroyo

    When winemakers talk about Old World-style in their craft, typically theyre referring

    to terroir-driven European wines.

    Old World at Vinfuzion Winery in Paso

    Robles takes on a new meaning.

    After all, it was the Greeks who suppos-

    edly put amethysts in their goblets to temper

    the alcohol in their drinks.

    Pamela Pietri, the owner and winemaker

    at Vinfuzion, borrows that concept to

    produce silky wines with a decided New

    World approachability.

    Pietri fines her wines over crystals and

    gemstones in the aging process to soften

    tannins.

    Such techniques dont impact taste, said

    Pietri.

    It affects the mouth feel, the sensuality of

    the wine, which improves the experience of

    the person tasting the wine.

    Pietris unusual practice is the result of her

    circuitous path to winemaking.

    She initially embarked on a writing career

    in New York, both as a journalist writing for

    publications such as the Village Voice andwriting copy for advertising agencies.

    She moved to Los Angeles in 1984 and

    continued her writing career for several

    years. Her writing often focused on trends in

    the field of alternative medicine and she

    found herself being drawn to such therapies.

    Ultimately, Pietri studied acupuncture for five

    years and opened her own practice in

    Malibu.

    During this time she started learning

    about infusing herbs and other elements into

    alcohol to extract their medicinal benefits.

    In 2000, Pietri started to make wine as a

    hobby, infusing the homemade wine with

    angelica. Her passion for winemaking,

    however, led her to visit Paso Robles on

    numerous trips. Ultimately, she started

    by Michael CervinWild Horse Winery has long been one of

    the leading wineries on the Central Coast.

    Though they have grown to be a major force

    in the production of Central Coast wines,

    producing nearly 200,000 cases each year,

    they have remained firmly in control of

    quality. Wild Horse has a long legacy,

    starting in the early 1980s when then owner

    Ken Volk formed the winery. Originally,

    Volk wanted to set up a winery that would

    focus on wine from various and diverseappellations around California, and when

    he took that as far as he could, he sold Wild

    Horse to form a new venture. It would be

    easy to assume that because a corporation

    eventually purchased the winery that

    quality would suffer. But surprisingly,

    quality has actually increased. Few wineries

    in California source fruit from such a broad

    spectrum of vineyards, and this has allowed

    Wild Horse to select grapes from the

    specific areas they feel best showcase a

    particular wine. Or, for example, they can

    produce a Pinot Noir from three distinct

    regions in Santa Barbara and San Luis

    Obispo and create a powerhouse wine.

    Located in Templeton, they are about five

    miles off Highway 101, on a gently curving

    and undulating road. The drive is rewarded

    once you turn onto a dirt road flanked by

    vines and rose bushes and head toward the

    winery. A small arbor covers the walkway

    and, in season, grapes hang down, yours for

    the picking. The tasting room is a modest

    structure with a low-key feel to it. A simple

    wood bar stretches out before you. Yes, they

    have other items for sale, such as condiment

    items, cookbooks, clothing with their iconic

    horse emblazoned on it and wine themed

    gift items. They also have picnic tables

    around and under the grape arbor that leads

    to the tasting room. When in season the

    grapes hang from the arbor, tantalizing fruit

    that youre encouraged to sample.

    close to the shoreline for protec-

    tion from predators, such as

    killer whales, traveling 70-80

    miles per day. They can be seen

    surfacing every three to five

    minutes to breathe.
