Relais & ChateauxRoute du BonheurThe Wedgewood Hotel & Spa has been a member of
Relais & Chateaux, an exclusive collection of the finest
hotels and gourmet restaurants in the world, since 2008.
Each property within this group is privately owned
and operated. Beyond that of quality, their common
denominator is the passion with which each hotelier
runs his or her establishment. To choose Relais &
Chateaux is to experience an unforgettable celebration
of the senses.
In Western Canada, the tradition of la Route du Bonheur – or the road to happiness – lives on, miles from its French roots of vacationing between manors, villas,
and chateaux, but always in the traveling spirit of Relais & Chateaux. Experience the rich character, charm, and culinary excellence of our partners as you navigate between each distinctive property and its own enchanting setting.
Start your journey in Salt Spring Island, the largest of the Southern Gulf Islands, located off the south-eastern coast of Vancouver Island wher you will find the lovely Hastings House Country House Hotel. Enjoy breathtaking harbour views, acres of vibrant lawns, gardens, and forests, abundant wildlife and a lively arts community. Salt Spring Island will lure you from the estate with a range of shops and galleries, and many choices for outdoor and water activities, such as biking, hiking, fishing, sailing, diving, kayaking, tennis, golf, farm, garden and winery tours.
Cross the Straight of Georgia to Vancouver Island and travel through the renouned Cathedral Grove Provincial Park to the remote, rugged west coast at eclectic Tofino, where the Wickaninnish Inn’s hand-carved cedar structures stands elegantly above the dramatic surf of the Pacific Ocean.
Drive along Vancouver Island’s mountain range and follow the freeway North to Campbell River where you will catch the ferry to the Sonora Resort, the absolute jewel amidst one of Canada’s most alluring, pristine environments.
A spectacular helicopter, seaplane ride or leisurely ferry via Nanaimo or the Sunshine Coast will lead you to Vancouver’s cosmopolitan city centre, where the Wedgewood Hotel & Spa, your home away from home, is perfectly located amidst the gardens and waterfalls of fashionable Robson Square.
Venture just past the border of the province of Alberta, and amidst the snow-capped peaks of Banff National Park, you will find the Post Hotel. Perched at 1500 metres in the breath-taking Canadian Rockies, this cherished Alpine chalet is renowned for its fine dining and an award winning wine cellar of over 30,500 bottles.
Relais & Chateaux offers you the opportunity to explore our Western Canadian Route du Bonheur whether at one, two or all of our member properties: west to east or east to west – the choice is yours in discovering these special places and the unique luxury experiences they offer, because any direction on this journey leads you to the road to happiness.

Bacchus Restaurant & Lounge
Lee Parsons is part of an exciting new generation of European chefs that are crossing the Atlantic in search of challenging new environments and ingredients indigenous to the West Coast.
Lee began his career at the five star Claridges Hotel, the crown jewel of fashionable Mayfair in London. Under the tutelage of Executive Chef John Williams, he progressed through the kitchens of Claridges for eight years before he headed to the Oxfordshire countryside.
There, Lee joined Chef Raymond Blanc at Le Manoir aux Quat’Saisons renowned for its Two Michelin Stars and AA Five Rosettes. A member of Relais & Chateaux, the restaurant is rated number one in the country by both the Zagat Guide and The Good Food Guide.
Raymond Blanc, often described as “one of the finest chefs in the world”, instilled in Lee his belief “The Good does not interest us – the Sublime does.” Lee followed this philosophy to twice become a National Finalist in the Roux Diners Scholarship.
After three years at Le Manoir, Lee was offered the opportunity to be the Executive Chef at the reopening of the historic Prince of Wales Hotel in Niagara-on-the-Lake, where he quickly established himself earning praise from the international food and travel media.
Returning home after three years, he took the stoves at Wood Hall, one of England’s finest country house hotels, set in a hundred acres of Yorkshire woodland. While there, he quickly established it as one of the country’s leading culinary venues. Lee’s dedication was recognized in2004 when he reached the finals of the U.K. Chef of the Year Competition.
Lee Parsons Executive Chef
With a strong desire to return to Canada, Lee joined the Wedgewood Hotel & Spa in 2004 as Executive Chef where he continues the tradition of excellence and brings his vast knowledge and understanding of food to Vancouver. His unique style of modern French cuisine is certain to turn some heads and elevate Bacchus to one of the finest restaurants in North America.
