With Dolin Genepi belongs to the absynthe family. Its other name is glaciers absynthe because it grows above 2500m on the moraine of glaciers. It fits that then added to a wheat beer brewed with the neighbouring water from a spring on the Mont Blanc.

This small distillery was founded in 1794 and uses only two pot stills. So influential was this distillery that an entire town grew around it. This scotch is aged in sherry casks and presents a rich and smooth styling with caramel and peaty characteristics

distillers suggest there is a sea spray aspect to all their scotches given that their distillery is situated on Islay and island off the coast of Scotland. This island was used
as a smuggling point many years ago, however today houses the Ardberg distillery. The 16 year old is presenting defined peaty and smoky characteristics with dark
chocolate on first taste with a liquorice and coffee finish.
Talisker 10 y.o Island 17
The distillery was founded in 1830 by Hugh and Kenneth MacAskill, and built in 1831 at Carbost after a number of false starts on other sites when they acquired the lease of Talisker House from the MacLeod of MacLeod. Quite dense and smoky on the nose, with smoked fish, bladderwrack, sweet fruit and peat. Full-bodied and peaty in the mouth.

An Orcadian distillery, Highland Park was founded by a smuggler and illicit distiller in the 18Th century, a man reputed to have disguised casks of scotch as coffins,
and distillers as mourners on inspection by the authorities. This is a rich and full scotch, all toffee, almonds and smoke on the nose, which continues right through to the
finish.

Situated in East Lothian which is 15 miles from Edinburgh this distillery is one of only three remaining lowland distilleries in Scotland using local grains the 12 year old is light and delicate with lemon and grassy aspects on nose and palate.

Dom Thierry Ruinart was an intuitive, visionary, hardworking, and modest Benedictine monk who lived from 1657-1709 and was a contemporary of Louis XIV. A
brilliant theologian and historian, at the age of 23 he left his home in Champagne to go to the Abbey of Saint-Germain-des-Prés, one of the most influential centres of
learning near Paris. While there, he was exposed to the city and court where he gained an awareness of a more worldly life and in-particular he learned of a new
"wine with bubbles," not yet known as champagne, which was already popular among young aristocrats. Dom Ruinart was an author of scholarly works, but also had a
taste for the contemporary and his inquiring mind went hand in hand with a keen business sense. Throughout his life, he would visit his brother and home in
Champagne and these diverse observations instilled in him the conviction that "wine with bubbles" produced from the vines of his native soil – also known as "vin de
mousse" or sparkling wine – had a promising future. He passed on this conviction to his brother and his nephew. In 1729, twenty years after the death of Dom Ruinart,
Nicolas Ruinart, Dom Ruinart's nephew, founded the first Champagne House, Maison Ruinart, and forever ingrained his uncle's name and the house in the history
books.

« R » de Ruinart nose is delicate and fruity displaying dominant aromas of fresh white pear and dry fruits such as hazelnuts and almonds, followed by white flower notes, Viennese pastry and buttered brioche. The palate reveals a dominant freshness, displaying both tactile roundness and enduring length.

Ruinart Blanc de Blancs embodies purity of the Chardonnay the nose is powerfully reminiscent of fresh fruits with dominant notes of citrus and exotic fruits, followed by a touch of jasmine, white peaches and pink peppercorns. The palate is both precise and clean as the wine delivers a radiant balance between roundness and smoothness.
NV Ruinart Rose 176 Nose is fresh and subtle, ripe with cherry and freshly picked red berries, followed by a splash of flowers and spicy notes. On the palate, the wine is silky and delicately fleshy.
2002 Dom Ruinart 390
The youth of the wine is evident on the nose with aromas of white flowers (linden blossom), fresh yellow plums, Nashi pears and bergamot citrus character. Allowing it to breathe reveals a rich base, with notes of biscuits and coconut followed by hazelnuts. The intensity is highlighted by a mineral, minty freshness. On the palate the freshness of citrus and tropical fruit culminates with superb mineral quality and a touch of gunflint. The result is a focused purity and exceptional length supported by subtle effervescence and beautifully integrated vibrant acidity.

Our selection of Champagne includes some very limited releases from grower producers. These wines are often recognized by Michelin starred restaurants as they express the true nature of Champagne Terroir.
While well-known houses of Champagne use up to 80 vineyards to make their Champagne, wine maker producers source grapes from single or closely located vineyards around a village.

Since the marriage of Nicolas Le Cacheur and Francoise Remy in 1696, three centuries have seen the famous Grand Cru vineyards of Aÿ passed through twelve generations of winegrowers. Since 1980, husband and wife, Pierre and Marie Paule Cheval-Gatinois have run the winery with the same attention to detail as did
their ancestors.

Lark Hill was established in 1978 by Sue & Dave Carpenter, high on the escarpment above Bungendore, 30km North East of Canberra. Certified Biodynamic Lark Hill is another winery which brought our intention. Great quality white wines especially Gruner veltliner.

Cognac: named after the town of Cognac in France, is a variety of brandy. It is produced in the wine-growing region surrounding the town from which it takes its name, in the French Departements of Charente and Charentes-Maritime.
Armagnac: is a distinctive kind of brandy produced in the Armagnac region in Gascony, southwest France. It is distilled from wine usually made from a blend of Armagnac grapes, including Colombard, and Ugni Blanc, using column stills rather than the pot stills used in the production of Cognac

Calvados: is distilled from cider made from specially grown and selected apples, of which there are over 200 named varieties. Calvados is made in Basse Normandie “France”

Rhum & Rum
Rum: is a distilled alcoholic beverage made from sugarcane byproducts such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels. Rum can be referred to in Spanish by descriptors such as ron viejo ("old rum") and ron añejo ("aged rum").
Rhum Agricole: is a type of rum distilled in one of the French West Indies islands from freshly squeezed sugar cane juice rather than from molasses. Most rum is made from molasses, a byproduct of sugar refining but when France began to make sugar from sugar beets, sugar prices plunged heavily. The debt ridden sugar factories could not survive solely on sugar production. The French islands found that fresh cane juice was available for fermenting and distilling into rum.
