T he site comprises a takeaway downstairs by the fish preparation area and their own dedicated Rockfish

training academy, where staff will be trained in the high standards and values of the company.

Upstairs, with unrivalled views of the inner harbour and the Bay is the restaurant with seating indoors and outside for 170 diners. There is also a bar where diners can enjoy a pre or post meal drink.

All open 7 days a week for lunch and dinner with the takeaway downstairs also open for breakfast Monday to Friday 7 -11am.

Mitch said, “Since visiting Sydney fish market some years ago, it has been a dream of mine to open a fish restaurant right where the fish is sourced, on the fish market! And living in Brixham myself, looking out towards the fish market and regularly buying at the market I’ve always wanted to open right here, just 3 meters away from where the boats land their fish. We’ve been quite overwhelmed by the amount of interest and support we’ve had from our customers and from locals but also further afield, which has been really encouraging.

For the first time we will be serving breakfast Monday to Friday from 7am from the takeaway, recreating the atmosphere of the European fish markets where market workers and the general public meet and chat. Good Luck Mitch!

The juiciest question we get asked is “How do you stand out in this heavily saturated market of take-aways? Why have you lasted whilst others haven’t?” Sadly there is no magic formula, but, I can tell you about my experiences and

what I have learned over the years.

I was married into FoodCraft 12 years ago. To me, at the time, it was “just a chippy”, but as the years have gone by,

I’ve watched customers come in and be reminded of “Old Winsford,” and “Old Values.” I’ve heard customers beam, countless times, “I remember being in here as a child and it looks just the same!” And at the forefront of every one of these comments was, and still is, nostalgia.

For over 55 years we at Foodcraft have relished in our history, and the history of our industry. We love nostalgia.

With the world moving ahead so fast, businesses are losing their identities and roots. Businesses that look at what everyone else is doing and subconsciously copy it. They’ll make their shops look the same, newsletters look the same, websites looks the same and even the menus!

Obviously while it’s important to know the competition — you also need to stop looking at them at a certain point and go your own way. Our approach to everything “FoodCraft” is to look

inwards, not outwards. We don’t pay attention to “the guy down the road” as he’s not us.

If you walked into FoodCraft today, you will see more or less the same as what our customers did 55 years ago because so little has changed. You will be eating the same home-made pies, made in the same way, and served fish and chips that are prepared and fried the same way.

Furthermore, the menu is more or less the same. We focus on what we’ve always focused on; Fish, Chips and Pies. To us having a massive variety of products can be counterproductive. Variety does not make you different. Quality does.

Another area where business really needs to stand out is online. No, it’s not as important as word of mouth, but considering that over 88% of customers hit the website/facebook page before deciding to visit, is pretty darn close! Having a good brand can (and this is from experience) get you a sale you otherwise wouldn’t have got!

Clearly social media and branding requires a different approach. This wasn’t around when FoodCraft was young! But again, we had to produce something that we could enjoy and take pride in.

I made the rookie mistake to try and replicate others. It went horribly. I hated the site, I hated the branding, it wasn’t us and worst of all, you could tell! I had to change it!

I wanted an engaging and integral online life and we do this by posting everyday on our social media sites, asking and answering questions. We run big and small competitions, give customers a glimpse into our personal lives and behind the scene workings. We also have cartoon versions of our-selves! The staff, customers and even we get a bit of a kick out of seeing them! And it gives that instant recognition too!

If working alongside my husband John, his brother Christopher and my parents in laws, John and Iris, has taught me anything over the past 12 years, it is this. FoodCraft isn’t “Just a chippy,” It’s a living breathing thing that has looked after us, more than we have it. It has given us happy memories, introduced us to new friends, given us our homes, our lifestyle, and made us a stronger family. We are proud of FoodCraft and everything it represents and THAT is what truly makes it stand the test of time.

The awards aim to support the wider fish frying trade in their effort to

maintain their share of the quick service/takeaway/fast food market – and seek to:

reward individual excellence in a range of different award categories

raise quality standards and provide a benchmark for businesses to aspire to (performance feedback is provided to all entrants)

provide a robust platform from which to undertake a wide variety of media activity promoting the sector and its many diverse facets, and to encourage the continued consumption of fish and chips amongst both the UK population and visitors to the UK.

The 2016 awards are now open for entry, and there is no cost to participate.There are a variety of award categories to enter and businesses are appraised on criteria ranging from sustainable sourcing practices, customer service, hygiene and staff training, and most importantly, the quality of fish and chips.

Entering the awards is easy and the accolade of being judged one of the best fish and chip businesses in the UK can have an enormous impact on business. Previous award winners have seen their sales increase by up to 100% within weeks of winning.

Various judging rounds eventually culminate at a prestigious awards ceremony in London in January where all the award winners are announced.

Peter Borza. “ITICA National Fish & Chips Day continues to grow in popularity with members reporting longer queues each year.

Last year over 200,000 people visited the shops for fish and chips making it the most successful yet!

  Established in December 2009 and now with over 180 members throughout the country,  ITICA was created to promote and build on the traditional values and ethos of the Irish Italian chipper community. In its first six months, ITICA launched National Fish & Chips Day to celebrate the tradition of fish and chips. 

The Irish Italian chipper culture was started by members of the Irish Italian community who arrived in Ireland from the villages in Val Di Comino in southern Italy in the 1880s.

Cooking oil develops its best potential between 14 and 20% TPM. If the oil is too old, it shows an increased TPM

Research suggests that certain types of music can bring out specific flavours - including sweet, salty and

bitter - in a range of foods.The intensity of Nessun Dorma,

performed by Luciano Pavarotti, is said to be the perfect accompaniment to dark mouse or coffee. Meanwhile, the high-pitched piano in Billie Holiday’s Autumn in New York can help emphasise the autumnal flavour of a pumpkin pudding. 

Listening to the right sort of music, including the Beatles can enhance flavours in certain food and drink.

In Ultraviolent restaurant in Shanghai, fish and chips are served up to a backdrop of the Beatles. Kota’s Kitchen also in Shanghai offers The Beatles and Japanese comfort food – It’s a venue where you really need to be a Beatles fan, as it’s the only music you’ll hear.

Professor Charles Spence, a behavioural psychologist from Oxford University

said that humans tend to match the same sounds to the same tastes.

He described sourness as ‘high-pitched’, meaning it should be played alongside music of the same quality. He also said sweetness is associated with richer sounds, while bitterness is linked to deeper tones.

He believes the sound associated with salty - which he has not yet pinned down - would be enhanced by a throbbing type of sound.

‘Bitter, sweet, sour - we have those,’ says Professor Charles Spence, ‘But salty is the hardest taste to embody in sound.’

With over 70 exhibitors for the 2015 exhibition VA Whitely promised us their biggest

and best show yet and we weren’t disappointed!

Proudly taking our place two doors down from the governors (NFFF), and one from the next generation (Young Fish Friers) was the Chippy Chat and Isle of Ely Produce team.

After a night of ‘celebration’ on the

Saturday night at the marvellous Premier Suite overlooking the Bolton Wanderers pitch (you know who you are) I had half hoped for a slow start to proceedings as the show started at 10am.

But we were busy from the off, and the exhibition aisles were soon full of people all clambering to find the latest invention and chat to a kaleidoscope of experts from across scores of sectors that make up our industry.

At Fish Lovers on Whiteladies Road hake and pollock are just two of the treats on the menu.

It also serves up specials including barramundi, and at around £5 a piece the Australian version of fish and chips is a favourite of restaurant owner, Ghunnan Narmani.

He said: “It is Australia’s cod when it comes to fish and chips and so I often have it as a special. Personally I love it. People tend to say they will try it when someone buys it.

“It always works well as it’s a really chunky piece of fish. It is a big fish – like tuna – and so you always get a good serving. I really enjoy it.”

Farrow’s Fish and Chips in Totterdown has huss on its menu – also known as rock salmon. According to the shop, the white fish, which costs £3.20 is becoming more popular as more customers are willing to try it.

Jonathan Farrow, who works at the shop, said: “I have been serving huss since I started in this business 25 years ago and I have stuck with it.

“If you go to London or the east coast

it’s very popular there. It has a bit of a cult following in Bristol. It’s a fish with a different flavour.”

Jonathan said unusual fish becomes more popular when the price of cod goes up. He said: “When prices of cod rise people look elsewhere on the menu. Over the years we have also served New Zealand hoki and a white fish called basa.”

Clifton Village Fish Bar also serves up some more unusual versions of fish and chips – featuring mackerel and sea bass on its menu.

A spokeswoman for the shop said: “Sea bass is the most popular and costs £4.30. It is very nice and definitely worth a try. We sell a lot of hake as well – that is a very thick fish and people love it. It is good to see people trying new things.”

Just like Arkwright - Smiffy’s Chippy in Hastings clocks up an

incredible 89 hours a week .

They are open from 11.00 till 11.00 on Mondays to Wednesdays and then until 4.00 a.m on Thursday and

until 5.00 a.m on Friday and Saturday. The shop is perfectly located less than five minutes from both the town centre and the beach and in the heart of the club area. This creates three different market opportunities which Remzi Tanriverdi and his team are keen to embrace.

Product choice varies between the different markets. The daytime trade is mainly focussed on fish and chips whilst the late night trade tends to be sausages, nuggets and chips.

Remzi, who has seen a substantial increase in turnover in the last three years, puts his success down to a few reasons but top of the list is consistent quality.

“ We have a core staff of four people, myself, my wife and two experienced friers. At least two of us are always in the shop and we are the only people who fry. This means that whatever time a customer comes into our shop he will receive the same quality food prepared by experienced staff.”

To maintain standards over such long hours Remzi only uses quality ingredients. He carefully selects his cod which is frozen at sea; he uses Maris Pipers and buys at the top end of the range to give his customers quality chips. “ The oil is the key ingredient because over the hours we obviously hammer it. My wife and I wanted to go out for seafood on our last trip to downtown Vancouver, and saw that the Fish Shack had many great reviews, so we decided to go try it out. Good

decision, the friendly service started when we were seated by the hostess and manager and continued when we were greeted at the bar, where we sat, by the server and the oyster shucker...great guys ! We were offered the oyster special - a buck an oyster - and they were fantastic!! Coupled with cold beer and a specialty Caesar, we were off to a good start. I had the halibut and my wife had the “dining out” special and both were awesome - the meals going to the other tables also looked great ( I will try the “Big Catch” next time). The service continued to be great throughout the evening and the price was very reasonable. I will return to the Fish Shack on my next visit and highly recommend it.

Field to Young Friers!

The 2015 ‘Young Fish Friers’ finalists all met up at Isle of Ely (and Chippy Chat) HQ, - Rachel Tweedale - Winner

of ‘Young Frier of the Year’ (Elite Fish & Chips, Lincoln), Ryan Hughes (Crispy Cod, Porth), Jonny Leech, (Garstang, Preston), James Houlston, (Our Plaice, Hagley) and colleague Joe Round (Our Plaice, Hagley), along with Austen Dack, Chippy Chat Publishing Editor, Tom Wright, Procurement and Trading Manager, Matthew Grindling, Fieldsman/Technical.

The aim of the day was to give the Drywite Young Fish Friers an insight into the journey of the potato - from growing, storing, grading and packing - from field to frier!

After a quick briefing of the day in the meeting room, they split into two teams.

They were met in the field by Pete Legge and each team got the opportunity to ride on a tractor and get involved in the process of planting the seed potatoes. On the ground the teams were given a talk on crop management from the different variety, the spacing of the seeds in the

ground, the correct temperature and how the breakdown of the soil affects the size and growth of the potato.

The next stop was P J Lee and Sons. We were met in the field by Christopher Lee and given an in-depth talk of the growing process used by their farm. A farm tour followed of the temperature controlled storing facilities and the grading and bagging process.

After a break for lunch back at Isle of Ely, they were then given an opportunity to try their hand at grading, overseen by MD Oliver Boutwood. It was then off to the QC lab to get involved with some frying!

Oliver said “The day was a tremendous success, it was an opportunity to show them the potato industry and the role that Isle of Ely Produce play, they got to see first hand the journey from the planting the potato seed to frying the potato. After the success of today we will definitely be repeating it next year with the next Drywite Young Fish Friers”

Young Frier of the Year 2015 said “What a brilliant day spent at the Isle of Ely Produce. Potatoes are a staple product in our industry so having the opportunity to learn about the processes involved in ensuring the growth of a top quality product was fantastic. We spent the first part of the day visiting a farm, where we got the chance to hop on the tractor and see the seeds as they were being planted. A visit to P J Lee & Sons showed us what happens to the potatoes once they have been harvested.

On our return to the Isle of Ely we had the opportunity to offer our perspective as Young Friers on what we thought passed the grade as a good quality chipping potato by working on the grading line.

From start to finish, we all had a brilliant, insightful and informative day. The level of commitment and investment made to producing top quality chipping potatoes is incredible and hats off to the farmers and everyone involved for doing such a brilliant job. Big thank you to the Isle of Ely for your hospitality and for offering this opportunity to us.

Over two years ago the team at Isle of Ely Produce sat down to decide how they could help promote fish

and chip shops in the UK. John and Oliver Boutwood were adamant that in order for us to sustain and eventually grow our market place we would need to work together. It was then we came up with the idea for this national platform for fish and chips.

It will be a place where consumers can learn about our national dish, somewhere we can link to other national companies, and a site we can create a fish and chip collective as big as the national chains of fast food providers. Somewhere we can promote the admirable work done by the likes of the Potato Council with chip week, Seafish celebrating the nation’s best, or even highlight the wonderful NFFF Q award holders.

It will capture the tradition of fish and chips and seek to tempt in some of the 32 million people who flood into the UK on holiday into your shops.

It will encompass Twitter, Facebook and Online to start is www.greatbritishchippy.co.uk . It will have a fresh crisp and funky design.

Although the concept has launched greatbritishchippy will be developed over the next few months with your help. We already have some great people who want to be involved. We are seeking partners (trade) and owners to help us build and create this platform. We are looking to have regular meetings with a team of people who will decide who, what and where to target once we launch to the consumer. We understand that individual shops work well in their market places, but feel there is a gap to promote our cherished brand (inter)nationally.

This team will represent the whole industry and we are looking for people to come forward and join us.

Greatbritishchippy is looking to promote fish and chips to new markets and capitalise on PR and promotional opportunities throughout the year.

He has produced Scotland’s first potato vodka just three months ago has won a double gold medal

and sliver for at the prestigious 2015 San Francisco World Spirits Competition.

Graeme Jarron, from Hatton of Ogilvy farm in Angus, produces 2,000 bottles of Ogilvy Vodka a month, which sells at £34.99

Mr Jarron, founder of Ogilvy Spirits, decided to branch out into the highly competitive vodka world after becoming disappointed at the low prices he was offered for his potatoes.

He also realised that the key ingredients

for the new venture – Maris Piper potatoes and water from the Ogilvy burn – were already on site.

“A group of students helped me do some research into the possibility of using Scottish potatoes to produce vodka. The results were positive and after working on a feasibility study and business plan with the SAC we decided to take the plunge.”

The result is a vodka which can be drunk on its own with a few cubes of ice and a slice of pear.

Paul Waterson, chief executive of the Scottish Licensed Trade Association, said

“People are reacting against bigger brands and want home-grown products. They are in effect “drinking less, but drinking better” and want something unrecognizable with a bit of character to experiment with.”
