“BE FOOD SAFE THIS GRILLING SEASON”The USDA (United States Department of Agriculture)

recommends these safe minimum internal temperatures for

cooked foods:

Steaks 145° F

Fish 145° F

Ground Beef 160° F

Chicken Breasts 165° F

Whole Poultry 165° F

When cooking any of the above internal temperatures should

be held for at least 15 seconds.

The cooking process kills harmful microorganisms.

Temperatures for the various food

groups vary depending on the

level of microorganisms in that

particular group.

RASPBERRY CHAMBORD CHEESECAKE

Courtesy of the Miromar Lakes Culinary Team

Ingredients:1 cup Graham Cracker Crumbs

2 tbs. Melted Butter

2 lbs. Cream Cheese

12 oz. Condensed Milk

1/2 tsp. Vanilla Extract

6 Eggs

1/8 cup Chambord*

1/2 pint fresh Raspberries

Directions:Place graham cracker crumbs in a bowl, add melted butter and mix. Place mix on bottom

of spring pan. Whip the cream cheese until soft, add condensed milk and vanilla extract.

When smooth add eggs one at a time and whip until incorporated. Add Chambord and

raspberries. Stir in, just enough to create color swirls. Place in springform pan; place in

hot water bath and bake at 350 degrees for approximately one hour or until set (test with

a toothpick; if it comes out dry, the cheesecake is cooked). Take out of water bath and

cool at room temperature. Place in refrigerator overnight. Remove spring pan ring the

next day. When serving, slices can be decorated with cream and fresh berries.

*Chambord is optional and can be substituted with Brandy.

WHAT’S COOKING?

Always have a calibrated thermometer handy.

DID YOU KNOW?FRESH MADE PIZZA NOW AT THE BEACH CLUBHOUSE

In the mood for a little Italian delight? The Beach

Club now offers scrumptious made-from-scratch

pizzas! The 14-inch pies easily feed two and make

for a perfect date night or late lunch. Toppings range

from the more traditional pepperoni, Italian sausage, onions,

green peppers, and mushrooms to the less conventional such as spinach,

pineapple, olives, artichokes, and feta cheese. They can even be ordered

“to-go” for a fun night at home.

“CUPID” THE CAT LOST AND FOUND

Cupid, a 7-month-old loveable

black and white cat, was found and

returned to Marie and Lee Kitsberg

in Bellavista after he explored

Miromar Lakes for four days. He

survived storms and unknown

rigors before finally being spotted

then taken back to his owners,

his best friend, Sassy the dog and a good meal.

The Kitsbergs credit his safe homecoming to Miromar Lakes’ alert

staff and friendly neighbors. After an email was circulated notifying

residents about the lost feline, over 60 people phoned or emailed tips to

Marie and Lee, searched for Cupid themselves, and donated humane traps

to catch him. Special thanks go to Kevin at the Miromar Lakes Privacy

Department for sighting Cupid and helping to send him home at last.

It Is That Time Of Year. . . Shallow Water

We have experienced a very dry winter causing the water levels in our

Lakes to decrease. The situation typically will correct itself by mid-summer

when we experience the summer wet season with signifi cant rainfall.

While Marine Services is not able to identify every shallow area, they

have marked many low water areas in both lakes with large red balls. They

have also provided red and green channel markers for safe navigation

when entering and exiting Lake Maggiore. Stay between the channel

markers and at least 50 feet away from all marked shallow areas.

Maps are available at Marine Services.

Nature SpottingResidents have reported seeing a friendly face in

our lakes - a North American River Otter. One

otter has even been known to jump up on our

docks, look around, and dive back into the lake! Usually these furry friends

are seen very early in the morning.

The River Otter’s fur is dark brown to almost black on top and a lighter

color on their underside. The throat and cheeks are a golden brown. They

weigh between 5 and 14 pounds and are 35 to 58 inches long. River Otters

are found where there is a steady food supply and easy access to water.

They can live in coastal marine habitats or freshwater lakes and rivers.
