Flavours, colours, aromas and traditions: these are the jewels in the crown of the Alta Marca Trevigiana area, the piedmont strip of hills that runs from Valdobbiadene right up to beneath the Cansiglio plateau, the magical home of the “forest of San Marco” that once provided the wood chosen by the shipwrights for the oars of the galleys of the Serenissima Republic. This area’s wine par excellence is Conegliano-Valdobbiadene Prosecco Superiore DOCG, one of the world’s most renowned wines. The rows of vines that grow in a small 117 hectare area in Valdobbiadene yield the “Cartizze” prosecco, with a distinctive, intense aroma. Conegliano is home to the oldest Italian School of Oenology, founded in 1876, and lies at the centre of the White Wine Route, the fi rst example of a food and wine route aimed at tourists. The Prosecco and Conegliano-Valdobbiadene Hills Wine Route is an itinerary that brings together the two DOC (Controlled Denomination of Origin) wine zones in the area, and is a newer, more modern version of the White Wine Route. The Colli di Conegliano DOC area produces outstanding wines such as Refrontolo Passito, or Marzemino, mentioned in Mozart’s Don Giovanni. A skilful, painstaking process lies behind Torchiato di Fregona: the whole grape bunches are hung up to dry on racks throughout the winter, and towards Easter a particular pressing method yields an extremely fragrant passito wine. Also native to the area is Verdiso IGT sparkling, semi-sparkling and passito. The centuries-old chestnut woods of the Pedemontana, or piedmont area, have brought renown to the Combai DOP (Protected Denomination of Origin) Chestnuts, and national recognition has also been given to the Quartier del Piave Potato, grown in the area of Moriago, Vidor and Sernaglia. There is also an extremely rich variety of cured

and encased meat products to be found here, such as Sopressa, recently been given added value by the farm concerns belonging to the Small Local Producers Associations, who market it under the specifi c name of “Sopressa d’Alta Marca”, producing limited, exclusive numbers of the speciality, as tradition demands. Still on the same subject, other speciality foods that form part of the local traditions - still very much alive and well – are Pedemontana Country Chicken, Mondragon Goose (a Slow Food presidium) and the Spiedo d’Alta Marca, a delicious combination of pork and poultry roasted on a spit. This particular cooking method is so popular that an Accademia dello Spiedo has been formed to promote it.The Cesen massif, in the Pre-Alps, is home to a particular variety of mountain dairy cheese, Monte Cesen, with a soft or semi-hard paste, a straw-yellow colour, mellow fl avour and pleasantly intense aroma.

Conegliano Valdobbiadene, Prosecco SuperioreStraw-yellow in colour, with a slightly fruity aroma and a sweetish taste, or pleasantly bitter on the palate in the dry version, this sparkling, semi-sparkling or still wine is suitable for drinking throughout meals (the sweet version to round off the meal or with dessert). The Primavera del Prosecco DOCG, which takes place between March and June, is Gthe fi rst example of a coordinated series of wine exhi-bitions and events in the Alta Marca Trevigiana area, awhile Vino in Villa presents the fi nest locally-produced versions of Prosecco DOCG.

Vittorio Veneto, with its splendid hills lying between the Alps and the plain, is the perfect base for a natural, healthy holiday exploring the local art and culture. Famous for the battle won by the Italian troops during WWI, Vittorio Veneto is the result of the union between Cèneda, to the south, and Serravalle, an ancient, perfectly conserved village with porticoed streets, villas and enchanting Gothic and Renaissance buildings. The main street that runs through the more modern Cèneda is Viale della Vittoria, and in Piazza del Popolo there is an impressive Monument to Victory by Augusto Murer, while on the hill is the Castle of San Martino (the Bishop’s Palace), the Museum of the Battle of Vittorio Veneto and the 18th century cathedral. Especially worth seeing in Serravalle are the 15th century Loggia in Piazza Flaminio, the altar-piece by Titian in the Cathedral and the Church of Sant’Andrea di Bigonzo. On the road for Cansiglio, you can go up to Fregona, a village that offers splendid views of the plain below and is famous for its Vin Santo (holy wine) or Torchiato. plateau, covered with a forest belonging to the state that for centuries enjoyed special protection as a strategic reserve of timber for the ships of the Venetian Republic. To the left of Fregona are the delightful Caglieron grottos, where rushing mountain streams create waterfalls and deep rock pools, which can be explored thanks to the paths and footbridges. In the opposite direction, on the winding route that leads up to the Cansiglio plain, is the village of Osigo. On the way down to Sarmede, known as the “fairytale village” thanks to the famous children’s book illustration exhibition and the La scuola va a teatro theatre shows for children, you will encounter Montaner, where you can admire the view of the plain below, and Rugolo, with the church of the Madonna del Val. In Cordignano you can see Villa Belvedere, built over the ruins of the castle of the Da Camino family, the mediaeval feudatories of the area. 9 km west lies Colle Umberto: Villa Verecondi Scortecci, near a mediaeval tower of the Da Camino family, was originally built in the 16th century as a hunting lodge by the Venetian patrician family Gamba. The last stops on the road to Conegliano are Castel Roganzuolo (church with a triptych by Titian) and San Fior (crucifi x by Andrea Brustolon in the parish church).

This is a hiker’s paradise: a long stretch, at altitude, of the panoramic path of the Treviso Pre-Alps that runs from Mount Grappa to the Cansiglio plain, offering splendid views over the Veneto plain to the south and the Dolomites to the north, featuring tree-covered valleys, crags, forests and pastures. Further down, among the gentle hills of the Pre-Alps, west of Vittorio Veneto, a series of cycle and equestrian tourism routes set out, divided into stages, allowing the visitor to discover the wealth of hidden treasures this beautifully unspoilt landscape has to offer. From the delightful Tarzo you can go down to the two little twin lakes of Revine to practise water sports, or visit the sanctuary of San Francesco di Paola, perched on a steep, tree-covered hillside, while further up lie the ruins of the castle of Mount Fiascone. From Tovena, a challenging panoramic route goes up towards the San Boldo Pass: a climb of almost 800 metres, which can be tackled thanks to the helicoidal bends the Austrian troops had dug out by hand in the bare rock during the winter of 1917-18, using prisoners of war and people from the local

area. Just 3 km from Tovena is the village of Cison di Valmarino, above which is perched the striking Castelbrando, a mediaeval castle surrounded by thick woodland that looks onto the Valmareno. Follina is famous above all for the Cistercian abbey, with its graceful cloisters: an oasis of peace with a fascinating mediaeval air. Moving on a little, from the green Miane valley, dotted with cowsheds and huts where butter and cheese is made, you can go up to Combai, where the Chestnut Festival is held in October. 7 km south of Follina, after Pieve di Soligo, with its fi ne villas, churches and the Toti Dal Monte museum in Solighetto, the landscape of Collalto is dominated by the castle, which dates back over a thousand years and is famous for the legend of Bianca, a maidservant the feudatory, Aica Da Camino, had walled up alive in a tower. A 6 km trip through tree-covered hills, fi elds and farmland leads on to Susegana, where, on a beautiful sunny shelf sits the jewel in the village’s crown: the castle of San Salvatore, which for 800 years has belonged to the Collalto family and is enclosed within a double perimeter wall.

The Prosecco route, which winds up and down the hillsides thick with vineyards between Conegliano and Valdobbiadene, amid inns, little restaurants and places that sell the local wines, is reminiscent of the poetic landscapes featured in Venetian painting between the 15th and 18th centuries. Conegliano, famous for its school of viticulture and oenology, is a lively town with plenty of attractive shops, the ideal place to savour the dolce vita in Veneto. Visitors should not miss the Cathedral (with an altarpiece by Giambattista Cima from Conegliano) and the nearby Confraternity of the Battuti. Centuries-old dwellings and buildings, many of them decorated with frescoes, fl ank the porticoed streets. On the hill is the castle, with the Museum of Local History and Art. 6 km to the north is San Pietro di Feletto: the church, built over an earlier pagan temple, has a portico that faces onto the hills, 15th century frescoes on the facade and the remains of Byzantine-Romanesque paintings inside. Not far away lies Refrontolo, which sits perched on a ledge on the hillside and is famous for Marzemino, a passito wine. A relaxing 2 km walk can be enjoyed towards the Molinetto della Croda

From hill to hill amid the vines

mill, in a little valley that lies beneath a 12 metre waterfall from the Lierza torrent: a house-museum illustrating how millers used to live and work. The road then goes down to Pieve di Soligo, the main town of the Quartier del Piave area at the foot of the Pre-Alps. Overlooking the town is the beautiful San Gallo hill sanctuary. The road to Farra (with the ruins of the castle of Credazzo built by the Collalto families) offers attractive views over the “gold coast”, covered by top-quality vineyards that yield the famous Prosecco. A little further on, Col San Martino (with the little 15th century church of San Vigilio) hosts a number of important wine events. Moving swiftly down almost onto the plain, we fi nd Vidor (with a 15th century abbey), Bigolino and Valdobbiadene. In a sunny, hilly area measuring just 107 hectares, in the area of Guia, San Pietro di Barbozza and Santo Stefano, the renowned superior sparkling Cartizze wine is produced. We have now reached Valdobbiadene, which lies in a grassy basin, and where each year in August the delightful setting of Villa dei Cedri hosts the culinary palio challenge of San Lorenzo. From Valdobbiadene, hiking trips can be enjoyed to Pianezze (at an altitude of 1070 metres) and to Mount Barbaria (1465 m), from where you can admire splendid views of the plain, right out towards the sea.

Spit-roasting in the Alta Marca area

The system used for roasting comprises a manual or electric motor, with a central skewer that may be surrounded with a number of others, and a dripping-pan (golosa) for collecting the fat and the juices of the meat during the cooking process. It is placed on a fi replace at an adjustable distance of 30 – 40 cm, with a high-sided brazier for burning the wood in. The meat roasted, preferably from the Veneto region, includes poultry (chicken, guinea fowl, rabbit), pork (ribs, ossocollo or coppa from the collar and fondello or stracùl, from the loin), kid and lamb, and, traditionally, quail. The meat is roasted in pieces weighing about 120 g, interspersed with lardelle, or lardèe (strips of lard). The roasting process lasts between 5 and 6 hours, with the fi rst at a moderate heat, until the typical roast colour is obtained, and the result is well worth waiting for. The wood used must be dry and non resinous; ideal varieties are the hornbeam and beech typical of the local woodland in the Pre-Alps. The herbs used are rosemary and the local, small-leaf sage. From mid-way through the cooking process, the meat is salted using table salt, and is ultimately served piping hot and crisp, accompanied by separate side dishes of cooked wild herbs, beans, radicchio, potatoes and polenta, preferably white. The spit-roasted meat is delicious with a good red wine, although its traditional partner is Prosecco Superiore.
