Microwave Baked Potato

2 large russet potatoes2 tablespoon butter or margarine1/4 cup shredded Cheddar cheeseSalt and pepper to taste1/4 cup sour creamChopped green onions

Directions

Scrub the potatoes, and prick several time with the tines of a fork. Place on a plate.

Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potatoes are soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 1/2 the of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.

Top with remaining cheese, sour cream and green onions.Can also add crumbled bacon.

Garlic Chicken

2 cups water2 cubes chicken bouillon1/2 cup butter1 tablespoon dried Italian seasoning1/2 teaspoon dried dill weed1 teaspoon garlic powder, or to taste4 skinless, boneless chicken breast halves

Directions

Pour the water into a microwave-safe casserole dish, and place in the microwave. Heat until boiling, about 2 minutes. Stir in bouillon cubes, butter, italian seasoning, dill, and garlic powder.

Pierce the chicken breasts with a fork on one side, and place the pierced side down in the casserole dish. The chicken should be almost covered by the liquid, if not completely covered.

Cover the dish, and cook in the microwave for 10 minutes, or until chicken is no longer pink, and juices run clear. If the chicken is not done after the 10 minutes, continue to cook at 1 1/2 minute intervals.
