Cherry Chocolate Kisses1 cup unsalted butter, softened, but still cool 1 cup powdered sugar 1/8 teaspoon salt 2 teaspoons maraschino cherry “juice” 1/4 teaspoon almond extract 2 1/4 cups all-purpose flour 1/2 cup maraschino cherries, chopped Granulated sugar, for sprinkling the cookies 36 milk chocolate kisses, unwrapped 1.Preheat the oven to 325 degrees. 2.In the bowl of your standing mixer fitted with the paddle attachment, beat the butter at medium speed until creamy, about 1 minute. 3.Reduce the speed to the lowest setting and slowly add the powdered sugar and salt. 4.Add the cherry juice and the almond extract until combined. 5.With the mixer still on low, slowly add the flour, scraping down the sides of the bowl as needed. 6.Increase the mixer speed to medium and add the cherries. 7.Shape the dough into 1-inch balls, and place the balls on a baking sheet, approximately 2 inches apart. 8.Using your thumb, gently press each cookie in its center until the cookie is about 1/2-inch thick. 9.Sprinkle each cookie with a little granulated sugar. 10.Bake the cookies until the bottoms are lightly browned, about 14 minutes. 11.Once removed from the oven, immediately press a chocolate kiss into each cookie’s center. 12.Transfer the cookies to a wire rack to cool completely.

Servings: approximately 36 cookies

Cherry Winks½ cup soft butter 1 ¾ cups sifted icing sugar. 1 tsp orange juice 1 ½ cups coconut 3 ½ dozen maraschino cherries 1 cup fine graham wafer crumbs

Combine first four ingredients and wrap around the cherries. Roll in graham wafer crumbs. May also be dipped in chocolate. Delicious. Frances Leggat Duncan

Chocolate Chip Butter Balls (Snowballs)1 ¾ c. sifted pastry flour ¾ c. chopped pecans 1 C. chocolate chips or mini M&M pieces ¾ c. butter ½ tsp salt ½ sifted icing sugar ¾ tsp rum extract 2-4 tbsp cold water Icing sugar

Combine flour, pecans and chips. Cream butter, gradually add salt and ½ c. sugar, cream until fluffy. Add rum extract and water. Mix gradually, add flour mixture and blend. Mold dough into balls. Bake on ungreased cookie sheets at 325º for 20-23 min. While cookies are still warm, roll in icing sugar. Store in airtight container. Makes about 3 dozen.

Cranberry & White Chocolate Shortbread1 ¾ cups all purpose flour ½ cup cornstarch ½ tsp. salt 1 cup unsalted butter – room temp. ¾ cup icing sugar 1 tsp vanilla ½ cup dried cranberries ½ cup white chocolate chips Icing sugar for dusting Preheat oven to 300ºF Line a 9x13 baking pan with parchment paper so that it overhangs for easy removal. In a large bowl, combine flour,

cornstarch and salt In a separate bowl, beat butter with icing sugar and vanilla until very creamy. Stir in flour mixture, then cranberries and chocolate chips. Using floured fingers, pate evently into prepared pan. Using a fork, prick surface all over. Bake 40-50 minutes in preheated oven. Let stand in pan on wire rack 30 min. Using parchment paper, lift out of pan. Slice into bars while still warm. Cool completely. Dust with icing sugar if desired. Makes 48 bars. Freezes beautifully. Beth McKeown Duncan B.C.

Chicken Crustados1 cup chopped cooked chicken2/3 cup mayonnaise1/3 cup sour cream1/4 cup jack cheese1/4 cup chopped parsley11/2 teaspoons currysalt and pepper to taste1/3 cup chopped almonds (optional)2 tablespoons fresh lemon juice1 large shallotdash of hot pepper sauce (tabasco)Mix all ingredients except nuts. CRUSTADOSCut 12, 2 1/2 inch rounds from sliced white bread, lightly butter.Shape rounds into wells of small tart or muffin tins.Bake at 400’ for 10 to 12 minutes, until golden brownCool.

Salsa Recipe1 #10 can of whole peeled tomatoes (the big commercial size cans) or 4 of the regular sized cans if you can’t find the big one. 1 small onion 4-5 cloves of garlic (peeled) 1 bunch of cilantro (cut out as much stems as you can) 2 medium jalapenos (you can deseed them for less heat but I leave them in.) 2 tsp cumin

salt and pepper fresh lime juice (optional) Drain the juice from the tomatoes and set aside. Put the other ingredients in a food processor, and pulse until everything is finely chopped. Add in about 1/3 of the tomatoes and pulse until mixed thoroughly. Place into a large bowl. pulse the remaining tomatoes and mix into the bowl. Stir to combine. This makes a lot of salsa, so scale up or down accordingly. You can add more jalapenos depending on how hot you like it. Tomatoes absorb a lot of salt, so you may need to add more than you think, start small and you can always add more later. Being there are no preservatives in this, it will last about a week in the fridge. This recipe if followed makes enough for you and enough to give some out Richard Humphrey Irving, Texas

Nana Lee’s Baking Custard

4eggs1/2 cup sugar1/2 tsp salt1 tsp vanilla1 cup water1 lg can evaporated milk

Beat eggs, sugar and salt. Add water, milk and vanilla. Beat until mixed. Place 8 cups (glass) in a pan of hot water and bake at 350 for 45-55 minutes. check by putting a knife in the middle and if it comes out clean, it is done.

Almond Roca1 tablespoon corn syrup1 1/4 cups white sugar1 cup butter1/4 cup water1 1/4 cups toasted slivered almonds3/4 cup semisweet chocolate chips

In a large heavy saucepan, gently boil syrup, sugar, butter and water untilhard crack, 300 degrees. Do not stir. This will take about 20 minutes.Remove from heat, add almonds and stir well. Spread on a ungreased cookiesheet and, before candy is allowed to cool, sprinkle with chocolate chips.As they melt, spread the chocolate chips evenly over the candy. Cool.Break into bite sized pieces.

Rum Balls2 cups almonds (toasted unblanched almonds) 1½ cup chopped fruitcake 2 tablespoons icing sugar2 tablespoons cocoa powder2 tablespoons corn syrup¼ cup dark rumToast almonds in a non-stick pan over medium-high heat until fragrant and light brown, tossing frequently to prevent them from burning. Let cool to room temperature. Chop the fruitcake in a food processor, pulsing to make fine crumbs, and transfer to a bowl. Finely chop the toasted almonds using the food processor. Add 1 cup of almonds to the fruitcake and transfer the rest to another bowl. Stir in sugar, cocoa powder, corn syrup and rum to form a sticky dough. Line a baking sheet with wax paper. Roll the dough using one tablespoon of dough per ball. Coat the balls with almond crumbs and place on prepared tray.Makes 1½ dozen rum balls

Broiled Mussels with Awesome Sauce24 mussels, steamed80ml or 1/3 cup Hellman’s mayonnaise45ml or 3 tablespoon Wildfire Awesome Sauce2 small garlic cloves, mashedPreheat broiler on high heat. Remove one half of mussel shell and discard. Whisk together mayonnaise, Wildfire sauce and garlic, then place enough in each shell to cover the mussel and pool a bit around it.Broil mussels on a foil-lined baking sheet, 4 to 5 inches from heat, until sauce is bubbling and begins to brown, 6 to 8 minutes.

Byzantine Sugarplums3 pounds combined pitted dates, pulled figs, currants ½ pound blanched walnuts or almonds ½ pound unsalted shelled pistachio nuts ½ pound crystallized ginger Grated rind of 1 orange Grated rind of 1 lemon 3 TBSPs lemon juice or brandy, or as needed Confectioners or granulated sugar Method: Chop combined fruits, nuts, ginger and rind through the coars-est blade of food grinder. Add just enough lemon juice or brandy to enable mixture to stick together. Shape into balls about 1 ½ inches in diameter. Roll in sugar before wrapping. Chocolate Espresso Trifle½ loaf (16 oz) each chocolate and plain pound cake ¼ cup coffee flavoured liqueur 1 cup heavy cream 2 boxes (3.4 oz each) instant vanilla pudding mix 3 cups milk 1 TBSP instant espresso powder ½ cup raspberry preserves 1 pint raspberries Cut each cake into 8 slices. Cut slices diagonally in half to form 32 triangles. Place on baking sheet and brush with liqueur. In small bowl, whip cream until soft and peaks form, with electric mixer on high. In separate bowl with mixer on low, beat pudding mix, milk and espresso powder 2 mins. Gently fold whipped cream into pudding. Arrange cake triangles inside edge of 3 qt. trifle bowl to form tree shapes. Alternately layer remaining cake, pudding, rasp-berry preserves and raspberries in bowl, ending with fruit. Cover with plastic wrap, and chill at least 2 hours or overnight. Serves 12. Beth McKeown Duncan

Pizza Buns1 lb hamburger 1 lb bacon cut in small pieces 1 large onion chopped Brown above together, then add 1 tin sliced mushrooms ½ lb salami, chopped 1 green pepper, chopped 1 tin tomato soup ½ tsp oregano 1 garlic clove, crushed and minced 1 tsp pepper mix well and add ¾ lb med cheddar or mozza, shredded Store iin freezer containers in freezer. Thaw and spread on buns and broil until bubbly to serve. This is great to have on hand over the holidays for quick lunches when interest in turkey leftovers begins to wane. Frozen Pineapple Delight 2 ¼ cups graham cracker crumbs ½ cup melted butter ½ cup firm butter 1¼ icing sugar 3 eggs 1 tsp vanilla 2 cups whipping cream 1 large tin crushed pineapple (well drained)

Mix crumbs and melted butter. Line 9 x 12 pan, reserving ¼ cup for topping. Cream firm butter and icing sugar. Add one egg at a time until smooth, add vanilla. Spread over crumbs. Whip cream until stiff. Fold in drained pineapple. Spread over egg and butter mixture. Sprinkle remaining crumbs on top. Optional: decorate with drained maraschino cherries. Freeze. Let thaw for at least 15 minutes before serving (or you’ll never get a knife into it).
