Introducing Brandon Stoltenkamp Brandon Stoltenkamp has made quite a name for himself in the culinary world over the past 20 months. With over 50,000 views to his blog, 400 Tripadvisor contributions, 627 twitter followers including the Foodiva herself and over 3,000 Facebook likes, Brandon shows no sign of slowing down.

What inspired you to start your blog?

My daughter, Mitsuki, asked me, and I remember the exact words: 'Dad, do you do anything other than teach?' These words may have been innocent, but they got me thinking as to what my legacy to her would be if I passed on. Seriously, that is what I thought. I started thinking about what I enjoyed and how I could develop it into something amazing. In June 2013, I did my first post for a blog I named after her: Mitsukiemma. Since then I have written hundreds of restaurant reviews.

What are the top three things you look for in a restaurant?

Service is definitely the first thing. I have found that with the limited suppliers in the city, you will find the same burrata, for example, at a number of restaurants, but what sets restaurants apart for me is the service. I may not remember the exact dishes I ate a few months ago at a restaurant, but I will remember the name of the waiter or waitress who delivered balanced service. Service includes engagement by the manager, chef and of course waiting staff. Secondly, decor matters to me because it creates the mood in a place where I will be sitting for 3 hours. There needs to be a correlation. However, it should not be gaudy or ostentatious. Finally, I care about value for money. Whether I am paying AED 50 or AED 300 I need to get what I am paying for.

Can you recall your best dining experience and what made it so good?

The issue with service for me in Abu Dhabi is the lack of balance in waiting staff. They either try to sell you everything on the menu, hovering over you as you drink water and whisk away your plate as soon as the knife and fork are in place, or they disappear after the food is served and reappear at the end of your meal.

In April 2014, I experienced the best service and remains so to this day. My waitress spoke effortlessly about the menu, was able to make recommendations, engaged me on topics like literature, travel, life and significantly, made her entrances and exits at the right time. I have been back to that restaurant a further four occasions and she has remained consistent.

With Abu Dhabi becoming quite the foodie hub what events are you most looking forward to seeing in the capital? And Why?

Gourmet Abu Dhabi is the big event. The opportunity to see some top chefs in action is something to look forward to. Then, of course, I am hoping that Taste of Abu Dhabi will be even bigger this year. However, what I am looking forward is not an event per se, more an evolution. I would like to see a food truck culture develop here, much the same way it is starting to grow in Dubai. I am in favour of anything that takes food to the people, no pun intended.

55&5th, The Grill at St. Regis on Saadiyat Island is quite an imposing restaurant. Since its opening, it has been garnered with accolades. Widely regarded as the top steakhouse in the city, this restaurant dazzles as much as its opulent chandeliers. The marvelously high ceiling, rather than creating a sense of distance and lack of intimacy, speaks of luxury. Tasteful luxury. On this occasion though, I find myself in one of the private dining rooms, where I wait for the man who has been at the helm of a restaurant that has blended its steakhouse heritage with fine dining – Chef Kreaton Cutajar.

Chef, from British and Maltese parents, comes across as very business-like and succinct when you first meet him. I recall the first time I encountered him in August. He stopped by my table on that occasion and wanted to hear my thoughts on what my starter would be. I requested a tasting platter of three favorites. Chef, however, insisted on sending out three starters, one after the other. His reasoning transcended, in retrospect, chef’s pride. He is an artist. It would be the equivalent of asking Michelangelo if he could paint only half the ceiling of the Sistine chapel. Imagine that! Also, on that occasion he expounded on the virtues of the sirloin cut of beef as opposed to the tenderloin. There was a single mindedness in his manner and indeed his eyes. He made an impression of note.

Tonight, notwithstanding the engagement that we had since the last evening, I see that focus in his eyes. He enters his own world when he talks about the menu.

To get things started, Chef serves Organic beetroot and goat cheese textures. What a way to get the evening moving. It is an intensely colorful dish, with enough elements in it to evoke memories. Beetroot is well represented on the plate, even in the form of beetroot macaroon and jelly. Beetroot is such a sensuous vegetable and seeing it used so abundantly tantalizes and excites me and reflects Chef’s connection to experiences. There is a group of people who associate beetroot with Sunday lunch. I am one of them. So doing, Chef taps into the collective consciousness of his guests, all through beetroot. Furthermore, the liquorice sorbet served with this also brings out the beetroot flavors even more.

As Chef brings the Obsiblue prawn, the second dish for the evening, I see an impressively plated dish. The prawn is very lightly cooked and this allows the uncharacteristic sweetness of this particular type of prawn to come through. However, it is the liquid pea ravioli that really arrests the taste buds. I put it in my mouth and I taste peas. Rich and intense. I have often labeled peas as fairly bland and tasteless on several occasions. Tonight, for the second time in the past year now, I am forced to revisit that point of view. Also, the homemade ricotta and garlic pureé, flavorsome as they are, do not overwhelm the prawn. As I finish it, chef contrasts his younger, maverick years as a chef when it was all about creative energy, when he says that maturity brings a different perspective, and as Chef de Cuisine, it is more than just creating dishes.

Chef Kreaton is very much a chef who eschews facades and pretensions when he engages guests. So refreshing. He relates some tales from his recent summer visit to Thailand. He regales me with a colorful account of his meeting with a taxi driver and subsequent visit to his home where he ended up cooking for the family. As I listen, I am beaming. It is an experience some of us have been lucky to have had, while others have only read about. Being the former, I can relate to his account.

While it is beetroot that takes me home, it is artichokes that transports him back to Malta. When he was a 5 year old helping out his grandmother in the kitchen, artichokes were already a feature in his life, so when he features it, there is always that connection to his formative years, a time that he says made him fall in love with the kitchen. The Duo of Organic Lamb. Served next and as the name suggests, gives us lamb cooked two ways. The loin, the most tender part of the lamb, contrasts with the crispy belly of the lamb, and that he has prepared to perfection. Discovering the smoked aubergine is so exciting because it was so unexpected. Artichokes, dried olives and autumn truffles all contribute to making this an exceptional dish.

How do you eclipse that? It involves a pigeon. The Wood pigeon sees Chef using one of his favorite ingredients, quinoa. The texture and crunch it brings to the dish is not lost on me at all. It brings back the memory of my last visit when he used quinoa as a counterfoil to foie gras. You would be forgiven for thinking you were having game, such is the intense color of the pigeon. Moreover, it has the same meatiness that one associates with game.

It is lightly seasoned with chamomile. Finally, bits of foie gras and caramelized onion bring another dimension to the dish, especially with the hint of sweetness from the onions balancing out the sour cabbage.

55&5th is primarily a steakhouse with a fine dining sensibility, so the Wagyu is a fitting way to round out the savory part of the dinner. Having had the pleasure of trying Chef’s favorite cut of beef on a previous occasion, the outstanding Wagyu beef striploin, Tajima Full Blood with a grade 9+ score, I am curious about the tenderloin. Not to be scoffed at, this Wagyu tenderloin, Mayura station full blood, also boasts a grade 9+ score. Lower in fat and not as beefy as the strip, but oh so tender, I bite into it. All the clichés about a beautifully cooked medium rare piece of beef force their way into my mind. Finally, Périgord truffle, burnt onion pureé and potato espuma are side highlights that round out a dish that is really a fitting tribute to Chef.

Like most chefs. Chef Kreaton prefers to stay home when it is his time off. He believes in healthy living and is fanatical about the gym. It is a space that provides him a chance to switch off to the world and distress as he listens to the Foo Fighters. If he is home, he also enjoys wiling away the little time he has, following TV series, with ‘Breaking Bad’ and ‘The Following’ some of his recent favorites.

To bring the evening to a close, Chef really surprises me with his dessert. With a reputation for making one of the best chocolate soufflés in Abu Dhabi, this time he chooses to do something less obvious. His Herbal Sensation is just a delight. The mint granité, sage geleé and herb sorbet infuse this dessert with a garden freshness, something you do not usually associate with a dessert in the UAE. This is further enhanced by his use of tarragon and fennel. The end result is something that is tasty, fresh, aromatic and yes, very imaginative.

Thus dinner ended with a bang and not a whimper, and left me with a lot to reflect on. Chef Kreaton’s view that if you are a young person hoping to become a chef, you need to accept that the schedule is tough, and you end up being married to your kitchen. But I recall the dishes he has presented on the night and I cannot help thinking about the satisfaction he must bask in when he sees his guests close their eyes as they taste that piece of fine beef. Julia Child’s words come to mind at this point: ‘Some people like to paint pictures, or do gardening, or build a boat in the basement. Other people get a tremendous pleasure out of the kitchen, because cooking is just as creative and imaginative an activity as drawing, or wood carving or music.’ Chef certainly shows that pleasure, but does so in his inimitable almost unassuming, down to earth manner. Marking the arrival of spring the Far East, Shangri-La Hotel, Qaryat Al Beri will celebrate new beginnings with the Chinese New Year and the Vietnamese Tet Festival starting 19 February 2015. The Chinese New Year and the Vietnamese Tet Festival are considered the biggest and the most popular annual festivities, both celebrated on the first day of the first month in the lunar calendar with family traditions. With its roots in Asia, Shangri-La Hotel, Qaryat Al Beri invites guests to enjoy these magnificent celebrations to welcome the year with renewed vigour and positive energy. The team at Shang Palace will kick off the Chinese New Year with a customary lion dance ceremony to be officiated by the General Manager, Thomas Guss. Fifth Street Café at the Courtyard by Marriott, World Trade Center Abu Dhabi, is now open. This new neighbourhood hangout promises a vibrant atmosphere with delicious homemade inspired recipes.

We visited the Fifth Street Café for an exclusive look at what they had to offer. The first thing we notice upon entering is the lime green upholstery and how it works well with the soft rustic decor. The welcoming environment is emphasized by the team’s relaxed shirt and jeans uniform. The venue is inviting and unpretentious.

The second thing we notice is the free Wifi, no passwords needed here, just simply connect and away you go. To start we opt for the Heirloom tomato salad with burrata finished with balsamic, olive oil and croutons.

Bursting with flavour and colour the dish is as pleasing on the eye as it is to eat. We then decide to try the Eggplant Caponata served on wholemeal bread. Having watched Executive Chef Saurabh Saxena create this dish we're excited to try it. Developed from its more established cousin the popular Italian bruschetta, the Eggplant Caponata does not disappoint. The lightly toasted pine nuts compliment the eggplant and the hint of balsamic works well to unite the flavours.

After this we move onto the signature slow-cooked meatballs in a tomato sauce. This is served with a delicious herb couscous but you can also opt for a baked potato, with slow roasted beef strips, sour cream and cheddar cheese. The portion is ideal, the meatballs are light and flavorful and the couscous offers a welcome alternative to the traditional spaghetti.

Finally we try the sea bass, the texture of the skin provides a warm crisp glow to the dish and adds great character. Plus it’s a good source of nutrients.

What we really like about this dish is the way it has been served with olives, unusual but we like it.If you’re feeling healthy, we also recommend trying the homemade organic Granola. This nutritious energizing dish is perfect for people on the go and can be paired with a refreshing iced tea which comes in five flavours, including minty iced green tea with a ginger twist.

Focused on offering wholesome homemade style meals, deliciously fresh pastries cakes and the freshest coffee, Fifth Street Café is definitely worth a visit.

Open daily from 6am until 1am, the café offers seasonal specials with generous servings of delicious signature dishes. For a light on-the-go breakfast they have an array of mouth-watering options on offer with everything from Eggs Benedict to delicious Buttery Pancakes served with maple syrup, whipped butter and fresh berries, not to mention the locally roasted, fresh ground coffee.

English has enjoyed a staggering number of accolades throughout his career. He opened his first restaurant, Olives, in Massachusetts, USA in 1989, offering signature interpretive Mediterranean cuisine that has won numerous awards, including Best Food and Top Table. Olives has grown to become one of the most prestigious culinary brands in the United States and the Chef has since diversified his portfolio to include a variety of different restaurant concepts and brands.

English is also a celebrated host and chef for high-profile entertainment events. His international travel and cooking series on PBS, Food Trip with Todd English, is currently filming its third season and has garnered him two James Beard Awards as well as an Emmy nomination. He has also starred in the national public television series, Cooking Under Fire and The Food Network’s Opening Soon, and is a frequent guest on shows including Top Chef, Iron Chef, The Today Show and Good Morning America, among others. In addition, Chef English has authored four critically acclaimed cookbooks, The Olives Table, The Figs Table, The Olives Dessert Table and Cooking in Everyday English.

The hosted dinner will see English and his team preparing signature dishes from his Olives menu, including lobster and corn bisque with truffle foam and crab and citrus risotto with spinach and sage brown butter. Commenting on the event, Chef Todd English said: “I have been eagerly looking forward to opening Olives at Venetian Village in Abu Dhabi, which is a burgeoning culinary destination, since we made the restaurant announcement last year.

The hosted dinner for Gourmet Abu Dhabi, which is part of the Abu Dhabi Food Festival, allows me to introduce our signature Mediterranean cuisine and interact with UAE diners before the restaurant even opens, which is something we do not have the opportunity to do very often.” Olives is set to open at Venetian Village prior to the summer of 2015, marking Chef English’s first culinary venture in the UAE. Welcome to Abu Dhabi! What do you have in store for guests at your hosted dinner?I will be cooking at Jazz Bar and Dining, Hilton Abu Dhabi for two nights. I will cook a selection of fine flavours and dishes. It will be a combination of Asian, French and Dutch cuisine. I will cook fish from the north Dutch Sea, langoustine, oysters, cod fillet and seabass will be some of the items guests will have an opportunity to taste. Apart from this Dutch lamb and Dutch veal will also be available. These great Dutch products will be cooked according to classic French cooking techniques, while using Asian spices to give a modern twist to the dish.

What is it about your style of cooking that you feel differentiates you from other chefs?I have Dutch roots that I am very proud of, so of course I work with products from my region but my cooking does also have an Asian influence. I use a variety of Asian and Arabic spices that I like to mix with my cooking style. I put a lot of focus on fresh and local vegetables. I feel it is more important than the use of fish and meat. It challenges my creativity and encourages me to develop new and exciting dishes.

Have any of the local Emirate chefs caught your interest? And are you looking forward to meeting them?I haven’t had the opportunity to meet any Arabic chefs but I’m very excited to meet with them and explore the Arabic kitchen. Mezzah such as hummus and tabouleh are tremendously popular at the moment in Holland and the use of Arabic spices is becoming increasingly popular. Arabic cooking is also very healthy so I’m going to try as much as I can.

How would you describe Dutch cuisine?The Dutch kitchen “Dutch cuisine” is a new way of cooking, fresh and local vegetables are tremendously important in our menus. We also try to use all parts of the animal which results in very creative dishes. Our kitchen is fair and honest. We have couple of 3 star Michelin chefs who have found international fame for that kind of cooking style. Believe me; Holland is worth visiting for food lovers.

What are you looking forward to seeing in Abu Dhabi, any tourist attractions?I am afraid I don’t have lot of time to sightsee as we want to give the best to all our guest in Jazz Bar and Dining but I definitely want to try to make sometime to see the grand mosque!! However my family and I will be coming back to Abu Dhabi later this year and we have a big list of all the attractions we wish to see.

Are you looking forward to trying any Arabic cuisine? If so what and why?It would be great to try some local fish and it would be interesting for me to see what the style of cooking is like in Abu Dhabi. Further I want to try and find some unique local spices that I can use back home.

Swedish chefs Niclas Yngvesson and Gustav Knutsson are the proud owners of Michelin star restaurant Bhoga in Gothenburg . Niclas and Gustav will be offering guests a taste of modern Swedish cuisine with focus on regional, seasonal and fair trade products.

Niclas originally from the west coast of Sweden comes with years of culinary experience having worked from one-star to three-star kitchens in the US, England, Australia, Norway and Singapore. Gustav’s also grew up in Sweden but gained his experience from some of Gothenburg’s best restaurants. Be sure to try his desserts!

Welcome to Abu Dhabi is this the first time you are travelling to the Middle East?Yes, this is the first time both Gustav and I have visited the Middle East. We are very excited to visit the UAE especially Abu Dhabi and I’m looking forward to experiencing Arabic traditions.

What can guests expect from you?Hopefully they will find our cooking easy going with a big focus on vegetables and seafood. We are creating refreshing culinary experiences concentrating on fresh ingredients and fair traded products.

What do you think of Middle Eastern cuisine?Arabic cuisine is an amazing mixture of flavours with a lot of spices. It is simply great and we’re looking forward to seeing and tasting some Arabic cuisine.

Do you cook traditional recipes?No, not really. We are trying to do our own thing and cook for our own palate. Every day is different and you have to adapt to it, luckily our guests like everything we’ve done so far and we hope the same applies for Abu Dhabi.

What is your signature dish? And will we be seeing it at Gourmet Abu Dhabi?I’m still hoping to discover a new vegetable that will be the day I create my signature dish. But for the moment, no I don’t have one. Who knows I may find it in Abu Dhabi!

The regions first Street Feast will run for a total of nine days and consist of an array of local and international food trucks serving up a variety of cuisine from around the world. Ten food trucks are set to arrive from the UK to the UAE. ATE Street Food and Indians Next Door are among those confirmed. Home grown favourites SALT, the UAE’s first burger truck, Desert Chill, Dubai based ice cream truck and Jones the Grocer have also been confirmed.

Street Feast will travel throughout the emirate. To catch the event head to Madinat Zayed in the Western Region from February 5-7, Al Ain February 12-14 or Abu Dhabi’s Corniche from February 19-21.

Chef Andrew Mitchell from Dubai’s Fatafeat cooking channel will also attempt to set a new world record for the world’s longest shawarma. The current record is set at 42.6 metres, but the Fatafeat chef plans to smash that by creating a shawarma 100-metres-long with the help of 300 volunteers.

A chefs demo stage presented by Food Network star Andy Bates will play host to a selection of international chefs including Jun Tanaka, Nichola Smith, local talent Suzanne Husseini and Fatafeat star Andrew Mitchell.

Chef Khulood the UAE’s female celebrity chef will open the event on 5 Feb with her own cooking masterclass at the East Plaza.

Emirati Kitchen, will run from February 5-7 at the East Plaza, Abu Dhabi Corniche. The event strives to build awareness and maintain the legacy of traditional food by offering a taste of Emirati culture. Visitors will also have an opportunity to learn how to make some of the local dishes.Numerous masterclass sessions will be held by some of the country’s most noted chefs, as they advise guests how to create a traditional Emirati dish under their expert guidance and supervision.

Also attending the event will be Emirati TV chef Ali Salem Edbowa. Other notable Emirati chefs will also be making appearances throughout the three-day event.

Visitors will be able to buy local produce including talbina, dates, spices, dried and salted fish, kitchen utensils, pottery and traditional sweets from a small souk that will be set up as part of the celebrations. Visitors will also be able to experience traditional Emirati customs, from Arabic coffee etiquette, making and storing of Emirati spices and the preparation and tasting of harees, regularly served at Emirati feast and weddings.

Seven Spices and Meylas, well respected local establishments will be selling food at Emirati Kitchen. Traditional entertainment has also been planned.Entry costs at the gate will be AED 10 for adults and free to children aged 12 and under accompanied by an adult. The event runs daily from 4pm until 10pm.

What’s your favourite nightspot in Abu Dhabi?I'd say the beach clubs- Saadiyat beach, Al Maya but then of course Aloft pool parties I play at.

Who is your favourite DJ?Erick Morillo, technically- music choice and for crowd interaction he's the best.

Have any upcoming DJ’s caught your atten-tion?I've recently heard two young DJs called Bondax, they play electronic music but with a lot of old influences which is great as they're so young! I think 2015 will be a big year for them.

What does 2015 have install for Natalie Brogan?More international gigs, new residencies and music production.

When and where do you DJ in Abu Dhabi?I am a resident for Aloft, Immaculate Touch and Al Maya pool parties. (Seasonal)

What do you like to wear when you DJ? Any signature style?Depending on where I play it varies, beach gigs I would usually wear a summer dress and flip flops for my nightclub gigs I make more of an effort!

What’s the best thing about being a DJ? Having the crowd react to the music I play. And having my hobby as my job! It’s the best feeling.

What’s the hardest thing about being a DJ? Nothing really, maybe missing some other events friends go to as I have a gig elsewhere but that's not a big issue.

If we went on a night out with you where would you take us?I'd start with watching the sunset at Saadiyat beach club, take you to Cho Gao in Crown Plaza for food and finish the night at Rays Bar, Etihad Towers.

Tell us a bit about yourself.Originally from Manchester, UK I've been playing in Abu Dhabi and Dubai for the last 5 years. Having over 20 residencies and playing at every major bar and club including regular spots at Creamfields and supporting David Guetta twice.

What made you want to become a DJ?Mainly my passion for music. I grew up listening to the music. My dad would always be playing music from Bowie, The Smiths to Massive Attack. Music was a big part of my life from a young age. One day I decided I wanted to explore Djing, so I enrolled on a 10 week DJing course at Manchester Midi School and started playing in nightclubs around Manchester.

What tips would you give anyone wanting to become a DJ?Research the genre of music you want to play, educate yourself, develop your knowledge on the equipment and watch other DJ’s. Also practise as much as possible. Practice definitely makes perfect in this industry.

In Dec 2010 you played at Creamfields Abu Dhabi. Did you get that “wow I made it” feeling or is that yet to come? And if it’s yet to come what’s your goal?If you asked me before what goals I had it would have to be playing at Sandance, Atlantis. I'm fortunate to say I ticked that off my list when I had the opportunity to open the stage for David Guetta. I wouldn't say I've had that “wow I made it” feeling just yet but seeing my face on a huge billboard in India was a pleasant shock!

Explain your journey so far?I can't really put it into words, maybe life changing! After only planning a 4 months contract I've just hit 5 years! I've had opportunities I never would have had in the UK so yeah, life changing!

What’s your tune of the month? A track called Invisions by Luca C, Brigante with amazing vocals from Roisin Murphy. I like to play pretty vocal tracks in my sets and this is perfect, a real feel good tune.

Emirati Cuisine The new-for-2015 Made In Dubai event (27 – 28 February at Zabeel Park) will pay particular homage to Emirati hospitality and culture, as it showcases 96 delicious yet often unknown Emirati dishes through tastings and master-classes with local chefs.

HomegrownThe bigger and better 2015 Beach Canteen, which this year takes residence at Kite Beach for the entirety of the Festival (6 – 28 Febru-ary), plays host to nine of Dubai’s very best homegrown restaurants and concepts. Offering visitors a unique beach dining experience, the Beach Canteen will also serve up pop-up restaurants from celebrity chefs, Jason Atherton (26 – 28 February), Sanjeev Kapoor (21 February) and Yousef Khamayes (6 – 7 February) and a variety of other entertainment. Similarly, the Urban Farm local foodie street market (7 February, The Archive, Safa Park and 28 February, Creekside, Bur Dubai) will host stalls showcasing homegrown concepts.

Multi-cultural Dining and Street FoodCelebrating multicultural dining and street food, DFF will welcome homegrown food trucks including local favorites Raw Coffee and Burger Fuel, to take part in the Food Truck Convoy. The trucks will arrive at key locations including Tecom, JLT and Emaar Square throughout the Festival, serving up the very best street food cuisine. DFF will also welcome Street Nights (20 – 21 February), which will pair street art with street food in the city’s up-and-coming arts precinct, Al Quoz. Similarly, a showcase of award-winning street-food photographer Penny De La Santos’ most stunning images of the multicultural dining and street food on offer in Dubai will be on show at Dubai Airport during February.

International Chefs and RestaurantsRegional and international celebrity chefs will appear at Fatafeat Kitchen (20 – 21 February), which will welcome nine in total including Egyptian cuisine expert Chef Salma Soliman to take part in live cooking demon-strations. Another of the Festival’s inaugural events, Dine On The Creek (Various dates, to be announced soon), will see celebrity chefs including Sanjeev Kapoor, Manal Al Alem and Yousef Khumayes serve up their internationally award-winning dishes in traditional Emirati surroundings.

I always try to write music which moves you and takes you somewhere.”

Are you surprised by the nightlife scene in Dubai? What were you expecting? “A little, yes. I was surprised at how the Dubai crowds go for it, even in January – the quietest month – it was going off!”Are you surprised by your strong, and increasing following in Dubai? “Again, it’s great to have that reaction. Every time I have come to Dubai, it’s been magical.” You’ll be spending time in Dubai in the coming months. What’s on your ‘bucket list’? “Well, I keep getting asked to throw myself out of a perfectly good airplane next door at Skydive Dubai (with a parachute attached obviously). But I like to keep my feet on the ground.
