The dust has settled once again in the old mining town of Terlingua, after see-ing a familiar face raise the coveted bronze pepper trophy. The competitions were stout, friendships were renewed, wedding vows were exchanged, and good times were had. Congratulations to all the winners of the many competitions held during the week, and to our CASI Chili Champion, Tom “Two-Time” Dozier, from Irving, Texas. Tom enters a very exclusive club, joining Cindy Reed-Wilkins and Margaret Nadeau as the only other repeat CASI Champions.

Once again, the best of CASI was on display during our time in Terlingua – our volunteers. It would be an impossible task to run even the smallest CASI event

without a multitude of volunteers, much less the Greatest Show on Dirt. Thank you to all the volunteers that devoted the time to help run a very smooth and efficient Championship event. No matter how big or small the job, visibly or behind the scenes, if help was needed the CASI Board did not have to look far for help accomplishing the task. One of the most memorable moments of the week, was meeting numer-ous individuals that were at TICC for the first time, as a cook or spectator, jumping at the opportunity to volunteer. TICC would not have run as smooth, and trouble-free without the help and talents of our many volunteers. THANK YOU!

With the 52nd behind us, your CASI Board of Directors will focus on planning the 53rd, which also hap-pens to be the 30th anniversary of Rancho CASI de los Chisos. The winter board meeting will be held the second weekend in January, in Irving, Texas.

I wish each of you the merriest and most joyous holiday season, and safe journeys while you visit friends and family.

Purgatory Creek Pod Disbands After Founder's DeathLarry Burruss was Great Pepper of

Purgatory Creek Pod and chairman of the South-Central Texas Regional Open Championship cookoff, also known as Chilympiad. After Larry passed away in May, both organiza-tions met and decided to disband.

Larry founded PCP and served as GP several times during its existence; he acted in many capacities for SC-TROC including Contestant Commit-tee Chair, Events Chair, Director, and General Chairman.

Of course, Larry was very involved in CASI, as well as the chili world in

general. He was a great man and is tremendously missed by all.

On August 26, PCP and SCTROC members made their final donations of over $7,500 combined to Combat Ma-rine Outdoors, which helps veterans establish their lives after active duty. They also assist veterans’ families when needed. All donations benefit veterans and not the administration.

Well, Terlingua 2018 is in the books! What a ride this past year has been! First off, I need to thank everyone! You guys are what make CASI great!

I know everything we do is in the name of Char-ity, but also it is the friends we make along the way who become family.

Our vision statement – “Making a positive dif-ference in someone’s life with every pot of chili

cooked” – is true. Not only for the charity but also for the cook! Scholarship Day on Friday was a huge success! Again, THANK YOU

ALL for participating! Wish we could all win, but we know it just can’t happen that-a-way! We raised $7,860 for the scholarship program! I would like to double that number next year. If you have any ideas on fund raising, please contact me!

Nancy Hewett and Judy Russell did a fantastic job selling raffle tick-ets! Thank you, Ladies!

How many of you have attended a cookoff where there was no apparent Head Judge? Me too.

A Head Judge is a wonderful thing to have at your cookoff. Many chili cookoffs

are conducted by other chili people, or a pod. At those cookoffs the Head Judge duties are often handled by the cookoff coordinator, or by committee. But there is someone in charge who knows what has to be done, and does it.

Other cookoffs that are organized by an entity other than a chili group seldom have a designated Head Judge. Those cookoffs quite often rely on a cook or referee to conduct the judging. That can, and usually does, work okay, but it would be so much more beneficial to the cookoff and the organization if they did have an individual designated as the cookoff Head Judge.

Unless the cookoff is an open championship,

the Head Judge does not have to be a CASI of-ficial. They do not even have to be a member of CASI. However, they do have to be very famil-iar with CASI Rules – as familiar as a referee needs to be. The position of Head Judge carries a lot of responsibility and requires some work, but it is a very important position to the success of the cookoff.

The primary responsibility of the Head Judge is to provide for fair and unbiased judging of the chilies at their cookoff, and to ensure that CASI Rules are followed. Other responsibilities of the Head Judge are to:

– Prepare sufficient judging cups in accor-dance with CASI guidelines.– Obtain all chili and show judges, and per-sonnel to handle turn-in, table monitoring and tallying, and recording of the winners.– Provide instructions for the judges and judg-ing personnel.– Determine the time and location for chili turn-in and judging table arrangement.– Arrange for all items necessary to conduct the judging: judging sheets, show team num-

bers, palate cleansers, pencils, spoons, and markers.– Identify the CASI referee for the cookoff and consult with him/her on any rules ques-tions.– Conduct the Head Cooks Meeting and be available to answer questions regarding CASI and local rules.– Determine the number of judging levels, cups per table, and number of cups advancing to the next round.

– Maintain the security of the judging cups at all times from the time they are turned-in until the reading of the winning numbers.– Provide for the tabulation of the judging sheets and tie-breaking on the final table.– Present the top ten chilis and top three showmanship winning numbers to the awards emcee for announcement.– Insure the entrants lists and results sheet is completely filled out and presented along with the sanctioning fees to the cookoff referee to transmit to the CASI Tallymaster.As you can see, there is a lot to do, but make

no mistake, when done correctly it makes a cookoff run quite smoothly.

After last year’s post-fiftieth rather dismal turnout at TICC, there was a lot of doom-and-gloom talk about the impending demise of CASI and TICC. I thought about that, and I thought about all the great CASI people we have lost in recent years.

But then I thought about all the great, dedi-cated people we still have, and the new ones we’re gaining. I saw a lot of them at TICC this year.

The CASI Board is government, and we all love to criticize government. However, your CASI Board did a great job of conducting TICC this year; new Directors, outgoing Directors, and current Directors all worked hard to make TICC a success.

Then, we had a very positive turnout of 272 cooks this year. Things are looking up for TICC. So, make no mistake, TICC and CASI are not going away. As long as there are people willing to work for the success of the event, and the organization, we will be here long into the future.

I had a very enjoyable time in Terlingua this year, and would just like to thank all the CASI people who made that possible. Thank you.

San Antonio Pod Celebrates Annual Cookoff

Gloom and rain were forecast for the San Antonio Pod Cookoff, held October 13 in St. Hedwig TX. How-ever, the sun came out and no rain fell. The day was made even brighter by the winning smile of Melissa Pate, from Wimberley, TX, when she won first place out of 53 cooks. The former Assistant Tallymaster is now auto-qualified for TICC 2019.

The remaining top ten were Terry Foresman, San Antonio TX, 2nd; Susie Morgenroth, San Antonio, 3rd; Becky Allen, George West TX, 4th; Christine Knight, Cibolo TX, 5th; Don Causey, Seguin TX, 6th; Jessie “Six Pack” Waguespack, Austin TX, 7th; Brent Allen, George West TX, 8th; Beverly Maricle, Seguin TX, 9th; and Laura McDaniel, San Antonio, 10th.

First Place Show was Christine Knight, Second Place was Beverly Maricle and Third Place was Melodie Smith.

Sue Ann Brooks won the Chili Head of the Year Trophy. This award was overdue for Sue Ann, as she has worked very hard for chili and the Pod.

Many thanks to the great San An-tonio Pod Crew that organized and ran this cookoff. Bob Steinle, Pep-per Popper, filled in for me and did

an excellent job, as did the Head Judge, table monitors and beverage runners. Ken Morgen-roth put on an excellent cooks’ party. I heard a rumor that deep-friend corn on the cob will be

the featured item on the menu for the next cookoff. Can’t wait to see what that is about.

Cookin' for CASI on TuesdayThe Cookin’ for CASI cookoff on the Tuesday of TICC week went

on without a hitch, thanks to our head judge Keith Karaff. He and every member of his team – monitors, runners, and tally – did a great job. Keith and Greg Lindsey also donated the awesome awards.

There were 140 cooks present, and Don Stipporo automatically quali-fied for TICC 2019 by winning first place chili. Carolyn Whetstone won first place show with her True American Heroes.

From Our New Champion...What an amazing day! So many talented chili

cooks, and all deserving of this championship. Back in 2010, Ron Barnes called me on the phone while I sat in the champion’s chair; however, this year he called me by my number! Thank goodness the elusive “black bubbles” appeared while I was cooking. GUAU! !Aqui vamos de nuevo!*

Start with the first, start with the finest, start with the family – where chili began. I met Clint Haggerty with Pendery’s Spice Company in 2015. From the start, we were working on the Ghostown Chili recipe. I sampled practically every blend of powders Pendery’s had. Once we found comple-mentary powders, the team was off and running. We had many, many big wins – Suzanne, Herman, TJ, Jennifer, even Ronda Haberer’s Viva Terlingua first place. So many huge wins. However, many times Clint and I talked about the team needing one big signature win. I have so many people to be thankful for, but this championship is for Clint and Pendery’s Spice Company. Thank you.

All competitive cooks know the desire and drive it takes to be a chili champion. In my opinion it all starts at home. I’d like to thank my wife Lori and our family for supporting me and enabling me to strive for these goals. I’ve been fortunate to achieve many milestones cooking chili, but the secret of my success is the beautiful, wonderful woman who married me. Thank you, Lori. I love you.

All my trips to Terlingua seem to start with Herman Everett. I can’t thank him and his High Sierra staff enough. He has also become quite the chili cook. Herman has a couple of big wins, and I wish him continued success.

Jennifer Hansen joined the Ghostown Chili team from the onset and moved to Terlingua. She has been missed in North Texas but also has found a home in Terlingua. I’m so proud for her. Jennifer has amassed quite the resume cooking in southwest Texas. She is without a doubt the driving force behind Ghostown Chili. Everything she does is above and beyond. Jennifer is an exceptional person and a valued member of this team.

Suzanne Sweet has been a Ghostown girl from the start. Her “Terlingua Star” chili has competed and won many big competitions over the past few years. To see her on stage this year at TICC was an amazing moment for one of my favorite cooks and our team.

TJ Cannon and I go back to the Renegade days. She has accomplished so much in her chili career, and she is the only cook I fear. We often joke that when we stop cooking chili, we will join the circus.

It seems like Jim Ezell and I are always around something big, whether it’s my 2010 win and sec-ond in 2011, Suzanne’s Texas Open win in 2016, squeezed in between my two US National Open wins, and here we go again. Jim lives and bleeds

CASI Red. Each honor he receives is well deserved. Jim is our logistics man on the Ghostown Chili team; keeping me and our team in check is often his biggest challenge. Everything he has done for me and my family is appreciated beyond words.

I had the humbling and solemn experience of attending the CASI Memorial Service. My Ghostown Chili team lost a member this past year. Lisa Six of Dallas, a very sweet and respectful person, passed away in August. I’d known her a few years, and her memory will continue to be a part of this team.

I’d also like to thank a few people who have inspired me over the years: Janice & Cliff Miller, Jenny & Jack Windsor, Brandy Reid & Jimmy Rather, Nancy & Dave Hewlett … and no list can be complete without the ‘Godfather’ himself, Jerry Hunt. Everyone is doing a great job creating cookoffs online! There are only a couple of things I need to call to your attention.

When you create a cookoff and you don’t request a box of Trails, cup tickets, or a rule book, you will not receive a packet of forms by regular mail. Your forms will be included in your approval email as a .pdf file. Please print out the forms, and fill in your cookoff date and the cookoff number shown on the approval email.

When submitting cookoff info for me to put into the system, please use the form online or in the Terlingua

Trails so all information needed will be covered. Often email addresses, zip codes and counties are left off. If you are doing the input yourself and have a problem, please contact me instead of trying to submit again, especially if you get an error message. Thank you for your support! Thank you, everyone, for working so hard and adjusting to the CMS so won-derfully. I appreciate your help. To meet the cookoff advertising requirement, upcoming cookoffs must be publicized in the Terlingua Trails in the month prior to the event OR be approved and appear on the official calendar 30 days prior to the date of the cookoff. Free Quarter Page Ad to CASI Pods, State, Regional and International Opens

As a CASI Pod you are required to put on a pod cookoff once a year. To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter-page, we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Upcoming Events" section in this periodical. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.
