From ancient times Native Hawaiians have been savoring the unique flavor of this beloved and prized small cone-shaped shellfish known as ‘Opihi’ (a.k.a Limpets). Wild Opihi are typically found clinging to jagged wave washed lava rock along the treacherous windward coastlines of the Hawaiian Islands.

It is commonly accepted that there are two species of Opihi that are indigenous to the Hawaiian Islands. One species known as "yellow foot" is the most popular, and is a traditional island delicacy served at Hawaiian festive luaus, ceremonies and parties. 1

Unfortunately, traditional use and its widespread popularity has placed extraordinary demands on the yellow foot Opihi populations, and caused it to become scarce and endangered. In fact the remaining limited supplies are now found only in the most remote and dangerous areas of the outer islands. People continue to die every year while trying to pick Opihi from dangerous rocky shorelines. In an effort to discourage such risky harvesting practices, and prevent the species from extinction, the Hawaiian Government is considering legislation banning commercial harvesting, and even putting limits on private Opihi collection as well.

While different varieties of species of wild Opihi (limpets) do exist throughout the world, it has always been widely believed that the superior taste and quality of the “yellow foot" Opihi could not be duplicated and was only found in the waters of Hawaii. So with yellow foot Opihi on the verge of extinction, this is where the story should end for the Opihi consumer, right? Not so...in September 2003, while on vacation, company founder Patrick Murphy discovered a new source of high quality Opihi which tastes identical to the Hawaiian Yellow Foot Opihi.

By the summer of 2004, the original

Emerald Island Opihi Company was formed and first opened its doors and began selling fresh frozen North Atlantic Opihi on the Hawaiian Island of Kauai. This same Opihi was also offered and sold on the Island of Oahu at Ward Avenue Farmers Market and Kapahulu Foodland #1. Prior to this Emerald Island Opihi Company conducted a series of "taste tests" on the Islands of Kauai and Oahu.

We handed out samples of Opihi to real people -- strangers, locals and tourists -- at luaus, local seafood departments, and at three separate Taste of Hawaii events. Emerald Island also "taste tested" the Opihi with a large group of visiting Asian businessmen. All outcomes were the same. A unanimous enthusiastic , this “Opihi Tastes Great” reaction. They not only found the Opihi flavor identical to the prized yellow foot Opihi of Hawaii, but to everyone's surprise they actually preferred the firmer texture of the North Atlantic Opihi over the softer texture of the native yellow foot species.

We believe we now offer the best tasting Opihi in the world. We offer both cleaned Opihi (out of the shell), as well as Opihi in the shell, gathered from the most pristine waters and reefs in the North Atlantic Ocean. Our Opihi is harvested in an eco-friendly and sustainable growth manner. All of our Opihi is hand processed and prepared with no additives or preservatives. Our goal at Emerald Island Opihi Company is to supply the Opihi loving world with the finest quality Opihi alternative – to the almost extinct local species, with a taste and flavor identical to the golden yellow foot Opihi of Hawaii.

In Hawaii Opihi is eaten in two forms, cooked or uncooked. In both forms Hawaiians have many recipes for preparation. Though often the Opihi is merely thawed and eaten with the natural sea salt that is in the Opihi. To accommodate both forms we package the Opihi in single pound heat sealed bags of cleaned (shelled) Opihi, for eating uncooked. And single pound bags of Opihi in the shell for cooking. It is most commonly barbequed or boiled, just until the meat breaks free of the shell.
