Welcome to your home!
Let me present you the new Teresa Carles menu. A renewed proposal inspired by the recipes of my latest book “Recipes and principles of vegetarian cuisine”, that you will find marked next to the name of each dish.
Our philosophy is based on a healthy vegetarian cuisine prepared with local and seasonal products for its sustainability and quality, and that is why we have decided to reaffirm ourselves with it. This type of kitchen provides a lot of benefits for health and for our social environment. We work with small producers without intermediaries; this assures us a fresh and a quality product, as well as helping the local economy.
Also, the versatility that the seasonal product provides, make our kitchen a dynamic and changing bet that helps us to renew ourselves every day.
These products bring us many benefits in the nutritional field and of course in their taste, aroma and color, because they respect their natural cycle offering us the best of themselves. It is a real, authentic and natural product, and that is what we work with when we want to achieve a healthy and tasty dish.

quinoa, red fruits & miso vinaigrette
Organic kale, cherry tomatoes, avocado, mixed sprouts, nori seaweed, mango, radishes and a special Teresa’s lime dressing (olive oil, lime, agave, garlic and onion powder, cayenne and chipotle).

Kombvcha provides many benefits and helps us to:

Kombvcha is a tea based beverage fermented by a cultive of organisms and has many health benefits.
Tea and sugar are the base of kombvcha as they contain a number of nutrients and compounds that feed the cultive (scoby), including nitrogen and theine. SCOBY is the acronym for “symbiotic culture of bacteria and yeasts”, known as “mother”. The scoby is shaped like a gelatinous disc that floats on the surface of the tea while it is fermenting. In each fermentation a new fungus is generated.
It is believed that the origin of this drink dates back to 220 BC in northeastern China, in a region called Manchuria. Later, in 414 AD, a doctor brought the tea fungus to Japan, where he would use it to cure the emperor’s digestive problems. Already then it was known asthe drink to live eternally.

Kombvcha is considered a sugar-free drink (residual sugar from 2g to 5g per 100ml). Although during its preparation this substance is required, it only serves to
feed the fungus while fermenting.

Our formulas have been developed by Teresa Carles together with the R+D+I work team from Teresa Carles Healthy Foods. Teresa’s know-how turns now into a serie of cold-pressed juices, cold-pressed purées, plant-based mylks, healthy smoothies & wellness elixir shots. We have been dedicated to the world of healthy foods since 1979. Teresa Carles, advised by expert nutritionists, presents an offer of juices which reflects the more than 35 years’ experience cooking veggie and natural products.

Our product is our treasure. We use fruits,vegetables and superfoods, most of which are ecological and raw. Our special freezers preserve the juices between 0ºC and 4ºC, to keep all the vitamins, enzymes and nutrients intact.
Cold-pressed juicing
Our manufacturing process cuts down the oxidation and the damage, and gives room to the purest juices that can exist. Moreover, we avoid any kind of agressive treatments such as pasteurization and pascalization.
Superfoods
They have been used for thousands of years by aboriginal tribes: spirulina, maca, açaí, chlorella, etc. Superfoods are rich in fitonutrients, antioxidants such as vitamins A and E, and carotenoids. They can help us obtain the nutrients that are essential for our health.

Cold-pressed Centrifugal
If you are looking for a juice which is ideal when it comes to flavour and nutrients, it’s important that you know the differences between the two main manufacturing processes.
2 steps: grinding the ingredients > hydraulically pressing
The amount of extracted nutrients is 3-5% times bigger
Low revolutions = living enzymes
Pulp-free, liquid texture, intense taste juice
Minimum oxidation (the temperature doesn’t rise during the process)
Between 3 and 4 days as long as the cold chain system does not get interrupted
Homogeneous
High: all the liquid ends up in the final juice
1 step: high speed grinding that separatesabruptly the liquid from the pulp
Water is what is mostly extracted
High revolutions = Friction + Heat =cellular rupture = dead enzymes
Watery juice with pulp, less intense taste

Our juice making process reduces oxidation and deterioration by keeping intact all vitamins, nutrients and enzymes for 3-4 days. We eliminate any type of aggressive treatment during the

We make our Mylks in an artisanal way, treating the ingredients with a lot of cure, without sweeteners or additives. We emphasize the high content of vitamin B and the low caloric content, characteristics that make it
