THE JOURNEY OF TCC COFFEE: FROM SEED TO CUP

High altitude, ideal climate and mineral rich soil are all crucial factors that contribute to the growing of premium coffee cherries.

Our tcc Premium and Espresso blends combine various coffee beans from the Arabica family. The

distinctive taste of the blends is both complex and well balanced, setting it apart from the competition.

We hand pick the ripe Arabica cherries used in our blends. Our farmers also use the stripping method, also known as “milking”, when the percentage of unripe cherries is under 5%. This

method is practised by our Arabica growers in Brazil and by most Robusta producers.

Drying is one of the most important stages of coffee production as it can greatly affect the quality of the green cherries needed to produce a superior roast.

Typically, our growers use the dry method to process Robusta beans and the wet method for the Arabica beans. We also ensure that every batch of green coffee is stored properly to prevent loss of flavour. Green

beans are relatively stable and can last for years if stored properly.

Each bean has its own specific roasting parameters. Roasting is akin to an art form. It takes years of training to become an expert roaster because the difference between perfectly

roasted coffee and a ruined batch can be in a matter of seconds.

After roasting, the coffee has only a week of full flavour and at best two weeks of half flavour. After grinding, the coffee life is further reduced to a mere few days.

At tcc, the beans are roasted to perfection by tcc’s master roasters in Singapore to ensure maximum freshness and full flavour. In order to realize the full flavor potential of a coffee, tcc beans are

only grounded moments before brewing.

We also insist on selecting the best brewing equipment, coffee to water ratio, brewing temperature and grind size for every brew method.

The result? A perfect cup the tcc way.
