The SYSTEM NERB VARIOBOIL by ESAU & HUEBER provides an innovative option for wort boiling. The ac-tual boiling process is divided into a short phase of atmospheric boiling in which all major thermal degradation reactions (e.g. splitting of DMS-P) take place, followed by a subsequent vacuum evaporation phase. This split reduces the total evaporation and leads to a strong reduction of the primary energy consumption. The high heat gain in the kettle vapour condenser provides an additional opportunity for energy saving.

The variable vacuum strength in the flash evaporator can be used to influence the evaporation efficiency for individual wort components. The system therefore facilitates adjustment of the concentration of individual aromatic wort components to specific preferences of the brewery. Beers produced with VARIOBOIL are exposed to very little thermal stress, which ensures high ageing stability as well as exclusive taste characteristics.

Any existing wort kettle can be retrofitted with the VARIOBOIL system. The energy savings soon make up for the investment costs.
