Pacherenc du Vic-Bilh (not as hard to pronounce as it might look–“PASH-err-ONK” will do) is the companion region to the red-producing Madiran. Three grapes, Petit Manseng, Gros Manseng and Courbu can be found in the region. These medium-sweet wines, lush in texture, go well with spicy foods. The dry whites are great with chicken and light summer pasta salads.

Try a Pacherenc du Vic-Bilh producer today: Domaine Berthoumieu

Gaillac is located inland near the large regional city of Toulouse. This region produces a complete variety of red, sparkling and both dry and sweet whites made from combinations of Loin de L’oeil, Mauzac, Ondenc, Muscadelle and Sauvignon Blanc. The classic dry whites, including Gaillac Perle, often have a little effervescence, which makes them great wines to sip with appetizers, including ham. The more-structured and fragrant Gaillac Premieres Côtes wines are great with cheeses, grilled fish and various poultry. There are two types of Gaillac sweet wines: late harvest wine and classic sweet wine. The late harvest wines have flavors of quince, dried figs, honey, and candied fruit. The classic sweet wines have flavors of ripe apples, pears, and exotic fruits. Bubbly Gaillac wines are made only from Mauzac white grapes, which are also great summer refreshers.

Try a Gaillac producer today: Domaine Philemon, Domaine des Terrisses,

Domaine Plageoles Mauzac Nature (sparkling), Domaine des Causse Marines

REGARDLESS of whether you are enjoying the summer at home or on vacation at the beach or in the mountains, the white wines of Southwest France offer you great drinking and great exploration.
