Jerk Chicken Let the sunshine in!

Ingredients

6 Chicken Breasts

225g/8oz Onions, quartered

1 scotch bonnet, halved and seeded

50g/2oz root ginger, peeled and

roughly chopped

1/2 tsp. ground allspice

Small bunch fresh thyme

1sp black pepper

120ml/4 l oz. white wine vinegar

120ml/4fl oz. dark soy sauce

Method 1. Put all ingredients (except chicken) into a food processor and whizz

until smooth.

2. Place the chicken in a large dish and pour over the sauce, cover and

leave to marinate in the fridge overnight.

3. In a hot pan cook the chicken for 25-30 minutes, basting now and

then with the leftover sauce. The sauce will turn black in places,

don't worry this adds to the flavour!

4. Serve the chicken with a mixture of rice and peas and a wedge of

lime.

Crime Lake Crime Lake or ‘The Crime’ as it is know locally was a popular

venue at weekends, especially on a Sunday afternoon where

rowing boats were available to hire. There was a wooden boat-

house where refreshments could be bought and even a penny-

peepshow machine, showing ‘What the Butler Saw’. The crime

is man made and was excavated in 1794. The area was know as

Crime at least 300 years prior to the lake being formed. The

valley was 54ft deep and housed 2 cottages prior to flooding.

There is a famous ghost story told of ‘Peggy’s Lantern’ . It is

said that a hand and arm holding a lantern can be seen in the

lake at night…

Last month we printed a photograph of Booths shop, located on Ashton Rd East. The

shop was part of the Booth family for 3 generations, and was started in the late 1800’s

by Edwin Booth (Matt’s Great Granddad!). It was then handed down to Norman Booth

(the young boy in the picture with the wheelbarrow) who ran the shop successfully with

Peggy at his side for over 40 years and later handed down to his son John.
