MORE ON SOURDOUGH By now, hopefully, some of you have your sourdough starter happily bubbling away and are anxious to try some new recipes using it. Sourdough batter is the basis for all sourdough recipes and it should be “proofed” over night before you use it. If you have your starter resting in the fridge, take it out and warm it up to room temperature. Add enough flour and warm water to equal how much batter you will need. To make 2 cups batter you will need 1½ cups flour and 1 heaping cup of warm water (let me know how that works for ya). Actually, just add enough warm water to make your sourdough starter the thickness of pancake batter. Stir to blend, cover with a kitchen towel and set in a warm place to “proof” overnight. Warm is important as sourdough works best at 85*F. When ready to prepare recipe remove sourdough batter needed and return remaining starter to fridge.

Sourdough Griddle Cakes2 cups proofed sourdough batter½ cup milk3 eggs1½ cups flour1 Tbsp. sugar¼ tsp. salt½ tsp. baking soda1 Tbsp. baking powder¼ cup melted butter1 tsp. vanilla

Beat the eggs and milk until smooth, and then blend the milk mixture into the sourdough batter. Mix the 5 dry ingredients together and mix into the batter; a whip works best for this, if needed add a little milk to make a pour-able batter. Let rest about 5 minutes, and then gently mix in the melted butter and vanilla. Cook on a griddle at medium-high heat. You can make your cakes what ever size turns your crank, cook until golden brown on the bottom (yes, it’s ok to peek) and flip to cook top. Sourdough griddle cakes should be eaten hot off the griddle. If done right they will be so tender they will collapse when stacked more than two high. Have your cowboys stand in line with plate in hand. Tradition has it that the first cake off the griddle should be torn into pieces and eaten out of hand by the cook and his/her helpers.

Sourdough Quick Bread2 cups proofed sourdough batter½ cup milk 2 ¾ cups flour1 Tbsp. baking powder1 Tbsp. sugar½ tsp salt½ tsp baking soda¼ cup butter

Stir milk into batter. Mix the 5 dry ingredients. With a pastry blender cut butter into dry ingredients until coarse crumb; mix dry mixture into batter, form a ball of dough and knead gently on a floured surface just until dough isn’t sticky to work with. Pat the dough into a rectangle about 6 inches wide and ½ inch thick. If you work the dough too much it will get tough and dense. With the longest knife blade you have cut a very thin slice off the outside edge of the dough then cut the long rectangle into equal size small squares approximately 3” square. Space an inch apart on a lightly greased baking sheet in a 400*F oven for 15 minutes or until lightly browned. Cutting the biscuits square eliminates reworking the scraps to use up the dough. Cutting off the outside edge lets the biscuits rise evenly. Flour your knife blade for each cut. Serve with lots of butter and jelly. If you were out camping, you could cook these in a skillet over the campfire.
