Hello,Thank you so much for being part of field&flower this year. We started our business three and a half years ago and it really feels like time has flown by. This year, and indeed the last few years have definitely been an adventure; from boxing our first Hereford heifer back in 2010 in Flower’s mum’s kitchen to delivering to the Queen this year! Well, we had the first order from Buckingham Palace in March, we’re not sure who the actual recipient was! And there have been plenty more great memories from this year too. We won the Observer Food Monthly runners up award for The Best Independent Retailer and we were also featured in the Independent 10 Best Meat Boxes and turkeys for the third year running- it’s always nice to be recognised in the press for our hard work. So with the build up to Christmas we’ve been spending more time on the farm these past few weeks, especially with Stuart our poultry farmer. You can see from our photo his geese were in great shape when we went to visit them in October as were his free-range Bronze turkeys. Stuart is a real inspiration to both of us, he farms with such passion, there is nothing he won’t do for his turkeys, geese and chickens and it really shows in the quality of his meat. We’re really proud to be working alongside him and hope that you might enjoy one of his fabulous birds this Christmas. We’ve featured most of our Christmas selection in this booklet, but you can find the whole range online in our ‘Christmas Shop’. So to end we’d like to say thank you once again for all your support and kind words this year. We feel very lucky to have fantastic customers who have stuck with us, many from the beginning, and who continue to help us grow and improve. Our free-range Bronze turkeys and geese, fully outdoor bred and reared, are from our poultry farmer Stuart Perkins on the picturesque Castlemead in Radstock,Somerset. Stuart has been raising poultry since he was given twelve chickens as an unusual gift on his sixth birthday, and including a stint at agricultural college (where he met James and James), he has been building his brood ever since.
We’re delighted that Stuart is raising our Christmas turkeys again this year, as any of you who have tried our field&flower chicken will know the incredible quality of his Castlemead birds.
Stuart understands that the best welfare practice gives you the best quality meat, so his focus is to ensure his poultry enjoy a full and active life. His birds are cared for in small flocks and encouraged to roam through a range of purpose-built sheltered areas to protect them from the winter cold.
As free-range birds, they enjoy a constant supply of fresh meadow grass, which Stuart supplements with his own homegrown cereals, and he also scatters wheat and grit to encourage foraging. Stuart uses no artificial fertilisers and only transports his birds 300 metres across the farm for processing. All of his turkeys and geese are dry plucked and hung for 10-14 days to maximise tenderness and flavour.

Turkey Breast

method
Preheat your oven to 180°C (350F). Mix the butter, thyme, parsley and orange peel in a bowl and season to taste.
Beginning at the neck end of the bird and using your fingers, carefully make a pocket between the flesh and skin of the turkey breasts.
Gently slide all but 1 tablespoon of the butter mixture into the pocket under the skin and spread the butter to cover the turkey breasts.
Slide the orange slices underneath the skin and over the breasts. Stuff the main turkey cavity with the garlic halves, thyme sprigs and a quarter of the onions, carrots and celery.
Truss the turkey then spread the reserved tablespoon of butter mixture over the whole bird before sprinkling with salt and pepper.
Place the remaining onions, carrots and celery in the bottom of a large roasting pan. Then place the turkey on top of the vegetables and pour over 1 cup of stock. Cover the breasts with foil and roast for 2 hours.
Remove the foil and add the remaining 1 cup of stock. Continue roasting for 3 ½ to 4 hours, or until an instant read thermometer inserted into the thigh registers 80°C.

Free-range GooseOur free-range geese are from Stuart at Castlemead in Somerset.
The traditional British Christmas bird, goose meat is darker and more intensely flavoured than turkey, thanks to its grass diet. This rich taste doesn’t need much seasoning, and the goose’s own fat keeps even the breast meat moist (remember to save this fat after cooking and store in the fridge to make perfect roast potatoes).

Sometimes referred to as a ‘Royal Roast’, our classic 3-bird roast combines a boned free-range turkey from Castlemead, which is stuffed with a free-range duck from Madgett’s Farm, followed by a wild Somerset pheasant. This is layered with homemade pork and apricot stuffing which adds a wonderful flavour and keeps the meat moist. Finally it is topped with a lattice of streaky Somerset bacon.

Luxury 3-Bird Roast Goose, chicken, guinea fowl (boneless)
Free-range goose stuffed with a free-range chicken, both from Castlemead, then stuffed with a wild boneless guinea fowl, this 3-bird roast is layered with homemade pork and chestnut stuffing and topped with a lattice of streaky Somerset bacon. This roast gives a rich, gamey flavour, perfect for those who prefer darker meat.

Home Farm
James Flower is the fifth generation of his family to farm beef on Home Farm, a 120 acre National Nature Reserve nestled in the Gordano Valley, North Somerset. Home Farm is where it all began for field&flower, with just one cow that we bought from Flower’s dad and sold to friends and family.
Home Farm runs on a traditional, old fashioned system, where South Devon and Hereford cattle graze across 120 acres of nature reserve, in a suckler system which sees young calves run alongside their mothers in a small herd until they’re fully grown. The traditional breed animals are slow reared, and allowed to mature at a natural pace on native grasses, up to between 26 and 30 months. We don’t hurry them along or feed nasty high protein foods or growth promoters.

We dry cure all of our gammon and bacon. This takes time, but we definitely think it’s worth it as it creates a much more concentrated flavour, making the most of our free-range pork.
Gammon
Cut from the hind leg, this boneless free- range ham joint is expertly cured using traditional methods.

Preheat the oven to 180ºC. Place the gammon in a large roasting tin, pour over about 600ml water and place the chunks of onion around the meat.
Cover with greaseproof paper and then cover with foil. Make sure you leave some space around the gammon, but secure the edges of the paper and foil to the roasting tin.
Place in the oven, reduce temperature to 160ºC and cook for about 4-4 ½ hours. Your gammon cooking time will vary according to weight – you will need to cook for approximately 25 minutes per 450g.
Mix together the glaze ingredients and allow to simmer on a low heat for 10 minutes, before removing and covering.
Remove the gammon from the oven and take off the foil (be careful of the steam). Drain the juice off into another bowl to be used as pork stock for soups and gravy and keep the joint in the roasting tray.Turn the oven up to 220ºC.
Allow the gammon to cool for about 15-20 minutes,then slowly peel off the skin. Try to keep as much of the fat on the ham as possible.
Using a sharp knife, score the fat (almost down to the meat but not quite), into diamond shapes and pop a clove in each diamond.
Pour over the glaze you mixed earlier and placeback in the oven for 45 minutes to an hour, or until the fat has turned golden brown and crispy.

We deliver nationwide to either your work or home, and if you aren’t in when we arrive, it’s no problem, we’ll make sure we leave your box in your designated safe place.
All of our meat arrives fresh in temperature controlled cool boxes which keep your food chilled for 36 hours, giving you plenty of time before you’re ready to unpack it.

Our eco-routes
Our eco-routes are available for Bristol, Bath, Somerset, Gloucestershire, London, Greater London and Surrey. If your postcode falls in one of these areas one of our own drivers will be able to deliver your box which means your food will have a shortened time on the road; minimising your food miles whilst also reducing our carbon footprint. We’ll be able to collect and reuse any old field&flower boxes that you have from previous orders too.
