Vanjaram is a one of the favourite among seafood lovers. Its taste is delicious.

Ingredients:

Vanjaram steaks/slices – 2 Chilli powder – 1-2 tablespoon (as spicy required) Coriander powder – 1 teaspoon Ginger, garlic paste – 1 tablespoon Turmeric powder – 1 teaspoon

Lemon juice – 1/2 tablespoon Salt to taste Oil

Preparation :

Clean the fish nicely and marinate with turmeric powder and salt for few minutes and keep it aside. Now mix chilly powder, coriander powder, ginger – garlic paste, lemon juice and prepare a thick paste with little water. Now marinate the fish with is paste for 1 to 2 hrs.

Pre-heat oil in a wide flat pan and shallow fry the fish on both sides, for about 5-10 minutes.Vanjaram fry is ready to serve.

IngredientsWhite Pomfret small (around the size of ur palm) – 2Red chilli Powder – 2 heaped tspTurmeric Powder – 2 pinchGinger Garlic paste – 1/2 tspPepper Powder – 1 tspGaram masala powder – 1 pinchAjinomoto – 1 pinchJuice of 1 small lemonOilSalt to taste

MethodClean the fish well and keep aside. Mix the rest of ingredients except oil to a thick paste. Check for salt and rub this mixture on the fish and let it marinate for an hour

Take a fry pan and fry the slices till golden brown.

Serve hot with Rasam rice, Sambar Rice etc.

We had ours with hung curd dip courtesy my friend Anitta

I always love fish fries with masala stuck on it. The plain chilli powder, salt, lemon juice combo fish fries you get in the restaurants tastes like “karuvaadu”…….. atleast to me.

This is the way my mom fries fish and this recipe has been in our house for generations. The masala can be modified here and there to suit each ones needs

IngredientsVanjaram (king fish) – 10 slicesOnion – 2 medium sized choppedGreen chillies – 1Red chilli Powder – 2 heaped tspTurmeric Powder – 1/4 tspGinger Garlic paste – 1 1/2 tbspCoriander – 5 sprigsCurry Leaves – 3 sprigsJuice of 1 small lemonOilSalt to taste

MethodClean the fish well and kepp aside. Grind all ingredients except oil. Check for salt and rub this mixture on the fish slices and let it marinate for an hour

Take a fry pan and fry the slices till golden brown.

Serve hot with rasam rice.
