Do you ever eat while driving or scarf something down with-out really tasting it? Sadly, some would call this the American way. But proponents of Slow Food, the movement born in the 1980s as the ultimate touché to fast food, are calling out for people to slow down, starting at the table. Slow Food gained a local following a few years back, but for many, the name

was confusing and the concept a bit intimidating. Eventually, the local chapter fizzled.

Yet the notion of paying more attention to our food, where it comes from and how it tastes is still going strong. One indicator of this shift is apparent at the farmers market. Karen Schott, from the Ventura County Farmers Markets, says that people have become more inquisitive about where their food comes from, and overall market

sales were up 10 percent in 2009. Local chefs Rachel Main of

Main Course California and Tim Kilcoyne of the Sidecar Restaurant are fine examples of this shift in thinking in the res-taurant world. Both use fresh, local, seasonal produce as the backbone of their menus. They aim to keep their foods simple and allow the inherent flavors to shine. Kilcoyne explains, “When food doesn’t spend a lot of time

on a truck, it makes a huge differ-ence flavor wise on the plate.” He uses 100 percent of any product he buys, even turning carrot tops into soup or pesto.

They can both be found shop-ping at the farmers market each week and have close relationships with the farmers they source from. Main explains, “I believe in getting as close as possible — both physi-cally and emotionally — to where our food comes from.”

Lite 2010. They are looking for 5,000 people to commit to shop-ping at the farmers market monthly and eating three com-pletely local meals during the year. They believe that eating local is better for local farmers, the environment, and better for our health.

No matter what you call it, all these people are living examples of one of Slow Food’s goals: that we should be informed about how our food is produced and support those producing it. The irony is that even though we may not call it Slow Food any-more, when eating Rachel Main’s fresh tomato soup or an apple from the farmers market, we can’t help but slow down. F

Whenever I’m feeling tight, sore, achy or just in need of get-ting my body back

you might call “needle-phobic.” While whining about not want-ing to be a human pin cushion, I was assured by my licensed acupuncture therapist that the needles are small and yield a therapeutic and healing benefit.

Back then, I was a staunch believer in conventional Western medicine. But since I had tried everything else, and despite my freakish fear of sharp things, I turned to the needles.

As I was prone and face down, listening to the therapist unwrap the needles, I made a point to rid myself of the visual-ization that the needles were the size of No. 2 pencils. The thera-pist asked me to inhale deeply, then exhale deeply. Upon the exhale, I felt a whisper of a sting near my scapula. This contin-ued about 20 more times, with each exhale, a gentle tap, tap,

accompanied by a little pinch. The needles were everywhere — my back, my legs, my feet, my hands, even my head.

I lay quietly for several minutes and soon began to feel the therapeutic effects of the needles. The pressure actually eased the pain, and the rest of my body felt as if the tension was subsiding.

Technology + experience = expertise

F reedom from unwanted hair is a challenge many people struggle with.

Fortunately, innovative technol-ogy has provided fast, sophisti-cated solutions to hair removal, but technology alone will not solve the problem. A well-educat-ed and experienced technician is just as important as the equip-ment, to ensure effectiveness and safety for the patient.

new qualifications for technique and application, have significant-ly improved the procedure, mak-ing it the leader in permanent hair removal.

Both procedures use a mild electrical current, but the key dif-ference is the type of electricity used, and the conductor to emit the current. Thermolysis uses alternating current (AC) and a flexible, insulated probe that cauterizes only the root portion of the hair. When a small pulse of current touches the moisture in the base of the hair follicle, it makes heat (thermo) at mil-liseconds (1,000th of a second). Electrolysis uses direct current (DC) that causes a chemical decomposition (acid) that dis-solves everything in the area. This process takes three to 10 seconds to treat each hair, and

can be very painful and damag-ing to the skin. Thermolysis is much faster, therefore creating less sensation to the patient, so there is minimal discomfort and no skin damage.

Once a hair is treated with thermolysis using the proper tech-nique, the follicle is unable to pro-duce another hair. That hair is gone forever; it will not grow back. It has been permanently removed.

Thermolysis versus laserAnother advantage of thermoly-sis is that it can be used on everyone — regardless of skin and hair color — and is safe to use on all areas of the face and body. Laser hair removal, which is not a permanent solution, requires specific skin and hair color, and there are restrictions regarding sunlight and some skin care products. Reports of patients being burned, scarred and developing pigment lesions along with discoloration of the skin are more common than the public realizes. The technology is not precise enough to tar-get the germinating cells of the follicle and must pass through the skin to get to the hair. The high risk of side effects on the skin make the desired results difficult, if not impossible, to achieve for some patients, and long-term effects of the proce-

The FDA does not approve laser hair removal for perma-nence; the hair does grow back. So after spending time and money for laser treatments, patients are left with, in some cases, the same amount of hair they started out with. Also, the extreme pain of the treatments can be intolerable for some patients, even with the use of topical anesthetics.

With the proliferation of laser hair removal in recent years, it is imperative for the consumer to do research, ensuring the techni-cian and equipment are following specific safety requirements. A credentialed safety officer should maintain safe practices and management of laser hazards in accordance with the ANSI-Z-136.3 Standard, along with OSHA,

CDRH, and insurance guidelines. Note: Lasers present cor-

neal and retinal eye hazards. Protective eyewear should be used at all times when lasers are in operation, and must be labeled according to the optical density of the material. Laser should never be used near the eye area. Safety glasses do not protect against direct laser impacts.
