LOCAL CUISINE SHOPPING
High culture abounds in Florence and Pisa. The two cities are the highlights of Tuscany, where ideas and artisanship have flourished for hundreds of years.

flavors, culinary elements

The favorite pasta here is pappardelle, wide ribbons
with fluted edges that beg for heavy sauces. Beef,
pork or rabbit take a Tuscan flavor with sage and
parmesan. Leave room for olive oil, truffles, salami
and cannellini, a white kidney bean.
Wine flows here, too — particularly, the fermented
juice of the dark Sangiovese grape, grown to the
south of Florence. Try the Chianti Classico, a ruby
red with aromas of violets, cherries and earthy spice,
made locally since 1716.
