Try this mouth-wateringRoast Lamb recipe!

The famous Roast Lamb is always a favourite atEaster, so why not try this recipe from the GoodFood magazine, it’s always a winner in ourhouse! Bon appétit everyone!!!Thouse! Bon appétit everyone!!!

Ingredients• 2kg leg of lamb

• 4 garlic cloves, sliced

• few rosemary sprigs

• few thyme sprigs

• 2kg large potatoes, suchas King Edwards

• 2 onions, thinly sliced

• 600ml chicken stock

• 50g butter

Try this mouth-watering

Good

Method1. Heat oven to 190C/170C fan/gas 5. Cut smallpockets into the skin and flesh of the lamb bypiercing it with the point of a sharp knife. Stuffeach pocket with a slice of garlic and a fewleaves of rosemary, or scatter with thyme. Put ina roasting tin, season well with salt and freshlyground black pepper, then cover with foil.2. Peel and thinly slice the potatoes, rinse under thecold tap and pile into a large ovenproof dish orroasting tin. Toss with the onions, remaining slicesof garlic and a good scattering of herbs.3. Heat the stock and butter together, then pour overthe potatoes. Cover the dish with foil and bakein the oven with the lamb for 1 hour. Uncover,put the lamb on top of the potatoes and roastuncovered for 45 mins more. Allow the lamb torest before carving, for about 15 mins. Leave thepotatoes in the oven (covered, if starting to browntoo much) until ready to serve.

Easter egg nest cupcakes

Ilove to make these delicious treats atEaster time. I’ve used a vanilla cupcakerecipe here but you can switch tochocolate for an even greater ‘hit’.

• Preheat the oven to 165°C and line amuffin tin with large cupcake liners.

• Beat the butter and sugar until well combined. Add theeggs one at a time, beating well after each addition.

• In a separate bowl, sift flour and baking powder. Stirthe milk and vanilla together. Add the flour and the milkalternately to the butter mixture, starting and endingwith the flour and beating well after each addition.Spoon the batter into the cupcake cups so they are twothirds full and bake for about 18-20 minutes, until theyare golden and springy to the touch.

• Cool the cupcakes in the tins for 10 mins then turn on toa rack to cool fully.

For the chocolate frosting:• Melt the chocolate in a microwave bowl at 30 second

intervals, mixing inbetween until no pieces remain.Leave to cool slightly.

Vanilla cupcake (makes 12)

4oz unsalted butter, room

temperature

200g caster sugar

2 large eggs,room temperature

165g self-raisingflour

½ tsp baking powder

125ml semi-skimmed milk

1tsp vanilla extractChocolate frosting6oz butter, at roomtemperature1tbsp milk

1tsp vanilla extract125g chocolate chips150g icing sugarTo decorate:3 Flake bars36 Mini Eggs

• Beat the butter in a stand mixer(or with hand mixer) until soft.

• Add the sugar, milk and vanillaand stir gently to incorporate (Iuse the mixer paddle for this).

• Pour the chocolate into thebuttercream and mix on slowfor a few seconds.

• Mix on medium high speed fora good 6-7 mins until frostingis light and fluffy.

“Last year we decided it was timefor our boys to learn how to swim.We were looking for children’sswimming courses for some timebut they all seemed very expensive and not suitablefor one reason or another, such as the day or timethey were on. I came across the Adult Learning serviceand the Swimming Parent and Baby course, which wethought could be a great start to introduce swimmingto our 1 and almost 4 year old, especially as theclasses took place on Sunday mornings, which couldeasily fit in with our schedule.

We booked the courses online – the first class forour little boy and straight after, the next class forour oldest. It was a team effort for us; Dad was theone swimming with them, and I was responsible forkeeping them entertained while the other one was in

the swimming pool and dryingthem off after swimming.

They both absolutely lovedit and gained confidence inthe water whilst learning theswimming techniques. At theend of the course they werehappy to continue lessons so

we booked for them to attend the more advancedclasses which they both enjoyed very much.

Overall the classes have helped hugely with theirwater confidence and they can swim and play in thewater confidently. This confidence has also helped tomake the dreaded bath times much more fun.

It was a great family activity which we happilycelebrated with ice cream afterwards!”

Ineeded a house warming present for a'particularly difficult to buy for' friend. You knowthe kind I mean, the 'has everything, wants fornothing' type! I was moaning about my dilemma

to another friend and she rather reluctantly told meabout this place just outside Daventry. She wasn'tkeen on sharing (why do I have such difficultfriends?) but I got it out of her and next day, I wentand had a look. Wow! As soonas I walked through the doors Ifound myself immersed in treasures!Delightful, charming, imaginativetreasures. I spotted a massive wallclock that would look great in my

hallway; a silver heartwind-chime which would be

perfect against my kitchenwindow; a giant teacup,

wall hooks made offlipflops, silver cats,wooden owls, Moroccangarden lamps.

It was a lot bigger than I'd imagined (my reluctantfriend playing it down I guess!) and actually their mainfocus is woodburning stoves - they have loads to lookat! The people there were lovely, really chatty. Theywere putting together their summer range of gardenfurniture which lookedas enticing as the restof their stuff (therewas a chunky teakbench which wouldlook fabulous on mypatio) and then Iremembered! Mymum had bought an amazing giant hammock a few

years ago. She'd always been vagueabout the exact location of the shop

where she'd bought it from… butthis was it! So my Mum had beenin on the secret too!

So, did I get a present for my'difficult to buy for' friend? Of

course. I got her a big brown leather hippo footstool.She will be impressed… and intrigued… and will Itell her where I bought it from? Hmm, now that it'smy secret to keep, I might just hang onto it for a littlewhile longer…

In 2015 Tony McMurray is celebrating 10 yearsof fundraising for The Alzheimer's Society. Inthat time he has raised funds through 100% self-funded, self-organised challenges. These varied

events have included kayaking the length of theThames, cycling Lands End to John-O-Groat's andback-to-back Paris and London Marathons (witha cycle in between) to name but a few.

In celebration of this anniversary he is planningto fulfil a lifetime ambition of setting eyes on thehighest mountain in the world. His 19 day trek to EverestBasecamp will involve exposure to high altitudes anddaily treks of between 5 and 20 miles. To this end hehas been following a fitness regime in order to makehis time in the Himalayas as pleasant as possible.

Tony is well known locally as an ambassador forthe Charity and became a registered volunteer afterthe condition struck both his mother and his aunty inthe years before their deaths. Through his involvement

Generallyit’s best to put the tallervarieties at the back ofthe display but its oftennice to put a smatteringof height throughout.Set the plants out in theirpots before planting tomake sure you are happywith their positioning.Good soil preparation isthe key to success. Forkover your plot removingweeds and any largestones. Spread a few bagsof compost and turn itinto the soil to increasenutrients. Dig a hole for

each plant that is twicethe size of the rootballand deep enough, addsome compost and ahandful of bonemeal.Remove the low branchesof any trees to give theplants enough light.

Leave 30cm betweeneach plant to give themenough space to flowerwell and continue toflourish in future years.

Water in well and mulchwith fine bark to retainmoisture, suppressweeds and offer theplants some protectionfrom the cold.

Deadhead regularlyto prolong flowering,unless you specificallywant the seedheads.
