DELICIOUS TUSCAN BEAN SOUP

1/4 CUP OLIVE OIL500g CANNELLINI OR BORLOTTI BEANS soaked in water overnight2 BROWN ONIONS diced2 GARLIC CLOVES crushed (1/2 tspn)1 TSPN OREGANO chopped4 LARGE BASIL LEAVES choppedSMALL HANDFUL CONTINENTAL PARSLEY choppedFRESHLY GROUND PEPPER1 SMALL CHILLI deseeded and finely chopped125g PANCETTA diced1 STICK CELERY diced1 TIN DICED ITALIAN TOMATOES4 CUPS VEAL OR CHICKEN STOCK100G SMALL PASTA SPIRALS

Rinse beans. Fill a saucepan with fresh water, add beans and bring to boil. Cook 30-40 minutes til tender.Drain and set aside.Heat oil in a large pot and cook onion til transparent. Add garlic, herbs, chilli and pepper. Stir in pancetta and celery gently cooking til coloured. Add tomatoes and continue cooking on low for about 15 minutes. Add stock and beans, bring to boil, add uncooked pasta and cook for a further 10-15 minutes. Taste and add salt/pepper if required.Ladel into bowls, drizzle with a little olive oil and a good sprinkle of fresh parmesan.Serve with fresh crusty bread.
