From the Chairman来自会长的问候Dear Readers,It is with great pleasure I introduce to you all the new edition of Ifood, compiled with the precious contribution of Members and friends from the F&B industry. The topic for this quarter’s issue of Ifood concentrates on Food and Sports with a particular focus on the summer season: thanks to the opinions of experts in different fields we were able to analyze the importance of balancing eating habits and physical activity, in hopes of sharing our findings with our readers.

We start this quarter’s issue with an interesting interview with Professor Chai, a nutritionist and Professor at Beijing University, who gives our readers some interesting advice on nutrition and also updates them on current advancements in Chinese nutritional policies. His findings and studies are helping make a better healthier China, and we look forward to hearing more from him maybe in the future. The articles that follow mention types of nutritional food in China and even Italian food products found in China. From Yellow Croaker to imported Pastas we have the scoop on everything. Thanks to assistance from Duccio Alabiso, New Product Developer for Sinodis, we get the inside story on just exactly how Italian products make it to market in China. Proper nutrition is only one part to a healthy well being, and for this reason we have added the second part of the equation: physical

activity. In this part of Ifood we took advice from no other than Mr. Saccomandi, Chief Operating Officer of Technogym S.p.A., who suggests us –as an expert in the sports arena- how physical activity can help everyone to keep fit.As we all know eating right and physical exercise is very important, but we still need to enjoy what we eat and do. Thanks to help from Massimo Masili, Sommelier at L’Isola Restaurant in Beijing, China, we were able to put together some interesting wine advice on how to best match the ideal wine to light summer dishes.

The last articles have more of an artistic take on food, health, and well being; portraying the significance of food in Italian and Chinese cinema. Health at 360°: Nutrition in Summer Talking about an healthy way of life with Nutritionist Chai

Chai Weizhong is a nutritional science expert, now professor and tutor for Master students at Beijing University’s Public Hygiene Institution, and also currently engaged in scientific research and teachings of nutrition and food hygiene. He graduated from Huining county No.1 School in 1979, in the same year he applied to Gansu Agricultural University, where he earned his bachelor degree. Later he went on to study at the China Agricultural University where he earned a Master and Doctorate degree. Even with his busy schedule, Chai Weizhong is very influential in pushing for the development of a beneficial government nutritional policy which provides a system of analysis on micro nutrition, while spreading the scientific knowledge of food ingredients to the Chinese People. 1. Which types of food would you suggest for summer? Which kind of food should we avoid? Is there any alimentary ‘rule’ suitable for the summer period? Which is the right distribution of meals throughout the day?

During summer time, when the temperature is high, we should avoid eating food too salty, too oily, too sugary, composed of too much protein or fat, otherwise it will over heat our body. Instead, we should eat more fruit and vegetables which contain trace elements that give more energy to the body. It’s good to eat fresh and cool food in this way you can keep in balance internal body temperature with the external environment. Also cold drinks can help to reduce the internal body temperature, but they can even negatively affect the stomach, especially on elderly and young, if used improperly. Daily meal portions should be divided in the following way: breakfast 30%, lunch 40%, and dinner 30%. Since peak temperature is reached around noon time, people can reduce the volume of lunch. Even so, we should still pay attention to the nutritional content of our meals; otherwise our disease resistance capacity will be reduced.

2. According to your professional experience and research, are there many differences between the Chinese and Italian cuisines? Thanks to the presence of Marco Polo in China, western (mainly Italian) and eastern culture have undergone a fusion. Italian people love to eat pizza, pasta and salad which to some extent could be found in China. Things such as baozi 包子 (steamed stuffed bun) and dumplings are quite similar with pizza, Chinese noodles has something in common with Italian pasta, but salad on the contrary is not very well appreciated in Chinese Cuisine so there are not many similar products. I think all the above-mentioned food is nutritional. In addition looking at the differences between Italian and Chinese food we can observe the following: a. Pizza, baozi, dumplings are all nutritional food thanks to their diversified food ingredients. However, nowadays people are starting to be more concerned about healthy nutrition and are increasing the consumption of vegetables (related to the food listed above) and this new trend will help decrease diseases concerning blood vessels.

b. Chinese noodles and Italian pasta can be cooked in similar ways. Italian pasta is usually accompanied with

tomato sauce and cheese. In this way I think Italian pasta should combine some cooking style of Beijing noodles. Beijing noodles, other than the one with minced meat, are prepared with 12 kind of pickled vegetables and soup, and this combination of ingredients makes the dish more nutritional.

c. Chinese cuisine should move towards the western one regarding the cooking method of vegetables. In China, the vegetables have always been over washed and over cooked, which minimizes the nutritional elements inside the vegetables. In this way Chinese people should eat more western salad.

3. Which is the best sporting activity combined with the correct nutrition that can have major benefits on the human body? In your opinion which is the best nutritional behavior we can follow while training? This issue is relevant to sport and nutritional science, and in my opinion I think people should have a scientific knowledge about sport and nutrition to reach a “mutual balance on food/eat and exercises”. Disequilibrium can lead to a series of health problems including obesity, high-levels of blood glucose or even blood fat.People who like to do sports should take into consideration a proper nutrition, that’s why a professional sport team must have a professional nutritionist. Generally speaking, sports requiring explosive strength need to be combined with the food which can fast provide energy; meanwhile the endurance exercises need the foods which can steadily and for long periods of time provide energy. We must also take into account all the activities that we do during our daily life which consume energy, and make sure that we eat properly in order to fuel these activities. 4. Regarding elderly people and children’s nutrition: what kind of diet do you suggest for these different age groups? Elderly and young people’s apparatus function is relatively weak, so they should have more meals with less quantity each during a single day, for example, 5 meals per day, assimilating less amount of food each time which can reduce digestion pressure. Elderly and young people should therefore have meals composed of easily digestible food, such as: fish, rabbit meat, chicken meat.

The choice for lunch usually falls on fast foods or bars or restaurants: what can you suggest for this season? Are there some eating habits they should follow (ex: what should they choose, what to avoid, should they try to bring some food from home)? Usually office workers spend long times sitting, looking at a computer with high pressure on them and that’s why they should supplement with a proper amount of vitamin A, E, and C, Melatonin, and drinks containing melatonins, probiotics. Office workers also have to arrange meals properly for all day long. If they have an abundant breakfast then lunch can be a simple one; fast-food is not always a bad choice; if in the afternoon workers have a large amount of work to handle, then they are supposed to have an abundant and rich lunch.If a worker chooses to prepare lunches by them selves, he/she should consider whether there is a fridge and heating device in the office; if a worker goes out for lunch in the long term, he/she should choose a clean, nutritional and reliable restaurant.In addition, workers who prefer snacks can carry cookies, cake, fruits and vegetables. 6. In recent years the Chinese way of cooking/habit of eating has faced some important changes. Are there any rules we can follow for a healthier nutrition? Nowadays, Chinese traditional eating habits have changed a lot; most young people now don’t eat the same food the older generations were eating. Previously Chinese people ate not only delicious and tasty food but even healthy types of food. This tradition should be conserved nowadays, but instead this younger generation of Chinese are eating a lot less healthy. They should learn more about cooking, especially in the traditional cooking style. With a scientific knowledge of nutrition and a combination of western and oriental food, a correct and healthy style of living can be reached in order to create a society and healthy citizens. The food and beverage business as well as the food culture is going to be more and more internationalized. In addition, concerning food product safety (hygienic safety and nutritional safety), there still needs to be placed a higher importance on these standards. People always

pay more attention to hygienic safety but ignore the nutritional safety, however both are important

柴巍中讲解柴巍中,营养学博士(后),现为北京大学公共卫生学院教授,研究生导师,主要从事营养学与食品卫生学的科研和教学工作。1979年进入甘肃农业大学、随后进入中国农业科学院研究生院,中国农业大学研究生院完成学士、硕士和博士学位。目前研究重点为公共营养学。目前正从事学生营养改善政策研究、中国居民膳食微量营养素摄入系统分析、婴幼儿营养配餐科学体系研制等项目研究。

题目

1)这个季节您建议吃哪种食物?哪种食物我们不应该吃?夏天有没有一些特定的饮食规则?夏天吃三餐,应该怎么分配食物?

夏日高温,不宜食用高盐,高油,高蛋白,高脂肪,高糖的食物,否则会导致人体产生过高的热量;多食用水果和蔬菜等富含微量元素的食物,可使人体机能更加有效地运作;可以适量食用一些具有清凉解暑功效的食物,以平衡人体内部与外界环境的温差;“夏天喝冷饮解暑”这个想法没有错;因为我们的身体产生很高的热量,为了平衡这种热量,为身体内部降暑,可以适量饮用冷饮。但是肠胃功能不好的人,尤其是老人和小孩要注意适量食用。

通常来说,人每日三餐的比例为早饭30%,中饭40%,晚饭30%。夏天中午气温较高,因此可适当减少中饭的比例。即便这样,仍要注意营养均衡,否则会降低疾病抵抗能力。

2)根据您的专业意见和研究,中国菜和意大利菜有很大区别吗?

马可波罗访问中国,使得东西方文化有了交融。就我观察而言,意大利人爱吃披萨、意大利面和沙拉;在中国,与披萨类似的食物是包子、饺子,中国的面条与意大利面有相似之处,而中国人比较少吃沙拉。以上所提到的这些食品我认为都是有营养的。针对中意菜谱的区

别和融合,我的看法是:

a. 披萨、包子、饺子由于食物原料多样化,都是富含营养的食物。现在人们也爱吃素包子,这可以在一定程度上减少患心血管疾病患病的可能。同样,意大利的披萨也应该多使用蔬菜和菌类作为原料。

b. 中国的面食与意大利面有共通之处,意大利面中用到西红柿酱和奶酪,我认为可更多地借鉴中国北京炸酱面的做法,加入更多材料。北京炸酱面除了有肉臊子,还有12种小菜和汤,多样化的搭配使其更有营养。

c. 有些中国菜谱应该向西方菜谱借鉴,如,中国菜在蔬菜处理方面并不科学,清洗过度,再加上高温烹饪,破坏了蔬菜的营养元素,中国人可以多吃西方的沙拉。

3)哪种体育活动和饮食结合起来能对人体最好?您认为我们在训练/运动的时候如何和营养饮食相结合?

这个问题涉及到了运动营养学,粗浅地讲,人应该做到科学地运动,合理地饮食,达到“吃和动互相平衡”。不平衡会造成肥胖,血脂血糖升高等一系列身体问题。喜欢运动的人必须考虑到营养,这也是为什么专业的运动队必须配备营养师的原因,一般来说爆发力运动需要补充那些能够快速产生能量的食物,而耐力运动需要补充那些可以长时间提供耐久性能量的食物。人们日常生活中所有活动都需要消耗能量,因此也应注意营养的补给。

4)针对老人和孩子的营养:您建议他们吃什么呢?

老人和小孩各器官的功能较弱,抵抗疾病能力差,因此可以少食多餐,如一日五餐,这样每次摄取到的营养量少,减少消化压力。另外老人小孩应多进食易消化的食品,如鱼肉、兔肉、鸡肉等。。

5)我们很多读者都是在办公室上班族,他们回到家后没有时间做健康的饭菜,所以大多数人的都选择快餐食品作为午餐,您对此看法如何?他们是否应该遵循一些健康的饮食习惯(例如:应该选择吃什么,不吃什么,是否应该从家里带来食物)?

上班族由于长期坐在位子上,面对电脑,工作压力大,应适量补充维生素A、维生素E、维生素C、脑白金,含褪黑素的食物、益生菌等。

上班族应该更注重于全天的膳食安排,如果早餐丰富,午餐就可以简单一点;如果下午有大量的工作要处理,午餐的种类和数量都要尽量丰富一点。如果自己准备午餐,就需要考虑办公室是否有储存和加热设备;如果长期外出就餐,就需要认真选择一个干净卫生、营养丰富的餐馆。另外上班族还应重视加餐,可自己携带饼干、蛋糕、蔬果等食品。

6) 现代中国的饮食习惯在近几年发生了不少的变化。您认为是否一些规则需要遵循?

如今,中国的传统饮食方式也改变了很多,很多小孩已经不吃爷爷辈的食物了。很多中国人的传统菜不仅美味而且健康,应该被保留下来。中国的年轻一代应该更多地去学习做饭,尤其是传统的中国菜做法。在这一方面,我也常常反问自己怎样成为一个地道的中国人。当然,科学的饮食方式、中西结合的烹调方式,对社会发展和国民健康是很重要的。食品企业和餐饮企业要推行国际化,尤其是饮食文明的国际化。另外食品的二元安全(卫生安全,营养安全)也应该被给予更多的重视。目前我们关注的更多是卫生安全,却忽略了营养安全。

An Interview with DUCCIO ALABISO

Duccio Alabiso was born in Parma (an Italian city in the Emilia Romagna region), the place of origin of Parma ham and of the ‘real’ Parmigiano cheese. Since Duccio’s childhood he always had a great passion for food that followed him through life and into his career. After finishing his studies Duccio went on to attend a hotel school, and latter became an assistant kitchen chef training in a French pastry shop and in an Italian restaurant.

In 1995 Duccio traveled to China where he attended a Chinese school in Xi’an, to learn Putonghua. After his time at the Xi’an school, Duccio moved to Japan for 5 years, but eventually returned to China where, in February 2005, he joined forces with the Sinodis team. Duccio’s role in the company is developing new products: during his frequent travels abroad he searches for new producers and selects for Sinodis the best foreign products suitable to be sold in China. In 2006 Duccio’s work experience expanded when he also became a reviewer for the Shanghai edition of ‘Tatler’s Best Restaurants’.

Once upon a time in the Chinese market…

1995 marked Duccio’s first year in China, after moving to Japan for a few years he returned to China in 2004 to find many things had changed: one of the most noteworthy of these changes took place in the Dairy Sector. In his first year in China, back in 1995, it was almost impossible to find dairy products, but now these products seemed to be everywhere. The cause derived from the massive spread of McDonalds and Pizza Hut chains that use a significant amount of dairy product in the food they make, in particular cheese, which in turn helped to diffuse the concept of ‘cheese’ in China.

Italian products like olive oil, coffee, chocolate, and cheese are also increasing in term of market share in China. Some of these “Italian Products”, taking for example olive oil, have seen a very peculiar growth during Duccio absence. In 1995 olive oil was only available in perfumeries, seen more as a ‘precious gift’, so much so that consumers saw it as a souvenir revered more for its hydrating properties. Nowadays, Olive Oil has taken a big step, and can now even be found in super markets. Even if it is unknown as to how deep the consumer’s knowledge (such as the characteristics and distinctions between olive oils) of olive oil is, it could be said that the Chinese consumers have begun to appreciate it. Olive oil is very useful during summer, and is also a great nutritional addition to bread, vegetables, and salads. However, even after the depth in which olive oil has penetrated the market,

it is still not considered a product for the retail market. Sinodis plans to change these prejudices, and to make the uses of Olive Oil better known through a strategy which includes organizing cooking courses and have tastings in super markets: due to the high costs of Olive Oil, the Chinese consumer needs to be sure of the taste before making the purchase.

The chocolate and the ice-cream sector is another area that has been greatly impacted: in 1995 the chocolate was present in China but only as imported good, of late even local production and local brands are in existence. A few years ago only the Chinese ice cream –for example red bean flavor ice cream - was available and today we can find a lot more varieties of local products.

Italian food – ‘natural’ and ‘healthy’ also in summer

One of the most appreciated summer products all over the world is the Italian style ice-cream ‘gelato’, it is healthier than ice cream produced by American brands. It is also on the line with the emerging healthy trend followed by Chinese consumers in the last years. This has increased the healthy perception of Italian products: being characterized as ‘natural’ and ‘healthy’.

Foreign products ‘made in Italy’ and brought to China are very highly regarded and nowadays are more and more available in restaurants and supermarkets thanks to their naturalness and simplicity. By the way, it could be a surprise but cheeses are more available in restaurants, and are found to be very fresh and practical to eat during the summer seasons thanks to their qualities - most of them have to be eaten fresh, not cooked.

Talking about food and habits in general Duccio gives a very interesting suggestion: as for his experience instead of changing the ingredients of a dish or adapting them to Chinese taste, it would be better to work on eating habits. One of the most eaten dishes, even in summer is Pasta, the portion of a plate is usually 100 grams and it is considered to be the main dish of Italian tables. Chinese cuisine, however, is lacking the concept of a ‘main’ dish; instead it is made up of meals that usually consist of many different small portion dishes. Italian flavors are simple and pure meaning they only need to be served in the Chinese way in order to catch on to Chinese consumers. Among the Italian healthy flavors typical of the summer and replicable in China we can find different rice dishes (ex. Rice salads and Risotto), fresh salads, sorbet, ‘bruschette’ and ‘crostini’, a kind of roasted bread with olive oil and garlic, or with olive pate’, mushroom, cheese and tomato, sausage, salmon always remembering the rule: small portions and a lot of variety.

SINODIS:

Sinodis’s activity has been to import and distribute foreign products in China since 1996. The range of products it focuses on is quite wide: dairy products and other alimentary product (ex. pasta, salami, oil, vegetables, pizza). Their main clients are big retailers consisting of hotels, restaurants, caterers, and bakery/pastry chains in China. As for the Italian brands it commercializes in China we found Barilla, Carapelli, Galbani, Ponti, Beretta, Ciresa, Unigrà, Tartufitalia.

1995年是Duccio先生来到中国的第一年,在日本短暂停留了若干年之后,他于2004年再次回到了中国,发现了中国的巨大变化:其中最令人瞩目的就是奶制品行业的巨大变革。我们回到1995年,当时几乎不可能找得到奶制品,但是现在奶制品随处可见。原因就是麦当劳和必胜客连锁店的迅速扩张,因为这两家餐厅需要使用大量的奶制品来制作其食品,特别是奶酪,这也帮助了“奶酪”这个名字在中国的传播。

The yellow croaker is a first grade product, and nowadays is one of the most common delicacies that we can find in Chinese households. The yellow croaker can be cooked in many ways: steamed, fried, stewed, roasted, boiled and served in a soup, with many ingredients, spices, vinegar, sweet and sour. Inside the fish head we can find two solid ‘stones’, called the stones of the brain of the fish (in chinese 鱼脑石: Yunaoshi): this fish is also known as ‘The fish with the stone head’ (in chinese 石首鱼: shishouyu).

There are two types of yellow croaker: the big kind and the small kind; these two kinds together with the ribbonfish are called ‘the three marine products of China’.The best period to eat the big yellow croaker is in summer, around the Dragon Boat Festival. The period in which we can eat the small yellow croaker is a few months prior to summer such as March and April. The skin of a high quality croaker is golden yellow, glossy, and all its scales are intact. The texture of its meat is solid and yet very elastic; its eyes are vivid and convex, with open corneas. The color of the fish gills should be scarlet or purplish red.

Effects and nutritional values The yellow croaker is rich in protein, trace elements,

and vitamins; it has very positive and effective curative properties for the human body, especially for debilitated bodies and elderly people.The croaker’s meat is rich and tasty, delicate, delicious flavourful, and most of all it is easy to digest. The yellow croaker’s meat is not the only source of the fish’s healthy properties, but its fish glue, meat, and guts can also be used to cure illnesses. A Chinese compendium called ‘Materia medica pharmacological compedium’ (Bencao Ganmu, written by Li Shizhen (1518-1593) also describes the yellow croaker for its sweet and mild taste and for its efficacy on improving eyesight, relieving tension, calming the mind, increasing the qi (气2), and stimulating the appetite. The nutrition experts also found out that the yellow croaker has a high content of protein and a large content of fats, calcium, phosphorus, iron, iodine as well as fatty acid omega 3, which are all highly regarded in a healthy diet.The yellow croaker contains abundant trace elements; it can reduce the production of free radicals, can delay effects of aging, and can be used as a preventative and potential cure against various kinds of cancer.

As you now know the Yellow croaker is very beneficial to the human body, but contrary to most other fish types, it is recommended that you consume farmed Yellow Croaker instead of the wild version.

Mentioning all of the benefits of this fish brings to mind a certain Chinese folk tale, that helps explain the true versatility of the Yellow Croaker.

The protagonist of this story is an old man, whom every time he eats a yellow croaker he takes out the stones (the brains), and does not eat them or use them as a form of medicine (Now as we mentioned previously these stones are often very important for their curative properties). Instead this man just collects all the “stones” in an iron box, for some peculiar reason.

Years later this old man had two children a son and a daughter, and when these children grew up they turned out to be very spiteful and rude; treating their father with no respect. Knowing how greedy his children were, every time one of his children would disrespect him, he would take the little iron box containing the “stones” and say to them, “this is the most precious thing I have, and when I die you can share between the two of you the contents of this box.” The children, not knowing the contents of the box, but only the weight and sounds it made, thought that inside laid tons of gold. For this reason every time the father enticed his children with the box, they would begin to treat him with the utmost respect, but little did they know they were being tempted with fish brains or also known as the “stones”.

Qi

“Qi is one of the most important concepts of the Chinese philosophy and culture. The literal meaning is ‘air” and ‘breath’, but we can say that the meaning goes beyond that; it is sort of a life force. Qi is also very important principle of Chinese medicine and Fengshui.A balanced and free-flowing qi in Chinese culture is a fundamental principle for a healthy and long life: it can be regulated through practices like breath control, massage or acupuncture”.

“气”是中国哲学与文化的最重要概念之一。其字面意义是“空气”与“呼吸”,可是“气”的含义远远不止这些;“气”是一种生命的力量,在中国医学与风水学中是一种很重要的原理。平衡与自由流动的“气”在中国文化是健康与长寿的根本:“气”可以通过呼吸控制、按摩与针砭进行调整。

An interview with Massimo Masili

When we think of China the first thought that comes to mind does not usually contain rolling hills covered from end to end with vineyards and Sommeliers tasting fine wines under the sun, but things are slowly chang-ing. In recent years China has seen an influx of interest in wine, and the numbers don’t lie. In fact from 2001 until 2006 China’s sales of wine have increased 42%, and such jumps in sales do not go unnoticed. Massimo Masili was one of those Sommeliers who saw this in-triguing opportunity and thought his superb skills as a Sommelier could be useful.

Massimo Masili, born in Italy, trained for many years in order to arrive at the level of expertise he is at today. While most people think Italians are naturally born with the proper appetence for wine, maybe true given Italy’s already notable wine culture, Massimo Masili furthered his knowledge with nearly 22 years of study and practice. Attending courses in Italy and even

London (Wine & Spirit Education Trust), he was able to perfect his skills which allowed for many more job opportunities.

In 2005 Massimo Masili made his big move to China, working in a fine dinning Italian restaurant called L’Isola. The restaurant was originally started by his brother Roberto, but the two saw the benefits of a successful partnership. To this day you can find them working at L’Isola one offering fine food and the other tasteful wines, but Massimo’s knowledge of pairing the two gastronomies is where the magic happens and it’s what makes his skill so priceless.

A Sommelier’s Market

Massimo Masili may have studied and trained in learn-ing the “Aromatic flavor” or “Bouquet” of a wine, but he is no stranger in understanding the “depth” of the

Marketing wine is not an easy task in any country; it requires an understanding of the taste preferences of the particular target market. In terms of the Chinese people’s taste and preference to certain foods, Massimo Masili, sees this as very important in creating the right mix for the right person. The Chinese people already have a good understanding of such famous Italian wine producers such as Antinori, Masciarelli and Gaia, and they are also very partial to the red wines like the famous Barolo. Information such as this is essential in pushing wines that have growth potential.

In terms of the Business aspect of wines in Italy, Massimo Masili, has stressed the importance of the “Made in Italy” brand and the focal locations of interest. He believes that in order for all Italian brands in China to enjoy such pros-perous times as during the Olympics they need to focus on “Quality” and not “Quantity”. Massimo Masili notes that the French wines may have higher sales, (60%-80%) more than Italian wines, but it is due to the French’s fo-cus on “Quantity” and “Quality”, and that Italians should focus on “Quality” and “Quality” only. Location of profit inflows is also important in Massimo Masili’s eyes, as he indicates that most “Made in Italy” brands focus their attention mainly on the coastal cities of China, but that those markets are too saturated. For real growth these Italian brands should direct their attention to the inner cities, where interest in Italian products is high and prod-uct choices are low.

The Sip to Match the Bite

The art of being a Sommelier is not limited to tasting wines, but a true Sommelier is also able to pair a wine with food in order to create an unforgettable experience. Massimo Masili has just that ability and he puts it to work everyday. In case you ever decide to eat at L’Isola there are some suggestions you might want to know before hand, be it wine with a meal or a light Italian summer dish, he could recommend nearly anything.

Along the list of courses that are served at a usual Italian dinner Massimo Masili has a wine for each step of the way. To start the evening a dry firm white wine or Prosecco is a great little starter before the meal begins. Later on

in the night when we start seeing the meat and fishes, things can get a little tricky. Meats, contrary to usual beliefs, could go great with red or white wines; however, fish depends on how it’s cooked. Grilled fish usually goes well with a white wine, but if cooked in another way even a red wine, such as a Barolo, could go well and not interfere with the flavors of the sauce. Finally when the meal is coming to an end, and you’re not sure just exactly how to finish it Massimo has some crowd pleasing ideas, especially for the ladies, a little Moscato or Brachetto is a great way to end the night.

After hearing about all of that food and all of those courses you may be a little scared to eat Italian food, especially in the heat of the summer in a city such as Beijing. Though you should not give up on Italian food there are other options as Massimo Masili has pointed out. Some other foods that are great for summer and still go good with wines could solve the problem of just exactly what to eat on a hot day. Things such as fresh mozzarella cheese, many different types of salads, and even a nice dish of Spaghetti ai Frutti di Mare could go great with a glass of wine and fill you up without over doing it.

I guess after all of this there is only one thing to do, try some wine and eat some delicious food, but if you ever need any advice at least now you know where to look for it.

Love on a Diet (Johnnie To & Wai Ka-Fai, 2001)

There are usually two types of people in this world when it comes to the love of food; people who live to eat and people who eat to live. The “love of food” is a strong emotion and sometimes even used to forget or replace another feeling. No film does better to express such a “love” for food as does the film ‘Love on a Diet’, by Johnnie To and Wai Ka-Fai.

One of the fundamental themes emerging from ‘Love on a Diet’ is the relationship between food, diet and love. The protagonist of the movie, Mini Mo, wants to conquer the love of a boy by doing everything she can to lose weight. Ironically this same boy and the loss of his love was the reason behind her new infatuation with food.

Worried that her new portly state will affect her quest in winning back her former love the protagonist Mini Mo must combat her “Love of Food” in order to gain the “Love of a Man” she once had. Along with the help

of a new friend, Fatty, who is similarly in the same mal-state as Mini Mo are all characters in this story that help to show the constant emotional struggle between food and dieting, and the rare element of food’s socialization power which can divide or bring people together as it happens to the protagonist and the boys she meets.

‘Love on a Diet’ is consistently funny, from start to finish, and really brings all of his directorial strengths to the table. Though To leans on fat jokes which are unavoidable, given the premise, he still uses believable characters and a great directing performance to win over the audience.

7 chili in 7 giorni (Luca Verdone, 1986)

Trend’, something that is still very popular to this day, and could easily be found in any TV or newspaper ad. This concept of ‘propinquity’, already highly stressed in western societies, is now beginning to influence the life style of many other countries around the world. This concept can also be extended to physical wellness, reachable only through hard work and a well balanced nutrition; it is now more than ever seen as something obtained overnight.

The idea of the protagonists in the film, is a drastic diet - based on non eating at all instead of eating healthy - as the only way to lose weight quickly. This movie is a supplementary demonstration that eating healthy and integrating a proper physical activity into your daily schedule is the only method of staying healthy. The only results from the ‘non-eating’ diet in the movie are clients that become insanely obsessed for food, which creates some entertaining results. In one scene we see how food could enforce sexual desires, when a beautiful girl decides to give in to the protagonist’s advances for a slice of bread with butter. While in another scene food is treated as a ‘treasure’, when a boy hides delicacies inside his bedroom in case of emergency. All these funny events ironically highlight that the only way to reach physical wellness is the right balance between eating habits and physical activity, as indicated more than once within this publication.

Ending in a typical comedic Italian style and culture: the two protagonists realize that their method to run the Weight Loss Clinic is not working, so they ingeniously come up with a new plan in the true Italian tradition of eating, deciding that if they have a bunch of fat clients why not open a restaurant to feed them.

食物、瘦身与爱情的关系是电影中最基本的主题之一. 该电影的女主角名叫 Mini Mo,她为了征服一个男人的爱情而竭尽全力地减肥。可笑的是她失去与他的爱情的真正原因也正是她对食物的贪恋。

有一部意大利电影叫《七天内七公斤》:这部电影名字是片中一个纤体中心的口号,两位主角是纤体中心的经营者。电影讽刺“速效减肥”的潮流,这种潮流直至今日也在电视与报纸广告里广泛被宣传。减肥概念的“刻不容缓性”,在西方社会里已被过分强调,现在也已经开始影响世界上很多国家的生活方式。这个概念也可以扩展到通过努力运动与平衡膳食来实现良好的体态;它比以往任何时候都更被认为是一夜之间可以获取的。电影中主角的想法非常极端,正如所有希望快速减肥的人一样,希望通过完全不进食,来达到减肥的目的。这部电影向我们阐明了合理膳食与适当锻炼身体才能保持健康体态的真谛。“不进食”的唯一后果,反而是对食物的疯狂迷恋,这也是该电影为我们创造的有趣的娱乐效果。我们看到有一个场景展示食物屈从于性:一个漂亮的女孩为了一片面包和黄油决定屈服于主角的性企图。另外一个场景则是一个男孩把食物当作珍品藏在自己的房间以备急用。

所有这些有趣的现象强烈地并具讽刺意味地向我们表明了一个道理:达到身体健康的途径只有一个:掌握均衡饮食与体育锻炼之间的平衡。

电影的结局体现了典型意大利风格与文化:两个主角意识到他们经营纤体中心的方法对减肥毫无效果,所以他们产生了新的创意:开设一个迎合肥胖客人,具有意大利传统风味的餐馆。
