The Burlton family have beenrearing Turkeys at Valley Farm, since 1966 when father Tonybought 5 acres of land and started delivering turkeys locally atChristmas on his Butchers bike. Fast forward to 2017 and the farm is now in the safe hands of Michael and Andrew and very much afamily affair still.

The free range British turkeys are raised on the farm in Meldreth where they roam freely in treelined meadows.

Slow grown and fed on a natural diet consisting of mainly cereals they are dry plucked and hand finished, then hung for a minimum of seven days to give an unrivalled level of both texture and flavour.

How to cook theperfect steak

Ask our Award WinningDevelopment Chef Darren what his

favourite meat cut is and he’ll always say fillet steak! Here are his

tips for a perfect fillet steak –however you like it…

“The fillet is a very tender steak muscle which comes from the lower

middle of the back and forms part of the sirloin. The fillet muscle is

so tender because it does the least work. Fillet steaks are traditionally cut a bit thicker than other steaks,

about 4cm or 1.5 inches.

A fillet steak can be grilled,pan-fried or griddled. As this is a very lean cut it can dry out if it is served really well done. Cooking

times for a fillet steak are as follows:

9 Rare: 3-4 minutes each side 9 Medium: 4-5 minutes each side 9 Well done: 6-7 minutes each side

Leave to rest for a couple of

minutes before serving.

Did you know? The fillet is a muscle which is hardly used by the animal, meaning it’s the most tender muscle in the carcase.”

Not only are they experts in all things fish – Karen is a mean chef in the kitchen. Here’s her easy-peasy fool proof Smoked Salmon starter which always goes down a storm!

Easy Smoked Salmon Nibbles1. Start with a quick pickle: cut half a

cucumber into thin ribbons and discard the seedy core.

2. Toss with a teaspoon of flaky salt in a colander, and leave to drain for about an hour.

3. Whisk four tablespoons of white vinegar with the same amount of water and 30g sugar.

4. Put the cucumber in a small bowl and pour the liquid over the top.

5. Leave for at least an hour, although, if you want to get ahead, it will be fine in the fridge for a couple of weeks.

6. Cut triangles of rye bread and place on the platter along with around 25g of smoked salmon per person and your gorgeous pickle.

7. For extra zest add in some lemon wedges and enjoy…
