Next month will see over 40 Hunt's Foodservice employees getting wet and muddy whilst completing the Rocket Race in aid of The Dorset & Somerset Air Ambulance. The Rocket Race is a 8km cross country run filled with over 52 obstacles through fields, a river and muddy puddles. All those involved will be raising money as part of the company's focus to raise as much as possible for the air ambulance this year.

METHOD

1 Finely chop the coriander, ginger and chilli paste. Add to a bowl with the tuna, fish sauce, lime juice and mashed potato. Crack the egg into the mixture and combine.

2 Gradually add breadcrumbs until you have a consistency you can mould with your hands.

3 Hand mould the mixture into fishcakes.

4 Place the remaining breadcrumbs on a plate and roll each fishcake in the breadcrumbs until covered (they should be moist so the breadcrumbs stick).

5 Place in the fridge for about an hour to firm up.

6 Heat the oil in a frying pan. Add the fishcakes to the hot oil and cook for 5 minutes (or until golden) on each side. Remove from pan and pat off excess oil with kitchen towel.

4 tbsp of Chefs’ Selections olive oil1 inch cube fresh ginger (or 1/4 tsp Chefs’ Selections ground ginger) (see page 27)

Handful fresh coriander1 tsp of chilli paste2 tbsp of lime juice

1 egg100g panko breadcrumbs1 tsp of fish sauce (or soy sauce with a little added lime juice)

FOR THAI SWEET CHILLI MAYO

4 tbsp of Chefs' Selections mayonnaise (see page 26)

2 tbsp of Chefs' Selections thai sweet chilli sauce
