Haunch of wild Fallow deer (occasionally Sika) cured with rosemary, thyme, juniper, black pepper, and port. Beech wood smoked.

The loin of free-range West Country pigs is cured with pepper, fennel, juniper, and mace. It is then fermented and air-dried. In Spain it would be known as Lomo and in Italy as Lonza or Lonzino. Unlike its continental cousins it still has a little fat left on it, this adds tremedously to the flavour and has a silky mouth feel

The cheek of free-range pigs is cured in the same way as pancetta with garlic, thyme, black pepper, juniper, bay leaves, mace and muscovado sugar. It is then fermented and air-dried for several weeks. Due to the fermentation process the fat renders very quickly and has a terrific flavour.

Pancetta. The belly of free-range pigs is cured with garlic, thyme, black pepper, juniper, bay leaves, mace and muscovado sugar. It is then fermented and air-dried for several weeks.

Uphall Farmhouse Air-Dried Ham is cured with white pepper and fennel. It is then fermented and air-dried for many months - more than a year for the larger hams. This ham will stand comparison with the best continental hams.

The neck muscle (spare rib joint) of free-range pigs is cured with white and black pepper, coriander, juniper, mace and allspice. It is then fermented and air-dried for many weeks. Whole pieces are between just under a kilo to 2kg depending on the size of the pig

Leg of west-country mutton (various farms) cured with rosemary, juniper, garlic, black pepper, and port. Beech wood smoked.

Silverside of grass-fed Aberdeen Angus from Fossil Farm, Winfrith Newburgh, Dorset and Hambledon Hall Farm, Shillingstone, Dorset cured with rosemary, thyme, juniper, black pepper, muscovado sugar, and port.

Cárnicas Serrano is a family-run company that was established more than 55 years ago in Valencia. The company was originally founded by Blas Serrano and his wife Carmen together with their sons, Blas and Carlos. Spherification is a gelling technique which permits to encapsulate liquid contents inside a thin gel, simulating themes, caviar etc.

Within this group, we find a range of substances which permit the elaboration of gelatines that are used for the production of pre-cooked food.

Charging agents allow absorbing fat or liquids in order to create dry or crunchy textures.

Stabilizers for ice creams or foams are a complex mix of stabilizers, emulsifiers, gelling agents and airing agents which create the textures of ice creams, sorbets, mousse or perfect foams. Very easy to apply, always with the maximum of respect for the flavour to be texturized.

Devon Blue is made using Friesian cows’ milk collected locally in the South Hams.

There seems to be fewer seasonal differences in Devon Blue. It has a clean,

buttery, rounded depth of flavour.

A moist and crumbly texture with a blue green mould. With a rich

and slightly sweet flavour, similar to Roquefort but not so salty.

HARBOURNE BLUE

Harbourne Blue is made using the milk of Sue and Will Thompson-Coon’s goats farmed at Buckfast on the edge of Dartmoor. The goats free-range the permanent pastures from April to November. Harbourne Blue is also quite

variable over the season, occasionally it can be very strong but more often it has a sweet, clean, fresh taste.

Similar to Vignotte, it has a surprisingly light texture and delicate flavour if eaten young (2-3 weeks). Alternatively, if matured for 4-6 weeks it becomes more rich and full bodied.

At Quickes Traditional, we make award-winning traditional cheeses using milk from our dairy herd. Every truckle is handmade by one of nine skilled cheese makers before being wrapped in muslin and carefully matured for anything up to 24 months.

MATURE CHEDDAROur handmade traditional cheddars are matured for

up to 15 months. By wrapping each one in muslin, the cheese is allowed to breathe as it matures, forming the old fashioned rind that is the hallmark of traditional cheddar.

Situated on farmland that runs down to the banks of the Helford River & the famous Frenchmans Creek.The milk used for their cheeses, Blue Horizon and Helford White, is provided by the Holstein Friesian cow herd established by Alastair’s father in the 1950’s which was then passed on to Alastair in the 1970’s and is now run by Alastair’s eldest son, Jonathan.

Each cheese recipe has evolved in the small dairy in North Cornwall, which began in April 1999 and continues even as you read this; in response to seasonal variations in the local Cornish milk they use, and enthusiastic suggestions from customers, who have played a huge part in developing the Whalesborough Cheese selection.

Pecorino is the name of a family of hard Italian cheeses made

from ewe’s milk. The word derives from Italian pecora meaning ‘sheep’, which in turn is from

the Latin pecus meaning livestock.

From the Savoie in the French Alps. It is a mild, semi-firm cow’s milk cheese made year-round, and typically has a slightly different character depending

The unpasteurized cow’s milk is curdled, then the curds are cut,

put into a small round mould, but not pressed. The cheeses are
