Winter is the best time to see albatrosses They move northwards from the even colder conditions of the subantarctic regions and often travel half-way around the entire globe to reach the seas off Cape Town They never come to land but albatrosses can be seen during winter storms by scanning offshore from places such as Kommetjie with strong binoculars The most rewarding way to see them is to join a pelagic trip a day trip in a boat in search of offshore trawlers where thousands of seabirds congregate and can be seen from just a few metres away See wwwcapetownpelagicscom

WINTER PURSUITSWith Winter well and truly set in we are at last getting some rain to fill the depleted dams for the long summer season ahead Hopefully we will not face water rationing on top of electricity outages in the dry months ahead So while we endure our water from the skies the deluge of leaves shed from our trees and plummeting temperatures take heart from the fact the daylight hours are now starting to become a little longer each day

The winter coughs colds and flu seem to have been particularly widespread and nasty this season with many people remarking how long it took to get over them With this in mind read some sound advice from our local doctors and therapists about how to avoid and deal with these unwelcome invaders in our Winter Health and Beauty feature inside

As you will read in our Out and About on page 9 we recently spent a day at the Cheetah Outreach in Somerset West This facility was previously located at Spier Wine Estate before it moved to larger surroundings at Paardevlei which was the AECI Somchem explosives factory ndash that large fenced-off area with the ominous guard towers beside the N2 just before Somerset West Since the complex closed down the whole area has opened up again and we were surprised by the many positive developments to rehabilitate and develop the land and put it to good public use Within a couple of years I think it could be an attractive and welcome addition to Cape Towns recreational options A good model perhaps for what could be done with the Oude Molen site with some official backing and recognition and the resultant private investment and enterprise which follows

About the cover Dwindling cheetah habitat and the killing of cheetah by humans has driven this magnificent cat to the brink of extinction See the article on Cheetah Outreach on page 9 The cheetah is the fastest land animal and can run as fast as 120km per hour They have a slender body with a tan coat covered with approximately 2 000 small round black spots The head is small with the distinctive black tear marks running from the corner of the eyes down the sides of the nose to the mouth ndash these are thought to protect the eyes from bright sunlight and thus aid in the hunting process

Some years ago I attended a conference entitled lsquoPrincipals for Principlesrsquo It could as easily have been called lsquoPrinciples for Principalsrsquo The theme which ran through the conference was encapsulated in a quotation by the German thinker and poet Goethe

Make good thy standing place and

move the worldIt was a powerful reminder to us all in school leadership of the importance of making a strong stand for the principles which we consider to be important and from there to seek to change that which is beyond us The conference challenged us to reaffirm the values which are sacrosanct to education and without which we cannot help to shape society in a wholesome positive way By the end of the conference the delegates had committed themselves to these points

These are powerful points and can comfortably form the basis of a good educational institution

SOCIETY TODAYWe live in a society in South Africa where it is acceptable to lie in public to sidestep the blame and to take what belongs to others without fear of retribution Schools play a major part in shaping young

bull respect and trust and relationships are central to meaningful education

bull the soul of education lies in the tradition that teaching is a noble profession

bull morality and integrity are essential to sound education

bull all education should be directed towards the public good

peoplersquos characters and therefore have a tremendous responsibility to act as moral beacons in society always working towards the lsquopublic goodrsquo and guiding young people to make the right decisions

THE POWER OF EDUCATIONThe idea of lsquomoving the worldrsquo from a strong moral standpoint is a powerful one and suggests that those who have a firm moral anchor can influence society As educators we believe implicitly in this As Nelson Mandela said Education is the most powerful weapon we can use to change the world No doubt he was meaning that education can banish ignorance and promote progress but surely he was referring to a moral imperative as well Knowing what we do about the great man I believe that we can safely assume this

TEACHING IS A NOBLE PROFESSIONSo the role of the teacher is a potent one and can never be undervalued despite what society might imply about the profession Teaching is a noble profession and whilst our society may not always recognise this the nobility lies in the fact that teachers are working with young impressionable minds and therefore have a responsibility perhaps greater than any other It is a profession which calls for self-sacrifice and one which has rewards which are often intangible

SCHOOLS SHOULD BE BEACONS OF MORALITY AND HOPEGoethersquos image is a powerful one and one which gives those of us working in schools a vivid picture of the necessity of standing for what is just Schools should be beacons of morality and of hope and should be leaders in their communities Teachers too should be leaders in their schools and communities

ILSE MCCARTHY ELECTED CHAIRLADY OF THE PINELANDS TENNIS CLUB (PTC)On 10 June 2015 the Pinelands Tennis Club elected their first chairlady since 1985 - Ilse McCarthy The last Lady chair at Pinelands Tennis Club was Rosemary Brinkworth who held office in 1985 Pinelands is one of the largest clubs in the Western Province (it has the biggest league entry) and has teams from top premier league down to basic bottom catering for the full range of abilities The new chairlady Ilse is also a very good tennis player ndash she plays 1st league ladies doubles and has been ladies captain for the last few years

I joined PTC about 16 years ago after meeting the PTC tennis coach Norman McCarthy ndash now my husband Yes we met through tennis At that stage I played for Goodwood Tennis Club and we played a match against the Pinelands 1st team He had no mercy served aces smashed hit winners left right and centre He convinced a few of us to come for coaching which I loved and soon I loved the coach with the American accent

Norman and I married in Dec 2001 ndash the very English guy and the very Afrikaans girl At first we stayed in the cottage at the PTC to save some money for our Pinelands house which we bought in 2003 Our boy Cooper was born in September 2009 The best thing ever He also loves tennis We often go and play as a family and he never wants to go home

I have always felt at home at PTC There is a place for everyone the best players the competitive players the social players kids parents grandparents morning ladies vets and families It is a safe environment

where the whole family can have a good time I want to ensure PTC is a happy place for its members and ensure a community feel We aim to have the members best interest at heart as it is their club I studied Financial Information Systems at CPUT and then did my Internal Audit degree through UNISA I started working at Media24rsquos Internal Audit Department in 1997 and moved within the company Accountant for the Naspers Medical Fund Media24 Remuneration Manager Media24 News amp Lifestyle HR Operations Manager I am still with Media24 and love it I feel at home ndash it is a home from home another happy placerdquoAs a couple Norman and Ilse have been very influential in building up a strong contingent of junior players who have represented Western Province including Makayla Loubser who became the national u12 singles champion

Housed on land adjoining Paardevlei in Somerset West Cheetah Outreach is primarily an educational program designed to educate - highlighting the plight of the endangered cheetah of which there are only 10 000 worldwide and only 1 500 left in South Africa Besides caring for injured cheetah the facility breeds Turkish Anatolian Shepherd dogs and places them on farms to guard livestock in an effort to reduce conflict between farmers and predators The dogs will chase the cheetahs away from the livestock but will not kill them Farmers are given Anatolian Shepherd puppies with the agreement that they will not shoot any wildlife predators on their farms - but will allow the dogs to grow up with and protect their livestock On our tour of the facility we saw caracal servals meerkats bat-eared foxes black-backed foxes and tortoises One can pay for a personal encounter with the small wildlife and with the cheetah The raised observation deck - jokingly called The Cat

In South Africa its part of our lifestyle to be regularly exposed to recreational activities which involve water and from a safety point learning to swim should be as important as learning to walk If parents have the opportunity and means I would recommend that a child begins swimming lessons at an early age either at baby or toddler stage and by the time they start school to have a basic knowledge of stroke technique The longer it is left before learning to swim the more fear can become embedded One of the first tasks in teaching adults to swim is to undo all those years of fearMy husband Peter and I moved to Pinelands in 1980 We enjoyed the close community feeling and felt it was a wonderful place to bring up children We may have had the first indoor swimming school in PinelandsDeveloping and nurturing many young swimmers has been a wonderful pleasure and a rewarding experience Irsquove witnessed quite a number of my swimmers grow from toddlers to being selected to competitively represent Western Province as well as at national and international levels

USE SUNSCREEN IN SUMMER amp WINTERUV rays affect your skin all year long even on cloudy days Sunscreen not only protects you from harmful rays it provides a protective barrier from wind cold pollution and air conditioning Choose one with antioxidants to neutralise free radicals

DONT IGNORE YOUR LIPSThere are no oil glands in your lips thatrsquos why they are the first to warn you that the air is getting drier Cold wind and dry indoor heat strip them of their natural protection Avoid licking your lips stay away from high levels of petrolatum and find one with a sun protection factor (SPF)

Co-founders of the NGO READ to RISE Taryn Lock and Athol Williams tell us about the importance of their work in helping children to read This bubbly husband and wife team come from a background of struggle They are expert problem solvers Working hard and valuing good education they have used their experiences in the corporate world winning many international and national awards to start their organisation that gives the gift of literacy - a head start in life and a brighter future

TARYN - MATHEMATICIANSTRATEGIST SOCIAL ENTREPRENEURBorn raised and educated in Johannesburg Taryn is a third generation South African Chinese She feels wholly South African and says that people are surprised to know that she cannot speak Chinese but she is fluent in Afrikaans Problem solving is her forte and she completed her BSc degree in Mathematics and Computer Science and her BSc Hons degree In Mathematics Taryn grew up in a home full of books and believes this helped her to complete two university degrees In 2004 Taryn joined Taurus Associates as a business strategy analyst The company was owned by Athol Williams and this is how they met

discovering that they were both self-driven problem solvers with shared values

ATHOL - ENGINEERBUSINESSMAN PHILOSOPHERAthol grew up in Mitchells Plain and is quite familiar with the hardships posed by crime and gang violence in the area When he was at school in Grade 10 during the apartheid era it was a time of great disruption when the schools didnt open for the major part of the year Athols father made every effort to find extra lessons for Athol to continue his schooling and together they found books that could help him complete his exams His hard work and persistence paid off and he was given a scholarship to study engineering at Wits

University He now has an impressive list of qualifications including a MBA from MIT Sloan School of Management and an MSc from the London Business School He is also the author of two books of poetry and has produced two movies Well accomplished and keen to alleviate human suffering both Taryn and Athol have joined forces to fulfil their humanitarian dream of helping young children become literate and able to rise above their circumstances

foreign immigrants while Athol studied This was a personal and profound experience for Taryn seeing how people struggled to cope with everyday tasks because they could not speak the language or read the road signs This was a turning point in Taryns life She realised she could not go back to her corporate job and felt on their return to Cape Town that she would address the problem of illiteracy in South Africa

SCARY STATISTICS IN MITCHELLS PLAINAddressing the problem of access to books in Athols hometown and the shocking statistic that seven out of ten learners in grade 4 are functionally illiterate the idea of READ to RISE was born Leaving the corporate world and investing their own money Taryn and Athol produced a book Oaky and the Sun which they are distributing to grade 2s in schools in Mitchells Plain The story was inspired by one of Athols poems with a message of hope and guiding principles for a successful life Oaky and the Sun is the story of an acorn looking for direction in life He is drawn by the bright light of the sun but battered by wind Children can relate to the imagery and are encouraged to seek their own path ndash focusing on the good and rising above the problems life hands them The book has been translated into Afrikaans and isiXhosa

LEARNING NEW SKILLS Oaky and the Sun is beautifully illustrated by Taryn The book was a challenge in many respects but has taught them a lot about publishing and has given Taryn an outlet for her artistic talent This intrepid pair are now busy with three more books for distribution at the schools ndash all inspired by Athols poetry As a youngster he kept a diary a practice he continues today He recorded his experiences in prose and never intended them for publishing ndash today he has two published books of poetry under the pseudonym AE Ballakisten and he took part in the SANAA Africa Poetry Festival in May

FULLY COMMITTED AND INVOLVEDWITH THE CHILDREN AT THE SCHOOLSTaryn and Athol realised that there would be a greater impact if the books were given to the children during an interactive session where volunteers read to them making the story come to life in a fun way and encouraging them to read more for themselves To this end they invite volunteers to go with them to schools and read to the pupils In July the Muse reported one such reading done by Pinelander Brandan Reynolds (see Muse July 2015) Not only are the children given a

book that they can call their own and take home they are given pencils to write their names in the book

TAKING THE LIBRARYTO THE CHILDREN To date READ to RISE has visited over 270 classes and given out over 16 000 new books In Mitchells Plain 90 of primary schools do not have libraries and the children are restricted access to public libraries because of the crime in the area Therefore READ to RISE places mini-libraries in classrooms at schools (101 have been placed so far) These have 50 new story books chosen in accordance with the Department of Basic Education requirements and supplied in a small book shelf made by Mitchells Plain residents as part of a community employment project Sponsors nameslogos are printed on the side ndash or an inspirational quote chosen by the sponsor

RECOGNITION FROMTHE MAIL amp GUARDIANThe work done with READ to RISE was recognised and honoured by the Mail amp Guardian who selected Taryn in 2014 as one of the top 200 Young South Africans making a difference in our country Chris Roper Editor-in-chief of the Mail amp Guardian says Theyrsquore people who can do whatever they put their mind to using the tools and opportunities granted to us by the technology-driven era we find ourselves inhabiting and who can switch interests and impetus whenever they see the need

OXFORD ndash A DREAM COME TRUE Athol has always wanted to study at Oxford 17 years ago his brother gave him an Oxford jacket which he said he wouldnt wear until he had the opportunity to go there He has had to comply with many requirements completing two extra degrees and post graduate work including a distinction in his course at the London School of Economics At last he has been accepted to study Political Philosophy He and Taryn will be travelling there together in October this year While in the UK Taryn hopes to spread the word about READ to RISE and possibly institute the programme in the UK The local READ to RISE NGO will be left in capable hands and Taryn will visit often to make sure all is well

FROM SNOWTIME TO SPRINGTIMEPeople often ask how we coped with the cold because I think that Canada is generally known for being knee deep in snow Vancouver is right south and on the west coast which means that the winter is milder and they do not usually get snow Having said that just 130km north of us is Whistler which was home to the 2010 Winter Olympics and is a very popular ski resort We took a tour up to the picturesque small town of Whistler and loved the outing We stopped at the Shannon Falls (I am a real sucker for a waterfall) and drove past the beautiful Howe Sound where we saw our first bald eagles When we arrived the maximum temperatures here ranged between 8-10 but we are nice and toasty inside the buildings and have learnt to layer our clothing

NEW MODERN AND SAFESpring is the time of new beginnings and it certainly has been that for me and Mark He has taken up an assignment to start up an office for Redmane in Canada and I have taken a year sabbatical and so our move to Canada came about We found a great apartment right near Granville Island (which is not a true island but is a viby arty little pimple like protrusion into Valse Creek)

It is also a safe place to walk around in and we donrsquot have to think twice about taking a stroll anywhere at any time of the day or night It is lovely to feel so safe

AN EXPLOSION OF COLOURIn Vancouver it feels as if I was given a lucky packet by nature and I have watched with interest to see the plants morph into their full spring regalia The street in front of our apartment building West 6th Avenue (I could not live on 7e laan) is lined with Magnolia trees which have huge flowers with each petal nearly the size of a spanielrsquos ear They are too gorgeous

DIFFERENT LINGORecently I struggled with the snake of trolleys at a low cost supermarket called No Frills Looking up I saw a notice 1 loonie per trolley Well thatrsquos quite rude I thought then the penny dropped (pardon the pun) and I realized that loonie is slang for the one dollar coin so called after the picture of the loon (bird ) on the one side After I popped my loonie into the slot provided the trolley released and I felt more in control and less off my ldquotrolleyrdquo

Spice mixture50 ml fresh coriander leaves2 large cloves garlic peeled10 ml (2 tsp) finely grated lemon rind15 ml (1 tbsp) finely grated fresh ginger5 ml (1 tsp) mild curry powder15 ml (1 tbsp) ground cumin10 ml (2 tsp) ground coriander25 ml (frac12 tsp) turmeric25 ml (frac12 tsp) fennel seeds (optional)

Chicken15 ml (1 tbsp) olive or avocado oil4 each chicken thighs and drumsticks excess fat removed10 pickling onions peeled and halved4 cardamom pods crushed1 x 410 g tin chopped tomatoes1 x 410 g tin chickpeas with the liquidlemon juice salt and pepper50 g roasted flaked almonds2 handfuls fresh coriander leaves

1 Spice mixture Place ingredients in a pestle and mortar and mix well to form a coarse paste Alternatively chop all the fresh ingredients together until well blended and mix in the spices

2 Chicken Heat oil in a large saucepan and add the spice mixture Sauteacute until aromatic

3 Add chicken and sauteacute until well coated with the spices and lightly browned Spoon out Sauteacute onions and cardamom pods in the same saucepan for a few minutes until the onions are well coated with the spice mix Stir in tomatoes and bring to a boil

4 Return chicken to the sauce and stir in chickpeas with the liquid Season to taste

5 Simmer with a lid for 45 minutes or until the chicken is cooked

6 Serve as is or on brown basmati rice Sprinkle with almonds and fresh coriander

Grinding a variety of spices in a pestle and mortar and adding ingredients like garlic ginger and coriander leaves is the perfect start to a delicious Moroccan-style paste with an unbeatable aroma when sauteacuteedA tagine is a typical Moroccan or North-African dish of slow-cooked meat or chicken and a variety of spices with veggies and often fruit The tagine can refer to the stew itself or the original ceramic or clay container with a cone shaped lid used to cook it in The unique shape of the container makes for effective slow-cooking but a tagine can be prepared just as easily in a pot or oven dish The combination of spices used for a tagine is very aromatic and not hot like most

curries The full flavours are exceptionally satisfying and great as a winter comfort food Using chicken as we do in this version is less fatty than lamb or beef and cooks much faster Chickpeas another typical North-African ingredient not only add texture but pair perfectly with the spices in this dish Tagines are perfect for entertaining and are usually served on couscous seasoned with fresh herbs The nutty flavour of brown basmati rice works equally well Accompaniments of toasted nuts fresh mint and coriander with dollops of yoghurt make it a real flavour sensation Donrsquot let winter go by without making this tagine at least once ndash it will be a family favourite
