The annual meeting of the Community Services of Starke County, Inc.’s general membership will be held on Thursday, December 17, 2015 at 8:30 a.m. at 311 E. Culver Road, Knox, Indiana.

The public is invited to attend but only regular members will be entitled to vote on the program plans and the executive board appointees for the year 2016. Reg-ular members are those who have paid the annual membership fee of $5.00.

Community Services of Starke County, Inc. provides services in order for fami-lies to remain independent in their own homes. Services include: public trans-portation, nutrition, information and as-

sistance, energy assistance, homebound meals, call-a-day, food pantry, health equipment loan program and home-maker services.

The executive board presently serving include Judy Ahlenius, president, Joan Chesak, vice-president; Pat Zobrist, sec-retary; Frank Skronski, treasurer; and members, Mary Ann Vische, Mark Rip-py, Judi Meissner, Sandra Santacaterina, Arlene Sellers, Ben Warren, Ellen Ste-venson, Harold Weitgenant, Joe Guar-diola Becky Welter, and John Schwenk. Executive Director is Becky Anspach.

STARKE COUNTY — Tying into the national campaign, local #Giving Tuesday efforts proved successful for the Starke County Community Foundation (SCCF) Tuesday, Dec. 1.

“This is the first time we’ve done [an open-house for the campaign],” said Director Sarah Origer.

After the day’s fundraising events with an open-house in North Judson, the SCCF successfully raised almost $5,000.

The campaign itself began several years before.

“It’s just a time to encourage people after they’ve eaten a lot of turkey, given thanks, maybe done some Black Friday shopping, and to think about giving back to their community,” she said.

In it’s second participating year to raise awareness and community funds, the effort was successful. The SCCF also worked to thank donors for their contributions to the many programs the organization supports.

“The two major things were to bring attention to Giving Tuesday and to share what we’ve accomplished this year and that’s why you see we threw up all of the various posters,” said Origer of the open-house’s displays.

SCCF has and continues to support the Starke County Humane Society, SCILL Center, the Starke County Youth Club, Hoosier Valley Railroad,

and a local preschool program, among its many projects.

Speaking on the support they give, Origer used one of the many pro-grams to discuss why SCCF has been an integral party in the county for many years.

“Community Service of Starke County has benefited from grants almost every year, and they serve almost a quarter of Starke County’s population every year. That’s huge,” she said. “Starke County Youth Club

serves hundreds of kids every year. I wouldn’t want to think about what Starke County might be like without these nonprofits. They do incredible work.”

The SCCF strives as the year comes to a close to continue to be a support for these groups.

“These nonprofits can keep doing good, we’re just the savings account. They’re doing the actual work, and they do good work,” she explained.

1. Heat oven to 350 F. Spray a 9-by-13-inch cake pan with butter-flavored cooking spray.

2. In a large bowl, combine flour, sugar substitute, cocoa, baking soda and baking powder. In a medium bowl, combine yogurt, mayonnaise, vanilla extract and water. Add liquid mixture to dry mixture. Mix gently just to combine.

3. Spread batter evenly into prepared cake pan. Bake for 15 minutes. Evenly sprinkle marshmallows over top of partially baked brownies.

4. In a small bowl, combine cracker crumbs and choc-olate chips. Sprinkle crumb mixture evenly over top. Continue baking for 10 to 15 minutes or until a tooth-pick inserted in center comes out clean.

5. Place cake pan on a wire rack and let set for at least 10 minutes. Cut into 16 brownies. Makes 8 (2 each) servings.

hot chocolate dashed with cinnamon, and the secure feeling of being around family and friends that are the ingre-dients of childhood holiday memories that the four Peterson sisters captured at their recent semiannual get-together at Bekki’s house. Raised in Glenview, Illinois, they recall the fun of gathering for the traditional “December Family Night” at their church to make beautiful Christmas wreaths.

Their mom, Evonne, who passed away 15 years ago and would have celebrated her birthday on the day they gathered, “would love that they chose to make wreaths as a nod to their past, this time using pinecones from a friend’s yard, and recycled odds and ends sourced from stored holiday decoration boxes,” said Sonja.

“And there’s no doubt she would be pleased that we continue to get together. We rely on each other and support one another more since we lost her,” added Christi.

And they do just that. No kids, no spouses, no cellphones. “We usually do something when we meet,” says Sara. “It might be making gifts for friends and decorations for our homes, or trying out a new recipe together. It’s in the do-ing that we let loose and candidly share what’s up in our lives, reminisce and, for

sure, we always laugh. A lot.”Connecting as adults with friends or

By Angela Shelf MedearisHerbal vinegars are a wonderful gift

from the kitchen. They’re delicious when sprinkled on salads, vegetables or broiled meats. You can use either fresh or dried herbs, or fresh or frozen fruit when preparing the vinegars. Pouring heated vinegar over herbs that have been slight-ly crushed helps extract the flavor of the herbs. Almost any type of vinegar with at least 5 percent acidity may be used, except malt vinegar. The flavor of malt vinegar is too strong to blend well with herbs or fruits.

After preparation, herbal vinegars should be stored for one to three weeks in a cool, dark place to allow the flavors

to mingle. Herbal vinegars will keep in-definitely, and they make great home-made gifts. (Do not make herbal oils for gifts. Unlike commercial oils, home-made herbal oils lack enough acidity to preserve them. Homemade herbal oils also tend to turn rancid and may cause botulism.)

Decorative bottles like those used for wine or bottled water are perfect con-tainers for your herbal vinegars. Steril-ize the bottles or jars with boiling water before using them. Line bottle caps or jar lids with a piece of foil, or place a piece of foil over the mouth of the jar or bottle to prevent the cap from rusting. Bottles with a cork or cruets also are perfect con-

tainers.Place a decorative label on the bottle

or jar describing the herbal ingredients used. Containers may be decorated by tying a raffia bow, a few herb sprigs or dried flowers around the neck of the bot-tle or jar. Wrapping strands of brightly colored yarn or strips of festive wrap-ping paper that have been dipped in glue also add a decorative touch.

HERBAL VINEGAR

2 cups vinegar (distilled white, cider or wine)

4 to 6 tablespoons of fresh or dried herbs (tarragon, chive, basil, marjoram, dill, sage, rosemary, savory, mustard or

bay leaves, in combination or alone)

1. If using fresh herbs, rinse them and pat dry with a paper towel. Bruise herbs with a mortar and pestle or by rolling over them once or twice with a rolling pin. Place herbs in a sterilized jar.

2. In a small, non-corrosive saucepan, heat vinegar until it is warm to the touch, but not hot. If using a microwave, place vinegar in a glass bowl and heat on low power for about 30 seconds. Pour the vinegar over the herbs. Let the mix-ture cool.

3. Place a piece of foil over the mouth of the jar and seal it tightly. Label the jar and place the herbal vinegar in a cool, dark place for at least 7 days and up to 3 weeks so that the flavors have a chance to mingle.

4. After the flavors have infused, place several layers of cheesecloth inside a funnel and strain the vinegar into a ster-ilized bottle or jar. Leave at least an inch free at the top of the bottle if inserting a cork or glass stopper. Makes 2 cups.

your readers of how important it is to keep their pets away from holiday foods. Some foods, like chocolate, can be dead-ly poisonous to dogs, while rich foods and ingredients like onions or raisins can be dangerous for cats and dogs. -- Jessica L. in Camden, New Jersey

DEAR JESSICA: You told them, and thank you! The holiday season, with plenty of parties, family and food, can be hectic for everyone, but it’s important to monitor pets and make sure they’re kept away from potentially harmful items.

Many foods, not just chocolate but on-ions, grapes and raisins, nuts, avocados and other common holiday foods can cause house pets great harm. Store them well out of reach and keep pets out of the kitchen when cooking, and away from serving tables. A more extensive list is available from the Humane Society of the United States.

Christmas tree ornaments can poten-tially be harmful. Cats love knocking down glass ornaments and also may accidentally ingest tinsel or other shiny

strands. Dogs may gnaw on interesting packages or break into gift boxes of can-dy or fruit.

Even plants need to be kept out of reach: poinsettias, for example, are toxic to cats.

To minimize risk, place breakable orna-ments higher in the tree and put plants well out of reach. During parties or din-ners, place your pets in a separate area of the house with bedding, food and water, and check on them occasionally. (This also is helpful in keeping pets’ stress lev-els down.)

1 cup butter or margarine (2 sticks)2 cups confectioners’ sugar2 cups all-purpose flour1 teaspoon ground cinnamon1/2 teaspoon ground nutmeg1/2 teaspoon ground cloves1/8 teaspoon salt1 large egg yolk2 cups blanched almonds, groundAbout 1 cup red candied cherries, each

cut in half

1. Heat oven to 350 F. In large bowl, with mixer at low speed, beat butter with confectioners’ sugar until blended. Increase speed to high; beat until light and creamy. At low speed, beat in flour, cinnamon, nutmeg, cloves, salt and egg yolk. Knead in almonds.

2. Roll dough into 1-inch balls (dough will be crumbly). Place balls, 2 inches apart, on ungreased large cookie sheet. Gently press a cherry half on top of each ball. Bake 15 minutes, or until bottoms of cookies are lightly browned.

3. With wide spatula, transfer cookies to wire rack to cool. Repeat with remain-ing dough and cherries. Makes about 6 dozen cookies.

1 can (14 ounces) sweetened condensed milk1 pound semisweet chocolate, chopped1 ounce unsweetened chocolate, chopped1 1/2 teaspoons vanilla extract1/8 teaspoon salt

1. Line 8-by-8-inch metal baking pan with foil, extending foil above edge at 2 sides.2. In 2-quart saucepan, combine condensed milk and chocolates. Cook over me-

dium-low heat 5 minutes or until chocolates melt and mixture is smooth, stirring constantly.

3. Remove saucepan from heat; stir in vanilla and salt. Pour chocolate mixture into prepared pan; spread evenly. Refrigerate until firm, at least 4 hours or overnight.

4. Remove fudge from pan by lifting edges of foil. Invert onto cutting board; dis-card foil. Cut fudge into 8 strips, then cut each strip crosswise into 8 pieces. Store fudge in tightly covered container, with waxed paper between layers, at room tem-perature up to 1 week, or in refrigerator up to 1 month. Makes 64 pieces.

* Each piece: About 55 calories, 1g protein, 8g carbohydrate, 3g total fat (2g satu-rated), 1g fiber, 2mg cholesterol, 15mg sodium.
