Vendor Spotlight - Painted Hills Natural Beef Located in Fossil, Oregon, Painted Hills cattle is raised with no added hormones and NEVER given antibiotics or fed any animal by-products.Seven ranching families founded and became the first board of directors and members of Painted Hills Natural Beef some 20 years ago with the notion that beef could be better, could taste better. While the times have changed, their methods of ranching the way nature intended have

not. This means pasture raised cattle without the use of added hormones and never given antibiotics. It means taking the time, care, and effort to do things right. It means a beef that’s as striking as the natural wonders it’s named after.Their cattle are fed a 100% Vegetarian diet which begins at birth. For a large part of the animals’ lives, they range freely in the rolling grass hills of their family farms in the Pacific Northwest. At the age

of approximately 14 months, the cattle are carefully moved to a spacious feeding facility for finishing. At this point, they are fed a combination of locally grown barley, corn and alfalfa hay. It is their experience that this is what lends to the extraordinary flavor of Painted Hills beef.

RECIPE OF THE WEEK

Ingredients:• 1 package Udon Noodles• 1 can Coconut Milk• Mint – 2 tsp.,

chiffonade sliced• Basil – 2 tsp.• Salt and Pepper –

to taste• Chili Sauce – 1 Tbs.• Chicken Stock –

1 cup• Lime Juice – 1 tsp.• Minced Garlic –

1 tsp.• Minced Ginger –

2 tsp.• Onion – 3 ounces• Sliced Red Bell

Pepper – 3 ounces• Chicken – 6 ounces thinly slicedCook noodles and drain, arrange in bowl with cooked chicken.

Soup:Sauté onion, red bell pepper, ginger and garlic until al dente.Add stock and coconut milk, basil, mint, chili sauce and lime juice.Simmer 20 minutes.Pour mixture over Udon Noodles. Garnish with lime slice, mint and basil leaves.
