CONSTRUCTION CHECKLIST
General Contractor Responsibilities:
· Responsible for informing of job site safety conditions ie; post tension concrete,
cranes, welding areas, live electrical work, open pits
· Responsible for all areas to be clean and all finishes (FRP, tile, paint, etc.)
completed before equipment delivery
· Responsible for special conditions concerning wall backing or blocking for kitchen
and bar equipment
· Available access (minimum clearance of 42”) to all areas requiring kitchen or bar
equipment
· Inform K.E.C of any schedule changes, plan changes or updates of any kind in
reference to kitchen equipment
· Walk-in cooler slab to be laser level. G.C.‘s roofer to flash and counter-flash walk-in
roof membrane as needed.
· Responsible for final cleaning of K.E.C. equipment
· ALL FINAL ELECTRICAL, PLUMBING, GAS & MECHANICAL CONNECTIONS
· All fabricated items will be designed and manufactured to a “HOLD TO” dimension
Electrical:
· Provide all power supplies in floors, walls and ceilings
· E.C. makes all required penetrations
· E.C. makes ALL final connections
· E.C. responsible for control wiring (refrigeration, water solenoid valves, sink
faucets)
· E.C. responsible for sealing all electrical penetrations in cooler/freezer panels and in
conduits or flexible connections
· E.C. responsible for installing and wiring of lighting fixtures and alarm systems in
walk-in cooler/freezers
· E.C. responsible for installation and connection of heat tapes on drain lines
· E.C. responsible for sizing all wiring for specified equipment
Plumbing:
· P.C. responsible for all floor, wall and ceiling penetrations/sleeves, including sealing
such penetrations
· P.C. responsible for all drain assemblies for all kitchen and bar equipment, sinks,
etc.
· P.C. responsible for installing and hanging wall mounted hand sinks
· P.C. responsible for street elbows for all wall mounted sinks
· P.C. responsible for all floor drains or floor sink locations to avoid conflict with leg or
caster assemblies
· P.C. responsible for installing all soda and beer line chases (no 90’s, all sweeping
ells)
· P.C. responsible for walk-in cooler/freezer drain lines including traps and clean-outs.
Freezer drain lines to be copper – NOT PVC and to be insulated as required.
Insulation installation to be coordinated with electrical – heat tape installation.
· P.C. responsible for ice machine connections
· P.C. responsible for all water connections on all kitchen and bar equipment
including vacuum breakers/backflow preventers
· P.C. responsible for all steam connections. Steam drain lines must withstand 212
degree temperatures.
Mechanical:
· Responsible for installing/hanging of all exhaust, condensate hoods and dish
machine pant legs, installing roof curbs and setting of exhaust and make-up air
fans. To provide and install all necessary supply and exhaust duct, both grease and
vapor.
· Responsible for SS wall cladding under hood systems, corner guards and framed
opening wraps
· Responsible for all direct vent connections to equipment supply or exhausts
· Responsible for sleeving, sealing and insulating all penetrations
· Provide and install all refrigeration line runs and make all necessary connections for
a complete system including start-up of equipment.
Carpentry:
· Responsible for wall backing, blocking or strapping
· Review plans to insure door openings align with walk-in cooler/freezer doors and
accessories adjacent to doors; i.e. Thermometers, alarms, light switches, etc.
Kitchen Equipment Company - Dykes Restaurant Supply:
· Responsible for insuring all F.F.E. is delivered to job site
· Responsible for installing the walk-in cooler and/or freezer units (G.C to provide
laser level concrete slab)
· Responsible for uncrating, setting in place, removal of protective plastic, minimal
leveling, caulking and making all equipment “ready” for final connections. ALL
FINAL CONNECTIONS BY OTHERS.
· Responsible for installation of all free standing or wall mounted shelving
· Responsible for installation of restraint systems on kitchen equipment
· Responsible for installation of tables, chairs, booths or millwork counters if
applicable
· NOT responsible for any core drilling
· Responsible for field welds if required on S/S tables or products
· Responsible to insure all equipment or fabrication will fit through schedule door or
other openings to access final placement
· Responsible for taking critical dimensions for equipment after all walls (with final
finishes applied) or other permanent structures are in place
· Any additional modifications or alterations to equipment, tables or shelving (holes
drilled, etc) necessary for the routing of plumbing or electrical lines will be an
additional expense
EXCLUSIONS:
· DRS does not provide any supply or exhaust duct for the hood operating system.
· DRS does not provide refrigeration line sets or any hard piping , final connections,
system charging
· DRS is not responsible for leveling of equipment beyond the leveling devices
offered by the specified manufacturer; i.e. extreme floor slope, floor sinks under
legs/casters, etc.
a. The Ansul fire suppression system installation is included with the hood
system package and completed by an authorized installer that has been
subcontracted by the hood manufacturer
a. Installation sloped membrane roof cap (if applicable). All flashing and
counter flashing to structure is by others.
b. Provide remote condensers only (setting of condensers, all electric
and refrigeration connections by others)
c. Installation of evaporator
REFRIGERATION/VENTILATION NOTES:
1. WATER AND GREASE PROOF EXHAUST DUCTS FROM VENT CONNECTIONS OF
DISHWASHERS, VENTILATORS AND CONDENSATE HOODS BY MECHANICAL
TRADES.
2. DISHWASHER, VENTILATOR AND CONDENSATE HOOD CFM REQUIREMENT, DUCT
SIZES AND ALL OTHER VENTILATION SPECIFICATIONS TO BE CONFIRMED BY
ARCHITECT/ENGINEER.
3. ALL LABOR AND MATERIALS REQUIRED FOR THE EXHAUST AND/OR SUPPLY AIR
HANDLING SYSTEMS, INCLUDING DUCTWORK AND FANS ARE TO BE PROVIDED
BY MECHANICAL TRADES.
4. THE FOLLOWING MINIMUM GENERAL VENTILATION REQUIREMENTS ARE
RECOMMENDED:
A. COOKING, PREPARATION, POTWASHING AND DISHWASHING AREAS - 45-60
AIR CHANGES PER HOUR.
B. STORAGE AREAS - 2-3 AIR CHANGES PER HOUR, 70 DEGREES FAHRENHEIT
MAXIMUM AMBIENT TEMPERATURE.
C. OFFICE AREAS - 4 AIR CHANGES PER HOUR.
D. AIR COOLED REFRIGERATION CONDENSING UNITS - 1000 CFM PER
HORSEPOWER SUPPLY AND EXHAUST - 90 DEGREES FAHRENHEIT
MAXIMUM AMBIENT TEMPERATURE.
E. WATER COOLED REFRIGERATION CONDENSING UNITS - 200 CFM PER
HORSEPOWER SUPPLY AND EXHAUST - 90 DEGREES FAHRENHEIT
MAXIMUM AMBIENT TEMPERATURE.
ALL AREAS MUST BE VENTILATED AS REQUIRED BY APPLICABLE GOVERNING CODES.
5. VENTILATION CFM, STATIC PRESSURE AND DUCT SIZES SHOWN ARE THE
EQUIPMENT MANUFACTURER'S MINIMUM REQUIREMENTS.
6. STRUCTURE/RACK FOR MOUNTING WALK-IN CONDENSING UNITS ON ROOF IS TO
BE FURNISHED BY GC OR APPROPRIATE TRADE. IF A CONCRETE PAD ON
GROUND IS USED, IT IS FURNISHED BY GC.

1. ALL DIMENSIONS SHOWN ARE FROM FINISHED WALLS, FLOORS, CEILING
AND/OR FROM CENTERLINES OF STRUCTURAL COLUMNS. DIMENSIONS ARE

4. DEPRESSIONS FOR WALK-IN COOLERS/FREEZERS AND FLOOR TROUGHS
ARE TO BE SMOOTH AND TRANSIT-LEVEL. SEE PLAN FOR SIZES,
DIMENSIONS AND ADDITIONAL INFORMATION. A SLAB TO SLAB DIMENSION
MEANS CONCRETE TO CONCRETE.
5. CONCRETE AND MASONRY BASES AND CURBS ARE TO BE SMOOTH AND
TRANSIT-LEVEL. SEE PLAN FOR SIZES AND ADDITIONAL INFORMATION.
6. BACKING MATERIALS SUITABLE FOR WALL-MOUNTED EQUIPMENT TO BE
PROVIDED BY ARCHITECTURAL TRADES. PRESSURE TREATED PLYWOOD IS
PREFERRED. LOCATION AND SIZES SHOWN ON PLAN.
7. CURBS FOR ROOF-MOUNTED CONDENSING UNITS PROVIDED BY
ARCHITECTURAL/STRUCTURAL TRADES. PITCH POCKET FOR LINES IS BY GC
OR APPROPRIATE TRADE.
8. DRS FOODSERVICE DESIGN TO PROVIDE WALK-IN REFRIGERATION UNITS,
MOUNT EVAPORATOR COILS, RUN REFRIGERATION LINES AND START
REFRIGERATION SYSTEMS PRIOR TO OPENING THE FACILITY.
9. WALL, FLOOR AND/OR ROOF SLEEVES TO BE PROVIDED BY PLUMBING
AND/OR ELECTRICAL TRADES.
10. ALL QUARRY TILE FLOORS ARE TO BE WASHED AND THOROUGHLY RINSED
PRIOR TO THE SETTING OF ITEMS OF FOODSERVICE EQUIPMENT. IF AN
ACID PRODUCT IS USED AFTER WALK-INS ARE INSTALLED, DOORS ARE TO
BE LEFT OPEN TWO DAYS FOR DRYING.
11. ANY FLOOR PENETRATIONS REQUIRED TO SECURE EQUIPMENT ARE BY
THE GENERAL CONTRACTOR OR APPROPRIATE TRADE.
PLUMBNG NOTES:
1. ALL DIMENSIONS SHOWN ARE FROM FINISHED WALLS, FLOORS, CEILING AND/OR FROM
CENTERLINES OF STRUCTURAL COLUMNS. DIMENSIONS ARE TO BE VERIFIED BY THE GENERAL
CONTRACTOR AND ALL TRADES UTILIZING THESE PLANS.
2. ALL DIMENSIONS ARE CLEAR "FINISH-TO-FINISH" UNLESS OTHERWISE NOTED.
3. UTILITIES SHOWN ARE FOR ITEMS OF FOODSERVICE EQUIPMENT ONLY AND ARE THE MINIMUM

5. ALL PLUMBING MATERIALS, INCLUDING PIPE, TRAPS, STOPS, VALVES, FITTINGS, SHUT-OFFS,
WATER HAMMER ARRESTORS, PRESSURE REDUCING VALVES, GAUGES, UNIONS AND
INSULATION ARE TO BE PROVIDED BY MECHANICAL TRADES.
6. ALL PLUMBING LABOR, INCLUDING MOUNTING OF DRAINS AND FAUCETS AND CONNECTIONS
FROM POINT-OF CONNECTION ON EQUIPMENT TO ROUGH-IN POINT AS SHOWN ON THESE
PLANS IS TO BE PROVIDED BY MECHANICAL TRADES.
7. UTILITIES ARE TO BE CONCEALED IN WALLS AND STUBBED-OUT OF WALLS. DO NOT STUB-OUT
OF THE FLOOR AND RUN EXPOSED ON THE FACE OF THE WALL.
8. PLUMBING COMPONENTS, INCLUDING VALVES, TRAPS, SHUT-OFFS, GAUGES AND
CONNECTIONS SHALL NOT INTERFERE WITH THE OPERATION OF ITEMS OF FOODSERVICE
EQUIPMENT.
9. WATER PRESSURE IN EQUIPMENT AREA SHOULD NOT EXCEED 50 PSI IN BOTH THE HOT AND
COLD WATER SUPPLY LINES. THE WATER PRESSURE TO DISHWASHERS AND BOOSTER
HEATERS SHOULD NOT EXCEED 25 PSI PRESSURE REDUCING VALVES MUST MEET EQUIPMENT
MANUFACTURER'S FLOW RECOMMENDATIONS.
10. ALL LINES ARE TO BE FLUSHED FREE OF FOREIGN MATTER AND LINE STRAINERS CLEANED
PRIOR TO MAKE-UP OF FINAL UTILITY CONNECTIONS.
11. GREASE TRAPS ARE TO BE RECESS-MOUNTED, FLUSH WITH TOP OF FINISHED FLOOR. GREASE
TRAPS ARE NOT TO BE LOCATED BENEATH ANY ITEM OF FOODSERVICE EQUIPMENT AND
REMOVAL OF COVER SHALL NOT INTERFERE WITH THE OPERATION OF EQUIPMENT ITEMS.
12. HOT WATER TEMPERATURE TO BOOSTER HEATER MUST BE 140 DEGREES FAHRENHEIT
MINIMUM. INSULATED 180 DEGREES FAHRENHEIT HOT WATER LINE FROM BOOSTER HEATER TO
DISHWASHER AND WATER HAMMER ARRESTOR-ASSE-1010-STD AT CONNECTION TO
DISHWASHER PROVIDED BY MECHANICAL TRADES.
13. DRAIN LINES FROM EVAPORATOR COILS-QUICK-FALL TYPE ARE TO BE TRAPPED OUTSIDE
REFRIGERATED AREA AND EXTENDED OVER BUILDING DRAIN. LABOR AND MATERIAL TO BE
FURNISHED BY MECHANICAL TRADES.

15. PROVIDE 1" DIAMETER FLEXIBLE CONDUIT ABOVE CEILING FROM DETERGENT DISPENSING
SYSTEM METER AND TANKS TO DISHWASHER WITH 24" MINIMUM RADIUS SWEEP BENDS FOR
DETERGENT LINES. COORDINATE WITH END USER.
16. ANY TRENCH-TYPE DRAIN TROUGHS REQUIRED ARE SHOWN ON THESE PLANS. TROUGHS ARE
TO BE SPECIFIED BY ARCHITECT/ENGINEER. GRATE(S) ARE TO BE SUBWAY-STYLE.
17. GAS MAIN TO BE PROVIDED WITH A READILY ACCESSIBLE MANUAL SHUT-OFF VALVE BY
MECHANICAL TRADES. A LOOPED GAS SERVICE IS RECOMMENDED TO PROVIDE FOR BALANCED
FUEL DISTRIBUTION. SIZE OF GAS MAIN TO BE DETERMINED BY ARCHITECT/ENGINEER. SEE
PLUMBING SCHEDULE FOR BTU/HOUR REQUIREMENTS.
18. FIRE SUPPRESSION SYSTEM MUST BE PROVIDED WITH MANUAL RESET BUTTON AND
INTERCONNECTED TO THE GAS SOLENOID SHUT-OFF VALVE. SPECIFICATIONS AND DETAILS TO
BE FURNISHED BY MECHANICAL TRADES. UNLESS OTHERWISE NOTED.
19. MECHANICAL GAS SOLENOID SHUT-OFF VALVE FOR USE WITH THE FIRE SUPPRESSION SYSTEM
TO BE PROVIDED BY DRS/DYKES UNLESS OTHERWISE NOTED FOR INSTALLATION BY
MECHANICAL TRADES.
20. DISPOSER DRAIN LINES ARE TO BE PROVIDED WITH ADEQUATE CLEAN-OUT FITTINGS.

TEMPERATURE CONTROL DEVICE AND CONDENSING UNIT BY ELECTRICAL TRADES. SEE ROUGH-IN PLAN

14. DRAIN LINE FROM FREEZER COIL TO BE WRAPPED WITH HEATER CABLE, TAPED AND INSULATED TO
PREVENT FREEZING OF CONDENSATE IN THE LINE. HEAT TAPE TO BE FURNISHED AND INSTALLED BY
ELECTRICIAN.
15. WALK-IN COOLER-FREEZER VAPOR-PROOF LIGHT FIXTURES ARE SHIPPED LOOSE BY DRS Foodservice
Design, Inc. FOR FIELD INSTALLATION AND INTERWIRING AS REQUIRED BY ELECTRICAL TRADES.
