GIANT COUSCOUSWITH CHORIZO,ARTICHOKES &
SPINACHCourtesy of Rukmini Iyer's 'The Quick
Roasting Tin'
Serves 2 as a main meal or
makes 3-4 smaller lunch
portions
Prep time 10 minutes
Cook time 20-25 minutes
Preheat the oven to 180 degree
fan/200 degrees. Tip the couscous,
stock, artichokes and onion into a
roasting tin and scatter over the
chorizo. Cover the tin tightly with foil
then transfer to the oven and cook
for 20-25 minutes or until the
couscous is tender.

200g Giant couscous
400ml vegetable stock
200g jarred artichokes, drained
1 red onion, sliced
80-100g chorizo, sliced or
chopped as preferred
150g spinach, chopped
1 lemon, zest and juice
seasoning to taste Once cooked, stir through the
spinach and the lemon zest and
juice. Season to taste.
