Wow, That’s Great Banana Bread (with substitutions from page 5)

¼ cup nonfat Greek yogurt

3 ripe bananas

1 ¼ cups sugar

1 teaspoon vanilla

1 teaspoon baking soda

1 stick butter

2 egg whites

1 whole egg

1 ½ cups flour

Preheat oven to 350°. Mix Greek yogurt and baking soda in a small bowl. The yogurt will rise as it sits. In another bowl, mash 3 bananas with a fork. In a larger mixing bowl, beat butter and sugar with an electric mixer until light and fluffy. Add eggs and vanilla and continue beating until mixed well. Set electric mixer on slowest speed and alternate adding flour and mashed bananas to batter. Fold in yogurt mixture with a spatula. Spoon batter into greased loaf pan and bake at 350° for 50 minutes.

Wow, That’s Great Banana BreadI found this recipe in a church cookbook years ago. Family and friends alike now request it. In fact, people even save ripe bananas for me in

the hopes I will whip up a batch of banana bread. The most I’ve made at one time is 21 loaves!

Everybody’s Favorite Pink SurpriseMy mother, Lillian E., made this fruit dessert for special family

gatherings. It was my niece’s favorite. The original name is Pink Champagne Dessert, but my niece was very young and didn’t

remember that, so she gave it a new name, which described it perfectly.

1 8–ounce block cream cheese

Beat the cream cheese and sugar until very fluffy. Stir in strawberries. Add in drained pineapple and sliced bananas. Mix well and fold in thawed Cool Whip®. Put mixture into a 9" x 13" pan and freeze. Take out 20 minutes before serving and cut into squares.

Peanut Butter Banana Icebox Pie— Mary R., Agent, Prairieville, LA

4 bananas

1 graham cracker pie crust

4 squares semi-sweet baking bar (4 ounces)

1 package cream cheese

1 cup peanut butter

½ cup light brown sugar

2 teaspoons vanilla extract

1 large container Cool Whip®

Melt semi-sweet baking bar in the microwave until smooth, then spread on pie crust. In a mixer, combine cream cheese, peanut butter, light brown sugar, vanilla and Cool Whip. Mix on medium speed until smooth and well blended. Slice bananas and layer 2 bananas on top of the chocolate on the pie crust. Layer half the peanut butter mixture on top. Repeat, ending with peanut butter mixture. Refrigerate for about 6 hours before serving.

Sugar-Free Banana PuddingWith my honey’s life change, I had to learn to cook a little

differently, and for both of us that is a good thing. This is my version of light banana pudding.

1 box sugar-free vanilla wafers

Line the bottom of a 9" x 9" pan with vanilla wafers. Mix the milk, vanilla and 3 packets Splenda® together, then whisk in pudding and Cool Whip®. In a small bowl, mix the lemon juice and remaining Splenda® together, then dip each banana slice in the juice and remove with a slotted spoon to not take out too much juice. Stir the bananas into the pudding and slowly pour over the wafers in the dish. Place a layer of wafers across the top of the pudding and let sit for up to one day to let the flavors develop fully.

1 box sugar-free vanilla or banana

instant pudding

1 cup skim milk

1½ teaspoons vanilla

6 packets Splenda®

8–ounces sugar-free Cool Whip®

1 tablespoon lemon juice

2 bananas, sliced

*Tip: For every cup of applesauce you use, reduce

the amount of liquid in the recipe by ¼ cup.

1 cup unsweetened applesauce

1 cup puréed ripe bananas

1 cup evaporated skim milk

1 cup puréed black beans

1 cup milk and 1 tablespoon lemon juice

2 egg whites

1/4 cup honey

1 cup nonfat Greek yogurt

1 cup marshmallow cream

1/2 teaspoon pure vanilla extract

1 cup sugar

TIPS

For every cup of applesauce you use, reduce the amount of liquid in the recipe by 1/4 cup.

Avocado purée may also be used to achieve

the same results.

Great for soups and casseroles. When baking, add a dash of vanilla for

extra flavor.

This gluten-free substitute cuts calories and adds proteins to breads, brownies and cakes.

Let the milk and lemon juice stand anywhere

between 5 to 15 minutes.

Combine egg whites and whole eggs in baked goods since the yolk helps create

the smooth texture.

The darker the color of the honey, the sweeter and more

potent the flavor.

Use this substitute to create soups, dips and sauces that

are packed with protein.

Or, sift powdered sugar on top of baked goods for a sweet

treat without the calories.

Save big calories by using this substitute for up to half of your

recipe’s required sugar.
