I was fortunate my grandfather (right) ensured I was aware of the sacrifices our Anzacs made in order for us to live in the beautiful country that we occupy today. When I was old enough he told me about his story as a veteran of WWII. Thankfully, my grandfather (now 93) is still around to share his stories, but sadly, many of his era are not. With Anzac Day coming up on April 25, GCM dedicated this issue to our local heroes, our war veterans.

Over the course of a few days our team spoke with and photographed 27 veterans from the Gold Coast area for our feature, The Anzac Spirit. They melted our hearts with their stories of loss, triumph and mateship, but most importantly they reminded us of the Anzac spirit, something that is inevitably engrained in every one of us. This spirit was first recognised in the Anzacs, those who fought in WWI. In my interview with David Mattiske he described the traits of the spirit perfectly when he said, “Now it is very true that a crisis does not determine a man’s character, it reveals it, and Gallipoli did just that. Gallipoli brought together all the newly formed characteristics that were not yet evident, or had not been evaluated, at the time of Federation, but which we now widely accept as uniquely Australian”.

It was this rare form of courage, a tenacious spirit and a knack for being resourceful and innovative that made the Australian soldier a force to be reckoned with. It was an honour to witness this spirit in every one of the 27 veterans that we spoke to while compiling this feature. From Norm Anderton who was captured as a Prisoner of War and sent to work on the Thailand to Burma railway where 2646 fellow Australians lost their lives. To Bram Burrows who at the age of 19 became a gunner on a Catalina. Remarkably he survived 60 missions up the China Coast to Wenchow (the longest flight in the war) and was on board the first plane to fly into Singapore to rescue Prisoners of War in Changi. I could go on, but I suggest you to read their remarkable stories for yourself; of the good times, the long hours training, the loyalty and the ones left behind. But most of all I encourage you to think about the spirit of the Anzacs, especially on Anzac Day this year. It is, after all, this spirit that signifies the very essence of what it means to be Australian.

This issue of GCM is very close to our team’s hearts. For photographer Jess McDonald her work is in memory of her grandfather Cyril Robert Wood (Bob) who served in the Army in WWII yet sadly passed on August 6, 2006.

Battle of Milne Bay 25 aug-7 Sep 1942/1939-45

There were five of us. They wanted five volunteers to go to Papua New Guinea from our camp at Engelburt Camp in Sydney only seven months into our training. Only three of us ever came home. I’ve got more friends down there(points to the ground) than I do up here. You don’t know what it is about when you where young, everyone was keen to sign up.

Your first experiences are always the hardest part of war. It’s nothing like on the movies, it’s fair dinkum. I was aboard the MV Anshun at Milne Bay when we started getting shelled by the Japanese cruiser Tenryu during the battle of Milne Bay in 1942. As the ship went down we had to climb ashore and hide under nearby palm trees. I don’t tell very many people this, but when I was crouched on the beach after our ship sank, who do you think I wanted? I didn’t cry, but all I wanted was my mum. After the bombing had stopped I looked up into the darkness of the trees and saw bright fireflies everywhere. It was eerie.

When I was walking down the hallway at home to leave my mother said to me “You’re too young”. It always stuck in my head. We used to have a language with us Australians around the camp so the Japs didn’t know what we were talking about. When you get old like I am now, I’m 91 this year, you lay in bed and I have such a vivid memory of that ship sinking, it’s clear as a picture.

I got sick often, I had malaria three times, I had tropical ulcers and tropical ears. We never had a nurse, we had an RAP station(Regimental Aid Post) and we used to call him Aspro because you would go to him with anything wrong, a bullet wound even, and he would just give you an aspirin.

I’ve been married for 62 years to my wife whom I met on a blind date. When I came home from war my uncle sold me one his houses for $400 and I worked as a taxi driver for the rest of my life. When I came home from the war I would sleep on the floor in my bedroom and my mum would say “What are you doing?” I kept sleeping on the floor for a year after that because I just wasn’t used to sleeping in a bed.

Once when I was out on patrol we were attacked by an enemy. It was a bit of a shock. We were going out four or five thousand yards and for some unknown reason we stopped. I have no idea why. We were above ground and all of a sudden we saw a flare go up from the Germans. It lit the place up like daylight. They must have saw us because they fired everything they had, machine guns, rifles and god knows what else. It went on for about 10 minutes. A bullet landed a couple of inches from my shoulder, but I couldn’t move, I just laid flat out on my belly. I saw the bullet land right near my shoulder. Amazingly no-one was hurt and gun fire stopped. I was what they called a section leader so when it stopped I saw the Sargeant and I said, what do we do now? He told me to have a look around and then we made our way back. In the meantime I saw an image of my fiancee and she said to me “This way Mick”.

We eventually made our way back into D company’s lines and then into C company’s lines and the OC said, “Thank Christ you are back. What happened?” He thought we were all dead, but there was no casualties at all. There were lots of other experiences, but that one really sticks in my mind.

You never knew what was happening and you didn’t really wonder what was happening. You knew each night you had to go out on patrol, or if you weren’t on patrol you were in your donger. You had to do what you were told and what the CO said. It was allright, sometimes it was a bit scary, but most of the time it was pretty good. But that was Tobruk, El Alamein was different. There were more casualties, it was bloody terrible. Only two of us came out of El Alamein.

We were involved in a mid-air collision with another Lancaster. The crew on the other Lancaster were killed so we were very lucky. There were seven in the crew and just three survived from the Lancaster I was on. I was the only Australian in the crew. There was a Canadian pilot and a Canadian navigator and the rest were RAAF boys. When I was captured by the Germans they took us from Berlin to Lubeck and then to Hamburg, then to Frankfurt, where the interrogations centre was. They asked me all the questions in the world. All you could tell then was your name, your number, your rank and your next of kin. They knew more about us than what we knew. I knew the other boys were there with me but we were all put in separate cells. I didn’t see them again until we all went through the interrogation. There were three officers in the crew and they were taken to another camp and we were taken to a German Army controlled camp. The German army didn’t like the German Air Force and vise versa so we being Air Force in a German Army camp, we were on the outer. We didn’t help ourselves really, we used to torment the Jerries.

I was in the camp for just on 18 months, but I was lucky I guess. There were a couple who were there for five years. They were captured on the second day of the war in Norway. I had some very good mates with me in the camp. One of the worst things I ever saw was there was about 50 Russians who were amputees. Either an arm or a leg. What really upset me was there was a Russian on a little sled, he had no arms and no legs. Two Russians were pulling him along, they had each lost an arm each. I only ever saw them the once and I don’t know what ever happened to them.

On the day we were released from the camp, we woke up in the morning. Normally the guards came into our hut to get everyone up to go outside and be counted. On this particular morning there were no guards and no-one to kick us out. We got up and started looking and the next thing, there were about six Russian Coassacks on their horses. They kicked in the gate, rode around and then off they went. We were free.

Below are extracts from Bram’s log book, which he had to write in after the completion of each mission. Bram completed 60 missions in total, each recorded, including the maiden voyage to Changi to rescue POW’s from the camp. There were thousands waiting to be rescued, Bram could only take five POW’s at a time.

Mission number 5Destination: Hong Kong HarbourDate: 29.03.45 – 30.03.45Distance 2000 nautical milesTime: 20 hours, 25 minutesDeparted Jinamoc at 10am and flew to Lingayen. Had uneventful trip arriving at 3am. Refuelled and left USS area at 4:30pm. Flew to Ago Isles and set course for Pratas Reef. Sighted same just after dusk and then set course for Leman Isle arriving at 9:30pm in bright moonlight. Started datum run at 500 feet passing junks and ships around islands in the harbour. All were brightly lighted. Got down to 300 feet and dropped two, 2000 pound mines as ordered. As before, set course for Mindoro Island and climbed to 6000 feet to get above the weather. After about six hours made landfall, 15 miles south from Sanjose. We followed the coast until lights of Sanjose appeared, then set course for Jinamoc. Ran into foul weather, but finally hit base. Operation successful.

Mission number 6Date: 16.05.45Destination: Soerabaja, JavaTime: 25 hours 30 minutesDistance: 2500 nautical milesLeft Darwin at 8:30am and after an uneventful trip reached West Bay at 11:30 for refuelling. Took off again from West Bay at 3:15pm and course for north-west of Soemba and arrived there a few minutes before last light. Altered course from Medang Isle, flying over Soerabaja Isle at 2000 feet. Ran into a weak, intense tropical front and went through Soleh Bay on radar. Set course for north-east tip of Tradwa Isle and paralleled the coast using radar. Took 45 minutes to locate datum and started run at midnight. Flew over four ships before datum and made our run at 300 feet. Soon after starting our run a searchlight got our tail for a few second. Another searchlight on the breakwater depressed to sea level couldn’t pick us up again. Although very close at times, five tracers were coming up from breakwater. A light ship opened up with 200mm. I was ducking in the blister. Came home through Lombok Strait, reaching Australia at 9:30. Had trouble locating West Bay and finally landed with 10 gallons of fuel in each tank. Banked and engine spluttered. Operation successful.

All of your work is derived somehow from the ocean. Where did this fascination come from? I remember the

first time I went to the beach as a kid. Playing with crabs, the

waves washing over me and making sandcastles. I thought it was

magnificent. It’s such an incredible place. I have spent most of

my life on the east coast beaches. My father was probably one of

the best swimmers in Australia of his time. He was right into surf

life saving so we would always follow him to the beach.

You’re currently working on your latest surf film. Tell me a little about this. The Spirit of Akasha is a 40-year celebration

of iconic surf film, ‘Morning of the Earth’. We really want to

make sure it reflects the original movie and have been working

on this for over a year now. We have contacted bands from all

over the world to produce an original soundtrack for the film

and will release the film when we feel it is worthy of what we

are setting out to achieve.

You achieve so highly in many different disciplines of arts, from photography to board shaping. What talent led you into the next? I have never done anything else. I started

making boards when I was young and I have been making them

ever since. It’s like anything, if you do it for long enough you get

better at it. It’s all the same idea to me, just in a different form.

Why do you think people have responded so well over the years to your work, staying true to form, retro and uncommercialised? There is so much commercial work out

there, everything is generally commercial these days. You can’t

turn the TV on to watch the football or surfing without being

bombarded by commercials as that’s how it pays for it all. With

what I do, the only way I can make money is if people support

it and want to buy it.

You are a huge advocate against arts piracy and this is one of the reasons you chose to do your films with a limited edition book. What are your thoughts on this and how is piracy destroying the industry? It has already destroyed the

industry. Issues like this go on in every industry; you can’t avoid it

happening. It forces you to go about things in a different way to

keep doing what you love to do. My concept is that if I release a

book and people really want to hold it in their hands and read it,

then they will buy it. And if not, that’s fine, they won’t get to see it.

What’s news for your band The Windy Hills? After playing

the Bleach* festival we are really going to bunker down and

finish our record that will coincide with the release of the film.

The Spirit of Akasha will be released as a touring show with

bands playing a live soundtrack and The Windy Hills will be a

part of this; so a lot of touring will be coming up for us.

You seem to be living every surfer’s dream. If your career did not come to fruition, what do you think you would be doing? I would be a banker (laughs). I have been so lucky to

work with what I love. Sometimes it’s hard bringing up a family

because it gets tricky when money comes into it, but we’ve

somehow made it work. We are very lucky to be living in our

country. If you want to live your dreams, you can in Australia.

Your first single “Still Mine” has experienced great success. Tell me about your second single due to be released? It’s called “Girl Like Me”. It’s a bit more upbeat and funky with a band behind me. I’ve had a lot of fun writing it.

How do you hope for people to feel when they are listening to your music? I write a song to tell a story. With a lot of the new songs I’ve been doing I want to make people laugh. I want to make people feel the way I felt when I was writing the song.

Where did you learn music and songwriting? I started guitar lessons when I was younger and as soon as I learnt three chords I started writing songs. It came pretty naturally to me. I am influenced a lot by the artists I listen to. I’m in my second year of university doing a music course at the moment so I hear a lot of music from all the different areas. It is where I met my band and have learnt the production side of music.

Is there anyone else in your family who is into music? My dad used to be in a band when he was younger. He loves that I’m in the music industry, he’s really supportive. I think I have inspired him to start playing again.

Do you enjoy writing your material as much as performing it? I love putting both of them together. I love when I’m performing and the audience is laughing along and knows all the words. It’s so fun performing my own original music.

You’ve played alongside top recording artists including Matt Corby, The Last Dinosaurs and Oceanics. What lessons have you learnt professionally working with them? It was so amazing to play at all the festivals with them. After talking to them and seeing them play, it made me realise that if you work hard and want something bad enough you can achieve it. The music industry is all about working hard and staying dedicated.

You have recently played at Bleach* Festival. Why do you think events like this are so important for the Gold Coast? It’s such a great event to get some culture back on the Coast. It put a lot of local artists on display and covered a lot of different artistic areas from all over the Coast.

What can we expect from you in the next couple of years? Hopefully I will get an album out and be touring with my band doing a lot of shows.

How did you get started doing photography? My dad taught me, he was always into filming and photography. We spent a lot of my childhood sailing on a yacht around the world, and during that time he did the videoing and I did the still photos. Later on I decided to do a photography course in Brisbane. It taught me a lot about technique, but it has really been mostly self-taught. You can learn a lot of technique, but it’s always about getting out there and making mistakes. Getting experience is what teaches you the most.

How would you describe your style of photography? I don’t think of myself as a surf photographer, more as a photographer that focuses on the waves and the ocean and the artistic intent. I’m more about focusing on the beauty, the energy, the form of the wave and the light. Capturing the feel of the ocean and what it feels like to be out there on a board or just swimming in the waves.

You had a spinal injury that prevented you from surfing? I was paralyzed when I was sixteen from a car crash. I had spinal injuries from that, so it was a tough few years. I learnt to walk again, which took a couple of years.

Was it difficult to go from being outdoors a lot to being indoors recovering? Yes, I suddenly had all that taken away, and I also lost my dad in the accident. It was one of those big life experiences and a big journey to go through. I guess they are what make you stronger, and it definitely taught me to go after your dreams and do what you really want to do.

Do you do any photography from a boat? Mostly from the shoreline, but I’ve done two trips to Tahiti and that’s going out in a boat and sitting next to the wave. It’s an unbelievable experience because the waves are about 25 to 30 foot. You’re right there, you’re right next to the wave. I was shaking so much, but hearing that wave, feeling that barrel and taking pictures of it was awesome. I have quite a few of those photos in my book.

Unfashionable TruthI was 17, embarking on my fashion career. I had been awarded an art scholarship and could take it under one circumstance; I had to leave high school straight away. So I did. Freshly dreadlocked, platinum blonde hair with beads sewn through, Dad’s old work pants worn lowly slung off my hips. Chopped-up Vinnies sweaters baring my midriff, while bracelets and anklets piled high weighed down my limbs. Glimpses of sparkle twinkled from my navel and nose piercing. I had vision. I had courage. I had no hope of receiving calls or visits from Karl whatsoever.

Years later I find the dirty sneak must have conjured up the idea to seek old photos of me. Perhaps off Facebook, my aunt’s online family photo album or those awkward high school websites where somebody has posted your old school photos you wished you could forget? I’m not quite sure. But I have seen the 2012 PreFall Chanel collection of dreadlock-clad models adorned with nose piercings and bare midriffs. Um, “Hello Karl, this is your inspiration speaking. Just wondering why you didn’t even name a handbag after me?” I was used, clearly taken advantage of.

Eventually someone else saw the good intentions of my misfortunate grace. I was able to wipe the dirt from my bare feet and don some working shoes; flip flops to be precise (I was in an office behind the scenes most of the time and still a full-time student, so why not?). I was the 20-year-old beauty and fashion director of a magazine. Trying to contain myself from the occupational “YAHHHOOOO” I felt the utmost joy smiling to my university lecturers as I sat front row reporting at Fashion Week while they stood far in the background, like tiny dots in the horizon. I was wearing the latest designer clothing direct from the designers themselves. They were dressed to kill with “Hey-I’m-A-Lecturer” drab. They would never know if I was waving or flipping the bird, and I am not one to kiss and tell.

It was a sweet revenge some could say for the constant reminders I received that I could never be a designer. I couldn’t sew or pattern-make. I couldn’t see the point, what an awful thing to study. I spent most of my time unpicking or convincing people that sloped shoulders was an amazing style I had seen from the latest Balenciaga collection and puckered sewing was a form of embellishment. I was able to interpretive dance (literally), the only A+ I received at university. One tutor cried tears of joy my dance was so good. I made a total arse of myself while other students passed horrified and confused. I look back and think, thank goodness I paid thousands of dollars for my education. I gave up in my final year and did a collection themed on an onion. It was titled “onions don’t make me cry”. Research showed that onions are sometimes purple and they have layers. Ground-breaking as it was, that was my collection. The garments got sent out to competitions, Karen Walker saw something in them that others did not see and awarded me the Air New Zealand Inspiring Designers’ award for fashion. It was only the highest design award you could win at the time for a final-year student. No biggie. My hope was revived. I spent the rest of the year high-fiving myself.

A TV crew documented my time mentored by Karen Walker. I encountered all of the awkward moments like not taking the microphone off when I went to the toilet and having witnesses

video my mistakes, not to mention filming my mother, who was just painful to watch. I had daily phone calls from magazines wanting to interview me. One national newspaper ran a story mentioning the onion collection and how most people think of onion breath when they think of onions. I later found out that if you googled my name, onion breath and fashion were the first items mentioned. I always thought there was a fine line between tres chic and tragic and there was the answer, me.

I flew to New York first class with the film crew to be with Karen for Fashion Week. Behind the scenes Karen’s mentoring was ship shaping me into the fashion designer I was yet to become. There was no high fives or pats on the back, she meant business and I was shown many of the harsh realities that came along with fashion. It wasn’t an easy road leading to Karen and in my odd series of events it is not an easy road working in fashion.

This season is all about the nude, fresh face and bold statement lips. Whether it is for work, a date, evening or everyday wear, this look is flawless. GCM’s resident beauty therapist Freya Ensbey shows us how to get this look.

When doing a minimal makeup look it is key to start with fresh skin. Exfoliate regularly, always remembering to go over the lips, as this will make your lipstick wear longer. I recommend doing this two to three times a week and having regular microdermabrasion facials to get to those deeper layers of skin. If it’s not for your sake at least do this out of respect to your products. No moisturiser or serum can work at its best sitting atop dry, dead skin. Always cleanse and moisturise your skin before applying makeup to ensure a smooth finish and to avoid the midday oily shine. Now your skin is at its best, follow these steps to achieve this fresh, natural look.

1. Apply foundation as your base and brush a little powder evenly over the top in circular movements, or leave as is if you prefer the dewy look.

2. Highlight your cheekbones, forehead and jawline by brushing on a soft bronzer. Do not go overboard, less is more when it comes to bronzing.

3. Slick some papaw ointment over the eyelids for a glossy finish and add black mascara to both top and bottom lashes. If the nude eye is too subtle for you, add some liquid eyeliner in a fine line to the top lid.

4. Dab your eyebrow brush or clean mascara wand into a brown eye shadow and brush along your brows. This achieves a full- looking eyebrow and will frame the subtle eye nicely.

4. Colour in your lips with a similar colour lipliner to your lipstick and trace just outside the outline of your natural lip shape. This will make your lips seem fuller and help your lipstick last longer. Add your chosen lipstick, blot with a tissue then add a second coat. For juicy lips with shine add a plain gloss over the top. Remember to reapply your lipstick after eating or drinking to avoid the colour rubbing off or “bleeding”.

It’s estimated that up to 90 per cent of women experience cellulite at some time in their life after puberty. Cellulite is a connective tissue disorder; the structures of the body’s fat cell chambers break down and cause this dimpling to appear. Loss of circulation to an area – whether caused by lack of exercise, too much sitting, clogged arteries or nutrient deficiencies can have a serious impact and accelerate cellulite formation. So how do we get rid of it? First overhaul your diet. Avoid alcohol, refined foods, saturated fat and caffeine. Eat lean meats, low-fat dairy and plenty of fresh fruits and vegetables, as well as drinking plenty of water. Body brush your legs every morning with a dry body brush in an upwards motion towards the heart. This activates your lymphatic system and will drain away toxins as well as stimulating your circulation. Be as active as possible. If you have a desk job, be sure to walk around the office every hour throughout the day to get your legs moving, and aim for at least three cardio sessions a week. With cellulite, the best cure is prevention; so if you are in the lucky 10 per cent of women who do not suffer from cellulite then these tips will be sure to keep you that way.

yoU only geT oUT…It’s one of my favourite photos. It marks the successful conclusion

of a long journey for a patient of mine and I. She asked for a

tummy tuck or abdominoplasty. I told her that her weight was not

in a safe range and I couldn’t get as good a cosmetic result. She

worked hard and got her weight down about seven kilograms,

well into the safe range, and we proceeded with the operation,

which all went smoothly.

However, she “celebrated” her improved shape a little too much

and really the subsequent weight gain defeated many of the

advantages that the operation had gained. She put on over nine

kilograms.

Both she and I realised without my even saying it that she had

really defeated the whole purpose of the exercise. Sure she didn’t

have the loose skin there anymore and her muscle wall was

stronger from the surgical repair. But a tummy tuck is really like

having a suit made, where you adjust skin and the muscle wall

to “fit” the person beneath it. The excess skin is trimmed away

and a smoother tighter tummy results. It is not a weight-reduction

operation. The skin and muscle sheath can only be tightened to

the extent that the “contents” will allow. So it is much more like a

“tailoring” operation; it just makes the outside of your abdomen

fit the inside!

Abdominoplasty is most commonly performed to either correct

the laxity resulting from childbearing or from the very successful

results of weight-reduction (bariatric) surgery. When the problems

are due to pregnancy, they are more likely to be severe when a

petite lass gives birth to one or more very large babies. Of course,

the worst example of this is with twins or triplets.

I remember getting a call many years ago to go to the obstetric

ward – not a place I’m commonly required. The mum concerned

had just given birth to triplets and was really “awash” in a sea

of redundant skin and stretched muscle wall. She just wanted

some reassurance that something could be done to rectify the

situation. I assured her that first her body itself would recover

much more than she would have expected from what she had

been through. The elasticity of the skin, the loss of body fluids

and weight and returning to normal activity would all help to

improve the situation. However, after multiple births recovery is

rarely complete and I expected she would get a very good result

from abdominoplasty in the fullness of time.

Now the timing of the procedure is certainly not at the time of

the delivery. If we are aiming to match the skin and muscle wall

to the soul that lives within then it makes sense to wait until all

the excesses of pregnancy have been lost and a trim, taut figure

can be restored. Also realistically, what new mother of triplets has

time to think about an elective cosmetic procedure? I usually find

that between six and 12 months after childbirth is the ideal time

for performing an abdominoplasty, but this does depend on when

normal weight is restored and when the tissues have returned to

their non-pregnant state.

The other situation we are seeing more of these days in which

abdominoplasty is of great benefit is after massive weight loss,

either due to rigorous dieting or the weight-reduction operations

that are now being performed. The most common procedures

are the gastric-band done via a keyhole approach to put a little

“lasso” around part of the stomach, giving you that “full” feeling

with smaller meals. The alternative procedure, which seems to

be becoming more common, is the gastric sleeve operation. It

actually reduces the size of the stomach surgically, again with a

keyhole approach, and the effect is the same. Both operations

have remarkably short recoveries and a high safety profile. As a

result we are seeing more examples of people losing half their

body weight or more, leaving them with a lot of “spare” skin.

Abdominoplasty is commonly performed under a general

anaesthetic and a hospital stay of several days is most common. This

is because the strong repair to the muscle wall is uncomfortable

in much the same way as the muscle wall repair after a caesarean

is uncomfortable. Several manoeuvres are performed to control

this discomfort, including the use of “pumps” that trickle local

anaesthetic into the repair site for two days after the operation.

By the third day most people are ready for the door.

Not infrequently, breast surgery is combined with the procedure,

and sometimes liposuction as well. This combination has become

known as the “Mummy Makeover”, as it is something of a farewell

to childbearing.

But back to the photo. While the operation had technically been

a success, both she and I were well aware of the fact that the

result was far below what could be achieved. I had been through

the mechanics of dieting and the principles of weight loss with

her, but as everyone who has tried to shift weight knows it is

the motivation and persistence to achieve that, which is the hard

part. Now she is not the sort of person to take a setback lightly

and, then strongly self-motivated, she searched for an appropriate

dietary and exercise regime that would work for her, with a lot

of group support to keep her focused. Over the ensuing months

I received a series of photographs showing dwindling body size,

culminating in the one above where she is demonstrating that she

now has room for a “friend” in the shorts that were once quite

snug on her. She is 17 kilograms lighter than she was previously.

Apart from the striking improvement to her appearance, there is

no doubt that being in the optimal weight range with far greater

cardiovascular fitness will help her fight off the ageing process

and steer her towards longer- lasting good health.

And the title? Did your parents ever say to you – “You only get out

of life, what you put into it”?

Well yeah, it’s kind of true, even in cosmetic surgery.

We males are a funny bunch. We spend hours in the gym working at achieving the perfect body, or at least trying to stay as fit as we can. The truth is we spend more time concentrating on getting that beach body for Summer at the expense of actually looking after two of the most important things that society see as necessity for attractiveness; first our skin and second our facial complexion and wrinkles.

Just last week I was at the Ivy Bar in Sydney with a bunch of female work colleagues. As some of you may know, the Ivy has a stunning swimming pool located in the middle of the nightclub. It is common knowledge that only the bravest of men who are obviously confident in their image will take the risk and swim in front of 200-odd party revellers. White Speedos and dodgy fake tans aside, these guys had bloody good bodies. They are the blokes at the gym with wrist straps hanging off their arms while doing 15kilogram arm curls and simultaneously checking themselves out in the mirror. OK, so I’m a little jealous.

What I found most interesting was the comments coming from the group of ladies that I was entertaining. I expected the girls would be admiring the eye candy before them, but the reaction was not what I was expecting. The best comment was “Sure he has a hot body, but his face is like a half-eaten Chicko roll!” The girls were more interested in the guy’s skin complexion that they were his biceps.

Now I know this is quite an extreme story and no Gold Coast man in his right mind would be caught dead posing around in a nightclub swimming pool in his white Speedos, but the fact is, we don’t look after our skin. This is mind-boggling considering we live in one of the harshest environments for sun damage in Australia. Our lifestyle is all about the beach, outdoor BBQs and long afternoons spent boating, all of which can cause havoc on our skin. So my advice to all men is that it is OK to look after your

skin! Sure, keep up the great work in the gym, but make the job of looking after your skin just as important.

You started out in 2000 as a sprightly 20-year-old. What

was it about the finance industry that first sparked your

interest?

The reason I got into it was because my parents were given bad

advice when they were running a retail store. They lost everything

and ended up getting a divorce. This sparked my interest in

the industry because if they had been given the right advice it

wouldn’t have been as bad as it was.

Tell me about the formative years of Wealthfarm.

Initially I was working for another company for a period of about

12 months. I was producing more than the owners were at the

time and I asked for ownership, but they declined. I then decided

to set up Weathfarm, as a young Gen X would, thinking they can

do it all themselves. I didn’t initially have a strategy for the business

other than I wanted to get it started and help people..

It was a leap of faith to go out on your own at such a young

age. How did you financially support this decision?

Well I didn’t. I had no more than $100 in my bank account, my

parents didn’t have any money and my girlfriend, who is now my

wife, was studying fulltime so she was living off Centrelink and we

were living off my income, which wasn’t much. It was challenging

at the start. I was working from home for the first three months

then I decided to go and get an office. I borrowed $5000 off my

girlfriend’s brother for the bond and furniture and went into debt

without much cash flow to do anything about it. Being young and

naïve I didn’t even think about it, I just jumped in the water and

tried to swim out.

Do you feel you and Wealthfarm have grown together?

Definitely. It has matured as I have matured. When it was just

me I was more of a technician, but over the years I think I have

developed to have a lot better business acumen and intuit in

business. I also think employing the right people, like the general

manager and the experience I have around me, helped fast track

that. It has been a steep learning curve.

Do you still have your clients that you service?

My role in the business is as an advisor. I made the decision to do

what I am good at and what I love, which is helping clients. It is

what I am passionate about and what I actually enjoy. I don’t enjoy

managing staff and IT and operations so that is why we employed

the general manager, who actually runs the business. I am still

involved in the strategic direction of the business, but I don’t have

to worry about day-to-day operations.

What is the one thing that really excites you about the

finance industry?

The opportunity within the industry. Only 10-20 per cent of

Australians get advice so the thing that excites me is that there

are so many people out there that we can help, they just don’t

understand how.

Why do you think such a small number of Australians call

on help from an advisor?

The bad name in the industry probably hasn’t been great, plus

the way it was legislated and the way that advisors were paid

through commissions didn’t help either. Basically, everything that

the industry does wrong we got sorted from the start with fee

for service and remaining very transparent with everything we

are paid. It is such a diverse industry too so people are getting

marketed all these different services and financial advisors are

kind of sitting in the middle and people don’t really understand

what we do. The biggest number of people that we help a lot

is with structuring debts and getting cash management on track.

Most people who need advice, it’s not for investing. It used to be

as financial advisors used to be investment advisors, but these

days our role is to provide a holistic approach looking at cash

flow, home loan structures and maximising everything you do as

opposed to looking just at investments.

What are the key business ethics that govern the way you

do business today?

The big one is transparency. We are very

transparent with how we get paid and where

we get paid from. Everything must be in the

client’s interest. It sounds mundane, but a lot

of people in our industry look at how they can

benefit instead of how the client can benefit.

Our focus is the client and our system and the

way we have designed the business reflects this.

What advice would you give to business

owners?

Really review your income and costs and have

a good understanding of that. We run live profit

and losses with our clients which are up to date

24 hours a day so we can understand where the

money is going in and coming out. A lot of small

businesses just don’t know their numbers and

the numbers drive everything. If your income

is down then how do you bring more money

in? It might not be more sales, it might be

analysing where the revenue has come from

and then trying to increase the parts that are

more profitable and are still generating income

during these hard times.

What is the one piece of advice that you

find yourself imparting to your clients all

the time?

It is probably understanding your numbers and

the key drivers behind those numbers.

mmAs an adviser I have the privilege of meeting and assisting a varied group of individuals, couples and families. These opportunities always remind me just how diverse we all are. What is especially striking to me is how differently we view wealth and retirement. Some of us regard wealth as being able to spend quality time with our families on a once-a-year holiday in the caravan. Others have a long list of international locations on the tick list. Hobbies are varied, with golf, fishing, boating, hiking, skiing and gardening just a few of the pastimes some of us would like to pursue on retirement when, in theory, we have more time to enjoy them.

Whatever wealth and retirement mean to you, the only way to reach any goal is to plan. In recent years I have noticed that younger families are recognising this more and more, and taking time to develop goals and a plan to achieve these. As these families demonstrate, planning is not just for retirees.

When it comes to saving for your retirement, superannuation is an effective wealth-accumulation vehicle. It has served Australians reasonably well to date, offering a low tax environment for individuals on an average income tax rate greater than 15 per cent.

When your money goes into super, there are tax savings to be gained. There are also savings on the investment returns earned while your money is in super. And, when you retire and withdraw your money, in most circumstances that income is non-taxable. However, while the superannuation system offers a range of tax benefits for Australians, there are restrictions on how much you can contribute to superannuation.

This ultimately raises the question of whether superannuation is an adequate savings vehicle on its own for anyone who wants to accumulate enough wealth to live a comfortable retirement.

It’s true that superannuation can assist you to meet your financial needs in retirement, but in reality your retirement income will really depend on your total assets, how much you have in super, how long you have to go until you retire, and how much longer you want to work for. As you can see, there are a whole range of considerations as to whether superannuation alone is a sufficient investment strategy for retirement income.

It’s also realistic to consider that the Government may make further changes to the superannuation system in the future, which could affect how much you can contribute to superannuation.

This gives a sense of uncertainty around whether today’s super rules are going to be the same in three, four or five years’ time. You have to ask yourself, is superannuation the only way to save for retirement? Is it going to help me to achieve my retirement goals? And, if not, what are my alternatives?

is sUPerannUaTion always a wise invesTmenT?

Besides the various restrictions on how much individuals can contribute to superannuation, most of us have other savings goals too. Consequently, it’s wise to have an integrated investment strategy to maximise your wealth accumulation.

For this reason, it makes sense to have investments inside and outside the superannuation environment. Of course, everyone has different needs, objectives and circumstances and what may be appropriate for you may not suit the next person. While income tax may be a consideration, it is not necessarily the main one. For instance, accessibility to funds, timeframes, income distribution, estate planning are other things that would be taken into account to determine what tax structure is more suitable.

Line a dinner plate or baking tray with baking paper (a dinner plate is ideal as the slight indent creates a good shape). Scatter the berries and coconut on the plate or baking tray. Melt the oil and butter in a saucepan or in the microwave (the oil takes longer to melt, so add the butter a little after), then stir in the cacao powder and syrup. Pour over the berries and pop into the freezer for 30 minutes until rm. To serve, either break into shards or cut into wedges.

Preheat the oven to 170C and grease a 23 cm cake tin or medium-sized baking dish. Grate the zucchini using a food processor with a shredding disc – you need 2 cups grated zucchini. Combine the zucchini and salt in a colander or sturdy sieve and let sit for 15 minutes, then use your ngers or a spoon to press out as much moisture as you can. Combine the ricotta, parmesan, shallots, garlic, dill and lemon zest, then stir in the eggs and zucchini. Pour into the tin and bake for 1 hour. Sprinkle with the fetta and return to the oven for 25 minutes or until the cheese has melted. The cake is best when left to cool completely so that it sets properly. Serve at room temperature.

During the eight-week program you encourage readers to stop eating fruit. Now some people may raise their eyebrows at this suggestion. What do you say to these people?

When you first tell people that you are not eating sugar they get quite defensive because they feel guilty. They have this niggling feeling that they shouldn’t be eating various bits and pieces like their banana bread with their coffee or that bit of chocolate after dinner. You are holding a mirror up to their guilt. People do immediately get defensive and I am quite used to that now and I try not to rub anyone up the wrong way. A lot of people say to me “I don’t eat much processed sugar” and I don’t know what people mean by this because sugar is sugar. Whether it is processed or fructose it has the exact same molecules. They say they don’t eat much sugar, but if they were to break it down they would eat as much or more than I did in the rundown that I do in the book. It adds up quite quickly.

People think that fruit is healthy and it’s natural, it’s a natural sugar and to that I say arsenic is natural, petroleum is natural, but that doesn’t mean that we are meant to eat it. Sure, fruit is very natural, it grows out of the ground, but the way that we eat it is not natural. You can also go back to the cave-man argument and to me that proves a lot because our cells and DNA structure has changed very little, perhaps 1 or 2 per cent in 10, 000 years so we have the same metabolism with a far different diet. If you go back to our grandparents’ era, most of us know what our grandparents used to eat and that was before all of these terrible diseases like Alzheimer’s, obesity, heart disease, cholesterol. They weren’t eating three or four pieces of fruit a day and they certainly weren’t having it in a juice either. If fruit is your treat and you are having one or two pieces a day or as your afternoon pick-me-up then that is fantastic. Most people eat their fruit on ice cream or not in its whole form such as fruit or dried fruit, purees, all of which are condensed sugar.

In the book you mention “the blank slate”. How do you suggest people monitor their sugar intake once they complete the I Quit Sugar plan?

It is pretty easy. It is all about listening to your body. After eight weeks you are mindful of what your body is doing and you are also mindful of what is in food. As soon you start eating sugar you will find that your body will reject it and you will be sick. I suggest people use their common sense and have a bit of fruit. I didn’t want fruit, I don’t have the taste for fruit anymore. It is not my priority anymore; I would prefer to eat vegetables.

You encourage people to eat whole foods and full-fat products. Can you tell me about the importance of this?

The low-fat industry is full of sugar and it is very much there for the sugar industry. When it comes to low-fat products, you replace the fat with sugar so it has a taste and texture as well. The second thing is that a big part of the sugar addiction is the emotional addition, the idea of a treat, having a little something extra after dinner or for morning tea. Something that is really important for long-term nutrition and how I eat now permanently, is that fat doesn’t make you fat. Saturated fat has an appetite mechanism that tells us when we have had enough. Think about how you can drink a litre of apple juice, yet you can’t drink a litre of yoghurt. These days if I feel like something after dinner I will have half a cup of yoghurt or a thick slice of cheese. I will eat that and I will be done. If you eat a Tim Tam you will want to eat the whole packet. There is no appetite switch-off mechanism for fructose. This program is very much about making your body a fat-burning machine instead of a sugar-burning machine. Over time you find that you only need three meals a day because you are eating really good quality fats and protein. That is why you lose weight, because you are burning off fat instead of burning off sugars, and you’re not creating metabolic havoc that a sugary-based diet can cause.

All fats are not created equal. What are your top three fats to include in your diet?

Coconut oil – it is so fantastic for your metabolism. It will restore your metabolism very effectively. It is also very sweet in flavour, plus it is a medium-chain fatty acid plus a saturated fat. A medium chain composition means that it is easily digested and our liver processes it super well, so much so that it creates heat, which speeds up your metabolism. It will help maintain weight and help you lose weight.

Butter – especially if you are eating organic butter. It has a high smoke point (as does coconut oil), which is great for pan frying. It is also great on vegetables, like what our grandmothers and the French do with their vegetables. A lot of the nutrients in vegetables are only absorbable with fat, so you need butter or oil on your vegetables.

Olive Oil – I don’t like to cook with my olive oil above a medium heat because it does break down and cause free radicals. I like it cold on salads and vegetables and a big drizzle over a casserole to help absorb nutrients.

Tonic on Chirn has humbled the odds of business after celebrating its first birthday late last year with abundant success and a fierce following.

viSuAl FeAST: Tonic on Chirn has been meticulously styled with a very vogue, modern industrial look. A hardwood bar is the centre of the restaurant, made from Brisbane’s old wharf, with a vintage pressed-iron splashback. Lining the mirrored walls are kitchen colanders hanging as lamp-shades, and wooden crates filled with a vast selection of wines. No detail is spared, even down to the quirky industrial bolts as bill weights. There is a selection of seating options, including low ottoman-style lounges, long galley seating, couples tables tucked away for privacy, or bar seating. As I looked around I noticed the vast contrasts in demographics that are attracted here and it is obvious Tonic on Chirn caters for all tastes.

AuRA oF THe SpACe: Tonic on Chirn is inviting to anyone that walks by.It has a warm, busy glow, yet relaxed atmosphere. It is rare to discover a tapas bar that invites you to both grab a light bite on the go or sit and linger as long as you please. The lighting is dim and the music an ensemble of perky house and jazz tracks. The hum of chitchat and cocktails being shaken fills the air and the flow of dishes being carried out from the kitchen is a teaser to what awaits.

TASTe JouRney: As my partner and I enter Tonic on Chirn on a balmy Thursday night we are greeted by dedicated manager Jeremy, who escorts us to our table. Jeremy mixes me a “Tonic Elixir” mocktail and chooses a “Brass Monkey” cocktail for my partner served in a large vintage jug.

Tonic has a rotating tapas menu and fantastic seasonal blackboard specials to choose from, with vegetarian and gluten-free options too. We choose a selection of five tapas. It was mentioned that the chef had a special tapas dish he was trialing to feature on the menu that he wanted us to sample; Escargot (snails) sautéed with shallots, garlic, bacon and fresh herbs deglazed with a Burgundy reduction and finished with a knob of butter. This was a superb mix of texture and taste with the perfect amount of sauce to complement.

We moved on to the white anchovies; Turkish bread, Dijon mustard spread and salty yet subtle anchovies atop fresh herbs. The slow-baked pork belly was a generous serving of melt-in-your-mouth bite-size pieces of pork served in a red jus reduction with unusual, yet perfectly teamed, poached lychees. The spiced mince in witlof cups arrived at the table soon after and I was in awe at the creativity that has gone into each of these dishes the presentation and consistency. These were served in petite and elegant lettuce leaves, piled high with mince, cashews and drizzled with a sweet soy sauce. Think San Choi bow but for the queen.

We finished off with two succulent lamb chops with fresh homemade macadamia and basil pesto. We sat back with satisfied tummies contemplating how each tapas did not feel like a sample taster plate, but held its own just as any main would. Without further adieu, we were eager to try Tonic’s Espresso Martini made with Toby’s Estate Coffee, the perfect cleanser before the indulgence of dessert. For dessert we choose the Amaretto and vanilla Brule with hazelnut praline and the Espresso Panna Cotta with cinnamon,

chocolate and hazelnut toffee. The Brule presented a torched outer that gave the perfect “crack” upon testing which oozed into a fluffy bath of creamy decadence. The Panna Cotta was again as equally impressive with an effortless consistency and polished shine, crowned by a delicious hazelnut toffee.

THe FineR dRop: Trust me when I say, you will not only need your appetite, but also your thirst when visiting Tonic on Chirn as the cocktail menu is as equally impressive and unique; crafted by Tonics’ international cocktail chefs. Tonic has a beer and wine list to be envied; stocking whites and reds from around the globe and local and imported beers. If alcohol is not for you there are still various options with quenching mocktails, tea, coffee, ginger beer and soft drinks.

THe CARe FACToR: The staff have a special connection with the restaurant and honest belief in what they are serving. The bar staff are happy to stop for a chat or mix you up a signature blend. We felt very welcomed and relaxed throughout the evening by each and every one of the staff, even when it hit peak service with the restaurant filling. Tonic serves tapas until 11 on Friday and Saturday nights, plus you can get any two tapas for $20 on a Tuesday, Wednesday or Thursday. You can also listen to local talent with live music every Sunday from 5pm. Tonic on Chirn, the Gold Coast’s not so little fish anymore.

What was the inspiration behind this book?

You can turn anything old into a fresh item simply with a coat of paint, new fabric, detailing, or by rearranging pieces to give it a new feel. You don’t need to spend a lot of money when you have a household full of things you can reinvent. I wrote this book to show people how.

Why do you think the hobby of crafting has become popular again with the younger women today?

Craft went through such a period of unpopularity after the ‘70s, as most of the things available to make crafts looked so dated. Today there are so many designers and manufacturers who have picked up on this and produced fresh tools for us to use again. Crafts are more of a luxury to us now instead of being a necessity of having to make do. We are lucky to be in a stage where fashion is so eclectic in both clothes and homewares. We are in a period where anything goes fashion wise.

How do you find inspiration for new ideas?

I find inspiration from film and arts. I will often go for a walk to the gallery and through nature to get different ideas. If I find I

have been doing the same things for too long I will take a break and go back to making things with my daughter. I’m not crafting every day, but I’m forever looking around my home thinking of ways I can change or up-cycle something if it isn’t looking very fresh.

What does your role with charity organisation Vinnies involve?

I was honored when Vinnie’s approached me because it was really the first shop I started buying fashion and homewares from as a teen, it’s where I started doing exactly what this book is all about; up-cycling. Vinnies asked me to style a fashion shoot exclusively with clothes from their stores and produce a completely cost-free shoot. It was an opportunity to highlight how you can use their clothes for everyday fashion at such a great cost.

What was your favourite project in the book?

It would be the vintage stool I up-cycled. It’s something anyone can do. It’s a $10 stool I picked up at an op-shop, painted pink and used vintage fabric to cover the seat. I loved doing this project as it was simple yet so effective.

3 Take your foam base or cushion and place in the middle of the seat. Cover with fabric to work out exactly how much will be needed to wrap over the stool and underneath, leaving a few centimetres (an inch) or so spare to fold under any raw edges.

4 Cut around all four sides or around the circular seat.5 Roll under the raw edges, pull into place, and start stapling

fabric directly to the underside of the chair – you might need an extra set of hands to keep things firmly in place while doing so.

Before me is a selection of fine cheeses, dried fruits and crackers accompanied by a voluptuous glass of red and beside me is my favourite companion. There is not another sign of civilisation in sight or a car engine to be heard, just the blissful silence of nature. The Great Dividing Range is stretched out on the horizon before me with acres of trees and grassy green clearings as far as my eye can see. Who knew places like this existed? I almost want to pinch myself. However, it was not by luck or good fortune that Spicers Peak Lodge came into existence. The owners spent years planning, creating, plotting and designing the magnificent property that remains today. Located on 8000 acres at the peak of the ridge, Spicers Peak Lodge is truly boutique accommodation at its best. The property consists of 10 lodge suites (some with spas and open fireplaces) and two private lodges, plus the facilities of the main lodge, a dual-level building that houses the bar, restaurant plus a selection of cozy couches complete with throw rugs and ample cushions to cuddle up on.

The main lodge provides the heart of the property. It is where guests congregate, eat and drink. The building is architecturally stunning with exposed rich timber beams and floor-to-ceiling glass (it really is the most amazing construction I have ever seen) which allows as much sunlight as possible to fill the warm, open spaces. wait. Only for half a second, before you feel your facial muscles

uncontrollably contort into a grin as the grumble of the V12

engine below you comes to life. The connection between man

and beast is instigated over a brief but unforgettable tune of the

flare of revs. Your driving experience has commenced. But this is

not just another Aston. No, the Vanquish signposts an important

marker in the history of the Aston Martin brand, it’s 100th year.

The release of the Vanquish celebrates this anniversary and in

many ways heralds an exciting new beginning.

It is the second time Aston has rolled out a model with the

Vanquish namesake, the first time back in 2002. But a lot has

happened at the Gaydon headquarters since this release and

for more reasons than one this new model leads the way with a

new design, technology, function and form.

To look at, the Vanquish is a work of art with the signature Aston

Martin curves, extended yet defined bonnet and masculine rear

haunches. Those familiar with the One-77 will see the design

similarities, the comparable proportions, yet there is something

distinctively different about the unique design elements of the

Vanquish. The answer lies in complete carbon fibre skin, a first

for Aston, which enables the creation of complex shapes and

uninterrupted curves that would be impossible to form from

conventional materials. The result is a form unlike any other.

The Vanquish is known to the Aston crew as the slick, sporting

hero of the clan and you are about to find out why. The 6.0 litre

naturally aspirated engine is all new and includes technology

to significantly enhance airflow both in and out of the new

block and cylinder heads. The result is increased efficiency and

output. The power and torque have also significantly increased

while emissions and fuel consumption have been thoughtfully

decreased. In comparison to the vehicle the Vanquish is replacing

in the Aston line-up, the DB9, the Vanquish has 565 horsepower

in comparison to the DB9’s 510 horsepower. As a result the

performance of the Vanquish has been taken to a whole new

level with the inclusion of launch control, which enables a 0 to

100 kilometre speed below the 4 second mark. There is also the

sports suspension button we are accustomed to seeing in an

Aston, yet now there is an addition of a track setting that enables

the vehicle to perform equally well on the road and track. This

feature is an excellent example of how Aston has taken one of

their fundamental qualities and taken it up another notch to

exceed all expectations.

As with the model it has replaced, the Vanquish is the very

essence of a super grand tourer oozing performance and space.

It has the added room (can you believe It has 350 litres of boot

space!) plus more room in the cabin areas (40mm more leg and

20mm more shoulder). While we are in the cockpit, you can

expect the same exceptional level of craftsmanship everywhere
