Beaufort AOCA Lush Cheese from
Monet Country
The painter Monet used the pastures o
Savioe-Beauortain, in the French Alps, as
the subject or many a magical canvas. These pastures are unploughed and
unenced and contain thousands o herbs.
This provides the ‘Tarine’ cows with resh
grazing in the summer and aromatic hay
in winter. The resultant milk is sweet, nutty,
and complex.
It takes 35 cows to make one wheel
o Beauort. Because o this, herdsmen
have ormed co-ops and shared tasks like
milking and maturing.
A young Beauort is rm but not too
hard. It melts in the mouth and has arich, sweet, complex favour. I aged, it
develops more honeyed, aromatic notes
and a long, savoury tang that hints o
meadow fowers.
Beauort is protected by the AOC
designation and can only be produced in
1112 acres in the Rhone-Alpes.

A Visit to the
Sorauren Farmers’ Market
The Sorauren Market should
have the word “charm”
inserted onto its sandwich
board sign because it gave
me a warm uzzy eeling, and
it wasn’t just because the
sun was shining brightly into
Sorauren Park.
From the sweet heritage
mini-tomatoes (which I
taste-tested rom Clover
Roads Organic Farm), to the
delicious home-baked spelt
oatmeal raisin cookies, to
the lush baskets o Ontario
peaches and ragrant basil,
there was a wonderul variety
or such a small market that
extended beyond ood to
various soaps or hair and
body made by Colleen rom
Enfeurage Organics, who I bought Thai
Lavender soap rom.
It was easy or me to meander
through the market and not really pay
attention to my direction because the
vendors were situated in a circular
ormation, each with their own tent.
In act, I went around the circle a
ew times to make sure I didn’t miss
anything. There was an easy-going
eel to this market, and the live music
playing certainly helped. However, i it
were raining, the soggy muddy grass
would have likely turned into a swamp
as, ater all, it was in park. Lucky orme, it was nice out.
Most o the armers were eager to
give cooking suggestions, which are
always helpul i you are buying an
odd-looking vegetable that you don’t
recognize. I bought some beets and
was delighted that Ashlee rom Food
Cycles reminded me that I shouldn’t
discard the beet greens, which - being
a holistic nutritionist - I knew, but was
impressed nonetheless.
There were bargains to be had. The
cucumbers I bought or juicing rom
The Cutting Veg were discounted
because I was eager to purchase more
than just a ew. It's always a great sign
when they are willing to wheel and
deal the price o the vegetables with
you.
All in all, this was a riendly market
o knowledgeable armers and people
who genuinely love ood as much as
I do. I made a juicy caprese salad with
my heritage tomatoes that I enjoyed
with riends, but the cookie I bought
didn’t last very long because I ate it onmy walk home.
