Li2e most t!ings e try to classify one ay or t!e ot!er3 t!ere tend to be some e"ceptions or

also get softer over time. Most people prefer apples under ripe @since t!e varieties generally

eaten uncoo2ed tend to be fairly seet rig!t off t!e treeB and do not prefer t!em at full ripeness

due to !o soft @and mealyB t!e fles! becomes. @%ecause apples do ripen after !arvesting and

e donXt often allo t!em to reac! full ripeness3 if youXve got an apple in your !ouse3 itXs

probably in t!e process of ripening and t!erefore outgassing carbon dio"ide and et!ylene. $!e

latter gas ( for reasons not yet fully understood ( ill trigger and speed up ripening processes in

    ot!er fruits !ic! can be ripened after pic2ing ( see c!art beloB. Anot!er e"ample is t!e

pineapple @a fruit t!at doesnXt ripen after !arvestB !ic! does c!ange color after being pic2edbut does not get seeter or develop a stronger aroma. 9or t!is reason3 t!ey s!ould be selected

not by !o golden t!e s2in is but by !o fragrant it is.

Since fruits !ic! ripen release et!ylene gas3 t!ey s!ould not be stored it! or near vegetables.

$!e et!ylene ill cause most vegetables to spoil faster. @Many vegetables can be !eat treated (

9ruits t!at ripen after being pic2ed can !ave t!eir ripening processes accelerated easily in to

ays: !eat and et!ylene. 'eeping fruits in a arm environment ill ripen t!e fruit by

accelerating t!e activity of t!e ripening en?ymes. $!is process speeds up until t!e temperature

rises past t!at at !ic! t!e en?ymes remain intact @!ic! is loer for fruits from colder eat!er

temperature of t!e en?ymes. 7as!ing t!e fruit it! a fruit as! is advisable before attempting

#t!ylene gas ripening is probably easier since all it ta2es is an et!ylene producer @t!e fruit itself

ill or23 but an apple is even betterB. Simply place t!e fruits in a paper bag it! t!e top folded
